Les has been in the fish trade for over 25 years – Les heads-up the purchasing team for Kingfisher which means buying from the trawlers 5 days a week at Brixham Market.

Brixham Fish Market started in the late 1800’s with sailing smacks landing their catch on the Old Fish Market Quay before the present market was build in the early seventies. Brixham fish is well known for its quality, they are fortunate to have good fishing grounds around them 9-10 months of the year. There is a variety of mainly modern fishing boats with large beam trawlers going to sea for 7 to 10 days catching prime fish. The small day boat fleet catch a variety of fish landed every day which is very popular due to freshness and quality. A fishermen’s co-operative was formed in 1969 with now 70 registered fishing vessels using the present new fish quay and state of the art market.

Planning for the fresh fish on the menu begins in October working with Les to ensure that we are offering a sustainable and quality offer for the customers – our Exec Chef works with Les’ recommendations to develop menus around what is available in the waters during June/July. As with any natural product, what is available one year in the waters of Brixham may not be the next due to restrictions on landing or sustainability of the species. Fresh fish landed to order for Wimbledon will be transported from Brixham market to Wimbledon within 24 hours with full traceability of which boat and fisherman landed the catch.

22 PINOT GRIS ORGANIC JEAN BALTENWECK 2008 — FRANCE ABV 13%Hint of smoke, apricots and hazelnuts on the nose. Ripe and fresh palate possessing fabulous weight and ripeness of honeyed peach, pear and a dash of classic Pinot Gris spice.

24 CHABLIS DOMAINE JEAN DEFAIX 2012 — FRANCE ABV 12.5%Daniel Dampt is one of Burgundy's most celebrated producers, and he produces wines under both his own names and that of Jean Defaix, his father-in-law. This Chablis is bone dry, with steely elegant flavours of apple and citrus.

23 POUILLY FUMÉ LES BERTHIERS CLAUDE MICHOT 2012 — FRANCE ABV 12.5%A small grower with a real passion for his terrior, Claude Michot produces a wine that is very typical of his part of Pouilly Fumé; restrained and elegant, with understated green apple and lime fruit and hints of flint and smoke on the finish.

35 JACOB’S CREEK ST. HUGO CABERNET SAUVIGNON 2009 — AUSTRALIA ABV 14%St Hugo is named after Johann’s grandson Hugo Gramp - a key figure at Orlando Wines. It is the very best Jacob’s Creek Cabernet Sauvignon and as such bears the ‘Jacob’s Creek Winemakers’ endorser. Lifted and intense on the nose, with vibrant cassis and black fruits layered over well intergrated oak-derived notes of cedar, cinnamon and roasted hazelnut.

37 LOREDONA MONTEREY COUNTY PINOT NOIR 2011 — USA ABV 13.5%Loredona is a family owned, sustainably-farmed vineyard estate in Monterey and Lodi, California. This Pinot Noir is packed full of fresh red cherries, cinnamon notes and a silky finish - a really elegant and versatile wine.

47 CHÂTEAU D’ESCLANS WHISPERING ANGEL 2013 — FRANCE ABV 13%The wines at Château d’Esclans are made by Patrick Leon, who used to make the wine at none other than Château Mouton-Rothschild and Opus One. Pale salmon in colour, this wine is delicate and fresh with plenty of crisp strawberry fruit and a long finish.
