OFF THE ViNE SPRING 2016 VIGNERON’S SELECTION RANGE We are pleased to announce the launch of a new range of wines under our Vigneron’s Selecon label. The journey of every great wine starts in the vineyard, and this range has been personally selected by Bre as being true representaons of the unique, individual vineyard sites where they are grown. The range includes our Cuvee, Stones Throw Semillon, Lightning Strike Chardonnay, Pinot Grigio, Winters Mist Merlot and Thunderbolt Shiraz. Two Rivers Awarded 5 STARS As we go to press this month, our big news is that we have been awarded 5 stars in the James Halliday 2017 Wine Companion. Adding to this great result, James Halliday also nominated Two Rivers as one of the Top 10 ‘Dark Horse Wineries’ to watch. The release of the 2017 Wine Companion and awards were announced at a special commemorave dinner in Melbourne, where the Hunter Valley was certainly flavour of the night with McWilliams Mount Pleasant winning ‘Winery of the Year’. The James Halliday Wine Companion is keenly ancipated each year by winemakers, collectors and wine lovers and is recognised as the industry benchmark for Australian wine. A respected wine cric and vigneron, James Halliday is an unmatched authority on every aspect of the Australian wine industry. His winemaking has led him to sojourns in Bordeaux and Burgundy, and he has had a long career as an internaonal wine judge. In 1995 he received the Australian wine industry’s ulmate accolade, the Maurice O’Shea Award, and in 2010 he was made a Member of the Order of Australia. We are very proud of our achievements at Two Rivers and feel honoured to have been awarded 5 stars by a luminary such as James Halliday. This rang has been achieved via the stringent criteria set by James Halliday and we were judged to be an ‘outstanding winery capable of producing wines of very high quality’. Our winery had at least two wines rated at 95 points or above. Our Semillons from our Stones Throw block have connued to perform extremely well, with the 2015 Stones Throw awarded 95 points and our 2011 awarded 96 points. Brett and Linda Keeping CELLAR DOOR STAFF DAY OUT It might look like a lot of hard work here at Two Rivers, but once a year we treat our Cellar Door staff to a trip to the Lower Hunter. This year, we visited the new boling line at our winery, checked out a few great cellar doors and had a delicious lunch at The Cellar. We are so lucky to work with such a great team, even though we were missing a few on the day... LIZ DOES IT AGAIN! Our very talented winemaker Liz Jackson has recently been named Hunter Valley Winemaker of the Year at the 2016 Hunter Legends Awards. This is the second me Liz has been given this honour; she first won in 2011, and is the only winemaker to win the award twice. This is a great tribute to her skill and passion for her craſt. CARAMELISED SALMON SALADPREP 15 MINS | COOKING 10 MINS | SERVES 4

This recipe came from Sue Shaw who is a great friend of mine. Sue is renowned for her culinary skills and we have been fortunate to share many a beautiful meal with Sue and her husband Graham and family. This recipe requires minimum effort and is a perfect partner for our light and zesty Pinot Grigio. You can replace the salmon with either beef fillet or chicken breast, and I omit the chilli!

500g salmon fillets, skinned and pinboned1 tablespoon sweet chilli sauce2 teaspoons vegetable oil200g glass noodles10 cherry tomatoes, quartered1 avocado, coarsely chopped3 small red Asian shallots, thinly sliced1 small fresh red chilli, seeded and thinly sliced1/3 cup mint leaves1/3 cup basil leaves1/3 cup coriander leaves2 tablespoons chopped roasted peanuts1 lime, quartered, to serve

DRESSING2 tablespoons lime juice2 tablespoons sweet chilli sauce1 tablespoon fish sauce2 teaspoons light brown sugar

1. Brush the salmon with the chilli sauce. Heat the oil in a large non stick frying pan over medium high heat and sear the salmon for 2-3 minutes on each side, leaving it pink in the middle. Transfer to a plate a set aside for 5 minutes.

2. Put the noodles into a large heatproof bowl, cover with boiling water and leave for 4 minutes to soften. Drain well.

3. Whisk together the dressing ingredients in a large bowl. Add the tomato, avocado, shallots and chilli. Gently toss to combine. Add the noodles, mint, basil and coriander and toss to combine.

4. Divide the noodles and salad between four serving bowls or plates. Break up the salmon with your fingers and gently tuck it into the noodles. Scatter with the peanuts and serve with the lime quarters.
