2 Tbsp. butter

¼ cup Monterrey Jack cheese, shredded

Brush mushrooms with olive oil on both sides and place on a plate. Set aside. Melt butter in a saucepan over medium heat. Reduce heat to medium-low and stir in both cheeses until melted.
