This course provides the skills and knowledge for an individual

to be competent as a commercial cook. In this course you

will learn the basic methods of cookery and to plan and

control menus; prepare food according to dietary or cultural

needs; plan and control menu-based catering; work as

part of a team; and serve a range of meals in a professional

manner. You will also learn about effective communication;

occupational health and safety procedures; workplace

hygiene; having some responsibility for others; and providing

technical advice and support to a team.

You will practice the skills you have learned in a simulated

work environment or at an appropriate hospitality

establishment. Practical work placements are undertaken in

various hospitality enterprises where food is prepared and

served, for example: restaurants, hotels, clubs, pubs, cafés

and caterers.

This course is designed for those who are looking for more

than a standard chef’s qualification. You will extend your

knowledge of practical cookery to include theoretical skills for

the supervision and management of a dynamic and innovative

commercial kitchen environment.

This qualification reflects the role of commercial cooks who

have a supervisory or team leading role in the kitchen. They

operate independently or with limited guidance from others

and use discretion to solve non-routine problems.

You will practice the skills you have learned in a simulated

work environment or at an appropriate hospitality

establishment. Practical work placements are undertaken in

various hospitality enterprises where food is prepared and

served, for example: restaurants, hotels, clubs, pubs, cafés

and caterers.

COMMERCIAL COOKERY PATHWAY 6 Months Full Time - SIT50313

If you aspire to own a restaurant or manage your own

culinary business then you will need a combination of

technical culinary skills and hospitality business acumen. This

course provides a learning pathway for chefs to acquire the

fundamentals of hospitality business operations and

management.

The Diploma of Hospitality (Commercial Cookery Pathway)

program has been designed to equip you with this specialist

knowledge. This qualification reflects the role of individuals

who use sound knowledge of industry operations and a broad

range of managerial skills to coordinate hospitality operations.

They operate independently, have responsibility for others

and make a range of operational business decisions.

You will practice the skills you have learned in a simulated

work environment or at an appropriate hospitality

establishment. Practical work placements are undertaken

in various hospitality enterprises where food is prepared and

In this articulated pathway, you first complete the Diploma of

Hospitality at The Cantillon Institute, and then continue

studying to complete a ‘Bachelor of Hospitality Management’

degree at Central Queensland University, Australia (CQU).

The Diploma of Hospitality program has been designed to

equip you with the specialist knowledge required to obtain

a senior management role in hospitality. Your culinary skills

will be developed through hands-on experience in our fully-

equipped, modern, commercial kitchen.

This qualification reflects the role of individuals operating

at a senior level who use substantial industry knowledge

and wide-ranging specialised managerial skills. They operate

independently, take responsibility for others and make

a range of strategic business decisions. Practical work

placements are undertaken in various hospitality enterprises

where food is prepared and served, for example: restaurants,

hotels, clubs, pubs, cafés and caterers.

The Cantillon Institute has developed a new and

innovative Hospitality Graduate Enhancement

Program (HGEP) that aims to ease the critical

skill shortage of qualified cooks and chefs across

Perth, working with a selected group of high profile

hospitality industry employers, organisations,

recruitment agencies, migration specialists and

registered training organisations.

The post-graduate HGEP is a three stage work

ready, employment placement and professional

development program for high calibre commercial

cookery domestic and international students who

have completed a Certificate Ill, IV, Diploma and/

or Advanced Diploma of Hospitality (Commercial

Cookery pathway).

COURSE STRUCTURE

STAGE 1: WORK-READY COURSE OVERVIEW

You are due to graduate within 3 months, or have already graduated with a

nationally accredited Certificate 3, 4 , Diploma or Advanced Diploma of Hospitality

specialising in Commercial Cookery. Your next challenge is to find a way to make

yourself stand out to potential employers.

The Cantillon Institutes Hospitality Graduate Enhancement Program gives you the

edge over other graduates. Designed in consultation with our prestigious industry

partners, Work-Ready is an intensive work preparation program for those seeking

hospitality jobs. The very small class sizes give you ample opportunity to network

with our visiting or hosting guest chefs and industry professionals.

The Work-Ready training program gives aspiring cooks and chefs the practical

skills, knowledge and confidence needed to work in a bustling, commercial kitchen.

It ensures you are a productive and valuable employee from your first day.

Hospitality Graduate Enhancement Program graduates are highly sought after, and through

our strong industry links we will arrange interviews for you with leading employers such

as the Duxton Hotel Perth, Hyatt Regency Perth, Perth Convention and Exhibition Centre

and many more. Also, our partners Breakaway Tourism and ISA Group, having been in the

industry for many years, have created strong relationships with reputable companies giving

you even more chances of securing full time employment with a high quality operator.

Upon completion of the Stage 1 (Work-Ready Course) and Stage 2 (Industry Employment

Placement), candidates will then be eligible for assistance to apply for a Training and Research

visa (subclass 402) as an Occupational Trainee sponsored by The Cantillon Institute, or other

relevant visa pathway (international graduates only). Graduates will be directly employed

as a professional Cook or Commis Chef in the hospitality industry in Western Australia and

whilst gaining valuable hands-on skills, knowledge and experience in the industry with a

quality employer in the workplace, participants also undertake an “off-the-job” professional

development program. Training program modules (average 1.5 hours of training per week),

consist of online, face to face and group excursion modules out of the workplace focusing on

hospitality industry leadership, global practices, business operations and career success.

During this stage, a dedicated Cantillon representative liaises regularly with Graduates

and their employers for the duration of a 12 month Professional Chef Employment and

Professional Development Program ensuring participants are employed in a safe, quality

working environment with fair pay and working conditions.
