Sunil Perera, Corrine, Mariezelle, Rukshan and Sandra & Esric Jackson from Australia among oth- ers join Desmond on stage. Our combined obsession is what makes the Uga experience special.’ ‘Travel must be a gastronomic as well as a geographical journey,’ agrees Vichalya Fer- nando, chef de cuisine at Jungle Beach, Uga Escapes’ resort at Kucchaveli, a few kilome- tres north of Trincomalee. ‘In Sri Lanka, it can be a genuine voyage of discovery because we have such a rich, multicultural cuisine. Despite the resort’s somewhat out-of-the-way location, guests at Jungle Beach are faced with a pleth- ora of gourmet choices ev- ery day. ‘Our menus offer a light fusion of contem- porary Western and Asian tastes, inspired by fresh, natural ingredients – par- ticularly the freshest sea- food, which we obtain lo- cally. What better place for seafood than Trincomalee, the finest natural harbour in the world?’ Jungle Beach boasts a variety of sea- food specialties, including a special three-courseall- crab dinner served at tables set out on the wide, sandy beach that fronts the hotel. Eating and drinking with your feet in the sand is definitely key to the Uga Jungle Beach experience. There’s a beach bar – a watering-hole for swimmers and sun- bathers by day, a place for whispered romance by night – and more romantic still, a dinner- time ‘beach picnic’ under the stars, popular with honeymooners. Other culinary delights include a special ‘Sri Lankan table’ that show- cases traditional dishes and spices, and the peak of gastronomic achievement, Vichalya’s menu de dégustation – all five melt-in-the- mouth courses of it, accompanied, if you wish, by appropriate wines suggested by food-and- beverage manager. This enthusiasm for fine food even extends to that problematical meal, breakfast. A true gour- met, it used to be said, takes no breakfast; but at Uga Escapes at least, times has changed. The boring breakfast buffets served to guests at a typical Sri Lankan hotel have no place at Jungle Beach, Uga Bay or Ulagalla. Instead, guests re- ceive a breakfast on a tray, made up to order, in the dining-room or anywhere else on the prop- erty they choose to take it. Every tray receives the chef’s personal attention before it leaves the kitchen, ensuring that everything is just so. A typical Uga breakfast tray might contain any of a variety of hot dishes, assorted kinds of bread, croissants, doughnuts, fruit juice or a smoothie, yogurt, organic jam and much more – with re- fills on the house. Unlimited supplies of tea and coffee are also available.
