The Art of Menu Engineering

Before After Before any menu can take this transformation

as shown to the left you need to do your home-work and follow certain steps that we can go over with you during your the Business Review process. Believe it or not, there is a science be-hind a successful menu.

MENU ANALYSIS-Knowing the true cost of each menu items is crucial for the rest of the process to be successful.

MENU ENGINEERING-3 Step process taking Menu Analysis, Your Sales Re-ports, to find your menu Stars, Work-horses, Puzzles and Dogs.

PAGE POSITIONING-The average per-son looks at menu for only 109seconds, are they reading what you want them to?

CATEGORY POSITIONING-Are your most profitable items listed in each category correctly?

PRICING THE MENU-Keep it simple, 2-3 endings and no more leader dots..........

Example of Menu Analysis from your Marketing Associate.

All items that do not represent 3% of total sales per category need to go.

This is the main spread of the menu and as you can see it is layed out according to the picture on the previous page. We start in the center then go to the right and counter clockwise from there.
