A PRIL continues the magical season of spring. Rebirth and renewal are in evidence

everywhere. Birds are furtively hoping around collecting the perfect materials for their nests, shoots are sprouting

and the sun is climbing higher into the sky especially now that the clocks have gone forward.

I’ve introduced a new strand in the magazine called Talking Teddington, see page 26. Over the coming months you’ll be hearing from various Teddingtonians about their relationship with the area. We launch this month with the community busy bee Bhavna Patel.

To welcome Retro’s new Head Chef, Francois Fayd’Herbe de Maudave to Teddington, we asked him to share a favourite recipe with the readers. Having come from such fine eating establishments as Mon Plaisir in Covent Garden, and The Park Lane, Savoy and Grosvenor House Hotels, we are looking forward to trying some of the new dishes he will be presenting.SPRING LAMB CUTLETS, CRUSHED JERSEY ROYAL POTATOES WITH BLACK OLIVES, BOK CHOI, BROAD BEAN AND MINT PESTO.

Serves 4

Ingredients:1 best end of spring lamb400g Jersey royal potatoes80g black olives100g diced shallot40g chopped parsley4 bok choi100ml garlic oil

Ingredients for broad bean pesto:100g shelled and blanched broad beans25g freshly grated Parmesan25g mint leaves15g parsley leaves15g garlic10g pistachio nuts15g pine nuts10g walnuts200ml olive oil

Method:1) Pre heat oven to 180 degrees C, 350 F, Gas Mark 4. Season the lamb with sea salt and white pepper and wrap the bones in foil to stop them burning in the oven. Seal in a frying pan until lightly brown on all sides. Place in roasting tin and cook in the pre-heated oven at 180 degrees for 10 minutes, and then allow to rest for 8 minutes before carving.

Spring Recipe from Retro Bistrot

2) Wash the Jersey Royal potatoes and roast in the oven with sea salt and half the garlic oil. Roast at 160 degrees (Gas Mark 3) for 30 minutes or until cooked (depending on size).3) Sweat the diced shallot on a low heat in olive oil until translucent; add the roasted Jersey Royals, olives and parsley. Mix well and press into 4 rings, crushing the potato mix into shape.4) Blanch the Bok Choi in boiling water for 3 minutes and then drain. Cut in half, then sauté in olive oil with seasoning.

5) For the pesto: blitz all ingredients apart from the broad beans in a food processor until a smooth paste is achieved. Now mix in the blanched broad beans and seasoning.To assemble: push the crushed potato out of the ring onto the plate, lean the halved Bok Choi against the potato. Slice the lamb against the bones to get 8 cutlets and place 2 on each plate. And finally spoon the Broad Bean and Mint Pesto generously over the lamb.

VITALITY HAVE GIVEN Richmond Business Awards winner Claire Georghiades a huge boost in her

bid to run the London Marathon on April 26th, when they selected her to be The Face of Vitality for the inaugural North London Half Marathon, which was held on March 15th and started by no other than Teddington’s own athletics legend, Mo Farah.

Claire is keen to run the London Marathon to raise money for the St George’s Hospital in Tooting to say thank you for the successful treatment and after care of her Stage III skin cancer, which means that the North London Half Marathon on March 15th coincided with her 3rd year anniversary of being completely clear of cancer.

The money she raises will be divided evenly between St George’s Melanoma Fund, which urgently needs new equipment to beat melanoma; and the Skin Cancer Fund, which is aiming to publish a patient leaflet on new research showing the importance of normal levels of Vitamin D3 when you have been diagnosed with cancer. This information desperately needs to be communicated to patients so that they can have a better chance of recovery.

After Claire’s own recovery in 2012, she was keen to regain her fitness and was motivated by being able to join the free weekly 5k timed parkrun, which is now a global event, but which of course started in our very own Bushy Park just over ten years ago.

Vitality are both supporters and sponsors of the parkrun community, and so naturally, they advertised their prize of becoming the Face of each of the Vitality Series Half Marathons in the parkrun newsletter, exclusively for park runners.The fantastic prize included giving winners a helping hand along their training journey with ongoing training support from running expert - Martin Yelling, a spot at a Laureus training day, a GPS running device to track their progress, a £50 Sweatshop voucher for new trainers and more! In return, Vitality followed Claire through a weekly

blog and photography updates. The aim is to share individual stories to inspire others to step up to the challenge.

Claire said, ‘I have always found it difficult to stick to an exercise programme. I don’t mean to give up, but in the past life has always got in the way - I have had too much work, or the excuse of the weather or a cold, and before I know it I have stopped exercising altogether.’

‘It has been amazing to have the support of Vitality, and without which I would have not been feeling so confident about tackling my first ever half marathon and then my first ever marathon. The difference this time is that I have managed to get in the good habits of exercising and eating well, so I know that this won’t be my last running challenge!’

So how did Claire do at her first half marathon? ‘I am so happy, I managed it in exactly two hours (and 41 seconds), and I am not a runner, it just goes to show what anyone can do if they are prepared to train for it.’

Claire is the Co-Founder of Accounts Resource who won the coveted Best New Startup Business at the 2012 Richmond Business Awards, Best Website in 2013 and who were picked by Dragon’s Den star Theo Paphitis in 2014 to join his coveted Small Business Sunday winners.

Space To Play

YOU MAY BE AWARE that Imperial College, who owns the 13 acre sports ground behind the High

Street on Udney Park Road, has recently put the property up for sale on the open market. As you can imagine, there is considerable interest in the site from a variety of sources.

Space to Play wants to turn these privately-owned playing fields into a community sports ground that is open to all local residents.

HISTORY OF THE SITEThe playing fields came to Imperial via their merger with St Mary’s Hospital Medical School, who had earlier received them as a gift from Lord Beaverbrook on the basis that their use would be restricted to sport. To date, Imperial has honoured this agreement, albeit with only limited access for non-university organisations.

We understand that Imperial is now looking to obtain the best possible terms for the sale of this valuable asset, and that this does not necessarily include a commitment to honouring its original use as a dedicated sports facility.

THE VISIONSpace to Play is the campaign that brings together local sports clubs, schools, businesses and residents to ensure that the playing fields remain an open space, and a dedicated sports facility that is open to the whole community. All of our local sports clubs and many of our schools are crying out for extra playing fields in order to meet the demand from local families.

Key to the success of a community bid is Richmond Council’s commitment to keeping the playing fields as green open space. Teddington Property Market

H as apathy hit the Teddington housing market as sellers

await the outcome of the general election and stricter mortgage regulation suppresses buyer demand? Rightmove reported the number of homes registered for

sale per estate agent fell to its lowest level for five years in December, with available stock 10% lower than in the same month a year earlier.

Looking at Teddington specifically, in the late summer of 2014, there were a total of 378 properties up for sale which then, by December, had plummeted to 290. We would normally then expect to see a surge of properties onto the market in January but the numbers actually fell this January to a total of 269 properties on the market. Most unusual! So, is the explanation for this the General Election? Well, Countrywide, the UKs largest estate agent reported last month that the uncertainty around the election outcome is ‘likely to create some sluggishness.’ The implications can be great depending on which government comes into power and what their policies may be. This is especially so if you’re in the middle of a sale worth hundreds of thousands of pounds – 1% here and there the wrong way can hurt… a lot!!

2015 will be the year of the selective mover. There are a woefully low and insufficient number of new buildings in the town and that, along with a systemic change in the type of properties homeowners want (more single buyers, splitting families etc. meaning a higher demand for small properties rather than the traditional larger ones), means people will only move if they have to. The more people sit tight instead of buying and selling the larger the impact on the long term market.

The heat has gone out of the Teddington property market and I anticipate a moderate reduction from the high transaction volumes seen in 2014, but it most certainly isn’t cold. That might mean Teddington landlords could bag a bit more of a discount during this period of uncertainty, especially if the financial markets don’t like the election outcome. Markets and buyers do not like uncertainty, but savvy landlords know buy to let is a long term game. Irrespective of short term apathy, a reduction in the quality and quantity of stock for homeowners to buy is still a good thing for you landlords; if people don’t buy property, they rent. And that equals lots of tenants paying your mortgage! The Council aren’t building any more properties, the council house waiting list is decades, not years, for the better type of property and so the only other way to get a roof over your head? Rent a property! Good old Bricks and Mortar!

To welcome Retro’s new Head Chef, Francois Fayd’Herbe de Maudave to Teddington, we

asked him to share a favourite recipe with the readers. Having come from such fine eating establishments as Mon Plaisir in Covent Garden, and The Park Lane, Savoy and Grosvenor House Hotels, we are looking forward to trying some of the new dishes he will be presenting.

SPRING LAMB CUTLETS, CRUSHED JERSEY ROYAL POTATOES WITH BLACK OLIVES, BOK CHOI, BROAD BEAN AND MINT PESTO.

Serves 4

Ingredients:1 best end of spring lamb400g Jersey royal potatoes80g black olives100g diced shallot40g chopped parsley4 bok choi100ml garlic oil

Ingredients for broad bean pesto:100g shelled and blanched broad beans25g freshly grated Parmesan25g mint leaves15g parsley leaves15g garlic10g pistachio nuts15g pine nuts10g walnuts200ml olive oil

Method:1) Pre heat oven to 180 degrees C, 350 F, Gas Mark 4. Season the lamb with sea salt and white pepper and wrap the bones in foil to stop them burning in the oven. Seal in a frying pan until lightly brown on all sides. Place in roasting tin and cook in the pre-heated oven at 180 degrees for 10 minutes, and then allow to rest for 8 minutes before carving.

Spring Recipe from Retro Bistrot

2) Wash the Jersey Royal potatoes and roast in the oven with sea salt and half the garlic oil. Roast at 160 degrees (Gas Mark 3) for 30 minutes or until cooked (depending on size).

3) Sweat the diced shallot on a low heat in olive oil until translucent; add the roasted Jersey Royals, olives and parsley. Mix well and press into 4 rings, crushing the potato mix into shape.

4) Blanch the Bok Choi in boiling water for 3 minutes and then drain. Cut in half, then sauté in olive oil with seasoning.

5) For the pesto: blitz all ingredients apart from the broad beans in a food processor until a smooth paste is achieved. Now mix in the blanched broad beans and seasoning.

To assemble: push the crushed potato out of the ring onto the plate, lean the halved Bok Choi against the potato. Slice the lamb against the bones to get 8 cutlets and place 2 on each plate. And finally spoon the Broad Bean and Mint Pesto generously over the lamb.

Teddington Lights Up

EVEN WITH MY GREAT love of Teddington, I cannot claim the town as a great seat of

learning. Yet it has existed since before Saxon times and has been in constant occupation since those times, so there must have been some form of education in place.

The earliest legend is that Dame Dorothy Bridgeman left an amount of £40 in her will in 1697 to the parish for the purchase of a plot of land, the rent from which was to pay for the education of 12 girls. The old Parish Magazine of 1875 confirmed that this was so and that the land was now in the occupation of the Vicar and produced an income of £5.00 a year. An amusing aside in the parish register notes that a Mr Abraham Clark is mentioned in later years as having been paid 25/- (£1.25) a quarter for giving such education. Unfortunately he spelt ‘write’ as ‘wrighte’ and ‘teaching’ as ‘techin,’ so one may be excused for doubting his professional qualification. In 1720, his pay was suddenly stopped for, it is said, his being in debt for rent.

In 1711 20 other parishioners gave an amount of £22.4s.0d. towards the teaching of the children of Teddington. However perhaps they should have started with the teaching staff as we are told that one mistress could not write her own name legibly and another signed with a mark. In 1718, Mr Wm Alexander received £3.1s.4d. for teaching 28 children to sing during three months. No charge appears for pens, light or fuel, but mending broken glass occurs. In 1741 the list of subscribers had dwindled to only five although by 1761 the number of children was 44 from 21 families. The situation was so bad that the Vestry passed a resolution that every family could send only one child each to school.

Things obviously drifted along and there were a number of dame schools in existence at that time. A dame school was an early form of a private elementary school, usually taught by women and usually located in the home of the teacher. The curriculum was very basic; reading, spelling,

writing and some mathematics if you were lucky (or not). One such dame school was run by Miss Elizabeth Acton at Faversham House in Teddington High Street and continued into the 1870s. By 1824 part of the Bridgeman legacy was being used for other purposes as only 12 children were being educated in two dame schools.

The inadequacy of the Vestry efforts in the direction of education came to a head in 1831 and in August of that year, the residents formed a committee to finance a new school and oversee its building. Its patron was Queen Adelaide, living nearby in Bushy House, and she personally donated £100. The target was met fairly quickly, building commenced and Teddington Public School opened for business on 30th January 1832. The principles of the school were as laid out in Chris French’s A History of St Mary and St Peter’s Primary School – ‘To provide a good plain education suitable to their wants and condition, for all boys of the village, including those of the immediate neighbourhood whose parents or guardians desire to give their children the benefits of the institution; and secondly in its system of discipline, to inculcate religious principles, correct moral conduct, duty to parents, diligence, fidelity and contentment in their future stations in life, and gratitude to God and obedience to His Commandments. Instruction on these heads being drawn from the pure source of the Holy Scriptures.’

The first master was Mr Salisbury on a salary of £60 per annum and he had a charge of 51 boys. The school was for boys only at this stage and they were required to attend Mondays to Fridays 9.00am to 12.00 noon and 2.00pm to 5.00pm. There was a charge of 2d per week payable on Monday mornings. The committee insisted on a high level of discipline and the school master was judged on how he maintained such discipline. Unfortunately Mr Salisbury did not come up to the committee’s standards and he was dismissed after only six months.

Chris French describes an extreme case of harsh discipline that took place in September 1832 – ‘two boys – Joseph Walters and Thomas Hammerton – were punished for stealing ten shillings kept in the Donation Box in the schoolroom. Not only did they have to stand in front of the whole school holding a sheet of paper with the word “THIEF” on it whilst the rest of the boys chanted “thief”, but Joseph Walters – the main instigator of the crime – was to be publicly flogged and receive two dozen lashes.’

Despite this, the school flourished with a girls’ section added in 1843 and an infants’ section in 1848. However there was a high turnover in the number of masters and the problem was exasperated by the master’s wife usually taking the role of mistress of the girls and infants. This was largely a matter of salary; a skilled worker could earn a much higher wage than a school master. The problem was resolved by the school being awarded a government grant in 1853 which made up the master’s pay to a commercial level.

1863 saw the coming of the railway to Teddington. This brought about a huge increase in population which was to continue to the end of the century, and the subsequent demand on more school places. Various Education Acts of 1870, 1880, 1891 and 1902 closely monitored the progress made in Teddington schools as they opened:1865 Station Road Undenominational School1875 St Mark’s School opened1883 Sacred Heart RC School opened1884 St Paul’s RC Convent School opened1899 Victoria School opened

1903 Summerleigh School opened1905 Teddington Council School opened.

All the time the Public School was being expanded and it continued to receive good reports. When the new parish of SS Peter and Paul was created, the school changed its name to St Mary and St Peter and when the buildings were resited, the new name moved with it.

The Council School became Stanley Road School in 1907. It lost its senior wing in 1962 and now is an infants and junior school.

The legendary Sarah Collis was headmistress at the Station Road School. She served here from the school’s beginning in 1865 to her retirement in 1906. Her place was taken by her niece, Miss Mary Collis and in 1936; the school became Christchurch County Primary School. In view of the esteem in which the Collises were held, the school finally changed its name to Collis Primary School in 1960 and moved to its present location in Fairfax Road in 1972.

A major development took place in 1962 with the opening of Teddington Secondary School. This establishment opened as a boys only school and added girls a couple of years later.

In recent years, the standards of Teddington schools have been highly praised and places are much sought after. Altogether a bit different from the £40 donated to educate 12 girls.

I HAVE DEVOTED MYSELF to wine over the last 30 years and despite a desire to better

understand and ultimately appreciate the finer spirits of the world, I never quite get round to it. This frustration was recently part-assuaged when organising a Cognac Masterclass at Bacco in Richmond. I deferred to the delightful Guillemette de Couesnongle, a charming French lady who represents Delamain Cognac in the UK. Guillemette hosted an extremely informative event which gave us all a magnificent insight into this well-known drink which is reckoned to be the finest spirit derived from grapes.

GEOGRAPHY AND GRAPESThe town of Cognac is situated about 120km north of Bordeaux and the production area of the grapes required for Cognac emanates out from the centre-ville. There are six zones of production: Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bon Bois and finally Bois Ordinaire. A blend of Grande and Petite Champagne can also be called Fine Champagne. Please note there is no connection to the sparkling wine of the same name!The principal grape that must be used is Ugni Blanc which must account for 90% of the blend, with Colombard and Folle Blanche making up the majority of the balance. These are grapes that are characterised by a neutral taste and high acidity which makes them unattractive as table wines but ideal for distillation. The juice is fermented into a relatively low alcohol wine of 7% and then undergoes two distillations in the traditional copper still called an Alembic. The result is the eaux de vie we call Cognac.

VS, VSOP, XO AND HORS D’AGEAs you can imagine, the resultant spirit is very raw and unpalatable and thus requires ageing to soften the fiery spirit.VS (Very Special) requires that the youngest brandy has a minimum of two years ageing in wooden casks.VSOP (Very Special Old Pale) requires that the youngest brandy has a minimum of four years

ageing in wooden casks.XO (Extra old) requires that the youngest brandy has a minimum of six years ageing in wooden casks.Hors d’âge (beyond age) is a designation equal to XO, but in practice the term is used by producers to designate a high-quality Cognac that exceeds the official age scale.

From 2016 the minimum age for XO Cognac will rise to ten years.

DELAMAINDelamain is a small Cognac producer. Given that the industry is dominated by Martell, Courvoisier, Hennessey and Remy Martin who account for about 90% of production there is an element of David and Goliath in the Cognac world. The history of Delamain dates back to 1759 and remains in family hands to this day. They have established an extremely high quality reputation characterised by the extended ageing they give to their cognacs.

All of their production is classified as XO and their entry level Pale and Dry is aged for about 25 years – which is vastly in excess of the industry minimum. They also differentiate themselves by not adding sugar or caramel – a widely utilised and permitted practice that makes young Cognac more approachable but not necessarily better. The highlight of the tasting was the Extra XO – beautifully balanced and rich and aged for around 55 years!

signs. As is often the case, it is very hard to get action on dangerous roads before meeting a gruesome threshold of accident numbers.

On Waldegrave Road, one of the other major areas of road safety concern, there is an issue regarding the replacement of the road island outside the London Square development after the completion. We will be following this up and ensuring safety has not been reduced by the development. We have also conducted our own survey on Teddington Park Road concerning the introduction of a 20mph limit and parking controls. The vast majority of respondents are in favour of a 20mph limit and a clear majority also favour parking controls. Addressing road speed and ensuring safe crossing points are priorities for us. If you would like us to organise a petition in your road, or if there is an area of safety concern you would like to show us, please get in touch.

Finally, in terms of parking, we are still waiting for the cabinet member to commit to a consultation regarding the locating and hours of operation of parking controls around Teddington. When we hear anything we will let you know.

A FEW ISSUES HAVE been cropping up in our Councillor’s Update over recent months:

school places, road safety and parking. There are some developments to report.

In terms of school places, there are two issues. Firstly there is the question of what will happen to Imperial College’s sports ground on Udney Park Road, which is now up for sale. The proposed Turing House secondary school needs a local site and are keen for the Department for Education to put in a bid. Whilst the planning designation of the site (as a sports ground and open land of townscape importance) presents problems, local need for community secondary school places could prove exceptional. If a school were to be built there, it should also involve local community access to the sports facilities and pitches. So far, the Council seems hesitant to support Turing House taking the site and there is a risk that it will instead be developed for a private school or even partially developed for housing.

The second issue is the shortage of local primary school places. Collis Primary has agreed to take an additional ‘bulge’ class this September for a second year running, but there is uncertainty about the following September 2016 intake. The council has been awarded a £3 million grant from central government to rebuild the infant block of the school and has budgeted the additional £4 million needed to turn this rebuild into a permanent expansion of the whole school (hopefully including the nursery). However, despite this, the council has still refused to commit to the expansion, with talk of a new free school at Livingston House next to Teddington Memorial Hospital instead.

On road safety, we met with officers and Transport for London to discuss road safety on Twickenham Road. Local residents are concerned about the lack of safe crossing points on this very busy road where too many cars regularly break the speed limit. Despite our urging more radical action, so far we have only received commitment to putting up some ‘slow down’

WHAT IS THE ONE THING YOU COULDN’T DO WITHOUT? Having an eclectic mix of independent shops among the few multiples makes the town unique. Everything is on my door step.

I enjoy helping to organising events, building friendships and bringing the community together. The most successful event being Teddington Lights Up that has grow each year and is an enormously popular annual event.

WHAT BROUGHT YOU TO TEDDINGTON?In 1992 I found a newsagents in Teddington. The moment I saw it, it ticked all the boxes. I was raised and taught how to build up a business from the ground up. At this point all that mattered was to have a solid future for my husband and I and to be able to start a family. Thinking back it’s amazing where life’s journey takes you.

WHAT HAS CHANGED SINCE YOU FIRST CAME HERE?Teddington has become a thriving and vibrant place over the years, although at the moment we are experiencing changes, it has drawn in young, modern families from outside the town which offer excellent schools. It is an uplifting place to be and more people have joined and shared it’s love and passion.

WHAT DO YOU MOST VALUE ABOUT THE AREA? Our business and our home being in the same town, this allows us to be close to one another. Bushy Park, you only realise how fortunate we are when you walk through the black gates and wow. It is a big asset to family life offering sporting activities and another space for us to bond with one another. Having the river nearby allows us to participate in water actives and enjoy nature in its true form. Transport links are excellent, reliable and you can get into the city easily.
