This is a unit with six inquiry teaching sequences about what it takes to change milk into other dairy foods

Dairy foods make up an important part of our diet yet most people rarely think about where they come from or how they are made In this unit students explore milk and all the dairy foods that stem from this one ingredient

Working with milk is remarkably scientific Using some relatively simple laws of science students transform milk into cream and fresh butter Explore how dairy foods

when whisked cooled and heated can change properties They also prepare a healthy snack using a dairy food

In this unit they investigate process and analyse their experimental data record iwork and ideas completed evaluate and reflect on their achievements and communicate their findings

Food is fun to mix and make and even more fun to eat Bring your love of food and cooking together and explore how different ingredients can be combined as you put on a food fair that celebrates dairy food

What science investigations can assist you in your mission to mix up ingredients and make a dairy recipe for the food fair What physical changes might milk cream and yoghurt undergo when mixed with other ingredients

Dairy Australia can help out with lots of recipes images and information about dairy foods and how they can be used to make snacks meals and drinks too Look for them on the lsquoDiscover Dairyrsquo website dairyeduaudiscoverdairy

Your challenge is to use the website and a range of hands on activities and videos to help understand the effects of mixing ingredients together Are you up for the challenge

If so then Dairy Australia would like you to celebrate dairy foods and host a lsquoFood Fairrsquo of yummy healthy dairy foods and their recipes

View a video to explore what happens to milk when it is added to an egg In this video milk is added to a beaten egg Ask students to predict how the milk when poured into the beaten egg might physically change For example the white milk changes to look yellow The milk becomes thicker

Talk about how cooking might change the milk and egg mixture Ask students to make their predictions

Watch the lsquoI can cook a Sweetheart Quichersquo episode of lsquoI Can Cookrsquo at cbeebiescomaustraliai-can-cookactivity-260597 and confirm predictions

View another cooking episode which has the reverse procedure where a fresh egg is whisked and then milk is poured into the egg mixture Ask students to predict how the egg yolk and egg white might be physically changed firstly when whisked and secondly after having milk added to the mixture Record the studentrsquos predictions and display them This recipe also involves milk being added to the whisked egg and then the egg and milk being added to flour too Ask students to predict what might physically change when the milk is added to the whisked egg and then when this mixture is added to flour Record these additional studentrsquos predictions and display them

Discuss milk Ask students to think about what they can do to change the properties of milk such as thicken it heat it and freeze it

Brainstorm what students know about what foods milk can be made into List key words and ask students to create an annotated drawing that includes pictures and words or descriptions about the dairy foods they know about

Prerequisite for Progression

Ask students to articulate their understanding of the taskchallenge through oral conversation and if appropriate a written (scribed) statement

Note The Prerequisite for Progression are the checkpoints that occur at the end of each stage of the learning sequence This is the time at which formative feedback is given to the students about what they have accomplished in that stage It describes what the students must complete before they move onto the next phase of the unit (Crockett et al)

STEP 2 DEFINE UNDERSTANDINGS

Objective Students need to investigate experiment discuss gather organise pictures and text about the science involved in making a dairy food

Introduce the student section on the lsquoDiscover Dairyrsquo website See dairyeduaudiscoverdairystudents

In pairs using a digital device explain to the class they are to select their year level on the tool bar and then to choose the lsquomilkrsquo icon to discover the different dairy foods that are made from milk

Ask students to use colourful language and describe the different appearances and shapes of the dairy foods they find

Create a lsquoWord Wallrsquo in the class describing the different appearances and shapes of dairy foods

Undertake some lsquoscientific researchrsquo and ask students to think about what might have happened to the milk for it to change into butter cream yoghurt ice cream and cheese

Ask students to record their predictions

Talk with the class about milk fresh from the cow having both cream and milk mixed together The cream is less dense than the milk so the cream rises to the top where is can be skimmed off

Explain butter is made from milk and by whisking or churning turn into cream In groups students will use cream to make butter

Make butter using clean jars with tight fitting lids a marble and different types of Australian cream including light cream whipping cream double cream thickened cream sour cream or cregraveme fraiche Ask students to experiment with another way of making butter See jumpstartcomcommonmake-your-butter

Use iPads and time how long it takes to make butter

Find out what students now know about how cream when whisked can change properties and become butter

Encourage students to tell write or draw their ideas Display these for future reference

Model how butter can be made another way using the following tools and ingredients You will need

bull An electric whisk

bull Two mixing bowls

bull Clean perforated kitchen wipe or cheese cloth

bull 500ml Australian cream (35 milk fat) at room temperature

bull A sieve

bull A plastic plate

STEP 3 DISCOVER

Ask students to

bull Pour cream into the first mixing bowl and beat for approximately 5ndash6 minutes or until the cream starts to become very clumpy and watery

bull Line the sieve with the clean kitchen wipe or cheese cloth and sit over the second bowl

bull Pour cream mixture onto the cloth gather the sides of the cloth around the mixture to form a tight ball to squeeze out as much butter milk as possible into the bowl below

bull When this is done remove the butter that will be left inside the cloth and refrigerate

bull The butter is now ready to be spread on bread or crackers

Ask students to watch the milk and cream change talk about what is happening and why and record ideas as a word chain describing the changes as they occurred

For example whisk cream ndash butter comes together into clusters ndash butter separates from the buttermilk

Talk with the students about the butter needing to be refrigerated or frozen to prevent it from spoiling Ask questions about whether these cooling processes might change the properties of the butter too

Transform the student made butter by blending herbs and spices with it

Brainstorm the types of herbs that might add flavour to the butter (For example freshly chopped garlic parsley thyme basil or fennel)

Experiment with adding flavourings by first bringing the butter to room temperature flattening the butter into a rectangle on a sheet of greaseproof paper sprinkling the flavourings over the top and rolling up the butter to form a cylinder Wrap up and store in refrigerator or freezer until solid and then slice before using it

Model the creation of ice cream with the You Tube video by Full Time Kids at youtubecomwatchv=7TiMhu7nDdU

Talk with the students about how the video demonstrated how milk changed its properties this time when it was cooled

Ask students to watch the cream change talk about what is happening and why and record ideas as a word chain describing the changes that occurred this time when making ice cream

Invite students to compare observations too

Discuss questions like

bull What can we do to milk and cream to change it into ice cream

bull Can we possibly change ice cream back into milk and cream Why or why not

As a class think about the properties of cheese and how they might change when heat is added Ask students to visualise cheese melts macaroni cheese and melted cheese on a pizza

bull Line the sieve with the clean kitchen wipe or cheese cloth and sit over the second bowl

bull Pour cream mixture onto the cloth gather the sides of the cloth around the mixture to form a tight ball to squeeze out as much butter milk as possible into the bowl below

bull When this is done remove the butter that will be left inside the cloth and refrigerate

bull The butter is now ready to be spread on bread or crackers

This is a unit with six inquiry teaching sequences about what it takes to change milk into other dairy foods

Dairy foods make up an important part of our diet yet most people rarely think about where they come from or how they are made In this unit students explore milk and all the dairy foods that stem from this one ingredient

Working with milk is remarkably scientific Using some relatively simple laws of science students transform milk into cream and fresh butter Explore how dairy foods

when whisked cooled and heated can change properties They also prepare a healthy snack using a dairy food

In this unit they investigate process and analyse their experimental data record iwork and ideas completed evaluate and reflect on their achievements and communicate their findings

This is a unit with six inquiry teaching sequences about what it takes to change milk into other dairy foods

Dairy foods make up an important part of our diet yet most people rarely think about where they come from or how they are made In this unit students explore milk and all the dairy foods that stem from this one ingredient

Working with milk is remarkably scientific Using some relatively simple laws of science students transform milk into cream and fresh butter Explore how dairy foods

when whisked cooled and heated can change properties They also prepare a healthy snack using a dairy food

In this unit they investigate process and analyse their experimental data record iwork and ideas completed evaluate and reflect on their achievements and communicate their findings

STEP 2 DEFINE UNDERSTANDINGS

Objective Students need to investigate experiment discuss gather organise pictures and text about the science involved in making a dairy food

Introduce the student section on the lsquoDiscover Dairyrsquo website See dairyeduaudiscoverdairystudents

In pairs using a digital device explain to the class they are to select their year level on the tool bar and then to choose the lsquomilkrsquo icon to discover the different dairy foods that are made from milk

Ask students to use colourful language and describe the different appearances and shapes of the dairy foods they find

Create a lsquoWord Wallrsquo in the class describing the different appearances and shapes of dairy foods

Undertake some lsquoscientific researchrsquo and ask students to think about what might have happened to the milk for it to change into butter cream yoghurt ice cream and cheese

Ask students to record their predictions

Talk with the class about milk fresh from the cow having both cream and milk mixed together The cream is less dense than the milk so the cream rises to the top where is can be skimmed off

Explain butter is made from milk and by whisking or churning turn into cream In groups students will use cream to make butter

Make butter using clean jars with tight fitting lids a marble and different types of Australian cream including light cream whipping cream double cream thickened cream sour cream or cregraveme fraiche Ask students to experiment with another way of making butter See jumpstartcomcommonmake-your-butter

Use iPads and time how long it takes to make butter

Find out what students now know about how cream when whisked can change properties and become butter

Encourage students to tell write or draw their ideas Display these for future reference

Model how butter can be made another way using the following tools and ingredients You will need

bull An electric whisk

bull Two mixing bowls

bull Clean perforated kitchen wipe or cheese cloth

bull 500ml Australian cream (35 milk fat) at room temperature

bull A sieve

bull A plastic plate

STEP 3 DISCOVER

Ask students to

bull Pour cream into the first mixing bowl and beat for approximately 5ndash6 minutes or until the cream starts to become very clumpy and watery

bull Line the sieve with the clean kitchen wipe or cheese cloth and sit over the second bowl

bull Pour cream mixture onto the cloth gather the sides of the cloth around the mixture to form a tight ball to squeeze out as much butter milk as possible into the bowl below

bull When this is done remove the butter that will be left inside the cloth and refrigerate

bull The butter is now ready to be spread on bread or crackers

Ask students to watch the milk and cream change talk about what is happening and why and record ideas as a word chain describing the changes as they occurred

For example whisk cream ndash butter comes together into clusters ndash butter separates from the buttermilk

Talk with the students about the butter needing to be refrigerated or frozen to prevent it from spoiling Ask questions about whether these cooling processes might change the properties of the butter too

Transform the student made butter by blending herbs and spices with it

Brainstorm the types of herbs that might add flavour to the butter (For example freshly chopped garlic parsley thyme basil or fennel)

Experiment with adding flavourings by first bringing the butter to room temperature flattening the butter into a rectangle on a sheet of greaseproof paper sprinkling the flavourings over the top and rolling up the butter to form a cylinder Wrap up and store in refrigerator or freezer until solid and then slice before using it

Model the creation of ice cream with the You Tube video by Full Time Kids at youtubecomwatchv=7TiMhu7nDdU

Talk with the students about how the video demonstrated how milk changed its properties this time when it was cooled

Ask students to watch the cream change talk about what is happening and why and record ideas as a word chain describing the changes that occurred this time when making ice cream

Ask students to

bull Pour cream into the first mixing bowl and beat for approximately 5ndash6 minutes or until the cream starts to become very clumpy and watery

bull Line the sieve with the clean kitchen wipe or cheese cloth and sit over the second bowl

bull Pour cream mixture onto the cloth gather the sides of the cloth around the mixture to form a tight ball to squeeze out as much butter milk as possible into the bowl below

bull When this is done remove the butter that will be left inside the cloth and refrigerate

bull The butter is now ready to be spread on bread or crackers

Ask students to watch the milk and cream change talk about what is happening and why and record ideas as a word chain describing the changes as they occurred

For example whisk cream ndash butter comes together into clusters ndash butter separates from the buttermilk

Talk with the students about the butter needing to be refrigerated or frozen to prevent it from spoiling Ask questions about whether these cooling processes might change the properties of the butter too

Transform the student made butter by blending herbs and spices with it
