;eat the olive oil in a paella pan or wide shallow skillet over medium-high heat. 6lace the chicken
in the pan# skin-side down and brown on all sides# turning with tongs. dd the chorio and
continue to cook until the oil is a vibrant red color. Lemove the chicken and sausage to a platter
lined with paper towels.
Leturn the pan to the stove and lower the heat to medium. /ake a sofrito by sauteing the garlic#
onion# and tomatoesI cook until the mi8ture caramelies a bit and the flavors meldI season with
salt and pepper. Fold in the rice# stirring to coat the grains. tir the saffron into the rice. 6our in
the water and simmer for 1* minutes# gently moving the pan around so the rice cooks evenly and
absorbs the liquid. Do not cover or constantly stir like risotto.
dd the shrimp# lobster# clams# the reserved chicken# and the chorio. 3ive the paella a couple of
good stirs to tuck in all the pieces and $ust let it simmer# without stirring# until the rice is al dente#
about 19 minutes. catter the peas on top and continue to cook for 9 minutes# until the paella
looks fluffy and moist. The ideal paella has a toasted rice bottom called socarrat. llow to rest# off
the heat for 9 minutes# and garnish with parsley. erve with lemon wedges.

;eat the olive oil in a large saute pan over high heat until smoking. eparately saute the garlic#
bell pepper# tomatoes# chiles# and bread cubes until lightly browned# about ' minutes each.
Lemove each ingredient with a slotted spoon as it is done. Deglae the pan with the wine.
6lace all the sauteed ingredients and the deglaing liquid into a food processor and blend until
smooth. dd the haelnuts and process until finely chopped. dd the honey and season to taste
with salt and pepper.
Fresh 0regano Ginaigrette,
1H) cup sherry vinegar
1H' shallot# peeled and finely diced
1 tablespoon Di$on mustard
1 teaspoon honey
1 teaspoon minced fresh oregano# or more to taste
alt and freshly ground pepper
1H' cup pure olive oil
(hisk together vinegar# shallot# mustard# honey# and oregano in a small bowl. eason with salt
and pepper# to taste. lowly whisk in olive oil until emulsified.
