the situation involving COVID-19. As August approaches, things are still fluid and changing every week.

Now Hiring Referees

If you are looking for a great part-time job opportunity, we are now hiring seasonal referees for the upcoming and Fall Soccer season. This is an excellent job for high school students looking for some extra money with the opportunity to transition to other employment.Games are scheduled on Saturday mornings at Heritage Landing and Bartram Springs.

Qualifications:To qualify for the job, you must be at least 15 years old, available toreferee at least 5 Saturdays of the eight week season starting in September and be able to make quick decisions.

Games are played anytime between 8:00 am - 3:00 pm.

Peach, Tomato & Corn Arugula Pasta Salad

Ingredients8 ounces fusilli or bowtie pasta (regular, whole grain or gluten free will work)2-3 tablespoons extra virgin olive oil1 lemon, juiced1/2 teaspoon sea salt, plus more to tasteLot of freshly ground salt and pepper1/4 teaspoon of red pepper flakes4 ounces crumbled feta or sub goat cheese (about ¾ cup)2 large ripe peaches, sliced1 pint cherry tomatoes, halved (I love using heirloom cherry tomatoes for color variety!)1 cup raw corn off the cob (or you can use thawed frozen corn or canned)½ medium red onion, thinly sliced5 ounces baby arugula (about 6 packed cups of arugula)Optional:Quartered salami and avocado (makes leftovers last longer and adds texture to the salad!) -- add as much as you'd like!

1.Bring a large pot of water to a boil and add a little salt. Once water boils, add the pasta and cook until al dente, about 7-9 minutes. Drain pasta, reserving a few tablespoons of water for later. Place pasta in large bowl.2.In a small bowl, whisk together the olive oil, lemon juice, salt, pepper and red pepper flakes until well combined. Pour the dressing over warm pasta and add a little reserved pasta water to help keep the pasta moist and non-sticky. Immediately add feta and gently give the pasta a toss.3.Next add in the peach slices, cherry tomatoes, corn, red onion and arugula. Toss to combine. Taste and add more olive oil, lemon juice, salt and/or pepper, if necessary. Great warm or cold. Serves 6.

Antioxidant Berry Smoothie

INGREDIENTS½ cup frozen blackberries½ cup frozen raspberries (or sub strawberries)1/4 cup frozen blueberries (I like wild blueberries)1 frozen banana2 cups organic spinach1 tablespoon flaxseed meal1 tablespoon almond butter (or your favorite nut butter)½ cup plain greek yogurt (whole, 2% or fat free will all work)½ cup unsweetened almond milk, plus more as necessaryOptional: 1 tablespoon hemp seeds

In a large high-powered blender, add in all ingredients and blend on high for 1-2 minutes or until all ingredients are well combined. If necessary, add in more almond milk to thin the smoothie. Makes 1 smoothie.
