Inducted To HES Hall of Fame
Elizabeth Cromwell Kremer
B.S. Home Economics (University of Kentucky) 1925
Elizabeth Cromwell Kremer received her Bachelor of Science in Home Economics at the University of
Kentucky in 1925. Following graduation, she began her career as a food manager with Schrafft’s
restaurant chain in New York City. She managed the French Village Restaurant in Louisville and the
Canary Cottage in Cincinnati in the 1930s. After her marriage, Mrs. Kremer retired from her career to
focus on raising her two daughters. In 1967, she returned to work in the food service industry as the
vice president for food service at Shaker Village at Pleasant Hill. Mrs. Kremer flourished in this
position and gained national prominence through her work to organize and launch the food service
aspect of Shaker Village. Under her leadership, Trustees House Dining Room served more than 2.5
million meals and sold more than 153,000 copies of “We Make You Kindly Welcome”, a cookbook of
Shaker recipes that Mrs. Kremer compiled in response to customer requests.
Patricia Brantley Todd

M.S. Home Economics (Simmons College) 1973
Patricia Brantley Todd began her career teaching nutrition at the high school level in Massachusetts.
Today she focuses much of her time on philanthropic work linked to human environmental sciences.
Mrs. Todd has chaired the Relay for Life Cancer Dive and served on the Women’s Health Center
Advisory Council and the Governor’s School for the Arts Advisory Committee along with many
other boards and commissions. Mrs. Todd was founding co-chair of the University of Kentucky’s
Women & Philanthropy Network and a founding member of the Women’s Circle, the primary
endowment program of Center for Research on Violence Against Women. She currently serves as the
Honorary Chair for the UK Plaid Project. As First Lady at the University of Kentucky, Mrs. Todd
worked vigorously to improve the aesthetic and functional qualities of the university and its grounds.
Her many awards and recognitions include the University of Kentucky Alumni Association
Distinguished Service Award in 2011 and the 2013 Winner’s Circle Award presented by the Lexington
Chapter of the National Association of Women Business Owners.
Martha Allen Nall

Dr. Martha Allen Nall is a strong leader whose abilities were evidenced early in life through her
service as president of the Kentucky Association of Future Homemakers of America and as president
of the Kentucky Association of Future Homemakers of America and as Vice President of the Student
Association of the American Home Economics Association. Dr. Nall worked with the University of
Kentucky Cooperative Extension service from 1974 until 2012. She educated and empowered
Extension leaders, trained and mentored Extension professionals, and taught university students
promoting professional excellence, leadership and accountability with all. Dr. Nall has an outstanding
record of professional service, holding the office of president in the Kentucky Association of Family
and Consumer Sciences (AAFCS), national president of the Association of Leadership Educators, and
numerous additional local, state and national leadership positions. She received numerous awards,
including the AAFCS Leader Award and the Epsilon Sigma Phi Distinguished Service and
Meritorious Service Awards. Dr. Nall is a past president of the Human Environmental Sciences Alumni Association and played an active
role in the merger with the College of Agriculture Alumni Association.

As most everyone knows by now, I will be stepping down as dean of the College later this year. Throughout this summer and fall, there have been dozens of enjoyable opportunities to talk with alumni and friends about my time as dean. Many great stories have been shared about the history of the College and the exceptional people that created that history.
Among the abundant reasons to be proud of your College is our tradition of a strong alumni organization. We have been fortunate to have some outstanding staff to lead and build upon that tradition, but nothing would have been possible for them without the remarkable volunteer commitment of our dedicated alumni leaders.
During my term, we all faced the delicate challenge of merging the HES and Ag alumni structures. That success was, in my judgment, a remarkable example of organiza-tional engineering, made possible by deeply committed and forward-looking leaders.
As any period of time comes to an end, the tendency is to think and talk about the past. Certainly, our College alumni have a rich tradition of excellence to celebrate. But during my many farewell speeches and last visits as dean I have also asked that together we commit to sustaining those traditions and that excellence in the future. I am confident we will.
It has been an honor and a privilege to serve as the dean of your College.

Dean Scott Smith Says Farewell to Alumni
After 35 years of service to the University of Kentucky and the College of Agriculture, Food and Environment, Dean Scott Smith will soon step aside and begin his path toward retirement.
Since his appointment in January 2001, Dean Smith has seen tremendous growth in the College. The undergraduate popula-tion has nearly doubled in size with just over 2,600 students enrolled in the College this fall. Though he faced many chal-lenges during his tenure, including multiple budget cuts, his commitment to students has never wavered.
In an effort to thank the Dean for his leadership and service, we are seeking to establish an endowment that will assist stu-dent participation in co-curricular activities such as conferences, competitions and study abroad programs. The College has long been known for offering students opportunities though more than 30 clubs and organizations, as well as academic and leadership conferences. Such programs can be costly for students and they are not usually covered by any scholarship awards.
The Smith Family Fund for Academic Enhancement will assist students who participate in these activities for generations to come. We ask that you join us in thanking the Dean for his service to the College through a contribution to this endowment. Together we are creating a resource that enables students to participate in our college’s notable co-curricular activities, which distinguishes our graduates as they pursue careers and continued education.

A University of Kentucky professor who works to make Kentucky’s rural economies stronger was recently named the chair of the Department of Retailing and Tourism Management in the College of Agriculture, Food and Environment.
Vanessa Jackson joined the department, formerly Merchandising, Apparel and Textiles, in 1998 after serving a brief time as a lecturer at South Carolina State University. While at UK, her research, teaching and extension efforts have focused on rural retail development. She’s developed teaching models and curriculum that allow extension agents, UK students and small business owners to work together to benefit the local economies of Kentucky’s small towns.
In addition to her work with rural communities, Jackson has served as the department’s director of undergraduate studies since 2009.
“I am pleased that Vanessa Jackson stepped forward to accept this important position,” said Scott Smith, dean of the college. “She was one of the leaders in the reorganization of her new department, and she helped to develop a plan and a vision that will make it an increasingly valuable part of our College of Agriculture, Food and Environment.” As chair, Jackson hopes to help the department’s faculty and students to continue to strive for excellence.
“One of my goals is to nurture the faculty to achieve their goals and the goals of the department, so they in turn can give the students the skills they need to be successful in their future endeavors,” she said.
A Louisiana native, Jackson received her bachelor’s degree from Southern University and A&M College. She received her master’s and doctorate degrees from Michigan State University. Jackson replaces Kwaku Addo, who served as interim department chair for three

An extension professor, who helps ensure Kentucky food entrepreneurs put their best safest product forward, was recently
named chair of the University of Kentucky Department of Dietetics and Human Nutrition.
Sandra Bastin, who’s also a certified culinary educator and registered dietitian, has been an extension food and nutrition specialist
in the UK College of Agriculture, Food and Environment since 1996. She has served as interim chair of the department since
September 2011.
“Sandra has long been a leader in our nutrition and foods extension programs,” said Scott smith, dean of the college. “Over the
last couple of years we have also come to rely on her leadership in the academic mission.”
Bastin has received numerous awards throughout her career, most recently earning the Outstanding Dietetic Educator of the Yea
award by the Kentucky Dietetic Association. She also currently serves on the Kentucky Board of Licensure and Certification for
Dietitians and Nutritionists and recently completed a two-year term on the Nutrition and Health Committee for Planning and
Guidance, part of the National Institute for Food and Agriculture. The institute is an arm of the U.S. Department of Agriculture.
As chair, Bastin hopes to build upon the strengths of the faculty to create a first-class, research-based program that not only
attracts quality undergraduate and graduate students, but also betters the health of Kentuckians by providing them with sound nutritional information.
“I am very excited that our faculty members has recently been awarded competitive grant funding from The Robert Wood Johnson Foundation, USDA NIFA
and the National Institutes of Health,” she said.” Besides the contribution to improving society’s health, they are also integrating their research into the
classroom.”
While interim chair, Bastin and faculty members created the FIRST Initiative for the department to expand upon its core values to create a more student-oriented
atmosphere. FIRST stands for focus, innovation, respect, success and teamwork.
Bastin and department faculty are working on increasing leadership and best practice learning opportunities for students. They are also integrating an array of
innovative teaching strategies to make classes more engaging for students, such as hiring theatre majors to act as patients in a counseling course and allowing
students to gain real-world experience through food preparation service, food sustainability, and leadership in a quantity food preparation course, affectionately
know as Lemon Tree, after the department’s on-campus restaurant.
“My vision for the department is to be first in excellence in research, teaching and outreach activities, including our extension programming and delivery,” Bastin

CHARLES DOYLE LUCAS "C. D./LUKE", JR.
Charles Doyle Lucas died Sunday, September 29, 2013. C.D. was born on October 1, 1926, in Constantine, KY. He was preceded in death by: his beloved and devoted wife of 56 years, Jane Basham Lucas.
C.D. graduated from UK in 1952 (Phi Kappa Tau fraternity) with a degree which combined two of his abiding interests -- agricultural economics. He was a lifelong supporter of the university, especially the College of Agriculture. This culminated in being named Distinguished Alumnus in 1989 and inducted in the Scoville Society in 1988.
