Alcohol Pros and Cons

There aren’t many topics in research that have as conflicting results as the con-sumption of alcohol. Is it good for us? Bad?

When it comes to bone density in senior women, the jury is no longer out. New research shows that moderate alcohol intake prevents rapid “turnover” of bone. Turnover is the ebb and flow of bone growth -- except that in osteoporosis there is more overall loss of bone than gain. One or two drinks a day a few times a week appear to have a significant result in stopping that turnover.In one of the tests done by researchers, bone density was checked in women who were moderate drinkers. The women were told to stop any drinking for two weeks, at which time bone density was checked again. What researchers found was more bone turnover -- or loss -- after two short weeks. When the women resumed moderate drinking, within one

day the bone turnover rate went back to normal. Their conclusion is that alcohol protects bone growth like estrogen, which is missing in post-menopausal women.However, alcohol consumption has its drawbacks, depending on the re-search.In a nearly 30-year study, alcohol consumption of 3 to 6 drinks per week was linked with a small increase in the risk of breast cancer. The more alco-hol consumed, the higher the risk. In another study, light alcohol consumption was associated with a de-crease in cancer risk, but moderate and heavy consumption showed an increase in risk.Still another study concluded that moderate alcohol consumption lowered the risk of Alzheimer’s disease and dementia.Which study to believe?If you’re not sure, ask your doctor if drinking alcohol a few times a week could benefit your health -- or not.

Chicken Burgers1 pound ground chicken breasts1 medium carrot, grated (1/2 cup)2 green onions, minced1 clove garlic, crushed with garlic press4 hamburger buns, warmedSliced cucumber, lettuce leaves and green onion (optional)

1. In medium bowl, with hand, mix ground chicken, car-rot, green onions and garlic until evenly combined.2. On waxed paper, shape chicken mixture into four 3 1/2-inch round patties (mixture will be very soft and moist).3. Place patties on grill over medium heat and cook about 12 minutes or until juices run clear when center of burger is pierced with tip of knife, turning over once. (If you have a grill with widely spaced grates, you may want to place burgers on a perforated grill topper to keep them intact.)4. Place burgers on warmed buns. Serve with cucumber slices, lettuce leaves and green onions if you like. Serves 4.

• Keep these in mind when eating greens: “Green is good. Dark green is better. Organic dark leafy green is best.” If you grow your own — and they are easy to grow — you know how your vegetables have been treated.

• Nussinow, in a webMD article, ranked the nutrition of the most widely eaten greens in the United States. The top 10 are: kale, collards, turnip greens, Swiss chard, spinach, mustard greens, broccoli, red and green leaf and romaine lettuces (altogether), cabbage, and iceberg lettuce.

• There are other nutritional greens not listed above that are widely available in North America. The information available for all greens is immense. We’ll look at some interesting Tidbits for both highly and less popular greens.

• Even though it may sound incorrect, all greens are not green! Leafy green vegetables have much color variety, from the bluish-green of kale to the bright “Kelly” green of spinach, to the light, somewhat white of cabbage.

• There is even a black cabbage (Cavalo Nero), which is actually a very dark green that is also called Tuscan kale. It originated from the Tuscany region of Italy where it is grown in most vegetable gardens. Cavalo Nero is an essential ingredient in the very healthy signature soup of the region, ribollita.

• The Tuscan region of Italy is famous for many culinary things including the cooking term, “Florentine.” This term can be interpreted as the cooking style used in Florence, Italy, but has also come to describe the cuisine that includes spinach as an ingredient. Florentine cooking also uses fresh herbs like rosemary, basil, parsley and thyme. Since Tuscany is close to the coast, Florentine cooking features seafood dishes as well as local boar, rabbit and beef from the regions’ white Chianina cattle. According to folklore, the association of spinach with Florence may have been because of Catherine de Medici, the Italian wife of King Henry II, who reigned in France from 1560-1563.

• Supposedly to honor her Italian roots, Queen Catherine introduced spinach to the Court of France and dubbed any dish containing spinach to be “Florentine.” Whether the story is true or not, Florentine is now synonymous with spinach in dishes such as Eggs Florentine, Oysters Florentine and more.

• To make for some confusing terminology, “Florentines” refer to a sweet, baked confection that contains no spinach! These Florentines are a European sweet served as a cake, bar or cookie. Sweet Florentines are a mixture of candied fruit, toasted nuts, honey and/or sugar and topped with a layer of melted chocolate.

• Moving away from sweets and back to greens, a green

that has many names around the world is rapini or what is more commonly known as broccoli raab. This green is unrelated to broccoli even though broccoli is in its name. It is a close relative to turnips, and the greens look very similar to turnip greens. Other names linked to this green are rapa, rapine, raab, rappi, rappone, fall and spring raab, turnip broccoli, broccoli rape, broccoli de rabe, Italian turnip and turnip broccoli.

• As more greens are available in North America, an old favorite has decreased in popularity. Iceberg lettuce was an overwhelming success for years because of its ability to remain crunchy even after days and sometimes weeks of shipping. Up until the 1930s, iceberg was known as “Crisphead” lettuce.

• Bruce Church, from Salinas, California, the founder of Fresh Express, is given credit for popularizing iceberg lettuce. Along with three partners, he formed an ice company in the 1930s that shipped fresh heads of lettuce across the country in rail cars. “Crisphead” lettuce became more commonly known as “iceberg” when folks would meet the train cars of ice-packed lettuce with calls of “The icebergs are coming!” The name change stuck, and Americans’ love of fresh salads grew with the fresh availability.

• Up until the mid-1970s, more than 95 percent of all lettuce grown in the United States was iceberg. Even though leaf lettuces have surged in popularity in the last 30-40 years, iceberg still remains a big seller. So, the next time you are eating out, check to see if a “wedge” salad is offered. It will be the familiar iceberg we grew up with.

• Another popular salad that some think started with Julius Caesar is the Caesar Salad. It actually had its start in Tijuana, Mexico, with Cesare Cardini, who immigrated to the San Diego area with his brother, Alex, from Italy after World War I. The brothers opened Caesar’s Restaurant in Tijuana instead of San Diego because of alcohol prohibition in the United States. Invented in the 1920s, the Caesar Salad was mostly just a California specialty for years, with romaine lettuce being the green. The popularity of Caesar salads soared in the 1970s, and the romaine crop grew from a few California acres (ha) to 16,000 acres (6,475 ha) in the 1990s and more than 80,000 acres (32,370 ha) today.

Fun With Summer Strawberries

Local strawberries are so sweet, juicy and luscious

right now that I have to remind myself that sum-mer’s strawberry fields don’t last forever. I savor the plump, red berries and love showing them off in new ways with my family. While they taste great au naturel for a grab-and-go snack, there are endless ways to incorporate them with other healthy ingredients day in and day out. Here are sweet ideas we are enjoying this year:

Spinach and Strawberry SaladKids won’t eat their spinach? Make a tasty salad with a light vinaigrette your kids make. Get started by letting them grate the rind of a clean lemon into a small bowl, then cut the lem-on in half and squeeze out all of the juice. Add 1 tablespoon rice vinegar and 1 teaspoon sugar. As one child drizzles 1/4 cup olive oil into the mixture, another child may whisk briskly. Drizzle over a bowl of spinach, cubed fresh mango and strawberry slices. Add toasted al-mond slices, if you wish.

Strawberry Faux FondueSummertime is party time. For a simple do-it-yourself dessert at a large gathering, set a big bowl of strawberries in the center of a table, along with bamboo skewers and fondue-style sweets in small bowls for dipping. Before the party, let your kids fill the bowls with caramel, strawberry and fudge sauces, powdered sugar and brown sugar. To serve, tell guests to poke a berry onto a skewer and dip into a treat.

A Bowl of BerriesChop fresh mint and add to a bowl of blueber-ries, raspberries and sliced strawberries as a fruit side dish at lunchtime. The combo also makes a nice dessert served with a favorite cookie.

Grilled Strawberries Cut strawberries in half lengthwise and let your kids poke several onto bamboo skewers length-wise. An adult should set the cut side of the ber-ries on a grill for a minute, or until grill marks appear. Serve for dessert with vanilla ice cream or whipped cream.

Shower Head a Leaky Mess

Q: I have one of those flexible sprayer shower heads that you can lift from its holder and use. Whenever I turn on the shower, water squirts from the part where the holder attaches to the water pipe, and also runs from the end of the hose where it attaches to the shower head. Do I need to

replace it or can I fix this? -- Lorelei D., Atlanta

A: Check the shower head attachment points for any visible damage first. A visibly cracked hose or plastic attachment piece often means the entire unit needs to be replaced. However, if you can’t see any damage, you may be able to fix this with just the twist of an adjustable wrench.To avoid damaging or scratching the connector nut -- which attaches the shower unit to the inlet pipe (sometimes called a goose-neck pipe) -- wrap a soft rag around the nut. Use an adjustable wrench that can fit comfortably around the connector nut, and gently turn the nut clockwise just slightly -- one-quarter turn at most. Unwrap the rag from around the connector nut and turn on the shower to see if the leak has diminished or stopped. If it needs more adjustment, replace the rag and gently turn the connector nut another quarter-turn. Keep in mind that turning the connector too tight may make the leak worse; that’s one reason to make such small incremental adjustments. Another reason is to avoid damaging the connector nut or the seal. If you notice cracks or other damage to the shower unit, in most cases you’ll need to replace the entire unit (except for some more expensive shower heads, which often offer replacement parts from the manufacturer). To replace the unit, head to the home-improvement store and pick out a shower head of your choice, along with some Teflon tape.Back home, turn off the water feed to the shower. If you can’t find the nearest shutoff valve, turn off water to the house. Unscrew the old shower sprayer unit from the inlet pipe, using your pliers and turn-ing counterclockwise to loosen and remove it. Clean away any old sealant, tape or gunky buildup from the threads of the inlet pipe.Unwrap the new shower unit and take a look at the connection and accompanying hardware. Connectors that come with a rubber washer generally need to be tightly screwed on using your pliers; connectors that don’t generally just need to be hand-tightened.Now, take your new Teflon tape. Wrap it carefully around the threads of the inlet pipe, creating a single layer around the threads from the end of the pipe to just below the end of the threads. (The tape will push upward when you screw on the new shower head, so leave a bit of space.) Press the tape into the threads with your fingers.Carefully line up the connector of the new shower unit with the pipe and screw on, turning clockwise. Use your hand to tighten the connection; if you need to tighten more, protect the finish of the connector by wrapping a rag around it and tighten in small increments using pliers. Turn on water to the shower to test the connection, adjusting slightly if needed until the connection no longer leaks.

HOME TIP: Don’t have a set of pliers that fit your pipes? Look for channel locking pliers, which can open to a range of widths to fit varying widths of pipe.

Olympic Games Are a Joke

The Olympic Games are a joke ... but then again, they are a great excuse to spruce up the place a little bit.

Straight out of college, I decided to take my sheepskin on the road and see all of those wonderful places I was supposed to go. This was the mid-’90s and the graduates of the day -- already a bit stultified from the sudden shift of glam rock to grunge rock -- broke into groups. Some went to San Francisco, others went to Boulder, Colo., and a lot of us went to Atlanta. (The rest moved back into their parents’ house.)I was among those who moved to Atlanta, and I can even remember the day. For as I rolled into town in my dented Jeep, dragging all of my earthly possessions behind me in a U-Haul trailer, the bridge leading into town had a convenient digital countdown sign. I was 996 days away from the Olympics.True, I had moved there because the lure of the Olympics was too great. Soon, after leveraging my parents’ connections, I scored an Olympic-related job -- the mother lode of all jobs in Atlanta after CNN at the time. I was a seller of bricks for the soon to be christened Centennial Park that would become far more infamous than I ever would have anticipated. Have you ever lived in a city with a “goal”? Let me rephrase that and ask if you’ve ever thrown a party in your home. You made sure things were clean and that the carpet was vacuumed. You worked painstakingly on the menu, and then you worried that maybe nobody would come and you’d be left with nothing but egg on your face and a few relics. Some, myself included, thought Ted Turner should have been in charge of the games and not Billy Payne. Turner had, after all, started “The Goodwill Games” in the wake of Jimmy Carter’s absurd decision to boycott the Moscow Summer Olympic Games in 1980. And while Ted certainly got his out of the deal (after the games, the Olympic Sta-dium was neatly converted into “Turner Field.”) My career trajectory led to my hiring by the world’s largest technology acronym (figure it out), and I was lucky enough to score a job with them inside the Olympic Village. And here’s why I laugh at the Olympics today: Yes, we had the “Dream Team II,” but it was 4-feet-nothing Kerri Strugg who stole the show. The basketball team earned money for their involvement in these past games (I’m not sure what they were paid in 1996), but I think that sort of misses the point of the games. I’ll expound in the next column.

What can we do?Proactive – This type of software stands between you and the wild world of the internet. There are many antivirus programs available some free, some paid. For personal use the free one are pretty good. In a business environment you need the ad-vanced setup, control and notification capabilities of a good professional grade program. Reactive – Malware and viruses can sometime get past the best of protection. In these cases you need to have software that does a deep scan on your com-puter. There many varieties of these programs available and some do better jobs than others. If you get an infection that is tough you are better off getting someone who is up to date on the latest cures to help you. You can do more harm than good sometimes. The virus’s themselves can mimic the cure.

A Golf Technique on How to Stay in the Shot

By David NevogtThere is a term that commentators on television will often say. He came, or she came, up and out of the shot. When you hear that, it usually means that the ball has gone to the right.

So, let me tell you an example of what ‘up and out of the shot’ means, and then I’ll give you a golf technique that you can use for your own golf game.

In the downswing, both knees stay bent during the bottom of the hit. And as the golf club passes you, the arms have to get out in front of you before you can turn through.

Now, here’s an example of a player that comes up and out of the shot. As they start down, they get out in front and their body unwinds. And they get tall in the hitting area and the spine comes up and you’ll see a push to the right.

So, here’s the golf technique. If you push to the right and you think there’s a chance that you may be coming up and out of your shot, you’ll hit it weak to the right.

A great little practice is for you to keep a little more weight on your right side and let the arms pass you before you turn through.

Now I’m going to tell you a great way to become your best teacher.

The next time you go to the practice facility, pick out a nice green patch of grass. And after you have hit balls for 10 or 15 minutes, walk back behind the golf ball and look and see where your divots are going.

If these divots are going to the left that means your club head is coming out to in and across the golf ball.

On the other hand, if after a few minutes of practicing you look up and see that you have divots going to the right, or that you’re hitting the ball real thin, this divot would tell me that you’re swinging too much from in to out.

So, here’s a golf swing tip that will tell you how to correct it.

For those of you that find that the divots are going left, every time you get ready to hit a golf ball, simply put this club along your shoulder line and check to make sure that you’re not aiming miles over to the left. That’s probably what you’re doing. You’re standing with your shoulders aimed left and that’s why you’re seeing divots going to the left.

If you’re hitting golf balls for a few minutes and you see your divots going to the right, your shoulders are probably way over to the right.

So, here’s another golf swing tip that will help you correct it.

For those of you that discover your shoulders are going left, put the ball back in your stance a little bit.

For those of you that find out that your shoulders are aimed way right, put the ball a little further forward in your stance.

Try those golf swing tips the next time you’re out and I promise they’ll help you.

Fairhope, AL - The dog days of summer are here and, despite the scorching heat, all the Haven animals will be fresh and cool at Petsmart in the Eastern Shore Shopping Plaza on Saturday, August 11 from 11am to 3pm for their “Primp Our Pets” pet adoption. The life-saving team of volunteers and staff will be present, showcasing the available animals that have been primped and cleaned, awaiting that 2nd chance to find the perfect forever family. Transported in the Haven’s Mobile Adoption Rescue Unit (MARU), po-tential adopters can see some wonderful, cuddly dogs and cats, many that have been pulled from shelters inBaldwinCounty.

“We always have people wanting to adopt a small breed dog. But, we have so many medium to large size dogs that need lov-ing homes, too. We want to take this opportunity to showcase these dogs and let people know that they can also make great pets,” says Michael Graham, executive director of The Haven. Red Imported Fire Ants part 2

It is our mission to protect families and pets from these danger-ous and costly invaders. They damage human health (reactions can include anaphalactic shock, bacterial infections from scratch-ing the bites, not to mention the discomfort you feel from being stung), crops (they love the open fields, seedlings, budding fruit trees, etc), communications (they get into the electrical lines and set up housekeeping), at a cost of millions per year. There are many ways to control fire ants, from home remedies to profes-sional services. We recommend using only products labeled for insect (ant) control, many of which are eco-friendly (garlic water, thyme oil, lemon grass, etc.) and naturally derived.

Your objective should be keeping the fire ant popula-tion to a minimum in an effort to prevent damages. Evaluate the landscape to determine which approaches would work best: baits, drenching or a grid method. Do it yourselfers should know the fol-lowing to treat fire ants in the most environmentally sound way.

***always read product labels and follow directions for use***

Baits - baits should be scattered around the ant hill about 1’-2’ out (they have back doors too!) and work to the outer edge of the mound. Be careful not to disturb the ants or they may not eat the bait. Bait works best when NOT applied directly on the mound. This method may take a few applications to affect the whole colony

Drenching - get to the queen(s)! Use a watering can, hose end sprayer, etc., at a rate of 1-2 gallons per mound. Circle around the mound a foot or 2 out, working your way to the center. Soak the center thoroughly, if possible. Re-treat as needed, and as new mounds form.

Grid method - involves spreading granules or ap-plying a natural liquid product over entire yard 1-2 times per year. This could be the most cost effective approach and has a side ben-efit of getting to other harmful insect as well. Spot treat as needed.

The right equipment makes the job easier. You can use a hose-end sprayer, a 12v pull behind power sprayer, pull behind granule spreader, hand held spreader, backpack sprayer, pump up sprayer or watering can. These can be found (minus watering can!), along with the products you need, at Household’s Do It Yourself Store. They stock all the best products and equipment for your pest control needs. For the rest of us? Hire a professional and call it a day!
