Protected Geographical Indication The Cambodian government earned a Protected

Geographical Indication which serves to protect the product and would only allowed pepper from Kampot,

Cambodia to be sold and advertised as the Kampot Pepper. Kampot Pepper is grown using traditional methods,

denying any use of pesticides or toxic chemicals and only using natural fertilizers.

The only region in Cambodia, Kampot, known for its appropriate soil characteristics allows the pepper to have distinctive flavor and aroma. With this acknowledgment,

it is illegal by law that products cannot be promoted, advertised, or sold as “Kampot Pepper” unless it is grown

within the suitable zone which covers only a number of districts in Kampot and Kep province of Cambodia.

The pepper are of four different types: the Green Pepper, Black Pepper, Red Pepper and White Pepper.

Location There are only 4 districts

in Kampot province and 2 districts in Kep province

that is suitable for planting Kampot Pepper.

The region in green are the only areas in which

Kampot Pepper plantation is legally

allowed.

Land Preparation/Structure The land that Kampot Pepper planting requires,

must not contain any unwanted materials such as rocks or pebbles. Ditches are dug up around the

planting areas to avoid roots of trees surrounding the area from disrupting the growth of the

Kampot Pepper.

Natural fertilizers are used. This includes cow and bat manure, and powdered bones of cows.

These components are mixed with soil and has to be compiled and stored one month prior to the time the soil is dumped onto the planting area.

Kampot Pepper is planted in rows. The pepper

vines are held into position by vertical poles that rise from the ground. These vertical poles are

usually 4.5 meters long. The distances between each row must be at approximately 2 meters and the distance between each pepper plant must also

be approximately 1.8 meters.

These poles are anchored into place by metallic wires that are stretched from one pole to another to ensure stability. On top of these wires, coconut

branches with leaves are laid to protect the pepper from direct sunlight.

Preparation for Planting

After the structural poles are positioned correctly, a hole must be dug for the pepper planting.

These holes must have an additional hole that is dug in a

slanted manner to allow pepper vine roots to fully grow.

Pepper vines must be cut into 80cm lengths. These strands are then tied together and dipped into water for approximately 1

hour. The pepper is then planted in

their desired locations. They are planted closely beside the poles

and then tied to the poles.

A few months afterwards Pepper will then start to be produced. These pepper must be cut-off so that the plant does not use up all of the fertilizer. Every time pepper crop starts to develop, it uses the minerals and

nutrients from the soil.

Picking After approximately 1 year and a half, the picking of the wanted crops begins. The pepper crops are as shown below:

Separating/Sundrying After the peppercorns are picked , it needs to be separated by their color to decide which process to carry out with the pepper: Green Pepper, Black Pepper, Red Pepper, or White Pepper.

The pepper needs to be sundried for 2 days. Whilst being sundried, it occasionally needs to be spread around to ensure that it receives a good amount of sunlight and make sure that it is evenly spread.
