Certificates awarded from the School and from BDES

The course is taught by two outstanding, worldwide recognized experts (biographically detailed on the next page) and includes three days of instruction - from 9.00 AM until 5.00 PM (M & T) with a lunch provided each day and 9.00 AM to 4.00 PM for the final day (W). An examination/test is presented on the final day for you to receive a certificate of completion from the Irish Whiskey School program. The team of instructors and staff from BDES will also be involved in teaching and preparation of the sensory evaluation materials and sample tastings during the program. Martin Williams has had over 25 years- experience in both supply chain & production at senior management level with Irish Distillers Ltd (Pernod Ricard, parent company), Ireland’s biggest producer of premium spirits.

Martin has obtained tier 3 advocacy level with Irish distillers, tier 1 being Masters, tier 2 being Advocates & tier 3 being Graduates. Only 8 graduates have achieved this grade to date. Intensive internal training program to achieve this level.

A deep understanding of different types of spirits and wines available by means of professional studies with the Institute of Brewing and Distilling (IBD) Certificate. Wine & Spirit Education Trust Higher Certificates provide formal context to this knowledge.

Additionally Martin was a member of the senior taste panel at IDL, ensuring consistent quality on all products through the different stages of the production process, he has also been involved in the sensory analysis panel required to develop new products such as Zaconey, Jameson Cold Brew, Jameson Caskmates, Jameson Sloe Bitters & Jameson Seaweed Bitters.

with a lot of one on one attention and group discussions included in the program. Tastings of classic style examples and other exercises add to the value, experience and memories of the topics covered by the instructors.

Niall Tubridy’s journey to working with whiskey stemmed from many years importing and distributing wines, spirits and beers throughout Ireland, both for himself and others. Another avenue came from his hometown of Bandon, Co. Cork, Ireland that possessed many historic distilleries & breweries, a chance discovery of an old advertisement led to a lifelong pursuit of historical research and an extensive collection of old bottles, signs & ephemera.

Being reared in the country, his mother grew vegetables extensively and he describes his mother as “an alchemist”, from the kitchen the most amazing flavors emanated.

From 1998 through to 2013, Niall travelled the vineyards of France, Spain, Catalonia, Chile & Argentina buying wine, building a close bond with his suppliers, learning what they were passionate about - their terroir, their food and their coffee.

Be it food, wine, whiskey or coffee, it’s the flavour that is important to Niall and the understanding of how those flavours are created.

Since 2014, Niall has worked with the Irish Whiskey Museum, Dublin Whiskey Tours, The Whiskey Experts and his latest project, the Irish Whiskey School.

Niall has extensive connections within the drinks trade and communicates regularly on social media about whiskey.

Attendees will learn every facet of Irish whiskey from its history to the renaissance of the spirit and how it is made, how to taste and transmit that information.
