News UpdatesHIGH FLYERSAir travel from Fuerte to the rest of the World can be frustrating, but if the Canarian Government get their way, then this could soon be a thing of the past. They have asked permission to use EU funding to open up new routes from the islands to popular locations across the globe. Controversially these include connecting the tiny airport at La Gomera to London, Lanzarote to Lyon, Gran Canaria to Rome, La Palma to Leipzig and Fuerteventura to Paris. The one route that is causing major debate between officials is Tenerife to New York, as Gran Canarian officials believe that this route would be more suited to them. If approved, some routes could be operational by autumn with others commencing in spring.

FUERTE FACELIFTThe government has agreed a plan which will initially invest 647,000€ into regeneration and building projects around the island. Antigua will receive 83k to improve pedestrian areas in Casillas de Morales, smaller local projects and the sports area in Los Alares. Betancuria will receive 18k much of which is going towards environmental projects including 6k for the pruning and cleaning of the palms in the valleys. La Oliva will receive 123k by far the largest investment, which will include the promenade in El Rogue, extending the bicycle lanes in Corralejo and, amongst other projects, improving the public spaces in El Cotillo. In the South 76k will go to the town of Pajara where the funding will be split between improving the area of La Pared, fixing the channel in Morro Jable, building a

nature classroom in Pajara and improving the public spaces in the La Lajita valley. The capital, Puerto Del Rosario, will receive 97k to beautify and renovate the city areas, improve the access to Tetir and renovate the access bridge to Vila Rosa.


MULTI-CULTURAL There are currently 194 countries in the World, and believe it or not La Oliva area alone has representatives from 47% of them, registered as living here. The latest figures from the municipal census shows that 48.7% (27,496 registered inhabitants) of the La Oliva population is made up of foreign nationals, and that 92 nationalities are represented. The statistics show that Italians make up the largest portion

with 3,847, followed by the British 2,826, and Germans 1,271. Other nationalities also include, Moroccan, French, Portuguese, Columbian, Dutch, Chinese, Belgian, Argentinian and Irish.

SAY CHEESE The cheese museum, which has taken 675,154€ to complete, is now open to the public and for the month of August is offering reduced entrance fees to attract both residents and holiday makers through the doors. It is based on the newly renovated site of the Old Mill Complex in Antigua and will be open from 10am to 6pm from Tuesday to Saturday and offers many educational and interactive attractions, including virtual goat milking! The museum covers an area of 500m2 and houses three main blocks dedicated to the formation of the island and its flora and fauna, goat cheese (of course!) and the history of Fuerteventura. The discounted ticket price is 2€ (1€ for Fuerte residents) and children under 12 are admitted free.

MORE MANCHESTER FLIGHTSSo far this year 20% more Brits have arrived in Fuerteventura, than they did in 2013. The UK tourism market is the second largest source market for the island and in order to maintain its popularity, Ryanair has signed a co-marketing agreement with the Ministry of Tourism, which adds a new route to the Manchester - Fuerteventura winter calendar. There will be two flights a week, which will leave on a Monday and a Friday and operations will begin 26th October. For those of you wondering just how many tourists actually arrived here in the first half of the year and from where, the Tourism statistics show the following: Germany 374,764, UK 241,196, France 58,436, Italy 39,261, Sweden 27,161, Poland 26,226 and Ireland 20,077.

SKATING IN THE SUNSHINE Blades skating experience has finally arrived in Corralejo and now everyone can skate in the sunshine on real ice-skates. The huge blue and white rink is situated at the bottom of the high street, in the big square that is just behind the Shell petrol station. It is open from 4pm everyday till late and everything you need is provided. Adults tickets are just 6€ and under 12´s just 3€. NEW RESTAURANT OPENSIt is always nice to have somewhere new to try and different dishes to enjoy and this month Corralejo´s latest restaurant, Legends bar & grill, will be opening. The owners Steve and Carole from Nantwich have years of experience in the hospitality trade and are clearly very savvy when it comes to their food, as they have a very familiar face heading up their kitchen. Many of you will recognise him from The Temple bar, but for those of you that don´t be assured Colin Harding is a chef with flair, imagination and a great sense of taste. The restaurant is situated up the hill on the high street and will be serving classic culinary delights but with a modernistic twist, so expect to see dishes like eggs benedict, pulled pork, rump steaks and melting middle chocolate fondants on the menu. WELL DONE GRACIE!Congratulations to The Voice´s wildlife expert Ted Park, who is a very happy and proud grand- dad! His is granddaughter, Grace, has just become Hull Daily Mail´s Search for a star winner 2014. 13 acts performed in the final held in the New Theatre in Hull, but after Grace sang The Boxer and played guitar, and then went on to perform one of her own songs called ´I can´t help myself´ and played piano the judges decided that she was the winner. Possibly a star in the making!

If you fancy supporting a worthy charity, then Local Boxer Lee Sibley will be fighting in Amsterdam on the 21st September in order to help raise money for FACAVAC (Fight Against Child Abuse and Violence Against Children) This worthwhile cause works tirelessly to help the children that cannot help themselves, and if you fancy helping out too, then any donations for the charity will be gratefully received and can be left with his mum, Charlotte, in KIX sports bar & grill, situated just off the high street in Corralejo. BOXING BOUT FOR CHARITY


Summer is the perfect time for getting outdoors and embracing nature at its best. Here in Fuerte there are lots of place to visit and explore, from the bottom of the Ocean to the top of the mountains, and everything in between.

PIRATE CAVESIn the south of the island is a small fishing village named Ajuy. Many people visit here to experience the natural beauty of the caves that are accessible on foot (although care is needed as the terrain is quite rugged). From a geological perspective this area is home to some of the oldest rocks, dunes and magma chambers that helped to form these islands. In the past, privateers or pirates used these cave to hide their bounty before jumping aboard ships and sailing off to sell their wares and plunder elsewhere.

THE SPIDER CAVE Another cave that you may want to visit was formed by an old magma chamber, is around a million years old, and


WITCH MOUNTAIN Situated on the western side of the island is Tindaya mountain. It sits all alone, looking down on the village that sleeps within its shadows and stretches up into the air in a conical form, different from any other mountains in the area. This mountain has always been steeped in mystery and to the ancient inhabitants of the island, was a sacred and special place. Their footprints can still be seen as around 250 podomorfs (trapezoidal markings with toe-like appendages, which look like human feet) cover the surface. Folklore also tells us that witches also used to frequent this mountain but now it is mainly hikers and dog walkers that you are likely to see.

TOP OF THE WORLDOne way to really appreciate the scenery, colours and shapes of the landscape is to visit the gazebo, designed by Lanzarote artist César Manrique, that sits on top of the mountain at Mirador de Morro Velosa. It is easily accessed by road and located on the road to Betancuria from the north (just before the two huge statues). The gazebo has massive glass windows and sun decks so you can experience the vastness of the Betancuria park in all its glory and take some amazing photographs.

LAGOONS & MORE The sleepy little fishing village of El Cotillo is situated on the North West coast, and has stunning views in both directions. If you visit the new harbour area, a little fort called Fortaleza del Tostón sits overlooking the rugged cliff line, a warning to pirates from the past to stay away. Inside is a little visitor’s centre, with plaques on the walls explaining what all the nooks and crannies are for, and from the roof, amazing views across the cliffs and beaches that are a favourite with surfers. Head right out of the village and you will encounter the sheer, natural beauty of the lagoons. Sheltered bodies of water, perfect for lazing around in the sunshine and enjoying the refreshing Atlantic Ocean.

No light penetrates into this cave, and once inside you literally cannot see anything without your torch, but that doesn’t seem to bother the teeny endemic arachnid, Maiorerus Randoi, that lives down there.


Nowadays we turn on the TV and wince at the way other countries treat their prisoners or fellow men, but just

50 years ago the English were still hanging people by their necks until

they were dead!

This month, just fifty years ago, Peter Anthony Allen and Gwynne Owen Evans were executed for the murder of John Alan West. The hangings took place

at Strangeways prison in Manchester and Walton Prison in Liverpool on the 13th August 1964, and were the last executions carried out by the English judicial system.

CRIME & PUNISHMENT Hanging has been the principal form of execution in Britain since around the 5th Century, although it was not the only form of punishment that was popular; beheading, drowning, hurling from cliffs, burial alive, shooting, burning at the stake and boiling alive have all also been used at various times. In some cases specific and horrific execution techniques have been devised especially to cause as much physical pain and humiliation to a prisoner as possible. In 1241, hanging, drawing and quartering was invented specifically to punish William Maurice who had been convicted of piracy, although this public spectacle was often saved especially for those who committed treason, as it would always draw a good crowd.

THAT´S ENTERTAINMENTPublic punishments such as whippings or being locked in the stocks were designed to spread the word of law and order across the nation in the hope of deterring other people from committing crimes. Executions were too. They were

NOOSEEscaping huge public events, witnessed by all classes and thousands

of people would attend. Some would even pay to sit on balconies and roof tops, just to get a better view and if it was a particularly interesting prisoner up to 100,000 could be in attendance. Multiple hangings were a particular crowd pleaser too.

THE BLOODY CODE Children were not sheltered from these spectacles and children as young as seven were often ended by the hangman’s noose. At the beginning of the 19th century there were 222 capital crimes. These were commonly known as the Bloody Code and ranged from ´being in the company of Gypsies for one month´ to ´blacking the face or using a disguise whilst committing a crime´ to ´stealing items worth over 12 pence´. All were punishable by death and children between the ages of 7 – 14 years of age who demonstrated ¨strong evidence of malice´ were not excluded. Public hangings continued until 1868.

OUT OF SIGHT Hangings may have been taken out of the public eye, but they still continued inside the prison walls and continued to do so until just fifty years ago. The last hanging in Wales

took place in Swansea in 1958, Northern Ireland in 1961, Scotland in 1963, and England a year later. It was not until 1969 that the death penalty for murder was abolished, but other crimes were still punishable by death which included: high treason, piracy with violence, arson in the Royal dockyards and espionage. Finally the death penalty in the UK was abolished under the Human rights and the Crime and Disorder act. Scarily this was only achieved in 1998, just 16 years ago!

Both these apps are loaded with local emergency numbers from around the world like Police, Ambulance and Fire Brigade and they can all be accessed without having to have internet access on your phone. Both apps have a free option, but if you want to upgrade to include local consulate numbers, no adverts or quick-dial home, then a small fee is payable.

Learning the language

If you are planning on staying a little longer than a few weeks, then you may want to consider learning how to speak the language, and this

is where Duolingo comes in. It is a free app that helps

to build your language from the beginner stage. It tests to see what level you are, and gives you daily and weekly targets to help keep you on track. It also allows you to ´duel´ with other friends and rewards you when

you do well. Lessons are all completely free and you can chose from Spanish, French,

German, Portuguese, Italian, and English.

Do you speak english?Some holiday makers think that saying something just a little bit louder makes sense to people of a different tongue, but sadly this is not the case and so a translator is needed. No translation tool is 100% perfect, but

when it comes to getting it pretty close then you can´t go wrong with Google Translate. The app is free, supports 80 languages and simple to use. You can either type, write or speak your query and, as long as you have a data connection, it will translate it for you. You can even save common phrases and words that you use

most often.

ABROAD FRAUDOver £5m of UK taxpayers’ money recovered!The benefit fraud team in Madrid has investigated more than 1,250 cases of benefit fraud by British residents over the last five years, and works closely with UK counterparts to bring fraudsters to justice. ‘Abroad fraud’ is now the fourth largest type of benefit fraud, up almost 90% in the last three years – and Spain is the top of the list, with 769 cases investigated last year alone.

CONVICTED The top three benefit fraudsters in Spain who have been convicted so far this year had claimed some £217,000 between them. All three have now received jail sentences and been ordered to repay the money they stole.

Janice Purdie (62) Hove: Pleaded guilty to fraud of over £130,000 and received a 12-month prison sentence. She failed to tell DWP that she owned a property in Spain and fraudulently claimed Income Support, Pension Credit, Disability Living Allowance, Housing Benefit and Council Tax Benefit over a nine-year period.

Jimmy Rickner (72) Exeter: Jailed for six months for fraudulently claiming almost £50,000 of disability benefits and Pension Credit over eight years. He was living with his partner in one of two properties he owned in Spain.

Thomas Wadham (73) Aylesbury: Falsely claimed £37,000 of Housing Benefit and Pension Credit whilst living in Spain. He was sentenced to six months in jail and ordered to pay back all the money.

The UK Government is taking more action to tackle abroad fraud by increasing the use of overseas data-sharing. Richard West, Head of DWP Fraud and Error Service, said

¨This is a significant achievement for our team in Spain and will hopefully serve as a warning to benefit

cheats no matter where they are in the world.¨

l SoundA ´meow´ is the most common way that cat communicate with humans. If you listen carefully it will change, depending on the situation and means hello, get up, go away, here is a mouse (higher pitched) or stop ignoring me. In the wild a mother cat will not meow and instead will use different, more guttural sounds when talking to her kittens. These sounds are sending a message to the kittens to follow her and if you listen carefully when you are at home, especially around feeding time, you cat will very likely use the same sounds on you to entice you into feeding her.

l Howling This is a long and often sad sounding meow that tells you your cat is in distress. Often you will hear this if you cat is stuck or locked in somewhere. You will also hear this if your cat is in pain and needs your help. In some cases, older cats will make this noise because they may have a form of cognitive disorder like dementia, and are disorientated. Unneutered males will also howl or wail as part of the mating process to attract a female.

Many of us have a natural bond with our animals but wouldn´t it be nice to know what they are actually trying to tell us? Cats have learnt to vocalise in order to get our attention, however there are many other ways I which they

communicate. There are important clues hidden within their eyes, the position of their ears, their tails, and the tone of their voice.

CHATTYCATS


l Purring This is a sure sign of contentment signifying that you cat is

happy and comfortable. However, sometimes a cat will purr when they are feeling under the weather in order to comfort

themselves, a bit like a baby sucking its thumb.

l The WiggleWhen you cat is in a playful mood you will experience the wiggle before the kill. You cat will crouch, stalk and get ready to pounce. The wiggle is him settling his legs underneath him to give him optimum striking power. When you cat is in this mood, take care as he is about to get a little rough and unless there is a toy about, you, your toes or your fingers are likely to be the target.

l Kissing CatsMany people think that when their moggies jump up and rub their chin against you that they are telling you that they love you and giving you a kiss. Although this is a nice thought actually they are marking their territory and telling everyone else that you belong to him.

l KneadingWhen your kitten was nursingfrom its mother, it would have kneaded the area around the teats in order to make the milk flow. This behaviour means your cat is happy, contented and really comfortable.

l Curled LipsOccasionally your cat will make a very weird face, usually when sniffing something like a shoe. This is called The Flehman response. You cat has an extra olfactory organ, located in the roof of her mouth. When your cat gets a scent of something fascinating she will open her mouth to inhale more deeply so that the scent passes over this additional organ and gives her more information about what she is sniffing.

l Chattering TeethSome cats will sit in a window sill and chatter at the birds outside. This looks a little weird, but experts believe it is the cat´s natural predatory instincts kicking in. Your cat is practicing the ´killing bite´ which they use to capture and eventually kill their prey.

l Twitching TailIf your cat is happily snoozing and you decide that it

is time for a cuddle your cats tail will tell you whether they agree of not. If it starts

flicking quite forcefully then your cat is not happy and wants to be left

alone.

Sea Salt is easy and cheap to buy and is really effective when incorporated into your weekly cleansing routine. The salt itself contains minerals like potassium, calcium and magnesium. These naturally occurring minerals are great for promoting cell restoration, which in the long term, also reduces the tell-tale signs of aging. When teamed with essential oils and other natural hydrators like almond or grape seed oil, they are not only a nice scented treat for bath time but also a nourishing feed for your epidermis. The only downside to using sea salt is that it can be quite a messy affair, so when using scrubs stand in the shower or bath so that the granules and dead cells can disappear down the plug hole when you have finished exfoliating.


SCRUBSSALT

The hot summer months, prolonged days in the sun and exposure to the wind can leave skin feeling a little dehydrated and uneven looking. Exfoliating the skin not only makes it feel smoother and sexier but is also helps to remove the dead cells and underlying dirt resulting in glowing, healthier and much softer skin.


Both salt and sugar scrubs are perfect for removing the dead cells that are making your skin look patchy and uneven. Using them on a regular weekly basis

can encourage your skin to shed dead cells at a more rapid rate than usual. Sugar scrubs are better suited to the face and more delicate and sensitive areas where only a gently exfoliation is needed, especially areas affected by acne or eczema. Salt scrubs are the perfect remedy for softening up those harder and more stubborn areas like the bottom of the feet, back, upper arms, knees and elbows.

Here are a few scrubs for you to try. Use a cup from your kitchen as a measuring device and then all you need to do is mix all it all together in clean dry bowl and add the scrub to a glass jar for storage. If you want a little added wow factor, then include a few strands of lavender or flower petals to the jar for decoration. When you are ready to use, simply rub the scrub onto dampened skin and rinse off with warm water. Happy Scrubbing!

Getting a good night´s sleep is essential to keeping you looking good and feeling great. But how do you stay cool and comfy when the temperature outside is stifling and suffocating?

COOLING COTTON: Switch your polyester or silky bedding to lightweight cotton. The fabric is breathable and great at promoting airflow and ventilation. The same applies to your night wear. Think loose and comfy.

SHOWER SHOCK: If you can stand it, shower under cool water before hitting the hay. This will naturally lower your body temperature and help you drop off easier.

PULSE POINTS: To lower your temperature quickly apply ice packs to your pulse points; wrists, neck, elbows, ankles, groin and behind the knees.

PUT IT ON ICE: Before hopping into bed, put your sheets in a plastic bag and stick them in the freezer. Once they are cool, jump in and chill out.

HOTTIE BOTTIE: Hot water bottles are great at keeping your toastie in the winter, so why not use them in the summer too. Fill it up and stick it in the freezer. When you are ready wrap it in a towel and hey-presto a cooler bag for one!

GET NAKED: This is a controversial one. Many people think baring all is the way to stay cool. Others believe that natural breathable fabrics will actually help to cool you down better, by pulling the excess heat and moisture from your body.

THE OLD DAYS: Before modern air conditioners, people used to use a real ice and a fan to keep cool. Stick a load of cubes in a roasting tin and use your fan to blow air over it. The cooling breeze will soon help you drift off to sleep.

ROLE REVERSAL: Fans are great for blowing air around a room but think about changing the flow. You may not be able to cool down the air inside, but turning your fan to point outside you window instead, will pull the warm air out of the room.

GET WET: This works especially well for sunburned skin and prickly heat. Simply hold a towel under the tap, wring it out and use it like a blanket. Use a smaller one over your pillow too.

GO NATURAL: Sleeping on comfy mattress may be a luxury, but they do retain heat. Switch to lying on a natural bamboo mat or similar as this will cool and aerate the underneath of you.

regular products and an emphasis on becoming more eco friendly, people are making more conscious decisions when it comes to health and beauty. However be aware that just because a product is labelled natural it doesn’t mean it isn’t still full of other synthetic ingredients. Unlike organic food,beauty products which claim to be natural ororganic are not under any specific regulationsand can still contain nasties such as


parabens and phthalates (two examples of toxic chemicals often found in the beauty circle) so if you are looking to avoid specific chemicals in your products make sure you check the labels first.

MICRONIZED MINERALSWhen it comes to make up, mineral is the way to go. Mineral makeup is usually made up of natural elements such as zinc (a natural inflammatory so great for spots!) which have been ‘micronized’ resulting in very fine particles. This fine texture provides a more natural and flawless finish and allows you to build up layers of makeup to the desired effect whilst still allowing your skin to breathe. Although not all mineral products are totally natural (again be sure to check labels carefully) they are usually preservative free and don’t contain the usual waxes and emollients found in conventional products, hence they are skin friendly and unlikely to cause any nasty reactions.

DO IT YOURSELF!The best way to ensure you are getting the most out of natural products is to look for your own alternatives – for example coconut oil makes a rich and nourishing hair conditioner, olive

oil is a fantastic alternative to moisturiser (it’s so gentle it is even recommended for baby skin), avocados, honey and egg whites all make great face masks and it couldn’t be easier to knock up a simple salt scrub to exfoliate your skin (check out the salt

scrub recipe also in this month´s mag) Not only are you using the purest ingredients available

you’ll have less bottles cluttering up your bathroom shelves.

LUSCIOUS LIPS Some may consider mixing up their own makeup a step too far and whilst I won’t be trying

the cocoa powder bronzer idea (although at least you would smell

good enough to eat...) a lip balm is a cheap and easy starting point. Lip balms that are labelled as natural are usually pricey and still contain

chemicals so it really makes sense to make up your own. Simply melt some

unbleached grated beeswax (three tablespoons) with five teaspoons

of sunflower oil. Remove from the heat and add one teaspoon of honey and a few drops of your favourite essential oil (i.e. lavender, peppermint etc) Mix thoroughly so you don’t get any clumps and then pour the mixture into small sterile containers and leave to set at room temperature.

l Richly RandomYou only need to compare a plain piece of MDF against an old tree stump to see which is more beautiful. The life lines woven into its trunk add texture, the weathered bark and old earthly stains add colour and the deeply woven grooves and cuts add interest to any piece of furniture. The same can be seen in the loosely woven fibres in a piece of material that is made from simple cotton or knitted from coarsely hand spun yarns. Natural randomness adds a texture and feel that cannot be re-created in a factory, nor should be.

BIG BROTHER As per article 11 of Real Decreto Legislativo 1/2004, 5th March, the property owner is legally responsible for informing the Catastro Office of any significant alterations made to the property, even if they have been granted building permission from the Town Hall, however, many have neglected to do so, so the Department came to a decision to take matters in their own hands and have now employed the use of GPS systems and aerial images to verify each property. These images (that are so clear you can even see washing lines) allow them to determine the difference between the description they have on record and the reality and in this way they can recalculate its official tax value.

WHAT DOES THIS MEAN AND HOW DO THEY USE THE NEW INFORMATION? Well, in recent weeks Inspectors from this department have begun to notify property owners of their findings by means of an official and very detailed report. These reports identify the current owner, address of the property in question, the name of the Inspector involved, description of the property on-file and detail of the modifications they have detected as well as confirming the new tax value.

THE OFFICIAL TAX VALUE IS MADE UP OF:

1) The value of the land 2) The value of the construction

This will also depend on whether we are talking about urban or rustic land. This official tax value also determines how much the owner pays each year in concept of council rates so if the Inspector detects alterations to the property, the owner is liable to pay the difference between the tax value on record and the recalculated tax value. Also note that the Administration has the right to backdate the tax and claim the previous four years if they were not properly notified at the time the alteration was made.

RIGHT TO REPLY The Inspectors initial report however is not final because

it has to allow for human error and a response from the owner. Property owners can exercise their right to oppose the information contained in the report if they feel it is incorrect which must be done in writing and within fifteen days of receipt of the report. The department will consider the allegations and resolve the matter accordingly but if their findings are correct, another notification will be sent to confirm and that information will be passed on to the Collection Department at the Town Hall so the corresponding council rates bills can be issued for payment. The same is also true if they do not receive any communication from the owner to oppose the report.

The only way to avoid any unwanted involvement from the Catastro Department is to duly inform them if you alter your property, even if you only cover an existing pergola. At least this way you do not risk having to prove when the alteration took place or having to pay backdated taxes.

This month I run through the tax and financial essentials you need to be aware of and plan for if you are to get the best out of living here. It is also useful advice for those who have recently moved over, or even those who have been here a while.

Tax & the SystemThe starting point is to understand how you become resident for tax purposes. Tax residency is not just about day counting. You could be resident in Spain even if you do not live in Spain but your spouse does, or if your centre of economic interests is here. You also need to know how the UK residence tax could continue to apply to you.

Spanish taxpayers have had a particularly high tax burden over recent years. Income tax rates range up to 52%. Savings income is taxed separately, with rates from 21% to 27%. This should improve over the next two years, if the proposed tax reforms go ahead. Spain also currently imposes an annual wealth tax.

You need a thorough understanding of the Spanish tax system and how it applies to you, so you can then establish what steps to take to lower your tax liabilities – there are often ways to lower taxes on your investment income, assets, pensions and estate. This is not an area for DIY financial planning, you need specialist guidance. Getting it wrong could be costly.

This leads me on to succession law. Spanish law requires a parent to leave two-thirds of their estate to their children, even by-passing the surviving spouse. However in practice British nationals can make a Spanish Will leaving their Spanish property to whomever they choose. Moreover, from next August, a new EU law will allow you to elect, via your will, for the law of your country of nationality to apply. This only applies to succession law, not tax.

Property tax Another important tax issue to consider are the tax implications of buying and selling property. When is the best time to sell your UK property? When is the best time to buy in Spain? You could easily end up paying tax that could have been avoided, so look into this carefully.

Pensions Pensions are another key issue. The UK pension reform provides you with more options, but you need to consider all the tax implications in Spain. You need to weigh up all the options and how they work for you. If you have not yet started drawing your pension, seek advice before you do.

Savings Last here but not least, review your savings and investments. You need to make sure that they are structured in the most suitable way for your new circumstances and objectives, always taking your appetite for risk into account. At the same time, you want them to be structured in the most tax efficient way. So overall, it may be time for some restructuring to ensure you do not pay any more tax than necessary.

Cactuses come in all shapes and sizes and can really add interest and colour to your garden. Although their natural defence mechanisms make them unsuitable

for areas where pets and small children frequent, if positioned in the right places, they really can add something special to your outside spaces. Choosing which cactus is right for which spot in the garden is really important, as trying to move them later on can be a bit tricky and very painful. Once you understand what kind of cactus you are looking for, how big they will grow, and what you need to watch out for, planning a cacti garden is actually quite easy.

Here in Fuerteventura many different species of plants manage to survive,

even though we have scorching temperatures, strong winds and

months without any rainfall at all. Cacti are exceptionally

resilient to such harsh conditions and not only survive here but thrive, and continue to do so

for years.

HEGDEHOG CACTUS(Echinocereus)

These kinds of cacti are easily recognisable as they look like lots and lots of thick spiky stems standing upright in a mound formation. They are called hedgehog cacti as the first part of their family name ‘Echino’ comes from the Greek word for hedgehog ( in reference to their spines) and the second part ‘cereus’ comes from the Latin for

BARREL CACTUS(Ferocactus)

These cacti have big, fat cylindrical stems (usually larger than 10cm) that are either globular or column like in appearance, with obvious ribs running from top to bottom. They are quite unusual and work great in a cactus garden as they can help to provide height and interest. They also produce bright flowers during the springtime, which will grow in an almost halo-like shape near the top of the cactus.Initially these cactuses are great to grow in small pots as they take a few years to get to a good size, but once they do begin to expand it is best to move them from the pot and onto the soil line so that they do not become suffocated or waterlogged. Once in the ground they will look short and dumpy, but overtime they will begin to reach upwards and outwards. Some can take over thirty years to achieve this, but once they do, they can reach

large candle as they grow upright. They have one main root clump from which all the other stems grow and can spread to around 2-3 metres wide. There are some species which only grow a few inches wide and are better suited to rockeries, but usually hedgehog cacti are used in main flower beds or larger outside spaces as they are renowned for their low growth height and colourful floral displays. These plants look amazing when they flower, and on this type the flowers only ever grow around the sides of the stems and never on the tip. The flowers are designed for attracting bees and insects, for pollination, so they are really big in comparison to the stems and often twice the size. They are also very brightly coloured and come in a range of different reds, oranges, pinks and yellows making them irresistible to the little garden-friendly insects that you want to attract. Their outer coating is covered in fine or long spikes that are designed to stick-to and rip fur and feathers, deterring birds, rodents and mammals and, unfortunately, the occasional gardener. Luckily these cacti don’t really need much taking care of as long as they are buried on the soil line and have sufficient room for drainage. They only need water occasionally and other than that, they pretty much take care of themselves.


COLUMNAR CACTUS(Lophocereus, Stenocereus, Packycereus)

These are the ones that you see in the gardens of the hotels around the resorts and look like they should be in a spaghetti western movie. These plants have either very

heights of around seven feet and grow two foot wide. Some of the more popular ones are known as the fish hook cactus or the golden barrel and are favourites with most gardeners as they grow slightly shorter than the other species and maintain a nice round shape, which looks great when landscaping. These pose some problems for gardeners as the outside of the plants are covered in thicker and more sinister spines than some of the others. The fish hook spines are particularly difficult as although they are easy to see, once they get stuck in skin or clothes they are difficult to remove. The hooks also grab and attach to anything that happens to brush past them which can include washing blowing in the breeze, next doors cat and old leaves a debris, so keeping your garden clear of dead lowerheads and cobwebs can be a little tricky.

CHOLLA CACTUS(Opuntia)

These are found all over the island and in some areas are cultivated on a large scale to produce fruit. There are many different varieties, but the most well-known is the prickly pear. These have round or cylindrical shaped pads rather than stems which produce a bud which grows and elongates and then becomes another pad. This cycle simply continues as the plant grows. They are easy to spot and cultivate as nature has designed them so that when touched by an animal, the hooked barbs will latch into fur and carry a section of the round pad away with them. These then eventually fall to the floor and re-root themselves, resulting in a new plant. As a gardener all you have to do is either pull a few buds off of the main plant yourself, or wait for nature to do it for you. The older parts of the plant will become rigid over time and provide a support mechanism for all

thick or very thin stems which grow upright. Other stems then grow from the main stem and continue to sprout from all areas of the plant, but what differentiates these from other larger kinds of cacti is that the new stems will also only ever grow in an upright direction too. Many of this kind of cactus also have the name ‘cereus’ meaning candle in their name, and if you are looking to add a little drama to your garden, then the most famous and widely known is the Saguaro(Carnegiea gigantean) or giant cactus. This is the one that you always see in the cowboy movies and is often called the old man of the dessert as it can survive for around 150 to 200 years. If choosing to plant these in your garden then be aware of just how big and heavy they can be. Typically a cactus of this variety, although slow growing, can reach heights of 12 to 18 metres and when it is thoroughly hydrated can weigh over 2000kg. Many gardeners use these in place of trees, as they provide height and variety to a garden, need very little water or attention and help to provide shade to plants that grow lower down. Some of this species rely on bats to pollinate them and will produce huge white trumpet shaped flowers that are designed to attract the moonlight at night. They really are a nice addition to any garden and will very quickly become a part of your landscape, so choose their position carefully as trying to move them later on, really is a spikey, cumbersome and difficult task.

the other little branches, perfect for withstanding the windy Fuerteventura weather, and the fruits are edible and can be made into jams, drinks and liqueurs. These species of cacti have spectacular flower displays that usually last through the spring and well into the summer months. More common varieties have pinks, oranges and red flowers but there are some which have an interesting mixture of greens or yellows too. The fruits begin with a green hue but soon mature into a deep pink or red colour, making them easy to spot and a favourite of local insects and wildlife.



PIN CUSHION CACTUS(Mammillaria)

These are similar but smaller than the hedgehog cactus and resemble tiny balls all growing on top or out of the side of each other. Their name comes from the Latin word meaning ´nipple´ and refers to the little wart shaped bumps on their sides. These plants have really small stems that only grow to around 6cm wide, but they have strength in numbers and there will be loads of them all growing happily together in one big clump. They look really pretty and quite delicate but do not be fooled as what differentiates these from the hedgehog cacti is the fine hairy bristles that cover the exterior which are almost impossible to get out of your skin. Just brushing past one will leave hundreds of tiny, almost glasslike, barbs sticking out of your epidermis. These are really difficult to remove individually and the easiest way is to cover the area with sticky tape and pull it off quickly. These plants grow in a more haphazard manner than the barrel varieties, and so add an element of chaos and dis-order to the garden design. They also come in an amazing array of colours, but the most popular are reds, magenta, pinks and oranges. These look great when positioned in and around their more uniformed cousins, and work equally well in a rockery or tub as they do in the ground.

We are fortunate that long ago, somebody decided to try and protect the extra-special and unique areas of this beautiful island, by designating them as protected natural parks.

In 1982 the island of Los Lobos, situated just off the Corralejo coast, and the dunes that you can see on the way into the resort, were put on a protected list. This was especially to protect the dunes and control any building works that were being considered by the hotel industry. Unfortunately some hotels were already in place and arguments to whether they should remain or not, are still a point for discussion among certain political parties. Nether the less it did stop any additional hotels from being built there, and has helped to keep the shoreline far more natural and underbuilt than many of the Spanish holiday resorts of the Costas.

Lobos IslandIn 1994 the protection strengthened and both areas were declared as separate natural parks, and officially protected by law. The Isle of Lobos was also designated as an EU Special Protected Area (SPA) for birds due to its ecological diversity, and is now a safe refuge for many different species such as the Shearwater Cinderella, Little Shearwater and the herring gull. Also the storm petrel, Bulwer’s Petrel and Yellow-legged Gull are resident too. But it is not just the birds and the fish that live there in abundance, as Los Lobos is also home to some 130 plant species, including some which are endemic to the islands.

The DunesThe dunes in the north stretch for 11 Km´s and are a favourite spot for sun-seekers (especially those in search of an all-over tan). The whole areas is designated as a conservation zone and protected Natural Park. This is depicted by a rather weathered sign, fashioned in the shape of one of Fuerteventura’s most famous birds, the Houbara Bustard, which is indigenous to the island and on the endangered species list.

The sand of the dunes itself is quite strange. It is organic and has been formed from the skeletons of sea creatures over a period of 500 million yrs. The whole dune area and Lobos Island are actually quite recent arrivals, and are only around 9 -10,000 years old.

The SouthThe third main natural park lies to the south, situated in the Jandia peninsular, just past La Pared (The Wall). This spit of sand is just 10 Km´s wide and is one place where you can view both sides of the island at the same time. Jandia was separated from the rest of Fuerteventura until about 6,000 years ago when the narrow strip of land, known as an isthmus, was formed. It too is the home to many of our local birds and is a peaceful and tranquil environment for them to live. Here you will see the highest volcano of the island, La Zarza which reaches up to a height of at 807 metres and is surrounded by miles and miles of beautiful sandy beaches and coves, which stretch out in all directions offering great views.

The Real FuerteventuraFrom your hotel poolside it is impossible to truly enjoy the natural delights that Fuerteventura has to offer. This island is a uniquely vast and desolate land which changes colour in the sun, creates patterns in the wind and is home to an abundance of wildlife for you to enjoy. Hopefully being granted the status as a biosphere reserve and with the backing of the Natural Parks commission, it will always stay this way. Please remember, when you do venture out to enjoy the real Fuerteventura, leave it as you found it, so that all walks of life can enjoy it both now and well into the future.

Getting started Snorkelling is a great way to begin your underwater adventure as it is accessible to all, as long as you are confident in the water and don’t mind getting your hair wet. It is relatively inexpensive as all you need is a mask, snorkel and possibly a set of fins. There are companies located on the island that can provide you with snorkel gear and guided trips or shops where you can buy your own. As a general rule it is better to avoid purchasing the cheapest gear that you can find, and

instead spend a little extra on a tempered glass mask (with a CE mark) as these are less like to cause you safety issues.

Once you have your chosen mask, scrub the inside of the lenses with white toothpaste to remove the protective film that was added during manufacture. Failing to do this will often result in your mask fogging up. Next, swish a little watered down baby shampoo or good old fashioned spit onto the glass and rinse. Now you are ready to explore the underwater world.

Snorkelling the shoreline Fuerteventura has a great array of marine life that live very close to the shore, making it a perfect location for snorkelling. Ornate Wrasse, Sea Hares, and Damsels are only a few of what’s on offer. Great snorkel spots include the Lagoons in El Cotillo and Lobos Island, as well as heading out straight from the beach. If you’re extra lucky you may well come across a Moray eel or Octopus lurking in a crevice along the rocky shoreline too.

Deep breathFor those of you that are more confident in the water, why not give free diving a try? Hold your breath and duck-dive below the surface, in your snorkel gear. You will get much closer encounter with the wildlife ( for as long as you can hold your breath) but remember to blow out of your snorkel once you surface, otherwise you will end up with a mouthful of salt water!.

At one with natureTo truly experience the natural underwater world there really is nothing that matches the feeling that Scuba Diving can offer. You can stay under the water for much longer and explore the deeper areas where some of the most amazing creatures live. There are several different organisation that provide scuba diving training such as PADI, NAUI, SSI and Deptherapy

Education (opening up the underwater world to all abilities and disabilities) and they all have different ways of teaching you how to scuba dive.

Whilst breathing from a cylinder of air, you can observe some amazing creatures such as Angel Sharks (don’t worry these are nothing like Jaws!) cuttle fish, barracuda, rays and nudibranchs, which may not be so easy to spot from the surface. There are various options available to you, whether a qualified diver or it’s your first time, and dive centres across the island can advise and train you. Unlike snorkelling there are a few limitations, for example you need to be over 12 years of age to enter the Ocean (over 8 years in the pool) and the depths you can explore are dependent on your qualification level.

The ocean is a great way to appreciate nature at its best, and all you need to do is look below the surface.

We’ve lived here for nearly 3 years and have never seen it – we look in every supermarket we visit as we love deserts, especially those made with double cream. None of the creams we have tried hold their consistency when whipped. I made a cheesecake last week using cream cheese and condensed milk – tasted delicious although rather sweet – but it wouldn’t set so I popped it in the freezer and served it frozen. You can occasionally get double cream from the British Stores in Caleta or Corralejo, but they usually stock it around celebration times, like Christmas, and it sells out really quickly. INCESSANTLY LOUD NOISE!Buenos Dias, We have been coming to Fuerteventura on holidays for almost 30 years, at different times of the year, and last year decided to buy a town house here in Corralejo. We moved in, in Sep 2013. We love the atmosphere, the people and the relaxed way of life. We also love the Canarias music and festivities. However, there is no excuse to the abuse of both the serenity and murder of the culture that we have experienced today (Sat 12 July).Although we understand the festive season and celebrations currently on-going, the sheer volume and repetition of the so called music from Baku Water Park is driving us insane. We have had non-stop, very very load music from 11 O’clock this morning. It might not be so bad if a) it were not so incessantly loud b) it were not so repetitive. We have had the same drums and thump, thump, thump, for 6 Hours. So yes, let’s have festivities and music but NO, it should not be allowed to be so loud (we expect the organisers and people in the park must, by now be all deaf) and try and play some different tunes. I’m sure you completely understand our concerns and that we don’t want to stop people enjoying themselves, just try a little variation and try not to reach Jandia with sound from CorralejoThanks for listening.Regards, David and Iris (El Sultan)

TEDS WILDLIFE CORNER Hi all,This month´s wildlife corner is the Stunning `Glossy Ibis´ which is a striking wading bird with a long slender down-curved bill and magnificent plumage. In breeding season the plumage on its head, neck, upper back and under parts are a rich chestnut colour, while the feathers of the lower back, wings and tail have a green-purple and bronze metallic sheen. The facial skin, between the base of the bill and the eye, appears blue black but with a distinctive edging of pale blue skin above and below.The Glossy Ibis is a forager which locates its prey by touch. It probes prey with its long bill and generally feeds on the larvae of various insects, as well as crustaceans and small vertebrates such as fish and lizards. Its nest is usually a compact platform of twigs or reeds, lined with leaves and other soft vegetation. The female lays three to four eggs, with an incubation period of 20 to 23 days, and does most of the nurturing work. The voice is normally silent but can be a low grunt.I was very lucky to spot this bird, whilst dropping some friends of at the airport, as this is the first time I have ever seen this bird on this Island! Although Fuerteventura is situated closer to Morocco than mainland Spain, many tourists still arrive expecting a Spanish holiday, similar to that found in the Costas, which is full of paella, pedallos, sunshine and sangria.

Here in Fuerte the people, music, traditions, food, culture and even the language is different and should be enjoyed and embraced. However, in some bars and

restaurants the traditional Spanish menus and drinks can be enjoyed, as many mainlanders have chosen to move over and enjoy the all year round sunshine, that only living in the islands offers. They have bought with them the real Valencian paellas, the fine wines from the bodegas of Ribero Del Duerro and of course, the favourite sunshine tipple that many holiday makers enjoy, known as sangria.

MIX & MATCHMany people assume that sangria is a Spanish invention

but it is actually the mixing and matching of different cultures that have given it the look and taste that we enjoy today. Around 2000 year ago the Romans invaded, settled and enjoyed living in the Iberian Peninsula for a while. Whilst they were there they planted a series of vineyards along the way to ensure that they had plenty of wine to enjoy whilst basking in the Spanish sunshine.

Summery Sangria


Most of the water was unfit for consumption at that time, due to the vast amounts of bacteria it contained, and so the romans added alcohol, fortifying it and killing off the bacteria in the process.

FULL BODIEDThe name sangria comes from the Latin word ´Sangre´ meaning blood, and refers to the dark full bodied colour of the drink. As with many wines, some taste better than

others and the weather, soil, quality of grape and the skill of the

farmer all play their parts in creating a drinkable batch. But beggars can´t be choosers and so herbs, water, other

wines and spices were often used to help disguise the bitter

aftertastes from the mediocre wines to produce something that could be drank and enjoyed.

EXOTIC & ENTICING This drink soon found its way into the Spanish homes and throughout the centuries began to evolve. Different recipes and regional variations emerged as local farmers included their home grown fruits and liquers into the mix by the early 1800´s it found its way to the Americas and become known world-wide. In 1964, sangria really hit the headlines when it appeared at the World Fair in New York. Visitors to the Pavilion of Spain were served sangria from the Taberna Madrid Kiosk and the American market soon became hooked on what they saw as an exotic Spanish cocktail. Nowadays many people have their own recipe and sangria is considered more of a punch than a cocktail. It is usually served in a jug and contains a mixture of red wine, fruit, fruit juice and other alcohols. Some bars even serve a white version for those who find a heady red a little too much for their palette, but the concept of mixing wine with other flavours is still the same.

STRAWBERRY SANGRIAIf you fancy trying a summer inspired recipe, then give this a try. Scale as required.

Ingredients: • 1 bottle of SpaniSh red wine

• 100G of white SuGar

• 200G of SliCed StrawberrieS • 1l of Strawberry lemonade

• 500 ml of GinGer ale

Directions: Add all of the ingredients together and mix well. Serve in a jug filled with lots of ice and enjoy!

When choosing meat, don´t be afraid to go for cuts with a little extra fat as this is where most of the flavour comes from. In the UK and Ireland we are

used to trimming off all the white bits as we see them as bad for us and a lower class choice that the leaner options. Over here, why not go native and take some advice from the

Spanish and South Americans who always leave the fat on the meat. They know that this helps to keep it nice and juicy and would be disappointed if it was removed; so don´t be surprised to find the fat still intact in many of the restaurants. Most of the fat will render off during the grilling process anyway, so having a little extra to begin with doesn´t hurt.

Beautiful Buttery Steaks

BLUE CHEESE & CHILLI PREPARATION TIME: 10 Mins

SERVES: 6

INGREDIENTS: • 6 freSh SteakS

• 3 tableSpoonS of blue CheeSe (Crumbled)• 2 tableSpoonS of butter (Softened)• 1 teaSpoon of freSh ChiveS (Cebollino)• 1 teaSpoon of Cayenne pepper

• 1 teaSpoon of onion powder (Cebolla en polvo)• 1 teaSpoon GarliC Salt (Sal de ajo)• 1/4 teaSpoon Ground Cayenne pepper

• 1 tableSpoon of blaCk pepper (pimienta neGro)• 2 tableSpoonS of olive oil

DIRECTIONS: In a medium bowl mix the blue cheese, butter, and chives then set it aside. In another bowl prepare the spice rub by mixing the cayenne pepper, black pepper, garlic salt and onion powder together. Next coat the steaks with the olive oil and then rub the spice rub into the meat, coating both sides. Place a little oil on to the grill (low heat) and add the steaks. Grill to your liking on both sides then remove and allow to rest. Plate the meat and top with the blue cheese butter. Allow it to melt and serve.

Grilling steaks removes a lot of the natural fat, which can leave the meat a little drier than we would like. These recipes not only help to keep your steak nice and juicy, but also add a little extra flavour to your barbie.


WHISKY & BLACK PEPPER

PREPARATION TIME: 90 Mins

SERVINGS: 6

INGREDIENTS: • 6 freSh SteakS • 250G unSalted butter (Softened)• 2 onionS (minCed) • 1 & 1/2 Shot GlaSSeS of jaCk danielS or whiSky • 1 bunCh of freSh parSley Chopped (perejil)• 1/2 teaSpoon worCeSterShire SauCe

• 1/2 teaSpoon dijon muStard

• 1/2 teaSpoon of Sea Salt

• 1/2 teaSpoon of white pepper • 1/2 teaSpoon whole blaCk pepperCornS (CoarSely Ground)• 2 tableSpoonS of oilve oil

DIRECTIONS: First chop and soak the onions in one shot glass of the whisky and leave to marinade for an hour. Next take a small bowl and add the butter, soaked onions, half of the parsley, Worcestershire sauce, mustard, remaining whisky and the salt and pepper. Mix it all together and once combined place on a piece of transparent food wrap and roll into a log shape. Wrap the ends and place in the fridge to chill and harden. Take the steaks and brush them with olive oil and rub the crushed black pepper corns and salt into the meat. Grill on a medium heat to your required taste and then remove and allow to rest. Take the butter from the fridge and slice it into 1cm thick discs. Place one on top of the meat and allow it to melt before serving. Serve with chopped parsley sprinkled on top and an additional slice of butter if you are feeling really naughty. Enjoy!

Nowadays we buy milk products from the supermarkets or local farms without a second thought as to how they were made. Some people, including many celebrity chefs, are now choosing to go back to nature. Homemade farm-style products have become really trendy and organic restaurants and gourmet pubs are popping up all over the place. So, inspired by a letter we received from Tamara, one of our readers, we thought that it would be a nice idea to include a few dairy recipes for you, that you can make at home. If you really want to go rustic then opt for organic milk and truly enjoy the milky goodness, exactly how nature intended.



INGREDIENTS:• 1.8L Fresh whole milk (Not UHT or long-life) • 75ml Fresh Lemon Juice ( approx. juice from 2 lemons) or 75ml Distilled white vinegar, or 1/2 teaspoon citric acid (available from cheese-making suppliers)• 1 teaspoon salt

DIRECTIONS: In a large cooking pot gently heat up the milk until it reaches 93°C. When the milk begins to steam and foam remove it from the heat. (Do not let it boil.) Next add the lemon juice and salt and stir it into the milk gently until it is all combined. Leave to one side for 10 minutes and do not move or disturb the pot in any way. The milk will naturally begin to separate into milky curbs and a watery yellowish whey mixture. Once it has all separated you are ready to begin straining. Take a medium sized bowl and lay a cheesecloth or fine mesh fabric over it and secure it round the sides. Scoop out the curds with a slotted spoon and lay them on the fabric to strain. Leave them to drain for around 20 – 30 minutes. Remove the cheese from the fabric, mix gently and place it in a bowl ready to refrigerate and enjoy when you are ready.

SERVINGS: Makes around 200ml


INGREDIENTS: • 175ml of Whole Fresh Milk (Not UHT or long-life)• 75g Unsalted Butter ( Sin Sal)

DIRECTIONS: Place the butter in a small saucepan and melt it on a really low heat until it turns back to liquid. Do not burn it and then allow it to cool slightly. Next pour the milk into a bowl and gently add the melted butter. Whisk for around 3 minutes or until all the butter has been incorporated into the milk. This is now ready to be used as a double cream substitute in recipes but if you want to turn it into whipping cream then continue to whip, but once you get the consistency you want, stop otherwise it will separate.

Rennet-free ricotta Making hard cheese is a practiced art and takes a lot of time, but whipping up a bowl of fresh and creamy soft cheese is actually quite easy. Ricotta is a very versatile and easy cheese to use as it has a delicate flavour and light texture which works really nicely in both sweet and savoury dishes.

The Canary Islands are not renowned as being major exporters but when they do produce something, they certainly do it well. Here in Fuerteventura the amount of awards that the locally produced goats cheeses have won, speak for themselves, and the Canarian tomatoes too are sought after for their rich taste and plump texture.

When choosing your chicken, opt for a responsibly reared or organic bird for a real natural flavour. Not only is this better for the chickens, you and the farmers but the taste is well worth the extra few euros. If you are feeling really organic then why not try making your own sun dried tomatoes too!

SUN DRIED TOMATO & GOATS CHEESE ROULADE

PREPARATION TIME: 30 mins

SERVES: 4

Ingredients:• 4 SkinleSS ChiCken breaSt halveS

• 8 oily Sun-dried tomato halveS (drained)• 125G freSh Goat CheeSe (Crumbled)• 1 Cup of dry breadCrumbS

• 2 larGe eGGS (beaten)• 8 freSh baSil leaveS

• Salt & pepper • 1 lemon (SliCed into wedGeS)

DIRECTIONSPre-heat the oven to 200°C. Chop all the chicken breasts in half long-ways, so that you are left with eight evenly sized long filet strips. Lay some plastic food wrapping over each filet and use a heavy pan or rolling pink to flatten the chicken. Remove the plastic wrap and season with chicken with the salt and pepper. Add a piece of goats cheese, a sun dried tomato and a piece of basil to the centre of each of the chicken strips. Roll the chicken around the filling, starting with the narrowest end. Secure the roulade with a cocktail stick. Take each roulade and dip them in the beaten egg mixture then roll them in the breadcrumbs. Coat evenly then lay them on a baking sheet ready for the oven. Roast for around 20 minutes or until the chicken is firm to the touch. Remove and allow to rest for a minute before removing the cocktail stick. Slice the roulades in half and serve.

SPINACH, TOMATO & RED PEPPER ROULADE


SERVES: 4

Ingredients:• 4 SkinleSS ChiCken breaSt halveS • 1 Clove of GarliC (minCed)

ClassyCHICKEN

• ½ medium onion (Chopped) • 75G parmeSan CheeSe (Grated) • 4 tableSpoonS of Sun dried tomatoeS (Chopped)• 250G frozen SpinaCh (thawed and drained) • 100G pine nutS (toaSted & Chopped) • 2 teaSpoonS of olive oil • ½ teaSpoon of Chilli pepper flakeS or paprika

• 100ml of ChiCken StoCk

DIRECTIONSOver a medium heat add 1 tablespoon of the olive oil into a pan and cook the onion, garlic and pepper flakes until they are nice and soft. Take a small bowl and into it place the cooked onion mixture along with the parmesan cheese and spinach. Combine well. Prepare the chicken breasts and flatten (as above) and then sprinkle the sun dried tomatoes onto the chicken strips. Next add an equal amount of the spinach mixture to each strip. Roll up starting with the narrowest point first and secure with a cocktail stick. Place a pan over a medium heat and add the remaining olive oil. Place the chicken roulades into the pan and cook for around 10 minutes, turning occasionally. Next add the chicken stock to the pan and cover. Allow to simmer on a low heat for another 7 -10 minutes. Check the chicken is cooked through and then remove. Slice diagonally and leave to rest. Drizzle the juices from the pan over the top and sprinkle with the pine nuts when ready to serve and enjoy!

For the topping:Beat together the eggs with the sugar, slowly adding the lemon zest and the lemon juice. Stir in the flour, salt and baking powder for a further 3 minutes. Then pour the mixture on top of the base. Microwave it for 3 minutes, almost at full power. When the time is up, check to see if it is set. You should be able to give it a little wiggle, like jelly. If it isn’t quite ready, put it back in for a minute and check again. Let it cool before putting it in the fridge for a few hours or overnight. When you’re done, sprinkle icing sugar and lemon zest on top, before chopping it into portions.Happy munching!

We managed to get an interview with the man himself, accompanied by trainer Dominic Ingle and fellow boxer and sparring partner Kid Galahad at Ingle Gym in Caleta de Fuste, to find out how he has been preparing for the

fight of his life.

You have been waiting for this for a long time, how are you feeling?Awesome, I am in the best shape ever and am ready to get in there and do him. The hard works done, I´ve just got to finish the job. Dom He is well above where he needs to be.

He really is in the best shape ever. Kid I agree with that. I´m in the ring with him ..and he really is ready for this.

You are confident that you are going to win then?Of Course I am, I have been waiting ages for this, I don´t know how to lose!


Amir Khan said that you aren’t ready to take on Shawn?How do you respond to that?I´ld like to beat him up! He should just stop all that chatting!

What kind of fight can we expect?A good one, I´m ready to go as far as I need to, obviously il´d like to knock him out early on but if I need to go on, then that’s fine. I´m ready. Bring it on! Dom It could be a long fight, but we are prepared for that. The Americans are all about the entertainment factor, so sometimes fights go on for much longer than they would over here and can be brutal. Maybe a late stoppage or a win on points. But that’s not a problem, we´re ready.

How have you been preparing?Just eat, train, sleep. That’s it. We work my heart to the max. Dom One day we do track running, the next speed work. We set times to meet and keep hitting and raising them, he is well ahead.

What are you eating?Anything healthy really. Lots of steaks and spinach.

What do you miss?Ohh yeah, Lamb Balti. I could really eat a lamb Balti., but I can´t eat for a few days after a fight though. Kid Guinness! Dom He´s winding you up, he doesn’t drink! Kid.. Okay, KFC!

What made you chose Fuerteventura to train?It´s just perfect here, no distractions, people leave you alone

and you´ve got the sunshine and everything. It´s great here. Kid and the girls are hot!

How do you spend your day off?We go to the beach, walk around without shirts and swim in the sea.

What is it like back stage before the fight?The fights the easy bit. I listen to my music while I limber up and just focus. You can hear all the earlier fights outside and it´s like the kill instinct kicks in. I just focus on the guy and its down to that moment..everything is about that night and doing what I do!

What do you listen to?The songs that we listen to when training, a bit of R&B, hip hop.. Bob Marley. (Kell & Kid sing) Buffalo Soldier!

What will your entrance be like?Just a casual walk out to my song, All of the lights by Kanye West.

Does the fact that the fight is on American soil worry you?Not at all. The Americans like a good fight. If you give them a good show – they will cheer for whoever does the best. Also, there are loads of supporters coming over too.

Does the crowd make a difference?You can hear them yeah, but actually once in the ring, you just get on and do the job. The fight is the easy part.

What´s it like to get hit in the face?Luckily that don’t happen too often, but when it does the adrenalin is going so fast that you don’t notice it. You just keep going.

So you become world champ, how do you celebrate?Spend time with my missus and my little´un and a big party.. lots of parties!

FUERTEVENTURA The Island was created by a volcanic eruption, 20 Million years ago, and is the oldest of the Canary Islands. It is located in the Atlantic Ocean, just 100km of the coast of North Africa, and lies on the same latitude as Florida and Mexico. The Island boats 152 beaches is the second largest of all the Canaries; 100 km long and 31km wide and1660 km². The highest point is Mount Jandía at 807m high, and the narrowest is only 5km wide. The last volcanic eruptions here occurred between 4 – 5000 years ago.

ISLA DE LOS LOBOS: A tiny island (4.6 km²) just 2km north of Fuerteventura. Uninhabited nature reserve since 1982. The island houses weekend properties for local fishermen, a restaurant, day facilities and a lighthouse. It is accessible daily from Corralejo harbor.

CORRALEJO: The largest holiday resort on the island. Traditionally a fishing village that is now a thriving resort offering bars, beaches, restaurants, excursions, water sports and activities for all the family. Also, daily boat and ferry services to and from Lanzarote and Lobos.

CORRALEJO DUNES: This nature reserve attracts sun worshippers and water sports enthusiasts from across the World and boasts 11 km of fine white sandy dunes and beaches.

EL COTILLO: This sleepy fishing village is full of rustic character, and is home to El Toston, that was used to defend the island from pirates. There are natural lagoons and beautiful beaches, amenities and two harbors overlooked by relaxing bars and restaurants.

TINDAYA: Home of the natural monument of Tindaya mountain. Once home to the high priestesses and witches of the Island. A quiet village perfect for hikers and cyclists to wander down off road tracks to the shoreline.

CALETA DE FUSTE: A well designed tourist resort that surrounds the castle ‘El Castillo’ built in 1743, overlooking the harbour. This resort is a favourite with families due to its shallow sloping beach, relaxed atmosphere, golf courses and proximity to the airport. Home of bars, restaurants, excursions and activities for all the family.

PUERTO DEL ROSARIO: The Capital of the Island since 1834, and the location of the airport, hospital, main port and stop off place for cruise ships.

BETANCURIA: Named after Jean de Béthencourt and founded in 1404. Once the original capital of the kingdom of the Canaries. Home to traditional churches, bbq areas and a plaza.

COSTA CALMA: A tourist resort that boasts over 50km of white sandy beaches. Sotavento beach is the location of the annual World windsurfing and Kite surfing championships.
