SELECTION:

• Fresh strawberries should be bright red in color and firm to the touch.• Avoid squishy, soft, shriveled, or watery strawberries and check packaging for mold or leakage.• The peak season for fresh strawberries lasts from April until June. Strawberries can be found fresh in your

• Strawberries are high in fiber and low in carbohydrates and contain only 32 calories in just less than a cup. • Strawberries are nutrient dense in Vitamin C, Vitamin B9, manganese and potassium. • The strawberry’s low carbohydrate content consists mostly of simple sugars resulting in a diabetic friendly fruit

with a low glycemic index. • The nutrients, antioxidants, and vitamins found in strawberries contribute to healthy immune systems, skin,

cell function, tissue growth, and the regulation of blood circulation.

• Strawberries will stay fresh longer by keeping them cool. Rinse with water and vinegar, remove excess moisture, and refrigerate in an airtight container with a paper towel to absorb moisture.

• Remove the green petals, cull for bruising or decay, and cut away any soft, mushy areas before refrigeration.• When tightly covered and refrigerated, firm, plump strawberries can last up to one week.• Strawberries can be easily stored frozen by spreading them on a baking sheet and freezing. Once frozen,

place them in an airtight container and place in the freezer for up to six months.

Ingredients: 4 servings

• 1 pint strawberries

• 4 cups nonfat Greek yogurt

• 1 tsp. Stevia or 2 tsp. honey

• 1 tsp. vanilla extract

Directions:

1. Wash and pat dry the strawberries before slicing them up.

2. Add the sweetner and vanilla to the yogurt and stir until evenly mixed.

3. Scoop ½ cup of the yogurt into a glass, add a layer of strawberries.

4. Add the second ½ cup of yogurt to the glass and top with a layer of strawberries.

5. Repeat steps 3 - 4 for the other three glasses.

Tips:

• Garnish with mint leaves for a more refreshing snack.

• For a frozen treat, mince the strawberries very small and mix into the yogurt, then freeze for 2 hours.

Ingredients: 6 servings

• 2 lbs. boneless chicken breast or thighs

• 2 cups fresh pineapple chunks

• 2 tbsp. soy sauce

• ¼ cup chili sauce

• ½ tsp. garlic powder

• ½ tsp. onion powder

• ¼ cup water or broth

• 1 tbsp. sesame oil

• Green onion

Directions:

1. Cut the boneless chicken into 1-2 inch chunks.2. Mix the chili sauce, liquids, and spices in a small

bowl.3. Add the oil to the bottom of the pressure cooker

and bring to temperature. Add the chicken and then brown for 1-2 minutes.

4. Pour the chili sauce mixture over the chicken and then add the pineapple chunks. Bring the cooker to pressure. Cook for 7 minutes and then quick release the pressure.

5. Garnish with sliced green onion and serve alone or serve it on top of a bed of greens or with brown or wild rice.

Note:

If you use a different type of chili sauce, you may need to change the proportions of some of the spices.
