In her column this month, Kim Elkingtonpredicts that this year will bring us theinspiration and power needed to manifestour hearts’ desires in the world as we evolveinto more compassionate and consciousbeings. or contaminated with the human cell lineWI-38, can cause childhood leukemia andlymphoma, in addition to permanent braindamage, in some children. The father ofmodern vaccinology, the late Dr. MauriceHilleman of Merck, drew attention to thecancer connection and discusses this in a2011 video (see Mercola.com January 28,2015)

In the case of other vaccines, it nowappears that chickenpox vaccine has actu-ally increased the incidence of chickenpoxin vaccinated children in some areas.Furthermore, mumps and whoopingcough are now known to occur in fullyvaccinated populations, and the ‘flu vac-cine (which still contains mercury-basedpreservatives) is frequently ineffective andis also implicated in the generation ofAlzheimer’s disease and breast cancerwhen received annually. Yet another find-ing shows that people protected success-fully from whooping cough by vaccinationnevertheless unknowingly transmit thedisease to unvaccinated people becausethey have become carriers.

The challenge now is to confront the truth about incon-venient scientific facts which the industry, and especiallyregulators, buried to protect profits. Most importantly, wemust clean up our vaccines. The industry has been caughtlying and the vaccines have been proven to be dangerouslydirty. These are not my opinions – these are facts in thepublic domain published by pro-vaccine scientists. So ulti-mately, I am grateful to Vitality readers for requesting fur-ther clarification.

HISTORY OF A TOXINIn 1943, Dr. Hans Asperger described the first AutismSpectrum Disorder, which was ultimately namedAsperger’s Syndrome after him. Its appearance was notedto be concurrent with vaccines becoming available, andthey contained Thimerosal, a mercury-based preservative.The next ASD, autism, was first described in 1948 by Dr.Leo Kanner and added to the psychiatric diagnostic manu-al DSM-I in 1952. Asperger’s is a comparatively mild man-ifestation of brain damage, whereas autism is a whole lotworse. Both are developmental disorders, so the question ofthe possibly causal role of neurotoxins arose. Correlation isnot proof of causation, though causation may after thor-ough research be shown. When the MMR vaccine becamewidely available in 1963 and the ASD incidence increasedexponentially, investigation turned to the history of vac-cines.The question of the involvement of neurotoxins arosebecause of the following historical facts:

In December 2014, I published a report in Vitality men-tioning the application filed by former employees of U.S.

pharmaceutical giant, Merck, to sue their former employerfor misrepresenting the effectiveness of the MMR vaccine.That article generated a strong reaction from some readerswho found it unbelievable, even libelous, and who askedfor clarification on my reporting of this legal action underthe U.S. Federal False Claims Act. To address the com-ments and concerns of readers, this month I have elected toclarify and expand upon my previous article, so that therecan be no misconceptions going forward.

Further to the action against Merck by former employ-ees, another action was filed by Chatom Primary; it alsoalleges false claims committed by Merck for the MMR(Measles Mumps Rubella) vaccine, specifically the lack ofeffectiveness against mumps. Both actions began in courtin September 2010.

One of my sources for those previously mentioned falseclaims actions pertaining to efficacy of the vaccine alsodiscussed the autism/vaccine issue in the context of falseclaims about MMR’s safety. Regretfully, I did not make afull distinction between those new false claims actions onefficacy, and the lawsuits regarding Autism SpectrumDisorder (ASD). Few people know that the false claimsconcerning vaccine safety have a much longer history thanthe newly arisen questions surrounding efficacy.

For example, recent research has shown that childhoodvaccines containing HERV (human endogenous retrovirus),

■ In 1930, Eli Lilly patented Thimerosaland used it on a group of meningitispatients to see just how toxic this sub-stance was; all the patients subsequentlydied. Despite this and the already knownneurotoxicity of mercury, Lilly proceededto use Thimerosol as a vaccine preserva-tive in 1931.

■ Rival vaccine manufacturer, Pittman-More, declared in 1935 that Thimerosal was unfit for vet-erinary medicine, and formally warned Lilly about itsextreme toxicity for human medicine. During World War II,the U.S. government required Lilly to label Thimerosalproducts as “poison” if present in vaccines for soldiers, pre-sumably so they could refuse it. Lilly’s own researchersreported in 1971 that Thimerosal was highly toxic at onepart per million, yet the company ignored even their ownresearchers and used it at 100 times that strength in its vac-cine products from 1989 to 2005. When, in 1977, ten new-borns died from a Thimerosal-laced antiseptic dabbed ontotheir umbilical cords, Thimerosal was subsequentlyremoved from many medical products, but not from vac-cines. Although safe alternative preservatives exist,Thimerosal is more cost effective (cheap) and allows man-ufacturers to make large batches of vaccines, instead of sin-gle-vial bottles which don’t need preservatives.

The appearance in the late 1940s ofAutism Spectrum Disorder suggests that itis not part of our hardwired DNA. Newdiseases do develop, but it takes tens ofthousands of years for a disease some-times to become heritable in some popula-tions. If two autistic kids are found in thesame family, created by the same parents,this is a clue to look for an epigenetic

influence – i.e. something from the outside that has inter-fered with nature’s developmental instructions. The HumanGenome Project found about 200 regulatory genes in uswhich are vulnerable to toxins and may therefore becomedamaged enough to destroy nature’s developmental pro-gram (e.g. Minamata Disease in Japan in the 1960s).

Dysregulated gene expression points to environmentalexposures before, or after, birth during vulnerable periodsof the growth process. One known initiating cause of autismcan be high mercury levels in the mother (as in Minamata)from contaminated food or water, from dental amalgams,and/or from an annually administered ‘flu vaccine. Thesecausal factors have been reported by the U.S.Environmental Protection Agency. They can create a toxicsystem overload in the child to whom the mercury is trans-mitted through the umbilical cord and breast milk. Furtherdestructive amplification can occur when the mercury tox-

icity is increased by alu-minum and other chemicalspresent in childhood vac-cines. Since those are givenwhen the child’s body massis very small in relation toall those toxins, normalchildhood development canbe derailed.

In contrast, the mother’sbody performs the protec-tive function of sequesteringthose poisons which, in herlarger mass, are more dilut-ed and also encounter mature defense systems. In time, shemay develop some chronic disease or cancer because herimmune system and DNA repair also can become over-whelmed. But she will not develop autism because heroriginal growth plan was not interfered with – and sheeffectively detoxified herself through her pregnancy. Thedifference between the effect on mother versus child is thatbetween a huge direct hit on a vulnerable small body withincomplete defenses versus the slow poisoning of a maturesystem with available defense mechanisms. Since all of theabove has already been demonstrated and published, andsince we know pretty much exactly how neurotoxins work,the task now is to protect humans from them.

MERCURY HITS THE FANA sharp rise in autism cases was recorded in 1981 when theMMR vaccine began to contain the human fetal cell lineWI-38, and other retroviral materials, in addition to mercu-ry. The National Childhood Vaccine Injury Act was subse-quently passed – not to protect children, but to protect vac-cine manufacturers from liability if injuries and deathswere reported. Simultaneously, the Centers for DiseaseControl was put in charge of the job of promoting and man-dating the use of vaccines as well as deciding whether theproducts were safe and effective – all without independentoversight or verification.

When additional MMR and other vaccines were added tothe schedule in 1988, increasing the original 11 to today’s60+, another sharp rise in autism cases was recorded. Nowthe U.S. government’s Vaccine Court was established,entirely funded by taxes (not by the manufacturers whoseproducts are taken to court). By 2009, compensations wereawarded in 1,322 cases of vaccine-injured children, addingup to approximately $1.8 billion. Making sure the industrydid not take the hit, in 1986 the U.S. Congress passed theOmnibus Health Bill (S. 1744) which exempted the phar-maceutical industry from all liability for current and futurevaccines.

Congressman Dan Burton headed a 3-year congression-al investigation into the question of whether theThimerosal-containing MMR vaccine may cause, promote,

or trigger Autism SpectrumDisorders (ASD). It con-cluded in 2003:“Thimerosal used as a pre-servative in vaccines isdirectly related to theautism epidemic … whichcould have been preventedif the FDA had not beenasleep at the switch regarding the lack of safety data oninjected Thimerosal – a known neurotoxin.” TheCommittee concluded that the FDA’s reason was “mis-placed protectionism of the pharmaceutical industry.” By2010, the U.S. government’s CDC website informed thepublic about the risks associated with the MMR vaccineunder Section 4: “Severe Risks: Deafness, long-termseizures, coma, lowered consciousness, permanent braindamage.”

As a result of this investigation, Thimerosal was removedfrom most U.S. vaccines, but not from the tetanus or ‘fluvaccines.

And Thimerosal continues to be used in vaccines sold tothird world countries. The fallout from this medical foreignpolicy can be observed in China where autism wasunknown until 1999 when U.S. vaccines were introduced.Now China has close to two million diagnosed autistics.

North American vaccines still contain aluminum, chemi-cals like polysorbate 50, and other known neurotoxic sub-stances. By 2005, the statistics showed that half a millionU.S. children were diagnosed as autistic (the ThimerosalGeneration: 1989-2003) with 40,000 new cases then beingreported annually. And scientists like Laura Hewitson werereportedly reproducing autism in non-human primates byusing Thimerosal in the same quantities that were presentin vaccines.

In 2007 the first case, alleging that MMR had initiatedautism in a specific child, was won in the U.S. VaccineCourt. The ruling stated: “The MMR vaccine at issue actu-ally caused the condition,” concluding that the child“would not have developed this type of brain damage if hehad not been given the MMR vaccine.” As of 2009, abouttwo out of five such ASD cases claiming a causal relation-ship to the MMR vaccine have been won; that is 40% of thecases heard. Close to 5,000 additional cases are yet to beheard. In addition, autism spectrum disorders have nowalso been observed with the Hepatitis B vaccine, given atbirth, and some of those cases are also going to court.

In 2014, the Italian Supreme Court ruled on two separatecases (one on MMR vaccine, the other on DPT and Hep B),confirming that autism was initiated by those vaccines. decision states that theGlaxoSmithKlein report’s1,271 pages provide the“cumulative tabulation ofunlisted events [about 3,000individual reports], seriousunlisted spontaneousreports, and all seriousunlisted reactions from clin-ical trial cases reportedsince launch [of these various vaccines]”. ‘Unlisted’ refersto this information having been kept from the public. Thereare many cases of brain injury listed in that report, includ-ing autism and death.

In their report’s conclusion, GSK stated: “The Companywill continue to monitor cases of haemolytic anaemia,thrombocytopenia, thrombocytopenic purpura, autoim-mune thrombocytopenia, idiopathic thrombocytopenic pur-pura, hae-molytic anemia, cyanosis, injection site nodule,abscess and injection site abscess, Kawasaki’s disease,important neurological events (including encephalitis andencephalopathy [=Autism Spectrum Disorder]), Henoch-Schonlein purpura, petechiae, purpura, haematochezia,allergic reactions (including anaphylactic and anaphylac-toid reactions), cases of lack of effectiveness, as well asfatal cases.”

In addition, more and more whistleblowers in industryand research institutions are publishing an ever-increasingnumber of scientific studies proving the appalling lack ofsafety of virtually all current vaccines – as well as theincreasingly observed lack of efficacy.

AUTISM: A MULTI-FACETED DISEASE

Understanding the initiating causes for ASD is not simplebecause additional triggers have emerged, mercury beingthe first. Commonly recommended vaccines contain a toxiccocktail of substances, all conjured from the same labora-tories in which mercury preservatives first emerged.Furthermore, it is now fairly well known why the ratio ofautism incidence between boys and girls is four to one.Estrogen is, among other things, a chelator of, and protec-tor against, toxins. Vitamin D3 also protects against toxicassault. A former CDC researcher recently blew the whistleon the suppression of data in the prestigious journal,Pediatrics. The article failed to report the finding showingthat African-American boys have a 340% higher incidenceof autism than white boys. One of the reasons may be therelatively low levels of Vitamin D3 in black boys.

To date, there are several known triggers of autism. Oneof them is Lyme Disease in pregnant women. I publishedthe relevant science in Ending Denial – The Lyme DiseaseEpidemic in 2010. Another line of research has shown thatmaternal exposure to pesticides, herbicides, and fungicides

ccording to Chinese astrologers, the 2015 Chinese New Year will herald a new era of heightened public awareness about protecting

our fragile environment and embracing a cleaner and greener lifestyle. Commencing on February 19, the Year of the Goat will also bring a renewed personal commitment to healthy living and optimal nutrition, which will influence significant growth in the organic and natural foods industry.

According to Neil Somerville’s latest book, Your Chinese Horoscope 2015 (HarperCollins Publishers), the Goat year also favours relationships and family, so he predicts that many will find love or friendship, improve relationships, marry, or start a family. Overall, Goat years offer hope, and the underlying trend will be one of growth and a sense of moving forward with agreements of historic proportion being reached, and solutions found to some of the world’s greatest concerns. Individually, we can all look forward to greater balance in our lives and realization of our inner potential.

Lucky Foods and Symbolism Chinese culture is rich with symbolism. The name of a dish being served and/or its ingredients will sound similar to words or phrases that refer to wishes expressed during Chinese New Year. Certain dishes are eaten for their symbolic meaning and ‘lucky’ food, served during the 16-day festival season, especially on New Year’s Eve, is believed to bring good luck for the coming year.

Not only do the dishes themselves matter, but the preparation, ways of serving, and eating them also mean a lot. The most common Chinese New Year foods include dumplings, fish, spring rolls, and niangao (glutinous rice cake). Here’s a small sampling of foods and their symbolic meaning:

Bamboo shoots – wealth, new start; bean sprouts – positive start to the new year; Chinese cabbage (bok choy) – prosperity, luck; duck – fertility; egg rolls – wealth, gold; fish (whole) – an increase in prosperity; glass noodles (Chinese vermicelli) – long life; jujube dates – prosperity, fertility; oranges – good fortune, gold; oyster – good fortune in business; sticky rice – family coherence; seaweed – good luck, exceeding wealth; rice symbolizes a link between heaven and earth.

Symbolic DishesChinese New Year is the most important festival in the Chinese calendar and comes with traditions originally initiated as harvest celebrations to give gratitude for the year’s crops. Food is the focus and the main preoccupation of CNY. Below are some of the symbolic and auspicious dishes and foods that are served in the hope of starting the new year right: • Nian gao (year cake): This glutinous rice-based

cake is eaten for good luck. Nian gao is also a homonym for ‘higher year’ – meaning to rise in status in the coming year.

• Yu (fish): Yu, the Chinese word for ‘abundance’ makes fish the inevitable star of any CNY meal. A whole freshwater fish with the head and tail on symbolizes the year from beginning to end. However, tradition also recommends deliberately leaving some of the fish uneaten to represent the ‘surpluses’ sure to appear in the coming year.

• Iao zi (Dumplings): Representing ingots, or money, dumplings eaten at midnight will usher in wealth, it is believed. In Northern China they are made with a soy-ginger cabbage and either a pork or a root vegetable filling. A gold coin may be hidden in one of the dumplings to bring extra luck to the eater.

• Fatt choy ho see (black moss with dried oysters): This vegetable dish is studded with black moss (fatt choy – which means ‘strike it rich’) and braised dried oysters (ho see – signifying ‘good things’). The

full name of this dish sounds like ‘prosperous in business’, and is served casserole-style with lettuce (sang choy – ‘rising fortune’).

• Chang shou mian (longevity noodles): The longer the noodles (‘silvery threads of longevity’), the stronger the wish for a long, healthy life. Adding mustard greens to the noodles invites a long life for parents.

Vegetarian Haven is a popular bistro on Baldwin Street in Toronto, founded in 2003 by Buddhist vegan restauranteur Shing Tong. The Haven’s impressive array of dishes, prepared by 16-year veteran chef Jack Li, range from Vegan Shanghai Noodles to Seared Cabbage Dumplings to Organic Kale and Quinoa Salad, and more. On a recent visit to taste the food and find out what’s being planned for their Chinese New Year menu, we feasted on flavourful meals and then begged the proprietor for recipes. 1 cup puffy seitan chunks2 sticks dry non-GMO bean curd (tofu)6 dry shiitake mushrooms4 dry red dates1/4 cup glass noodles (mung bean noodles)1 Tbsp fresh ginger, minced10 water chestnuts10 ginkgo nuts10 baby carrots10 bamboo shoots6 pieces of wood ear (dry black fungus)6 pieces dry cloud fungus10 pieces dry lily flower

6 small pieces dry black moss 6 pieces bok choy8 leaves nappa cabbage, chopped10 snow peas, fresh or cannedSeasonings:3 Tbsp sunflower oil3 Tbsp light soya sauce3 Tbsp dark soya sauce2 Tbsp soy paste2 Tbsp sesame seed oilPinch of coconut sugar2 cups vegetable stock1 Tbsp ginger, minced

Rehydrate all dry ingredients (bean curd stick, shiitake mushroom, red date, mung bean noodles, wood ear, cloud fungus, lily flower, black moss) in water until soft (approx. 30 minutes).

Cut shiitake mushrooms and red dates into halves, and glass noodles and bean curd sticks into 2 inch strips.

Sauté minced ginger and shiitake mushrooms on medium heat for 2 minutes. Add remaining ingredients (except for glass noodles and snow peas) and cook for another minute.

Add vegetable stock and all seasoning into the wok/pot, cover and simmer.

Stirring occasionally, cook until sauce thickens.Toss in pre-soaked glass noodles (they will dissolve if

added too early). Add snow peas last in order to retain their bright green colour and crunchy texture.

Gluten-Free Ginger-Sesame VinaigretteThis simple salad dressing can be whipped up easily with a few ingredients and can be kept refrigerated for a week or two – a refreshing and aromatic dressing for any salad. 1/4 cup minced fresh ginger*1/4 cup red rice vinegar1/4 cup sesame seed oil

Sam Ma, who also received the ‘Best Chef’ award in 2014 from the Toronto Chinese Culinary Association, is one of the first chefs to convert original Cantonese dishes into vegetarian cuisine using veg-etables, gluten, soya, and tofu.

To celebrate the happiness and prosperity that the Goat represents this year, two of the dishes the chefs will prepare include Vegetarian Lamb Rolls in Swiss Sauce, and

King’s Cafe King’s Cafe opened in 2003 in Toronto’s Kensington Market, serving vegetarian food made from fresh, chemical-free ingredients. It has since grown to include seven additional locations across Canada – from the Food Factory outlet in Mississauga to Zen Gardens restaurant locations in Moncton, NB and in Waterloo, London, Cambridge, and Guelph in Ontario. We stopped by to chat with manager, Elsa Law, and were amazed at the variety of teas and frozen prepared vegan, non-GMO foods available at this lovely eatery.

Elsa described a couple of the dishes most favoured by diners, including Kung Po Soy-Chicken, a vegetarian version of Kung Po Chicken that combines soy protein with mushrooms, celery, bell peppers, vegetables, and chilies. Also popular is a dish called Enoki Mushroom Balls which is wrapped in seaweed sheets, stir-fried in a savoury sauce, and served on a bed of vegetables. King’s vast selection of teas, many boasting medicinal benefits, range from organic green tea to lychee black tea to Siberian ginseng / Astragalus tea.

Beyond these traditional dishes, a selection of pastries (taro, turnip, sticky rice cake, sesame pastry, honey-roasted walnuts, and sugar peanut samosas) will also be prepared. Customers can buy these offerings to give as gifts inviting luck, respect, wealth, and love to friends and family in 2015.

Change of Season DietYuxiang Wang, an experienced Traditional Chinese Medicine practitioner and teacher at the Canadian Gynecology Institute of Chinese Medicine (see page 83), recommends adopting a ‘medicinal diet’ during the transition from winter to spring, the seasonal change that is ushered in at Chinese New Year. In preparation for this change, Yuxiang suggests taking one or two of the following herbal formulas to prevent disease and to strengthen immunity. Note that, for best results, it’s best to take these for 3 to 7 days for maximum results.

1) Soup of Astragalus and Black Gram (makes 1 serving): This is good for replenishing Qi. Treats perspiration or night sweating, fatigue, and frequent colds. Ingredients: 30 grams astragalus root, 60 grams black gram, salt to taste.

Place ingredients in a pot with 2 cups of water and bring to a boil. Reduce heat to simmer, keeping the pot

partially covered until the black gram is very soft. Strain out Astragalus and add salt. Serve soup warm.

2) Herb Tea for preventing colds (makes 1 serving). This treats those who are prone to catching colds and chills, sneezing, and stuffy nose. Ingredients: 30 grams Perilla leaf, 5 slices fresh ginger root, brown sugar to taste (optional). Preparation: Place ingredients in a pot with 2 cups of water and bring to a boil. Reduce heat to simmer for 10 minutes. Strain out herbs. Drink tea warm. ■

When I was a kidgrowing up in therural woods of

Muskoka, my grandma hada cure for almost everycommon ailment. Folkswould come from milesaround to seek her advicefor treating their healthcomplaints. As a girl, I tookas much pride in grandma’sdoctoring skills as she did,for I was the one whohelped tend her herb gar-dens and trek through back-yard woodlands in search ofthe “medicinal pickings”that she used in her concoc-tions.

Today, grandma’s old doc-toring journals with theirhandwritten entries aresome of my most prized possessions, and whenever I’mfeeling under the weather I turn to the fragile yellowedpages of those cherished scribblers to seek a cure for mydiscomforts. Sometimes a quick inspiring read is all I needto pick me up. Other times, I’ll take her advice and preparea cup of herbal tea or a special tonic. In my book, prepar-ing one of her old prescriptions is the next best thing to hav-ing grandma care for me in person.

Of course, she would always recommend that folks whowere feeling poorly due to unknown causes seek the adviceof a medical practitioner; that sound advice should still befollowed today! But for the common upsets of daily living,nothing beats these natural old world cures. Next timeyou’re under the weather, try one of the remedies below andsee if you don’t immediately feel better.

HOMEMADE HERBAL COUGH SYRUPGrandma has recorded many recipes for homemade coughsyrup; this one is my favourite. It seems to ease the coughsoon as it is taken. To make, add 3 cups fresh mixed herbsor 1/2 cup dried herbs into 2 cups of water. Herbs to choosefrom are sage, thyme, rosemary, parsley, lavender, oregano,

borage and mint. You can also add dried plantain leaf,crushed dried clover blossom, chamomile flowers, driedraspberry leaves, ground wild ginger rhizomes or freshgrated or dried commercial ginger root to the herb measure.

Bring mixture to a boil, simmer about 20 minutes or untilreduced to half. Remove from heat, cover and steep untilcold. Strain liquid into clean pan. Put back on stove and add1 cup of creamed clover honey. Heat until blended. Cool.Pour into sterilized bottle and cap. Take 1 tsp as needed.Store the cough syrup in a cool place and it will save indef-initely.

HERBAL TEAS AND INFUSIONS

Chamomile Tea for Aiding Digestion and Warding offHeartburn – This fragrant tea is reputed to aid digestionand should be served before mealtime. To make, put 3 Tbspfresh chamomile flowers or 1 Tbsp dried flowers into awarmed teapot, cover with boiling water and steep for 5minutes. Strain into a teacup. It also alleviates mild nausea,so is good for easing morning sickness in pregnant womenas well as seasickness in travellers.

Sage Tea for Sore Throat, Upset Stomach and Gas –To make sage tea from the fresh plant, put 2 Tbsp fresh sageleaf or 1 tsp dried plant in a heated teapot and cover with 1cup of boiling water. Steep 5 minutes. Add lemon if usingas treatment for sore throat. Sweeten with honey if you

wish. In China, sage tea isrecommended for many ail-ments including bad nerves,ulcers, liver, kidney troublesand to reduce fever. Grandmanotes that cold sage tea canbe used as a cleansing washfor cuts, sores and wounds. Itcan also be used as a hairrinse, in which case I usuallybrew it up a little stronger. Itadds shine, helps preventsplit ends, and leaves hairsmelling naturally clean with no trace of the heavy fra-grance often found in commercial rinses.

Thyme Tea for Cough and Bronchitis, and OreganoTea for Sinus – Thyme makes a comforting cup of tea thatis useful for breaking up coughs associated with bronchitis.It can be made by steeping 2 Tbsp fresh plant or 1 tsp driedplant per cup of boiling water for 15 minutes. Oregano teais a good treatment for sinus congestion. Make it the sameas you would thyme tea. A blend of the two herbs makes apotent tea for fighting any cold or influenza virus.

Dandelion Tea to Boost the Immune System –Grandma writes that this tea is good for warding off coldand flu. It is also noted as being a good cleanser for theintestines and helps prevent bloating from overindulgencein rich foods (good to remember at holiday time). To makethe tea from fresh plant, simply put a handful of freshpicked, washed flowers in the teapot, cover with boilingwater and steep for 5 minutes. To make it out of dried plant,use about 2 Tbsp dried flowers per cup of water. The tea canbe sweetened with honey and served hot to ward off coldand ‘flu in winter, or served cold with a bit of lemon to cooldown the body in summertime.

Parsley Tea for Halitosis, Sore Throat and Mouth –This tea is good for treating bad breath, sore throat, andmouth infections. To make tea from fresh plant, put severalsprigs of parsley in the teapot, cover with 1 cup of boilingwater and steep until all the goodness has been leached outof the plant, about 15 minutes. To make it out of dried herb,use 1 tsp per cup, although grandma has it written that freshplant, especially in this case, is much more potent. Likegrandma, I keep a window box of herbs in my sunroom allwinter long in order to have fresh herbs readily available forrecipes. Or buy organically grown herbs if possible.

Clover flow-ers can be dried by spreading them on a sheet of clean clothor waxed paper and drying them in a warm sunny placeuntil the moisture is gone, about 2 to 3 weeks. To make, use1 Tbsp dried crushed flowers per cup of boiling water.Sweeten the tea with clover honey if you like.

Mint Tea for Bloating, Gas, Colds and ‘Flu – Gardenand wild mints make delightful teas that are very good fortreating bloating and gas caused by gas-producing foodssuch as dried beans and lentils. They are also wonderful forthe sheer pleasure of drinking, and exert a cooling effect onthe inflammatory effects of colds and ‘flus.
