Designer Amanda Pratt believes that beautiful spaces are good for the soul. “I think beauty, visual balance and colour have an amazing effect on the spirit,” she says, “being surrounded by things you consider beautiful or are useful to you, or perhaps make you smile because of a memory, is spirit-enhancing too.”

The Victorian villa that she has lived in with her family for more than 20 years is typical of the period, with high ceilings and elaborate plasterwork, marble fireplaces and a basement above ground level with huge windows so that every room is full of light. A flight of steps leads to the front door and recently, a new kitchen and dining area was added to better embrace the lovely rear garden. Back in 1840, the house might have been full of clutter, paintings, furniture and drapes. Now, with Amanda’s style as the main influence, the most is made of its light, with colourful objects she has collected, designed or made, things that have a story and mean something, catching the eye against the restrained and neutral backdrop.

room is Amanda’s Bangalore-born

great-grandmother Maude’s wedding

jacket, c1870. On the mantelpiece

is a piece of Staffordshire pottery

which depicts Ireland and Great

Britain shaking hands across the sea

beneath an Angel of Peace, produced

to commemorate the signing of the

Kilmainham Peace Treaty in 1882, and

a pair of antique rose quartz Japanese

cherry blossoms. The mirrored gilded

sconce is one of a pair, and the 18th-

century portrait of John Philip Kemble

was left to Amanda by her late

uncle Sandy Pratt who lived in Ibiza.

Amanda uses the antique Chinese

box on the table as a sewing box.

The taxidermy crane (“I don’t normally

approve of taxidermy but I felt he

needed to be rescued”) was found

at The Store Yard, Portlaoise.

Having finally secured a refund on the planned Christmas escape, Sophie has decided to relocate her skiing holiday to her terrace. Verbier to Vico is the theme. As she

shelled out a fortune on a new Moncler jacket, Sophie is determined to get some mileage from the purchase. She has styled herself on Aerin in Aspen and has been applying Nunaia’s new nourishing radiance serum to accentuate an outdoorsy inner glow.

As for the terrace, Sophie has been sourcing the most sustainable firepit, and has visited every garden centre within her 5km radius. She is getting the local carpenter to knock up a wooden frame from which she will hang lights and fir garlands, or in worse case (rain) scenario, a heavy-duty tarpaulin sail. Other accessories to be sourced include lanterns, a log store, sheepskin throws and lots of potted eucalyptus and rosemary. So much to do, so little time … Sophie is planning the big terrace reveal for Christmas week in a carefully stage-managed media campaign across Insta Stories and Twitter.

Sourcing a series of matching Christmas jumpers for the family has also taken time to plan. Fair Isle, Aran, Nordic and ironic, Sophie has made sure she has all themes (and festive colour palettes) covered. As for catering, on the menu is the three Cs – cheese, champagne and chocolate (Sophie has ordered Avoca’s Belgian Chocolate and Orange cakes from its new bitesize range – so handy for dieting and popping in the freezer). Raclette and fondue evenings will be interspersed with barbecues. Tony, her husband, has done a Weber advanced course and is now a whizz at “under lid” barbecuing – the turkey will be cooked al fresco. Sophie is determined to use Christmas to pivot her new career as a lifestyle guru in 2021.

hat's on the horizon for 2021? Our passion for skincare reached mighty levels last year and will continue, with multi-purpose products dominating. We all still want the glow and a natural look but celebrate your inner Tom Ford, too – the designer championed “the indulgence of full-on

n the cold, dark days of early February, never have we needed a change of scene quite so much, nor craved sunshine, nor dreamt more of faraway shores. In my kitchen and on my plate, I am simply heading far South and far East to recharge and dream until the warmer days of spring arrive.

My edible light therapy starts at my little local market in Bellême and in my favourite semi-chic supermarket, Grand Frais, where nature is kind enough to provide tonnes of sunny, citrus fruit just when we need it most. At the market there are the usual clementines and satsumas, eating and juicing oranges, limes, kumquats and grapefruit, which always come with the free-of-charge recipes and cheerful banter from stallholders. But it’s the more exciting supermarket, Grand Frais, where they pride themselves on stocking exotic fruit originating from all over the world and now grown in Southern Europe, where I can truly take a trip.

Fresh yuzu are probably my most indulgent treat. They look like a cross between a clementine and a squat, knobbly lemon with a deep yellow colour and instantly transport me to Japan in my imagination, where I have not yet been in real life. Their zest is the most precious part of them, as their insides have large pips and a small amount of not very juicy flesh. I like to grate one onto grilled fish

or seafood, or let the zest infuse in warmed cream for chocolate ganache.

Finger limes, or caviar lemons, take me to Australia, preferably at a table overlooking the world’s most beautiful pool at Icebergs Restaurant, Bondi Beach, eating twice-cooked suckling pig with artichoke and fennel. Resembling short, plump gherkins, they grow on low, thorny shrubs. Their flesh bursts out when they are opened into delicious, tight, citrus pearls, coloured from a delicate pink to the lightest yellow, which pop in your mouth – and their zest is good too. I love them mixed into a light vinaigrette served with oysters, or topping some scallops fried or roasted in butter, with lots of good pepper. In true Aussie style, they also look and taste lovely mixed with mango and kiwi on top of a snowy pavlova.

Cedrat, mostly grown in Morocco, is intriguing looking – large, knobbly, ancient – and challenging to use. Its zest is beautifully fragrant, making it a good candidate to replace lemons for limoncello (see my recipe on www.thegloss.ie), but inside, it is mainly pith, with sometimes no flesh at all. Traditionally, sliced cedrat is candied but this is a laborious process to try at home, taking much time and more sugar. I like to have a couple of these decorating my kitchen, next to pomegranates and quince, a promise of intoxicating Marrakech days.

To my mind, bergamot lemons are perhaps the most romantic and evocative of all citrus fruits, their distinctive, familiar notes present in perfume and Earl Grey tea. This year is the first I will get my hands on the actual fruit, and I’m planning to make Susan Hermann Loomis’ lovely (easy!) bergamot

For 6-81 night’s maceration1 hour cooling of the pastry50 minutes baking 20 minutes preparation

2 Meyer (or normal) lemons

• 400g caster sugar • 3 eggs

• 30g melted butter, cooled

• 100g cold butter, diced

• 50g icing sugar • 175g plain

flour • 1 egg, lightly beaten

1. Slice the lemons very finely,

using a mandolin if you have

one – and dare! Remove the

pips, put the slices in a bowl

and toss gently with the sugar.

Cover with plastic film and

leave overnight to macerate.

2. Put the flour, butter and

icing sugar in a bowl and work

quickly with your fingers to

rub in the butter, until you

have a mixture which looks

like fine breadcrumbs.

3. Add the beaten egg and a

little cold water if needed and

press the pastry into a ball.

Cover in plastic film and chill

in the fridge for an hour or so.

4. Heat the oven to 180˚C.

Roll out the pastry and line a

22cm tart tin – preferably with

a removable base. Weigh the

pastry down with pulses or

baking beans on greaseproof

paper and bake the base blind

for 15 to 20 minutes, until the

edges start to turn golden.

Remove the weights and bake

for a further 5 to 8 minutes, to

dry out the base.

5. Remove the tart and reduce

the oven temperature to

160˚C. Whisk together the

eggs and the melted butter,

then mix in the lemon and

sugar mixture, gently.

6. Pour into the pastry base

and bake for 22-25 minutes,

checking to make sure the

filling is just set, still a little

wobbly, before removing from

the oven and leaving to cool.

Serve with whipped cream,

Greek yoghurt or crème

fraiche.

here’s a scene from the penultimate series of Mad Men, as good a lockdown rewatch as any, when Don is just back from Hawaii with his pain-in-the-hoop new wife Megan. Alone in his office there is a beautifully framed shot of him looking through the blinds out at the city but to the sounds of the Pacific island waves. Same. Only I’m wearing yesterday’s tracksuit while day-dreaming about

going anywhere. I even have props. I’ve never spent that much on luggage but in October I ordered a Vocier leather set, just to spite the year that was in it. It sits pristine beside my desk and works like a S.A.D. light, subliminally releasing a familiar serotonin and cortisol shandy that prods me into flight or flight mode. That I have to leave soon, when I don’t. But this month for the first time in a year I can at least plan.

And plan with no more of my days being semi-determined by an unholy marriage of a bad orange man and a little blue bird. A black preacher from MLK’s church and a young Jewish guy beat two inside traders who campaigned hand and sheet with white supremacists to give a nice old man complete control of the US government. Not the second coming, not the anti-Christ, just a nice old empathetic man. Nowadays feels like a world war in some ways and America is, as always, joining late and will, as always, help finish it quickly. Empathy won. Science won.

This world war won’t end with the enemy shooting itself in the head or signing an armistice, and the alien mothership won’t fall from the sky to cheers. The spikey little Death Star will just get smaller and smaller, and its end will be steady but bitty.

We will be masked for the rest of this year at least. Vaccine certs, apps, bracelets and bubbles will be the main factors in where and when you can go places. There will be zero-Covid flights, hotels and resorts.

The awful term vaxication is already in play, there’ll be them and us tiers to travel although I do love the thought that Europe’s beaches might be overrun in summer with the over-seventies, those at risk and frontline workers partying together.

I’d fly tomorrow. I trust airlines, HAP filters, empty airplanes and airports more than I do a trip to a Dublin supermarket. I trust hotels more than homes but 2021 will have its own travel equation – flying time by the number of flights divided by how busy and calm the plane is. The biggest challenge to this in the short term is booze. Drinks trolleys – at home, in the office or on a plane – have always been comforting things. From hungover Heinekens on first holidays to my drinks getting smaller and stronger as I get older, they are tradition. As are preflight pints or bubbles. That’s the problem.

When you’re drinking on the flight you don’t have to wear a mask, so the more you stay drinking the longer the mask can stay off. Seems stupid. In 2019 one plastered person could change the plane’s mood to Hurt Locker in a minute. That was before our personal space had real borders and our bubbles had hard edges. In 2021, hammered lads on their holliers cannot be on planes like they were last summer. Airlines need to do something extreme – breathalyse everyone at the gate and have a two-drink max on the flight. Whatever but do it now.

In the meantime, I plan on waking up in Paris. Ironing a shirt in somewhere spectacular – the new Cheval Blanc would be as good a place as any – while I try to time my Ten Belles croissants and coffee so I am still ravenous for my as-soon-as-you’re-open booking in a very grand dining room for an as-long-as-possible grander lunch.

It’s a long shot but I want to get back to the late summer streets and the High Line of New York. To drink cocktails on curbside tables. To read local fiction poolside in the Equinox. See the new Penn Station before going back to the Oyster Bar at the old Grand Central to talk about it. Then on to Bryce Canyon or somewhere else silent and true west before flying directly to Cuba, because that nice old man and his new management will allow that sort of thing.

If I can’t get back stateside then alfresco in Bologna please, with its socially distant tall tables and endless mortadella on warm nights in that orange city, while the students are gone and before the tourists come back.

Any of them, or any number of other places in Europe where I don’t speak the local language well enough will do so I can have a holiday from numbers.

For now, I’ll settle for daydreaming about a pint and toastie in my local. Or a night in any good hotel or restaurant on this island. Magical places where beds are made for you and food and drinks are brought to you. The good people that make those beds, carry our bags, load the dishwasher, clean the bathrooms, pour our wine and cook our food, they can’t work from home but have been sent home and they are mostly what I think about when I am staring out that window.
