A Message from our President June is considered by many to be a very good month.
For educators June usually means it is time to wrap up another school year and get recharged for another. For those who are retiring it signals the progress to another chapter of life. Regardless of our current professional responsibilities, all of us are preparing for another summer and the myriad of activities that often entails including family fun, travel, sun, and our delicious Maryland Crabs!
As you enjoy the summer sun, give some thought to how Epsilon Chapter can continue to grow and stay relevant to today’s women educators. Give thought to what we, as a chapter, can do for and with our current members to support each other and encourage continued professional and personal growth. Call another member and brainstorm ideas. Consider what you would like to learn. Is this something others in the chapter might like to explore as well? Think creatively and expansively and then share those thoughts with others in Epsilon. You may start a firestorm of great possibilities for us!
Lastly, I want to thank all of you for everything you do to make this chapter such a wonderful one. For the past two years as your president, you have made things easy because individually and collectively you have been supportive, encouraging, and willing to work. It is delightful to go to a state meeting or open email and have so compliments about the chapter come my way. When my work commitments became overwhelming, Dawn (your new president) jumped in and smoothly kept things moving forward. Thanks so much Dawn for your help.
Congrats to all of our wonderful slate of officers. Our new officers are outstanding members who will lead us smoothly along DKG waters. We have several returning officers who have served with diligence, commitment, and efficiency and we know those good works will continue. With all of these individuals at the helm, we are in good hands. Epsilon has been, is, and will continue to be an awesome chapter! Please return in the fall ready to support this awesome executive board.
As you don your sunglasses and slather on sunscreen, please enjoy your families and the world around you. Make sure you spend a little time and energy on yourself. Read a few good books, take a class, use your green thumb and grow something, swim, explore, blow bubbles, walk a boardwalk, learn a new language……. The options are endless. Whatever you choose to do, please have a terrific, fun, and safe summer. – Karen Neal

Recipe Corner
Cheese Danish
Submitted by Jayne Alexis (This is the dish Jayne brought to our March meeting.)
2 packages (8 oz. each) cream cheese
2 packages Pillsbury Crescent Rolls
1 tsp. vanilla
1 tsp. lemon juice
1 cup sugar
1 egg, separated
Grease a 9x13 inch pan. Spread out one package crescent roll dough on bottom of pan. Cream together the cheese, vanilla, lemon juice, sugar and egg yolk. Spread cream cheese mixture evenly over dough in the pan. Lay out second package of crescent roll dough over cheese mixture. Brush with slightly beaten egg white and sprinkle with a little bit of cinnamon sugar. Bake at 350 degrees for 25 to 30 minutes. Cool completely before cutting into bars.
Note:
For the top layer, I lay out the crescent roll dough on a piece of parchment paper and press the segments together into a 9x13 inch shape. Then I turn the parchment over on top of the cream cheese mixture in the pan and peel off the paper. I find this recipe works best if made the night before and chilled in the refrigerator overnight.
