About the Book

What is this book about one asks?To put it as simply as possible it isabout the major citrus notes that areused in the fine art of fragrance cre-ation.

Citrus notes find their ways into awide variety of fragrance types. Inhousehold type product categoryfor example they can make up themajority of a single note fragrance.In fine fragrances they represent anentire family, and or a top note con-struction of a scent.

When I started this book I thoughtabout adding several hundred com-positions to it. This process cantake several extra months of work.The compositions or formulas canbe added at a latter date.

The citrus family is under pressurefrom the folks at ( IFRA ) otherwise known as the InternationalFragrance Regulatory Associationbased at the Givaudan FragranceCorporation headquarters inGeneva, Switzerland.

Many clients want natural materialsin their fragrance blends. Due tothe ever increasing regulatory hys-teria this is not happening. I thinkit should be up to the consumer todecide whether or not to use anygiven product that can be found onthe www, or on the store shelves.

Take for example the peanut allergyproblem that many individualshave to live with including myniece. I don't cook with nuts, andwould never incorporate any nutsthat I love into any dishes when sheis visiting. I happen to love them,but eat them now and then sincethey are supposedly good at lower-ing ones cholesterol. Do we banpeanuts as a consequence?

A simple solution to the allergicproblem some folk's experiencewith essential oils is to place a sim-ple warning label on the product.

Household fragrances createdless then twenty years ago con-tained more essential oil ingredi-ents then the ones that are createdfor fine fragrances today.

Personally I believe the fine fra-grances of today are simpler in con-struction containing a lot less mate-rials then the household formulas ofyears ago. Customers want cheap-er and cheaper fragrances that smelllike a million bucks. As most knowand few realize this is impossible toachieve with a blend made up pre-dominately of few aromatic materi-als. Many of the fragrances oftoday crash quickly, and again thisis based on the synthetics.

Planet earth's petroleum reservesare a dwindling resource. At somepoint we will run out of easy oil inthe next thirty to fifty years time. Iwill not be here to see it happen, butdo know one day cars will not runon petroleum. I keep wonderingwhat fragrances will be based on.

Some make money in life,whereas others accumulate richesin terms of knowledge. I have fash-ioned a large database of pertinentyet fascinating information on theart of perfume.

In a way my work and web site hasallowed me to get creatively evenwith a former employer and indus-try that said I wasn't good enoughto become an artist. Again, eachmanuscript I create is also a vindi-cation of my skills in the art of fra-grance. My books will not have athousand permutations like a singlefragrance. However, in my case Ihave slowly created during the pastseven years at least a dozen offspring from my second book.

I will continue to create this infor-mation as I can come up with newideas and ways of shaping theinformation. Most perfumers willhave many fragrances to his and hercredit during a lifetime of work.His and her employer will own thiscreative work. Few books of sub-stance are ever written simply dueto the fact that there is no motiva-

What I say to this is basically it isfull of bologna. I started my shortcareer with a small Italian ownedfragrance house as a material han-dler and junior compounder.During my five years of employ-ment I wore many hats and handledmany jobs.

I was promoted to a junior per-fumer as a ruse to gain my roughnotes that went into my first book.One day I was set up and soonfound myself unemployable due toage and the way my exit wasarranged. No one today would hirea white male over forty for anentry-level job of any sort. I didwork as a temp for seven plusyears.

During the past ten years I havebeen involved daily in the care ofaging parents. The past seven yearsI have been taking care of my much

tion to create one once you enterthis secretive profession.

In my case I will never be recog-nized for a single fragrance, but abody of work no one will hopefullyever duplicate. My books on the arthave been well received on thewww. If folks take an issue on theway I collected this data I don'treally care. All of my books areregistered with the Library ofCongress, and are protected by theCopyright Law.

Again, I did these books as a way toget even with a former vindictiveemployer who cost me a prestigiousjob and a career in a fascinatingprofession. The industry has blacklisted me, and my work is a way toshowcase my creative talents. Asingle book of notes has given riseto many variations. This is perfect-ly true of the creative art. Any sin-gle fragrance can have many thou-sands of variances just by adjustingthe materials and the parts per thou-sand of a formula.

I would like to think that both mywork and web site are quality. Itgives me great pleasure that not asingle volume of my work has beenduplicated. Perhaps on one day if Ican ever figure it out my work willbe available as an e-book. Untilthen I will have to keep my booksat 1/2 view to make their use is lim-ited beyond my site. None of mywork will ever be printable.

Citrus

Citrus is a common term and genus(Citrus) of flowering plants in therue family, Rutaceae. Citrus isbelieved to have originated in thepart of Southeast Asia bordered byNortheastern India, Myanmar(Burma) and the Yunnan provinceof China. Citrus fruit has been cul-tivated in an ever-widening areasince ancient times; the best-knownexamples are the oranges, lemons,grapefruit, and limes.

The generic name originated inLatin, where it specifically referredto the plant now known as Citron(C. medica). It was derived fromthe ancient Greek word for cedar,?????? (kédros). Some believe thiswas because Hellenistic Jews usedthe fruits of C. medica duringSukkot (Feast of the Tabernacles)in place of a cedar cone, while oth-ers state it was due to similarities inthe smell of citrus leaves and fruitwith that of cedar.Collectively,Citrus fruits and plants are alsoknown by the Romance loanwordagrumes (literally "sour fruits").

These plants are large shrubs orsmall trees, reaching 5 - 15 m tall,with spiny shoots and alternatelyarranged evergreen leaves with anentire margin. The flowers are soli-tary or in small corymbs, eachflower 2 – 4 cm diameter, with five(rarely four) white petals andnumerous stamens; they are oftenvery strongly scented. The fruit is ahesperidium, a specialised berry,globose to elongated, 4 - 30 cmlong and 4 - 20 cm diameter, with aleathery rind or "peel" called a peri-carp. The outermost layer of thepericarp is an "exocarp" called theflavedo, commonly referred to asthe zest. The middle layer of thepericarp is the mesocarp, which incitrus fruits consists of the white,spongy albedo, or "pith". Theinnermost layer of the pericarp isthe endocarp. The segments arealso called "liths", and the spaceinside each lith is a locule filledwith juice vesicles, or "pulp". Fromthe endocarp, string-like "hairs"extend into the locules, which pro-vide nourishment to the fruit as itdevelops.

Natural and cultivated ori-gin hybrids include commerciallyimportant fruit such as the oranges,grapefruit, lemons, some limes, andsome tangerines.

Research suggests that the closelyrelated genus Fortunella(kumquats), and perhaps alsoPoncirus and the AustralianMicrocitrus and Eremocitrus,should be included in Citrus; mostbotanists now classify Microcitrusand Eremocitrus as part of thegenus Citrus. Two additional gen-era: Triphasia and Clymenia arelikewise very closely related, andbear hesperidium fruits, but are notconsidered part of the Citrus genus.At least one, Clymenia, willhybridize with kumquats and somelimes.

Citrus fruits are notable for theirfragrance, partly due to flavonoidsand limonoids (which in turn areterpenes) contained in the rind, andmost are juice-laden. The juice con-tains a high quantity of citric acidgiving them their characteristicsharp flavour. The genus is com-mercially important as manyspecies are cultivated for their fruit,which is eaten fresh, pressed forjuice, or preserved in marmaladesand pickles.

They are also good sources of vita-min C and flavonoids. Theflavonoids include various fla-vanones and flavones.

Cultivation

Citrus trees hybridise very readilydepending on the pollen source,plants grown from a Persian Lime'sseeds can produce fruit similar tograpefruit. Thus all commercial cit-rus cultivation uses trees producedby grafting the desired fruiting cul-tivars onto rootstocks selected fordisease resistance and hardiness.

The colour of citrus fruits onlydevelops in climates with a (diur-nal) cool winter. In tropical regionswith no winter at all, citrus fruitsremain green until maturity, hencethe tropical "green oranges". ThePersian Lime in particular isextremely sensitive to cool condi-tions, thus it is not usually exposedto cool enough conditions to devel-op a mature colour. If they are leftin a cool place over winter, the

Citrus trees are not generally frosthardy. Mandarin Oranges (C. retic-ulata) tend to be the hardiest of thecommon Citrus species and canwithstand short periods down to ascold as - 10 °C, but realisticallytemperatures not falling below - 2°C are required for successful culti-vation. Tangerines, tangors andyuzu can be grown outside even inregions with more marked sub-zerodegrees in winter, although thismay affect fruit quality. A fewhardy hybrids can withstand tem-peratures well below freezing, butdo not produce quality fruit.Lemons can be commerciallygrown in cooler-summer/moderate-winter coastal Southern California,because sweetness is neitherattained nor expected in retaillemon fruit. The related TrifoliateOrange (Citrus trifoliata) can sur-vive below - 20 °C; its fruit areastringent and inedible unlesscooked but a few better-tasting cul-tivars and hybrids have been devel-oped (see citranges).

The trees thrive in a consistentlysunny, humid environment withfertile soil and adequate rainfall orirrigation. Abandoned trees in val-leys may suffer, yet survive, the drysummer of Central California'sInner Coast Ranges. At any age cit-rus grows well enough with infre-

Ripening isthe term used to describe thechanges that occur within the fruitafter it is mature to the beginning ofdecay. Citrus fruits are non-climactericand respiration slowly declines andthe production and release of ethyl-ene is gradual. The fruits do not gothrough a ripening process in thesense that they become "tree ripe."Some fruits, for example cherries,physically mature and then contin-ue to ripen on the tree. Other fruits,like pears, are picked when maturebut before they ripen, then continueto ripen off the tree. Citrus fruitspass from immaturity to maturity toover-maturity while still on thetree. Once they are separated fromthe tree, they will not increase insweetness or continue to ripen. Theonly way change may happen afterbeing picked is that they will even-tually start to decay.

With oranges, colour cannot beused as an indicator of ripenessbecause sometimes the rinds turnorange long before the oranges areready to eat. Tasting them is theonly way to know whether or notthey are ready to eat.

quent irrigation in partial shade, butthe fruit crop is smaller. Thoughbroadleaved, they are evergreenand do not drop leaves except whenstressed. The stems of many vari-eties have large sharp thorns. Thetrees flower in the spring, and fruitis set shortly afterward. Fruitbegins to ripen in fall or early win-ter months, depending on cultivar,and develops increasing sweetnessafterward. Some cultivars of tan-gerines ripen by winter. Some, suchas the grapefruit, may take up toeighteen months to ripen.

Major commercial citrus growingareas include southern China, theMediterranean Basin (includingsouthern Spain), South Africa,Australia, the southernmost UnitedStates, Mexico and parts of SouthAmerica. In the United States,Florida, California, Arizona, andTexas are major producers, whilesmaller plantings are present inother Sun Belt states.

Ornamental Plants

Citrus trees grown in tubs and win-tered under cover were a feature ofRenaissance gardens, once glass-making technology enabled suffi-cient expanses of clear glass to beproduced. An orangery was a fea-ture of royal and aristocratic resi-dences through the 17th and 18thcenturies. The Orangerie at thePalace of the Louvre, 1617,inspired imitations that were noteclipsed until the development ofthe modern greenhouse in the

The foliage is also used as a foodplant by the larvae of Lepidoptera(butterfly and moth) species such asthe Geometridae Common Emerald(Hemithea aestivaria) and Double-striped Pug (Gymnoscelis rufifasci-ata), the Arctiidae Giant LeopardMoth (Hypercompe scribonia), H.eridanus, H. icasia and H. indecisa,many species in the familyPapilionidae (swallowtail butter-flies), and the Black-lyre LeafrollerMoth ("Cnephasia" jactatana), atortrix moth.

Since 2000, the Citrus Leafminer(Phyllocnistis citrella) has been apest in California, boring meander-ing patterns through leaves.

In eastern Australia, the Bronze-orange Bug (Musgraveia sulciven-tris) can be a major pest of citrustrees, particularly grapefruit. Inheavy infestations it can causeflower and fruit drop and generaltree stress.

Production

According to UN 2007 data, Brazil,China, the United States, Mexico,India, Spain and Pakistan are theworld's largest citrus-producingcountries. Of these, Brazil, the US,and Mexico are the world's largestproducers of oranges, whilst Chinaproduces most of the world's man-darins, and India is the world'slargest producer of lemons andlimes.

Some modern hobbyists still growdwarf citrus in containers or green-houses in areas where it is too coldto grow it outdoors. Consistent cli-mate, sufficient sunlight, and prop-er watering are crucial if the treesare to thrive and produce fruit.Compared to many of the usual"green shrubs", citrus trees bettertolerate poor container care. Forcooler winter areas, limes andlemons should not be grown, sincethey are more sensitive to wintercold than other citrus fruits.Hybrids with kumquats (×Citrofortunella) have good coldresistance.

Pests & Disease

Citrus plants are very liable toinfestation by aphids, whitefly andscale insects (e.g. California redscale). Also rather important are theviral infections to which some ofthese ectoparasites serve as vectorssuch as the aphid-transmittedCitrus tristeza virus which whenunchecked by proper methods ofcontrol is devastating to citrineplantations.

European brown snails (Helixaspersa) can be a problem inCalifornia, though laying femaleKhaki Campbell and other Mallard-based ducks can be used for con-

Culinary

Many citrus fruits, such as oranges,tangerines, grapefruits, andclementines, are generally eatenfresh. They are typically peeled andcan be easily split into segments.Grapefruit is more commonlyhalved and eaten out of the skinwith a spoon. There are specialspoons (grapefruit spoons) withserrated tips designed for this pur-pose. Orange and grapefruit juicesare also very popular breakfast bev-erages. Lemonade or limeade arepopular beverages prepared bydiluting the juices of these fruitsand adding sugar. Lemons andlimes are also used as garnishes orin cooked dishes. Their juice isused as an ingredient in a variety ofdishes; it can commonly be foundin salad dressings and squeezedover cooked meat or vegetables. Avariety of flavours can be derivedfrom different parts and treatmentsof citrus fruits. The rind and oil ofthe fruit is generally very bitter,especially when cooked, and so isoften combined with sugar. Thefruit pulp can vary from sweet andtart to extremely sour. Marmalade,a condiment derived from cookedorange and lemon, can be especial-ly bitter, but is usually sweetened tocut the bitterness and produce ajam-like result. If ignored, later symptomsare bleeding and bruising easily.British sailors were given a rationof citrus fruits on long voyages toprevent the onset of scurvy, hencethe British nickname of Limey.

Pectin is a structural heteropolysac-charide contained in the primarycell walls of plants. The extract of itfrom Citrus Fruits is used in medi-cine such as Tylenol for the gellingeffect of it when broken down.Limes and lemons as well asoranges and grapefruits are amongthe highest in this level.

Bergamot Orange

Citrus bergamia, the Bergamotorange, is a fragrant fruit the size ofan orange, with a yellow coloursimilar to a lemon. Geneticresearch into the ancestral originsof extant citrus cultivars matchedthe bergamot as a likely hybrid ofCitrus limetta and Citrus auran-tium. Citrus bergamot is a nativehybrid of and commercially grownin Calabria, southern Italy, wheremore than 80% are found. It is alsogrown in southern France and inCôte d'Ivoire for the essential oil.The fruit is not grown for juice con-sumption.

Citrus bergamia is a small treewhich blossoms during the winter.The juice tastes less sour thanlemon, but more bitter than grape-fruit. The distinctive aroma of thebergamot is most commonly knownfor its use in Earl Grey tea. Thejuice of the fruit has also been usedin Calabrian indigenous medicineto treat malaria, and its essential oilis popular in aromatherapy applica-tions.

The bergamot orange is unrelatedto the herbs of the same name,Monarda didyma and Monarda fis-

stretch of land there where the tem-perature is favourable. It is also cul-tivated in Ivory Coast, but the qual-ity of the obtained essence is notcomparable with the essence pro-duced from the bergamots ofReggio due to the argillite, lime-stone and alluvial deposits foundthere.

Adulteration with cheaper productssuch as oil of rosewood has been aproblem for consumers. To protectthe reputation of their produce, theItalian government introduced tightcontrols, including testing and cer-tificates of purity. During WorldWar II, Italy was unable to export tocountries such as the Allied pow-ers. Rival products from Brazil andMexico came on to the market as asubstitute, but these were producedfrom other citrus fruits such assweet lime.

Bergamot essential oil

An essence extracted from the aro-matic skin of this sour fruit is usedto flavour Earl Grey and Lady Greyteas, and confectionery. An Italianfood manufacturer, Caffé Sicilia inNoto, Syracuse, Sicily, produces a

tulosa, which are in the mint fami-ly. The active ingredients in berg-amot juice are neoeriocitrin,naringin, neohesperidin, ponceritin,melitidin, and brutieridin. Melitidinand brutieridin, only recently dis-covered, exist only in citrus berg-amot, and exhibit statin-like prop-erties. Synephrine is not present incitrus bergamot.

Citrus bergamia has also been clas-sified as Citrus aurantium subsp.bergamia (i.e. a subspecies of bitterorange).

Citrus bergamia is sometimes con-fused with (but is not the same as)Citrus medica (citron, the yellowfruit of which is also known asetrog).

Production

A bergamot orange from Calabria,Italy

Production mostly is limited to theIonian Sea coastal areas of theprovince of Reggio di Calabria inItaly, to such an extent that it is asymbol of the entire city. Most ofthe bergamot comes from a short

commercial marmalade using thefruit as its principal ingredient. It isalso popular in Turkey, Greece andCyprus as a preserve, made withbergamot peel boiled in sugarsyrup. In Sweden and Norway,bergamot is a very common flavo-rant in snus, a smokeless tobaccoproduct. Likewise in dry nasalsnuff it is also a common aroma intraditional blends.

The actual fruit of the bergamotorange itself is not known to be edi-ble.

As a fragrance

Bergamot peel is used in perfumeryfor its ability to combine with anarray of scents to form a bouquet ofaromas which complement eachother. Approximately one third ofall men's and about half of women’sperfumes contain bergamot essen-tial oil. Bergamot is a major com-ponent of the original Eau deCologne composed by Farina at thebeginning of 18th centuryGermany. The first record of berg-amot oil as fragrance ingredient is1714, to be found in the FarinaArchive in Cologne. One hundredbergamot oranges will yield aboutthree ounces of bergamot oil.

Bergamot peel is also used in aro-matherapy to treat depression andas a digestive aid.

Companion plant

Citrus bergamia has aromatic roots

conditions such as psoriasis. It alsohas antiseptic properties which helpward off infection and aid recovery.

In the past, psoralen extracted frombergamot oil has been used in tan-ning accelerators and sunscreens.Psoralens penetrate the skin, wherethey increase the amount of directDNA damage. This damage isresponsible for sunburn and for anincreased melanin production. Itcan also lead to phytophotoder-matitis, a darkening of the skin as aresult of a chemical reaction thatmakes the skin extra sensitive toultraviolet light.

These substances were known to bephotocarcinogenic since 1959, butthey were only banned from sun-screens in 1995. These photocar-cinogenic substances were bannedyears after they had caused manycases of malignant melanoma anddeaths. Psoralen is now used onlyin the treatment of certain skin dis-orders, as part of PUVA therapy.

Potential medicinal properties

Bergamot essential oil has beenfound to reduce excitotoxic damageto cultured human neuronal cells invitro, and may therefore have neu-roprotective properties.

Bergapten and citropten are stronginhibitors of IL-8 expression andmay have potential to reduce lunginflammation in people with Cysticfibrosis.

Toxicology

In several studies, application ofsome sources of bergamot oildirectly to the skin was shown tohave a concentration-dependentphototoxic effect of increasing red-ness after exposure to ultravioletlight (due to the chemicalbergapten, and possibly also cit-ropten, bergamottin, geranial, andneral). This is a property shared bymany other citrus fruits. Bergaptenhas also been implicated as a potas-sium channel blocker; in one casestudy, a patient who consumed fourliters of Earl Grey tea per day suf-fered muscle cramps.

Bergamot is also a source of berg-amottin which, along with thechemically related compound 6’,7’-dihydroxybergamottin, is believedto be responsible for the grapefruitjuice effect in which the consump-tion of the juice affects the metabo-lism of a variety of pharmaceuticaldrugs.

Skin care

Bergamot is used in many skin carecreams and lotions which harnessits cooling, refreshing nature.Bergamot is ideally suited to helpcalm inflamed skin, and as such iscontained in some creams for skin

Clementine

A clementine is a variety of man-darin orange ( Citrus reticulata ), sonamed in 1902. The exterior is adeep orange colour with a smooth,glossy appearance. Clementinescan be separated into seven to four-teen segments. They tend to be veryeasy to peel, like a tangerine, butare almost always seedless. For thisreason they are sometimes knownas seedless tangerines; the clemen-tine is also occasionally referred toas the Algerian tangerinecitationneeded. They are typically juicyand sweet, with less acid thanoranges. Their oils, like other citrusfruits, contain mostly limonene aswell as myrcene, linalool, a-pineneand many complex aromatics.

The traditional story of its origin isthat it was "originally an accidentalhybrid said to have been discoveredby Father Clément Rodier in thegarden of his orphanage inMisserghin, Algeria." However,there are claims it originated inChina much earlier. James Saunthas commented that "Some author-ities believe it is virtually identicalto the variety known as the Cantonmandarin widely grown in Guangxiand Guangdong Provinces in

Clementines, usually grown inAlgeria, Spain, Morocco, Italy,Israel, Lebanon, and Turkey havebeen available in Europe for manyyears. A market for them in theUnited States was created recently,when the harsh 1997 winter inFlorida devastated domestic orangeproduction, increasing prices anddecreasing availability. Californiaclementines are available frommid-November through January;this availability has them referredto in some areas as "ChristmasOranges". Clementines are typical-ly shipped in small wooden or card-

Grapefruit

The grapefruit ( Citrus × paradisi )is a subtropical citrus tree knownfor its sour fruit, an 18th-centuryhybrid first bred in Barbados.When found, it was named the "for-bidden fruit"; and it has also beenmisidentified with the pomelo orshaddock (C. maxima), one of theparents of this hybrid, the otherbeing sweet orange (C. × sinensis).

These evergreen trees usually growto around 5–6 meters (16–20 ft)tall, although they can reach 13–15meters (43–49 ft). The leaves aredark green, long (up to 150 mm, 6inches) and thin. It produces 5 cm(2 in) white four-petaled flowers.The fruit is yellow-orange skinnedand largely an oblate spheroid; itranges in diameter from 10–15 cm.The flesh is segmented and acidic,varying in color depending on thecultivars, which include white, pinkand red pulps of varying sweetness.The 1929 US Ruby Red (of theRedblush variety) has the firstgrapefruit patent.

The fruit has become popular sincethe late 19th century; before that itwas only grown as an ornamentalplant. The United States quickly

The grapefruit was known as theshaddock or shattuck until the 19thcentury. Its current name alludes toclusters of the fruit on the tree,which often appear similar tograpes. Botanically, it was not dis-tinguished from the pomelo untilthe 1830s, when it was given thename Citrus paradisi. Its true ori-gins were not determined until the1940s. This led to the official namebeing altered to Citrus × paradisi,the "×" identifying its hybrid ori-gin.

An early pioneer in the Americancitrus industry was Kimball ChaseAtwood, a wealthy entrepreneurwho founded the AtwoodGrapefruit Co. in the late 19th cen-tury. The Atwood Grove becamethe largest grapefruit grove in theworld, with an annual production of80,000 boxes of fruit. It was therethat pink grapefruit was first dis-covered in 1906.

The 1929 Ruby Red patent wasassociated with real commercialsuccess, which came after the dis-covery of a red grapefruit growingon a pink variety. Only with theintroduction of the Ruby Red did

became a major producer of thefruit, with groves in Florida, Texas,Arizona, and California. InSpanish, the fruit is known astoronja or pomelo.

History

One ancestor of the grapefruit wasthe Jamaican sweet orange (Citrussinensis), itself an ancient hybrid ofAsian origin; the other was theIndonesian pomelo (C. maxima).One story of the fruit's origins isthat a certain "Captain Shaddock"brought pomelo seeds to Jamaicaand bred the first fruit. However, itprobably originated as a naturally-occurring hybrid.

The hybrid fruit was documented in1750 by a Welshman, Rev. GriffithHughes, who described specimensfrom Barbados. Currently, thegrapefruit is said to be one of the"Seven Wonders of Barbados."[10]It was brought to Florida by CountOdette Philippe in 1823 in what isnow known as Safety Harbor.Further crosses have produced thetangelo (1905), the Minneola tan-gelo (1931), and the oroblanco(1984).

Grapefruit is a good source of vita-min C, contains the fiber pectin,andthe pink and red hues contain thebeneficial antioxidant lycopene.Studies have shown grapefruithelps lower cholesterol, and there isevidence that the seeds have antiox-idant properties. Grapefruit forms acore part of the "grapefruit diet",the theory being that the fruit's lowglycemic index is able to help thebody's metabolism burn fat.

Grapefruit seed extract (GSE) hasbeen claimed to have strong antimi-crobial properties against bacteriaand fungi. However, no studieshave demonstrated any efficacy byGSE as an antimicrobial for eitherbacteria or fungi. Additionally,although GSE is promoted as ahighly effective plant-based preser-vative by some natural personalcare manufacturers, studies haveshown that the apparent antimicro-bial activity associated with GSEpreparations is merely due to con-tamination with synthetic preserva-tives.

Since grapefruit juice is known toinhibit enzymes necessary for theclearance of some drugs and hor-mones, some have hypothesizedthat grapefruit juice may play anindirect role in the development ofhormone-dependent cancers. In Costa Rica, especially in Atenas,grapefruit are often cooked toremove their sourness, renderingthem as sweets; they are alsostuffed with dulce de leche, result-ing in a dessert called toronja rel-lena ( stuffed grapefruit ).

Lemon

The lemon is both a small ever-green tree ( Citrus × limon, oftengiven as C. limon ) native to Asia,and the tree's ellipsoidal yellowfruit. The fruit is used for culinaryand non-culinary purposes through-out the world - primarily for itsjuice, though the pulp and rind(zest) are also used, mainly incooking and baking. Lemon juice isabout 5% to 6% (approximately 0.3M) citric acid, which gives lemonsa sour taste, and a pH of 2–3. Manylemon flavored drinks and foodsare available, including lemonadeand sherbet lemons, as well aslemon and seasoning salt as asnack. The distinctive sour taste oflemon juice makes it a key ingredi-ent in many dishes across theworld.

History

The exact origin of the lemon hasremained a mystery, though it iswidely presumed that lemons firstgrew in Southern India, northernBurma, and China. In South andSouth East Asia, it was known forits antiseptic properties and it wasused as an antidote for various poi-sons. Lemons entered Europe (near

lemon seeds to Hispaniola along hisvoyages. Spanish conquestthroughout the New World helpedspread lemon seeds. It was mainlyused as ornament and medicine. Inthe 18th and 19th centuries, whenlemons were first used widely incooking and flavoring, they wereincreasingly planted in Florida andCalifornia.

In 1747, James Lind's experimentson seamen suffering from scurvyinvolved adding vitamin C to theirdiets with lemon juice.

The etymological path of the wordlemon suggests a Middle Easternorigin. One of the earliest occur-rences of "lemon" appears in aMiddle English customs documentof 1420–1421, which draws fromthe Old French limon, thence theItalian limone, from the Arabiclaymu-n or li-mu-n, and from thePersian li-mu-n (a generic term forthe fruit of this kind) which is con-gnative with Sanskrit (nimbu-,“lime”).

The first substantial cultivation oflemons in Europe began in Genoain the middle of the 15th century. Itwas later introduced to theAmericas in 1493 whenChristopher Columbus brought

Growing Lemons

Lemons, in common with othersweeter, slow growing varieties ofcitrus, often benefit from beinggrafted to more vigorous root-stocks.

Differences between orange andlemon

Various citruses do not fit the popu-lar or botanical definition oforanges or lemons. For instance thekratta citrus of India has an orangeleaf, an orange exterior, an orangepulp, yet its fruit is prominentlymammillate (covered with roundedprotuberances), and its flower istinged purple. The acidless citrus,the mitha-nimboo, has a lemon-yel-low exterior, a white pulp, and it ismammillate. Its leaves are like alemon's, but its flowers are purewhite. The jkamblri proper hasorange-like leaves, the flowers areslightly tinged with purple, thepulp, varies from white to pale yel-low, or orange, and the fruit ismammillate, and of two kindsexternally, either of an orangecolour, or of a lemon-yellow, andpossibly also of a fawn colour.

Meyer

This is a cross between a lemonand possibly an orange or a man-darin, and was named for Frank N.Meyer, who first discovered it in1908. Thin-skinned and slightlyless acidic than the Lisbon andEureka lemons, Meyer lemonsrequire more care when shippingand are not widely grown on a com-mercial basis. Meyer lemons have amuch thinner rind, and oftenmature to a yellow-orange color.Meyer lemons are slightly morefrost-tolerant than other lemons.

Ponderosa

The tree is more cold-sensitive thantrue lemons; the fruit are thick-skinned and very large. Likely acitron-lemon hybrid.

Variegated Pink

A varietal of the eureka or lisboncultivars with variegated patterns inthe foliage and the rinds of imma-ture green fruit. Upon maturing toyellow, the variegated patternrecedes in the fruit rind. The fleshand juice are pink or pinkish-orange instead of yellow.

A Spanish variety of unknown ori-gin

Culinary Uses

Lemon juice, rind, and zest are usedin a wide variety of culinary appli-cations:

Cooking

In cooking, lime is valued both forthe acidity of its juice and the floralaroma of its zest. Mandarin

The Mandarin orange, also knownas the mandarin or mandarine (bothlower-case), is a small citrus tree( Citrus reticulata ) with fruitresembling other oranges.Mandarin oranges are usually eatenplain or in fruit salads. Specificallyreddish-orange mandarin cultivarscan be marketed as tangerines, butthis is not a botanical classification.

The tree is more drought-tolerantthan the fruit. The mandarin is ten-der, and is damaged easily by cold.It can be grown in tropical and sub-tropical areas.

Varieties

The mandarin orange is a variety ofthe orange family. The mandarinhas many names, some of whichactually refer to crosses betweenthe mandarin and another citrusfruit.

Tangelo

The tangelo TAN-j-loh; C. reticula-ta × C. maxima or x C. paradisi),Citrus × tangelo, is a citrus fruithybrid of tangerine and pomelo orgrapefruit. Widely known as hon-eybells, tangelos are the size of anadult fist, have a tangerine taste,and are juicy at the expense offlesh. They generally have looseskin and are easier to peel thanoranges, readily distinguished fromthem by a characteristic "nipple" atthe stem.

Varieties of Tangelo’s

Orlando

The early maturing Orlando tange-lo is noted for its juiciness, mildand sweet flavor, large size, andflat-round shape with a characteris-tic knob. California/Arizona tange-los have a slightly pebbled texture,good interior and exterior color,very few seeds, and a tight-fittingrind. Orlando tangelos are availablefrom mid-November to the begin-ning of February. It originated as across between a Duncan grapefruitand a Dancy tangerine. W. It isnamed after Minneola, Florida.Most Minneola tangelos are charac-terized by a stem-end neck, whichtends to make the fruit appear bell-shaped. Because of this, it is alsocalled the Honeybell in the gift fruittrade, where it is one of the mostpopular varieties. The fruit is usual-ly fairly large, typically 9 - 9½inches in circumference. The peelcolor, when mature, is a bright-red-dish-orange color. The rind is rela-tively thin, so the fruit peels easily.It is quite juicy. The Minneola isnot strongly self-fruitful, and yields

Tangerine

The tangerine ( Citrus tangerina ) isan orange-colored citrus fruit whichis closely related to the Mandarinorange (Citrus reticulata).Taxonomically, it may be named asa subspecies or variety of Citrusreticulata; further work seems to berequired to ascertain its correct sci-entific name. Tangerines are small-er than most oranges, and are usual-ly much easier to peel and to splitinto segments. The taste is oftenless sour, or tart, than that of anorange. While less tart, tangerinesare considered to be sweeter thanoranges.

What can be considered by some tobe a good tangerine will be firm toslightly soft, heavy for its size, andpebbly-skinned with no deepgrooves, as well as orange in color.Peak tangerine season lasts fromOctober to April in the NorthernHemisphere. Tangerines are mostcommonly peeled and eaten out ofhand. The fresh fruit is also used insalads, desserts and main dishes.The peel is dried and used inSichuan cuisine. Fresh tangerinejuice and frozen juice concentrateare commonly available in theUnited States. The number of seeds

The ponkan or Chinese honey tan-gerine is very popular aroundMelrose, Florida, where it wasintroduced from China by a mis-sionary, Rev. Barrington, in 1883. Itis easily peeled, much like aSatsuma mandarin, but has moreflavor and grows true from theseeds. Growing tangerines from theseeds may take longer, as usuallyseven or eight years are requiredbefore the first fruit, but the treeswill be more cold hardy than a sim-ilar grafted tree (even if graftedonto the cold hardy trifoliate orangerootstock) and larger. Seedlingsmust be kept moist until planting. Ifthey dry out they will not germi-nate. Oranges do not always cometrue from seeds due to pollinationand hybridization problems, butnearly all tangerines can be growntrue from seed, contrary to popularnotions.

Nutrition

Tangerines are a good source ofvitamin C, folate and beta-carotene.They also contain some

A popular alternative to tangerinesare clementines, which are calledseedless tangerines and are also avariant of the mandarin orange.

Tangerines have been cultivated forover 3,000 years in China. They arealso high in concentration in pres-ent day Burma. Tangerines havebeen found in many shapes andsizes, from as small as a small wal-nut, to larger than an averageorange.

Varieties

Honey tangerines (murcotts as it iscalled in the industry) are the mostwidely grown tangerine, trailed bythe sunburst tangerine, and withlowest amount of acreage the fall-glo.

One of the oldest and formerlymost popular varieties is the Dancytangerine, but it is no longer widelygrown.The Dancy was known asthe zipper-skin tangerine, and also

potassium, magnesium and vita-mins B1, B2 and B3. Tangerine oil,like all citrus oils, has limonene asits major constituent, but alsoalpha-pinene, myrcene, gamma-ter-pinene, citronellal, linalool, neral,neryl acetate, geranyl acetate,geraniol, thymol, and carvone.

New research from The Universityof Western Ontario has discovereda substance in tangerine skins thatnot only prevents obesity in mice,but also offers protection againsttype 2 diabetes, and even athero-sclerosis, the underlying diseaseresponsible for most heart attacksand strokes. Murray Huff, a vascu-lar biology scientist at the SchulichSchool of Medicine & Dentistry,along with Erin Mulvihill, a PhDstudent, studied the effects of aflavonoid in tangerines calledNobiletin. Their research is pub-lished in the journal Diabetes

Origin of Name

According to the Oxford EnglishDictionary, the word "tangerine"was originally an adjective mean-ing "Of or pertaining to, or nativeof Tangier, a seaport in Morocco,on the Strait of Gibraltar" and "anative of Tangier." The OED citesthis usage from Addison's TheTatler in 1710 with similar usesfrom the 1800's.
