FROM THE DESK OF THE CEO

The holidays are over and it is back to work for most of the shire staff but it is also a sad time when we say goodbye to some friends and colleagues who have or are moving on. On the 20

th December we said goodbye to roller driver Erika Trutwein, and on the 10

th January

we say goodbye to Rob and Drina Moss. Rob has been a great help to me since I arrived in Sandstone so I would like to thank him for everything he has done for me and wish him and Dri-na all the very best for their new venture. Keith May is not leaving Sandstone but is retiring from the shire workforce also on the 10

Dennis Latter started work on the 3rd

January so we welcome him to Sandstone and hope that he will enjoy his time here. Please make Dennis feel welcome. Advertising is well under way for a replacement roller driver and Works Supervisor with both po-sitions attracting some interest. The subdivision of the old police house is now complete and the shire will put it up for sale by public tender shortly. If you or anyone you know is looking for a house in Sandstone please keep an eye out for the tender of this one. The Shires annual financial statements and audit report were adopted by Council at their Decem-ber meeting and the 2015-2016 Annual Report is almost completed for the annual electors meeting to be held. Please keep a look out on the local notice boards for the date and time of the meeting, pick up a copy of the report and come along and have your say on the performance of your shire for last financial year. Other than that it is a relatively quiet time of the year for the shire with no Council meeting to be held in January but rest assured those office staff that are working have plenty to catch up on and the 6 monthly budget review will keep me busy as will filling the gap as the Works Supervi-sors position may be vacant for some time after Rob Moss leaves. Please have a safe, happy and healthy 2017

On Australia Day we come together as a nation to celebrate what's great about Australia and being Australian. It's the day to reflect on what we have achieved and what we can be proud of in our great nation. It's the day for us to re-commit to making Australia an even better place for the future.

Australia Day, 26 January, is the anniversary of the arrival of the First Fleet of 11 convict ships from Great Britain, and the raising of the Union Jack at Sydney Cove by its commander Captain Arthur Phillip, in 1788.

Though 26 January marks this specific event, today Australia Day celebrations reflect contem-porary Australia: our diverse society and landscape, our remarkable achievements and our bright future. It also is an opportunity to reflect on our nation's history, and to consider how we can make Australia an even better place in future.

On Australia Day, half of the nation’s population of 24 million attend either an organised commu-nity event, or get together with family and friends with the intention of celebrating our national day. Many more spend the public holiday relaxing with family and friends.

Yet Australia Day is much more than barbeques and fireworks. It is more than another public holiday. It is more than the pride and excitement of new citizens who call themselves Australian for the first time on 26 January after being conferred citizenship.

At its core, Australia Day is a day driven by communities, and the celebrations held in each town, suburb or city – unified by the celebration of what’s great about Australia and being Aus-tralian – are the foundation of its ongoing success.

COMMUNITY BUS TAKING PASSENGERS TO MT MAGNET The Sandstone Community Bus will be travelling to Mt Magnet regularly for Shire business. If anyone needs to travel to Mt Magnet, we usually have available seats. We can take a maximum of 6 passengers so please book - please be aware that we adhere to a strict time schedule. The bus will leave from the Sandstone Shire Administration office at 10am and will leave Mt Magnet opposite the IGA at 1.30 pm for the return trip home. Please book your seat by contacting either Rhonda or Margaret at the Shire office ph 9963 5802

There will be no bus service to Mt Magnet in January 2017

Next bus will be Wednesday 22nd February

Town Growth—pg 118

In the early days of Sandstone, although there were women in the district, their numbers were small. However, with the arrival of the train line to Sandstone in 1910, and regular arrivals of trains from Mt Magnet, many men, women and chil-dren were arriving, swelling the population, with most of the adults looking for work. Some went to other centres further on, such as Wiluna, searching for work there. A stroll through the streets of Sandstone in the cool of the afternoon in 1911 would have been a pleasant experience. Starting from the railway station in Irvine St, the place where most newcomers would arrive, it would have been a short walk across the road to the bustling main street, Hack Street. The first building on the left would have been the Sandstone Hotel, with its single-storeyed wood and iron structure, and verandas on to the street. Mrs Catherine Coffey, the licensee, may have been waiting on the veranda to greet new customers from the train, with the aroma of the fine meals her hotel was noted for wafting into the street. Looking northwards along Hack Street, there would have been an almost unbroken line of shops and businesses on both sides of the street, stretching past Oroya St. and up to Rowe St. Among those on the same side of the street as the Sandstone Hotel, you would have passed by shops and a restaurant before reaching Dan Colgan’s newspaper office, where he could have been busy preparing his press for the printing of the Black Range Courier, which he put out weekly. As you walked past more shops, you would pass the red brick WA Bank, just back from the corner, before crossing Oroya Street to the Post Office, also made of the locally made red bricks. To the north of the post office, Sam Jervoise, a lawyer, had his office between the post of-fice and the bakery run by R. C. Leslie. Assorted shops and businesses lined the road to Rowe Street, on the other side of which James Gordon had his stables. Crossing Hack St and turning back towards the railway end of the town, you would have noted the Dwyer & Hayes restaurant, where smells of the evening meal being prepared could have been wafting out. Next was the Cobb & Co office, where a mail coach may have been loading up for a journey to Lawlers, and Rose Sullivan’s restaurant and coffee palace on the cor-ner of Rowe and Hack St’s. It would have been a busy place, with all the building that was going on in the district. You would have passed the new roads board hall and offices, before coming to Feinberg’s shop and Doc Clarson’s chemist shop on the corner. On the opposite corner, but still on Hack St, was the Oroya Palace Hotel, and as you passed it would have been hard not to call in for a cool refreshment and a chance to talk to the locals in the comfortable lounge area cooled by overhead fans. Ham and egg pies

INGREDIENTS 80g sliced ham, chopped 4 eggs, at room temperature 1 small tomato, seeds removed, diced 2 tablespoons flat-leaf parsley leaves, chopped 1 tablespoon low-fat ricotta cheese, crumbled (see variation) 1 tablespoon light thickened cream 30g baby spinach, trimmed 4 slices crusty wholegrain bread, toasted, to serve

METHOD Step 1

Preheat oven to 180°C. Grease four 1/2-cup capacity ovenproof ramekins and arrange ham to line base and sides.

Step 2 Crack 1 egg into each ramekin. Top each with a quarter of the tomato, parsley and ricotta. Drizzle 1 teaspoon cream over each. Season with salt and pepper.

Step 3 Bake pies for 15 to 18 minutes for soft yolks or until egg is cooked to your liking. Stand for 2 to 3 minutes.

Step 4 Divide spinach between plates. Turn out ham and egg pies and place on top of spinach. Serve with toast.

Brown Sugar Pavlova stack

INGREDIENTS

Icing sugar, sifted, to dust

1/2 firmly packed cup (110g) brown sugar

1 1/2 tablespoons cornflour

1 1/2 cups (330g) caster sugar

6 eggwhites (brought to room temperature)

1 1/2 teaspoons vanilla extract

2 teaspoons white vinegar

500g mixed fresh (or frozen, thawed) berries

300ml thickened cream

200ml sour cream

METHOD

Preheat the oven to 120°C. Grease and line the base and sides of three 24cm cake pans. Grease the pans again, then dust with a little icing sugar, shaking off any excess. Place the brown sugar, cornflour and 1 cup (220g) caster sugar in a food processor and whiz until the mixture is combined and fine (without any lumps). In the bowl of an electric mixer, whisk the eggwhites with a pinch of salt until soft peaks form. With the motor running, slowly add the sugar mixture, a little at a time, whisking until stiff and glossy. Fold in the vanilla and vinegar. Divide mixture among the pans, then transfer to the ov-en and bake for 1 hour. Cool completely in the switched-off oven with the door ajar. Meanwhile, place the remaining 1/2 cup (110g) caster sugar in a pan with 1/2 cup (125ml) wa-ter. Stir over low heat until the sugar dissolves, then simmer, without stirring, for 2-3 minutes until thickened slightly. Cool, then add the berries. Transfer half the berry mixture to a blender and puree until smooth, then combine with remaining berry mixture and chill until needed. Using electric beaters, beat the thickened cream and sour cream together until thick. Run a knife around the rim of each cake pan, then carefully remove the cooled meringues and peel away the baking paper. Just before serving, place 1 meringue on a cake stand, spread with one-third of the cream mix-ture and scatter with one-third of the berries. Repeat with the remaining meringues, cream and berries, drizzle with any remaining syrup, then serve immediately.
