Dear Members,

For those not aware, I am both pleased and proud to announce that the Club was voted BEST FUNCTION/CONVENTION CENTRE CATERER, at the 2015 Restaurant & Catering “Savour Awards for Excellence”. This accolade is acknowledgement of the hard work and dedication of our entire Team and their commitment to maintaining the highest quality of service to our Members. None of this would be achievable without your continued encouragement and support, so please accept my sincerest thanks on behalf of the whole Team.

The Festive season is fast approaching, so I would like to remind you that the Club has a range of fantastic year-end party packages available, catering to groups both large and small.

If you are in search of a special Christmas present for your loved one this year, you may want to consider gifting them with Club Membership. With no joining fees attached, your spouse will receive full membership privileges, allowing them to enjoy the Clubs facilities independently. Please contact reception for further information.

Throughout the next quarter the Club has a variety of activities planned, including the last in this years’ series of Breakfast by the Bay, Melbourne Cup lunches in both the Banquet Hall and Club Café, a Christmas Karaoke Night and Members’ Christmas Barbecue; as well as the ever popular First Friday Jazz Nights in the Club Restaurant.

All the above events are expected to be popular, so please book early to avoid disappointment. However, if you’re simply searching for somewhere nice to catch up with friends before year-end, you may want to consider treating them to Saturday High Tea. Bookings are essential and can be made at reception.

As with last year, the Club will once again be supporting ‘Operation Christmas Child’. This is a unique project that brings joy to children in need through the donation of a simple shoebox filled with gifts. Last year we collected close on 200 boxes, which we are hoping to do the same this year. More details and boxes will be available from reception and as with last year, all those returned before the 29 October will receive a $10.00 Café voucher, in thanks of their generous donation.

Veteran political journalist

Peter Kennedy has spent more

than forty years observing

politics in Western Australia

across an extraordinary period

of change in the State’s

history, from 1970 to 2013.

His insider’s account reveals

first-hand the issues linked

with changes to the social

fabric of Australia; the

jailing of two premiers and a

deputy premier; the ruthless

removal of a premier mid-term; the election of the nation’s

first female premier; and the sensational ‘WA Inc’ Royal

Commission.

Kennedy interviewed widely to make this account of how

the boom–bust West was led into its status as an economic

powerhouse of the twenty-first century.

His interviewee’s included Premiers Brian Burke, Peter

Dowding, Carmen Lawrence, Richard Court, Geoff Gallop

and Colin Barnett, and also federal leaders and ministers,

including Malcolm Fraser, John Howard, Paul Keating,

Graham Richardson and Malcolm Turnbull.

other, sometimes unwittingly and often profoundly. They

offer us the pleasure of listening to different voices, and

the satisfaction of careful crafting and evocative prose.

Susan Midalia is a Western Australian writer and freelance

editor who conducts workshops on short story writing.

Susan studied at the University of Western Australia and

Cambridge University and holds a PhD in contemporary

Australian women’s fiction.

Vasse Felix Date: Wednesday 7 October

Vasse Felix was established in 1967 and is Margaret River’s

founding wine estate.

Vasse Felix produced Margaret River’s first Cabernet Sauvignon

at the estate in 1972 and the wines maintain a reputation as

regional and national benchmarks.

Founder Dr Tom Cullity searched the region relentlessly for

his first vineyard site, before selecting 8 acres in Wilyabrup,

which today remains at the heart of the Vasse Felix Estate.

Vineyard expansions have been made with equal consideration

and an unwavering commitment to Cullity’s simple founding

aim: “to make the best possible wine.”

All winemaking from vine to bottle is controlled within the

estate. Fruit is harvested, fermented and matured in small,

separate parcels before each barrel is graded, trial blended

and allocated to its final wine, working from the Icon wines,

through the Premier, Filius and Classic tiers.

Everyone is welcome to visit the Vasse Felix Estate, which is

regarded as one of Australia’s draw-card winery destination

experiences and includes a restaurant, cellar door and art

gallery.

Join us each month for our formal wine tasting where a selected vineyard, wine style or region will be showcased by a winery representative. The wines sampled will be complemented by a selection of delicious ‘bites’. The Forest Hill philosophy is to make wines of the highest

quality, each having its own distinctive regional character.

Forest Hill follows the practice of having an unirrigated

vineyard, producing low-yielding harvests which give

maximum fruit quality and hence flavour intensity. With

their own winery facility in Denmark and passionate

winemaking team in place, they control all aspects of

the winemaking, allowing the Forest Hill identity to be

maintained and monitored. This ensures all Forest Hill

wines are made with dedication to their philosophy and a

determination to produce premium quality, unique wines.

Devil’s Lair Hosted by Luke Steer – Senior Winemaker

Date: Tuesday 27 October

Quintessential Margaret River, Devil’s Lair offers

beautifully crafted wines that express the distinctive style

of this renowned winemaking region and the singular

combination of geography and climate that is unique

to Devil’s Lair.

Led by the recently appointed Senior Winemaker Luke

Steer, the team at Devil’s Lair produce beautifully crafted

wines including the highly regarded Devil’s Lair Margaret

River Chardonnay and the Devil’s Lair Margaret River

Cabernet Sauvignon.

Luke, who joined Devil’s Lair in July, grew up in the

Coonawarra wine region of South Australia and, as

a fourth-generation local, it’s not surprising that he

developed a desire to craft wine from a young age.

Luke worked his first vintage while still at school in 1996

and his second vintage at Wynns Coonawarra Estate.

From 2002 to 2004 he worked in McLaren Vale, while

studying oenology at Adelaide University, and went on

to complete vintages in Coonawarra, Bordeaux and the

Barossa Valley.

The University Club’s monthly wine dinners offer an evening filled with fabulous wine which is complemented by a stunning three-course menu specifically designed to match each wine. Usually hosted by the winemaker or representative from the label being presented, these wine dinners offer excellent value and guarantee a great night out.

In 2008, Luke became a winemaker at Wynns where he was

responsible for crafting the finest expression of Coonawarra

each vintage, in particular its hero variety Cabernet

Sauvignon. While at Wynns, Luke enjoyed juggling the

challenge and demands of vintage, refining his winemaking

skills and appreciating the region’s unique characteristics. In

2013, Luke was awarded the Wine Society’s Australian and

New Zealand Young Winemaker of the Year.

In 2015, Luke sought a new challenge. Having appreciated

Margaret River Cabernet for many years, Luke was delighted

to take up the position of Senior Winemaker at Devil’s Lair.

This new role of Devil’s Lair Senior Winemaker is allowing

him to expand his skills in winery management, further

cultivate the team and family-like culture of the winery,

and work more with Chardonnay.

Stylistically, Luke believes the Devil’s Lair wines are set to

soar. He is looking forward to better understanding Margaret

River’s subregions, embracing a different style of Cabernet,

immersing himself in Chardonnay and continually ensuring

that the small details of exceptional winemaking are met

in order to ensure the quality of each vintage.

Join Kerry O’Brien for breakfast as he gives us an

insight into his latest publication, Keating.

Keating is the story of Australia’s 24th prime minister,

Paul Keating, in which O’Brien paints a portrait unlike

any other.

At this breakfast Kerry will discuss the collaboration

that brought about this unique work and how he

gathered an enormous bank of new material, gleaned

during many hours of conversation and interviews

with Keating, to create an all-encompassing portrait.

Kerry O’Brien captures the hallmarks of the man —

the nimble mind, the wit, the sweep of vision, the

ruthlessness and the stubborn drive for power —

as Keating explains the historic events, back-room

stoushes, and moments of drama and pathos that the

political world inevitably holds.

ABOuT KErrY O’BriEn

Kerry O’Brien has been reporting and commenting

on Australian politics for 50 years. He started as a

news cadet in 1966 and was a press secretary to Gough

Whitlam after he left government. During his career

O’Brien has won six Walkley Awards, including the Gold

Walkley. He was the founding presenter of Lateline and

then the long-time presenter of The 7.30 Report. He

currently hosts Four Corners on ABC Television.

Meet Perth International Arts Festival’s new artistic director

Wendy Martin as she shares with you highlights of the 2016

festival program.

Wendy Martin’s career embraces television production,

theatre and dance programming and production, event

production and a contribution to the arts through board

membership. She has a track record as a commissioner of

innovative theatre and dance projects, and of developing

major programming initiatives at a number of the world’s

leading performing arts centres.

Previously, Wendy was Head of Performance and Dance

at Southbank Centre, London, where her achievements

include creating the acclaimed disability arts festival

Unlimited. A celebration of disability arts and culture on

an unprecedented scale, Unlimited had its inaugural outing

during the Paralympic Games and was a highlight of the

London 2012 Cultural Olympiad.

Nick has been leading educational, cultural and

Extension and is a popular presenter in photography

Nick is one of only three photographers to have won the

AIPP ‘Australian Professional Landscape Photographer

of the Year’ three times. Nick was awarded the West

Australian Professional Landscape Photographer of the

Year in 2005. He is also the 2011 and 2013 runner-up

to the ‘Australian Travel Photographer of the Year’. In

2002, Nick achieved a Master of Photography from the

Professor Paul Flatau commenced as the Chair in Social

Investment and Impact and Director of the UWA Centre

for Social Impact (UWA CSI) at the UWA Business School

in December 2010.

The UWA CSI teaches, researches and engages with the

community, the not-for-profit sector, industry, government,

social enterprises, philanthropists and impact investors

around the design, financing, provision, and leadership

of social purpose activities and with the evaluation of the

social impact of those activities. Its key aim is to generate the

evidence base around actions that create beneficial social

impact, disseminate that knowledge through teaching and

engagement activities and develop policy and community

dialogue around that impact.

The UWA CSI runs the Graduate Certificate in Social Impact

(GCSI) which examines modern theory and practice across the

four pillars of social impact assessment, social investment,

social leadership and social innovation and enterprise.

Paul’s key research areas include the economics of social

policy, labour economics, housing and homelessness and

the history of economic thought and he has over 100

publications to his name.

Join WA Treasurer Dr Mike Nahan as he discusses the

significant public and private capital investment which is

underpinning the rapid growth of the State’s economy.

Dr Nahan will examine the changing nature of WA’s state

infrastructure needs and the innovative delivery methods

being used by the State to meet the ongoing requirement

for high quality infrastructure.

Dr Mike Nahan is the Western Australian Treasurer; Minister

for Energy; Citizenship and Multicultural Interests. Dr Nahan

was appointed to cabinet as Minister for Energy; Finance;

Citizenship and Multicultural Interests in March 2013 and

was elevated to the position of Treasurer in March 2014.

He was first elected as the Member for Riverton in 2008 and in

2012 was appointed to the position of parliamentary secretary

to the Minister for Education, Energy and Indigenous Affairs.

Dr Nahan chaired the Economics and Industry Standing

Committee and has undertaken important inquiries into

big issues affecting the State, including domestic gas prices.

Prior to becoming a state politician he was executive

director of the Institute of Public Affairs, a leading national

conservative think tank.

Mike holds a PhD in Economics from the Australian National

University and was awarded a Centenary Medal by the Australian

Government in 2000 for his contribution to public policy.

Rotary of CrawleyThe university Club has been home to the

rotary Club of Crawley (rOC) since it was

established a little over five years ago.

rOC was established with a modern and

innovative approach on the 110-year-old

international service organisation. rOC’s

Patron is the current Vice-Chancellor of

the university of Western Australia

Professor Paul Johnson.

RoC upholds Rotary’s core objective

of “Service Above Self” incorporating

community service and fellowship, which

play an integral role in bringing the RoC

community together. Regardless of members’

backgrounds, ages or financial status, the

spirit of giving resonates loudly here.

Two thirds of our members are under 50

years of age and include business owners,

senior and middle managers, and students.

Fields of expertise encompass a diversity of

occupations from engineers to fundraisers.

It is this eclectic mix of skill and life experience

which creates stimulating conversations

and exchanges of opinions each Thursday

morning when RoC meets for breakfast at

7.00am. Members and their guests arrive

and make a bee-line for the coffee station,

greeting one another with large smiles, hugs

and handshakes. Regulars sometimes pick up

conversations from where they left them the

previous week and guests arriving for the

first time are welcomed and looked after.

At 7.30am our official meeting commences

in the dining room with an enthusiastic

MC welcoming all before handing the

microphone to the President of the Club

who outlines the agenda for the day. Usually

there is further networking over a delicious

breakfast, followed by an inspirational

presentation by a guest speaker, updates

from various club members regarding the

community projects they are working on

and invites for people to volunteer and

assist. The energy is palpable with ideas and

chatter and by the time the meeting ends at

8.30am sharp for those to move on to work

or University study, others may plan to meet

up with other members to discuss projects

that they are collaborating on.

RoC members also enjoy a social connection

outside of the weekly meetings, supported

by a program that includes after-work drinks,

dinners and the occasional art exhibition

often at the University Club. Many of its

younger members also participate in one-

on-one mentoring sessions with senior RoC

members, helping them with personal and

career goals.

RoC loves to welcome new guests and

Roasted turkey with pork, apple & sage stuffingCosta’s delicious roast turkey is sure to take pride of place on your table this Christmas.

Ingredients4 kg whole turkey

100 g of brown onions finely diced

10 g of crushed garlic

40 g of butter

2 granny smith apples, peeled, cored and grated

300 g of ground pork mince or skinless pork sausages

30 g of chopped fresh sage leaves

30 g of chopped Italian parsley leaves

150 g of sour dough breadcrumbs

Zest of 1 lemon

1 tsp of five spice powder

Salt & cracked pepper

Method1. Sauté the onion and garlic in the butter over a medium

heat until soft.

2. Remove from the heat then add the apple to the pan and

mix through with the onion and garlic.

3. Allow to cool and then mix in the pork mince/sausages and

the remaining herbs, spices and lemon zest.

4. Spoon stuffing into the turkey body cavity, neck end as

well as between the breast and skin. Be careful not to tear

the skin!

5. Fold the neck flap over to the back and secure with a

poultry pin or metal skewer.

6. Weigh your stuffed turkey to calculate its optimum

cooking time – allow 30 minutes per 1 kg of turkey.

7. Preheat the oven to 180°C fan forced.

8. Spread butter over the turkey and season with salt and

pepper.

9. Place the turkey on a rack in a large roasting pan and

raise the legs up using some crumpled aluminium foil.

10. Put 100 ml of cold water and 100 g butter into the roasting

pan.

11. Cover the pan and turkey with greased foil and roast

according to your calculated time.

12. Baste the turkey every 30 minutes with its pan juices and

remove the foil for the last 30 minutes to brown.

13. Insert a skewer into the thicker section of the turkey’s

thigh; if the juices run clear then the turkey is done.

14. Remove from the oven, cover loosely with foil and leave

in a warm place for 20–30 minutes before carving.

15. Serve with gravy, roasted new potatoes, Brussel sprouts

and French beans with almonds and butter.
