5 Pounds was the average weight lost by dieters who focused on increasing their fibre intake over 6 months, according to a new study published in the Annals of Internal Medicine, which compared two groups given either a specific heart-healthy diet or a simple goal of eating at least 30 grams of fibre daily.

3 to 5 Cups of coffee a day is the optimal amount to protect the brain form degenerative illnesses such as Alzheimer’s according to research from Alzheimer Europe and the Institute for Scientific Information on Coffee. The study also cited a Mediterranean Diet as another factor that lowers the risk of developing Alzheimer’s.

4 Weeks of yoga were all it took for participants in a Harbor-UCLA Medical Center study to report improved sleep and relief from chronic pain. Yoga, which combines physical poses with relaxation and breathing techniques, is becoming more popular for the over-50 crowd to improve overall well-being.

My absolute favourite treatment to get at a spa is a facial. Facialists know exactly how to make my skin glow like an A-list celebrity, in a way that I just can’t seem to achieve at home. I’ve had many a facial in my time, but I’ve never one that utilizes seaweed—until now.

Vancouver’s Shangri-La Hotel recently introduced a one-of-a-kind facial to CHI, The Spa’s repertoire of treatments.

The Sea Therapy Facial was created in partnership with Diane Barnard, “The Seaweed Lady,” and her luxury skincare company Seaflora Wild Organic Seaweed Skincare, a Vancouver Island business that incorporates wild hand-harvested seaweeds into their organic product line (seaweed is chock-full of vitamins and minerals, and contains anti-inflammatory and anti-microbial agents, making them a fantastic ingredient for skincare).

The lovely Aiko was my therapist for my West Coast seaweed facial experience. After enjoying a delightful cup of warm honey and ginger tea in the lounge, she led me to my private treatment suite (each comes with its own fireplace, private bath, shower, relaxation lounge, changing and vanity areas - fancy!) and gave a brief overview of my treatment, which was to begin with a 15-minute steam.

As I relaxed in my steam room for one, I fantasized that my fat was melting off my bones with every bead of perspiration, and I saw myself emerging 10 pounds lighter. A gentle bell rang, snapping me back to reality, and I toweled off, shuffled over to the cozy treatment bed, and climbed in.

For the next 60 minutes, Aiko applied seaweed-based products to my tired-looking, 43-year-old skin, to hydrate, gently detoxify, and reduce the signs of aging. Even strips of actual fresh seaweed were draped across my face (at first it felt strange, but then I enjoyed the cool feeling). As the treatment progressed, any lingering tension melted away with Aiko’s heavenly neck, hand, foot, and head massage.

In conjunction with the facial, hot and cool stone therapy was used to help release toxins and fight inflammation in my face and body, creating head-to-toe body wellness. When, sadly, my Sea Therapy Facial ended, I was thrilled to find that my skin felt soft, smooth, and a bit firmer, in addition to having a wonderful, healthy glow.

by Steven W. Stavrou, Founder of EcoWanderlust.com

pafinder Wellness 365 recently released its top ten global spa and wellness trends for 2015. The report is of great significance to the tourism industry, which we now know has a nearly $500 billion wellness travel sector. For wellness travellers and wellness travel professionals, an understanding of these trends will be important for wellness tourism in 2015. Each trend has been briefly outlined below.

1. Forest Bathing

Forest bathing is the practice of quietly walking in nature, with the mind focused on the senses. Government-funded forest therapy studies in Japan have shown that forest bathing lowers blood pressure, reduces stress, and improves mood. As a result, “forest medicine” is booming, as doctors are prescribing time in nature, and spas and wellness retreats worldwide are offering forest bathing programs.

2. Cannabis

A rising wave of legalization is opening up an entirely new market for Cannabis, such as juice bars, spas, and tours. Travel THC, for example, is a website that allows travelers to find “marijuana-friendly” vacation rental properties in the state of Colorado. Cannabis businesses are also beginning to incorporate wellness, adding massages, yoga, and meditation to their offerings.

3. Wellness Traditions from the Islamic World

Traditional, authentic, unique, cultural – all these words are what wellness travelers are using to describe the experiences that they desire, and what wellness travel companies are using to describe the experiences that they offer. Eastern, holistic medicine, as well as practices such as yoga and meditation are all part of this trend, and are being offered at wellness resorts around the world.

4. Blue Collar Wellness

Increasing healthcare costs, an aging population, and a growing health-conscious market are all stoking this industry. Health and wellness programs are becoming increasingly important to large organizations, with the goal of maintaining a healthier, more productive workforce. This presents significant opportunities for the wellness travel industry, especially when it comes to business travel.

5. Wellness Communities

Economic prosperity in the early 2000s made “spa real estate” a top trend, lead by popular destination spas. The 2008 recession brought this industry crashing down. However, a rising economy and other factors such as increased stress levels among the population have allowed wellness homes, communities, and cities to soar yet again, and this is well evident in the wellness travel boom.

6. Fitness

Fitness has become a “total lifestyle” quest, from what people wear, to what they eat, to whom they are friends with. Fitness classes and studios have become prominent social channels, as many spend their days at work or in front of screens. This rise in social fitness has lead to an increase in social wellness tourism, and we are seeing more destination fitness events such as global yoga festivals.

7. Spa on Arrival

The spa experience is becoming both a prerequisite of travel, as well as a post-travel requirement to reduce travel fatigue, making it a more “on-demand” service than ever before. No longer are spa treatments just extensions of trips. We will begin to see more spas at airports, and massages offered upon arrival and at check-in.

8. Hyper-Personalized Beauty

Hyper-personalization is moving to the forefront of the highly competitive cosmetics industry. Consumers are demanding custom blends of products specifically formulated for them. Technological advances in 3D printing and scientific advances in genetic analysis are taking beauty and wellness to new heights.

9. Gut Reaction

People are “listening to their guts” when it comes to their personal well-being. Research will seek to establish links between our gut and our health and beauty, meaning that we will begin exploring ways of controlling how we look and feel by altering our microbiome. Gut health is about to go mainstream, giving spa and wellness businesses new opportunities in microbiome health.

10. Beyond the Stars

Curated recommendations are superseding star ratings, and online reviews are redefining luxury. “Five stars” has become the baseline. Hotels must now go above and beyond, and wellness is playing an integral role in helping them do just that. Authentic and exotic destinations are becoming highly sought after, while increased urbanization has turned privacy, space, silence, and light into luxuries.

People travel for many reasons—escape, enlightenment or to re-energize. But there’s a growing segment that travels for another reason entirely: Food.

In a recent survey for Navigate, a semi-annual publication produced by Deloitte in conjunction with the Tourism Industry Association of Canada, it was reported that 35% of Canadian vacation travellers chose destinations primarily for culinary purposes. That percentage was even higher among respondents aged 25 to 34.

Local food encapsulates so many things. It speaks to culture, to social interactions, to great nights spent with friends and family enjoying the best a location has to offer.

Given that, it’s not surprising that there are now specialists who cater (if you pardon the pun) to this growing segment. Premiere among them here in Canada is the Culinary Adventure Co.

Now five years old, it’s Canada’s largest culinary tourism operator. It offers 11 neighbourhood food tours across Toronto and something for every palate.

And the company definitely lives up to its name, with “food first” experiences like its Escape the City: Canoe Paddle + Dining Adventure. A Canadian Signature Experience, it invites guests to paddle to the beautiful Toronto Islands in a heritage freighter canoe, a replica of those used by early Canadian settlers.

A professional guide gives guests a special look at the local bird sanctuary, and offers insights on local history and geography. Once ashore, it’s picnic time, with delicious dishes featuring local Ontario products prepared by Culinary Adventure Co. chefs.

Then there’s nothing to do but sit back and watch the beautiful sunset over the island waterways. The adventure wraps with a night-time paddle back to the city—the perfect vantage point to take in the illuminated Toronto skyline.

The Culinary Adventure Co. also specializes in cooking classes and food education initiatives. Get more info at culinaryadventureco.com.

ulinary icon James Beard said that “Food is our common ground, a universal experience.” So, it’s hardly surprising that adventurous travellers are increasingly been drawn to new destinations in order to sample the bounty of faraway fields.

With its long history of farming, Ontario’s Prince Edward County has traditionally been thought of as Canada’s canning capital. But, over the last few decades, it’s transformed itself into a thriving wine region. With close to 50 wineries—not to mention several breweries, distilleries and countless artisan farmers, craftsmen, artists and restaurateurs—it has become the newest gem for those looking for a reliable get-away from the GTA. The County may have evolved in its culture and tastes, but it definitely retains the grass roots and community feel that has made it so special.

The Culinary Adventure Co. recently launched a signature wine tour series called Uncork the County. It’s a monthly day-long adventure to this incredible region along Lake Ontario and the Bay of Quinte. It’s a whole leisurely day spent in picturesque landscapes, stunning vineyards, scenic shorelines—with award-winning wines. There are also special seasonal and cultural events on the calendar.

The tour includes a tasting of Prince Edward County wines at multiple wineries. Lunch is a five-course gourmet ‘picnic’ created by the Chefs at Culinary Adventure Co., featuring locally-sourced artisan cheeses, seasonal salads, grilled meats, smoked local fish and dried meats.

But, best of all, it offers guests a chance to meaningfully interact with those who spend their days with their hands in the soil, transforming Prince Edward County into one of the country’s most renowned viniculture hot spots.

“As the world gets smaller, more and more guests are looking to discover those small local artisans they’ve seen on Instagram,” observes Culinary Adventure Co.’s Kevin Durkee. “As culinary professional ourselves, we give our guests the personal experience with food and wine producers in the region, they crave.”

One of the premiere independent vintners to now call the region home is Three Dog Winery. Owners John and Sacha Squair began their vineyard in 2000—planting 500 Pinot Gris, followed by 1500 Pinot Noir in 2002. Initially, they lived in the GTA, working at Three Dog on the weekends, but by 2003 they committed full-time—around the same time a frost wiped out a big percentage of their Pinot Noir. No one said running your own vineyard was going to be easy.

The Squairs say they intend Three Dog to be a gathering place for the community, not just a place to pick up a bottle and leave. Ideally, they note, it’s a place where you not only want to stop and enjoy a glass of wine, but also where artists, artisanal food producers, farmers, craftsman and others can come and set up to share the “Bounty of the County” with guests.threedogwine.com

Visitors can find the Devils Wishbone family winery on a picturesque spot near Lake on the Mountain. It occupies 15 acres of rolling vineyards overlooking the Bay of Quinte, and features a century barn in which wines are made.

The Devils Wishbone was the name given to the area by the earliest settlers, thanks to the poor soil conditions for farming. But bad soil for crops can be great for grapes. (Ask the French.) If you want proof, make sure you stop by and enjoy a glass or bottle on the patio while you take in the beautiful landscape. devilswishbone.com

If you’re willing to stray a little from the tour, and venture a little further down the beaten track in Niagara-on-the-Lake, the Palatine Hills Estates is a vibrant winery in a prime location within the fruit belt.

Over two decades ago, owners John and Barbara Neufeld saw the immense potential in the contours of the land, imagining viniferous possibilities in the sloping terrain. Twenty years later, Palatine Hills has led the way in the region, including being at the forefront of local ice wine production. It’s well worth the trip.palatinehillsestatewinery.com

Fifteen years ago, Prince Edward County had three wineries. Now there are almost 50.

EAT WELL

t doesn’t matter if you’re travelling around the world or looking to create a healthier lifestyle at home, clean eating is the key to wellness. Clean food energizes you, boosts your immune system and, if you’re travelling, lessen the effects of jet lag and helps you acclimatize to different environments.

But what is clean eating? What types of foods are clean?

Here’s a simple guide to what types of food to include in a clean diet and how to consume them. Start incorporating these ideas into your life and you’ll be feeling energized, light and healthy in no time.

1. Fruit and vegetables should form the core of your diet. Fruit and vegetables have high nutritional value in relation to the calories they provide, which means that you can and should eat a lot of them. Green plants should hold highest priority; try to incorporate more greens into your diet every day. Don’t forget about herbs, spices and plants from the sea. Be open to trying different types of colourful produce wherever you find yourself.

2. Choose regional, organic produce whenever possible. Food that is grown locally and without harsh chemicals will not affect our bodies and the environment in harmful ways.

3. Unprocessed food is more easily digested by your bodyAvoid foods that have been altered from their original form. Look to foods that don’t include additives that are hard for the body to process, such as nitrates, preservatives and food colouring.

4. Eat with intention, in a way that is measured and calm. Eating with intention means choosing to really experience your food, by slowing down enough to taste it and be curious about it. Be grateful for the wide variety and quality of food available to you and the opportunity to travel and experience other types of food.

5. Eat enough to sustain yourself. If you’re eating lots of whole, unprocessed food and living an active lifestyle, you’ll be able (and will probably need) to eat more to keep you feeling satisfied and energized and not reaching for unhealthy snacks.

6. Healing food includes anything that helps cells regenerate. Naturally fermented products, food with very high nutrient densities (ratio of calories to nutritional value), plants that purify, balance and alkalize your body, and anything else that makes you feel genuinely incredible are included on this list. Some go-to healers are natural sauerkraut, celery, green juices, seaweeds, dandelion and homemade organic chicken soup broth. As you eat more of these superstar foods, your body tissues will literally begin to grow younger as they rebuild themselves more often and more efficiently.

The aim of clean eating is to achieve a steady state that leaves you feeling well, everyday. Improve your health by incorporating some of these foods and ideas into your life then observe your emotional, mental and physical self to see if you notice a difference. As you make these changes and begin to tune in to your body, you will learn to avoid food that affects you in any negative way and embrace delicious and healthy options.

This is one of the classic rides in the Banff area, connecting the mountain towns of Banff and Canmore, and running parallel to the TransCanada Hwy. It is 20 km one way to do the Banff-Canmore section, but there are plenty of options for shortening the route.

What we love about this ride is that it’s paved the whole time, relatively flat with few hills and offers stunning scenery of Cascade Mountain in Banff or the Three Sisters in Canmore, depending on which direction you’re riding in.

To shorten the ride with young children, consider starting from the Valleyview Picnic Area. The picnic area is located roughly 10 km east of Banff on your right hand side as you head towards Canmore. (If coming

from Canmore, you’ll have to go to Banff and turn around to reach the picnic area.) From here, you can bike the 10 km to the Travel Alberta Visitor Info Centre in Canmore, or you can bike back approximately 7.5 km towards Banff. It’s mostly flat or downhill whichever direction you go from Valleyview.

This ride shares the road with vehicle traffic but the speed limit is 30 kmh and cars tend to give you wide birth, especially when they see children. It’s a lovely tour with little height gain.

The road starts from the edge of the Banff Townsite at the Mount Norquay entrance off the TransCanada Highway. Vermillion Lakes Drive leads you past three beautiful lakes that are popular with paddlers and

families stopping to play on the docks. Watch carefully and there’s a very good chance for wildlife sightings and marsh birds that you won’t see in other parts of Banff.

The Full ride is 4.3 km to the Third Lake but you can turn around at any spot. Parking is available on the side of the road at the beginning of Vermillion Lakes Drive. You’ll know you’ve found the spot because it is a very popular ride.

The Sundance Trail is 3.6 km, from the Cave and Basin parking lot to the Sundance Canyon trailhead (where you can continue on for a short 1.2 km loop on foot through the canyon). The trail is paved, but expect a climb of 145 metres on the way in that may frustrate small children. It is a good trail for parents with strollers or Chariots.

What we love most about this ride is the scenery along the Bow River and the opportunity for a mixed outing of riding and hiking. There are picnic tables and bike racks at the entrance to the canyon, and the canyon is a lot of fun for children to explore.

This short 2 km loop hiking trail in the town of Banff is perfect for children wanting to try some easy mountain biking. Expect a few roots, but otherwise there are no technical difficulties on this dirt and gravel trail – unless you count the bridges small kids may have to push their bikes up and over. As a final bonus for families, the wide, double-track trail is Chariot friendly if you want to pull younger children.

For a fun bike loop, start at Cascade Park downtown and bike the paved Bow River Trail heading towards the Fenland trail. Bike the Fenland Trail (left at the first trail junction) and cross the big bridge over 40 Mile Creek to gain access to Vermillion Lakes Drive. Bike Vermillion Lakes Drive as far as you want and turn around. Get back on the Fenland Trail; finish the Fenland loop and head back down the Bow River Trail to your car. It’s a doable distance for kids on balance bikes as well as pedal bikes.

This 3.5 km loop circles the Tunnel Mountain Campground in the Banff townsite and is an easy entry-level

mountain biking trail for families. It’s also a good loop to jump on and off while doing the harder Tunnel Bench Loop. Both trails follow the same circle on the bench and can be done as a mix and match.

The trail is a mix of hard packed gravel and dirt, and is never too narrow or steep. It’s a great trail to ride if you are camped at any of the Tunnel Mountain Campgrounds and is short enough to ride after a hike or other outing in the day.

At first it was just an idea. I wanted to run a marathon

in a crazy destination.

What began as an idea for a marathon in an idyllic location turned into a dream vacation.

I picked what I knew would be a beautiful, remote destination—the Patagonia International Marathon in Chile’s Torres del Paine National Park. But what began as a challenge to myself ended up being one of the best holiday experiences ever for my wife and I, and our two good friends.

We stayed in two of the top boutique hotels in Chile: Tierra Patagonia and Tierra Atacama. Although Chile is quite a distance from Canada, the flights were relatively easy. And it’s only one hour ahead of EST, so there wasn’t much jet lag.

The Tierra Patagonia Hotel and Spa blends seamlessly into the landscape. Overlooking a beautiful aquamarine lake, it offers sweeping views of the Torres del Paine Mountains from every window. We were enamoured from the start. All the meals and drinks were included with accommodations and the food was superb, especially when considering how isolated we actually were.

After finishing a gruelling marathon with more hills than I care to remember, we set off on some wonderful hikes throughout the parks.

The hotel provided free mountain guides who were knowledgeable about everything from the local fauna to the rock formations and wildlife. We saw soaring condors, Guanacos (wild llamas), foxes, and Nandus (Chilean ostriches), as well as beautiful spring flowers that bloomed throughout the mountains.

After four days of exploring, we took a flight to the upper side of Chile and stayed at a sister lodge called Tierra Atacama in the Atacama Desert. It was a shock to go from the cold Patagonia spring to the driest place in South America, but the Tierra Atacama was an oasis complete with sweeping, amber-coloured views of the volcanic mountains.

We went on fantastic excursions: Hiking up canyons to find soothing hot springs; travelling to salt flats filled with flamingos; and climbing a volcanic mountain that rises 4,800 metres above sea level. Although the wildlife was not as prolific as it was in Patagonia, Atacama’s colours and surprising experiences more than made up for that.

The Tierra Atacama hotel offers the same package deal for meals (and we loved its legendary “Pico sour” cocktails). The spas in all the Tierra resorts are superb, offering every treatment imaginable. My deep tissue massage after the marathon was a lifesaver.

There are four Tierra properties in total. The first, Ski Portillo, was opened by Robert Henry Purcell, an American who bought the property in 1954. And the latest of the four is Tierra Chiloe, built on an island in the lake district just beyond the wine country south of Santiago.

What began just as an idea turned into a trip full of unforgettable surroundings and memories. And we’ll remember it for a long time.

ravassa is a Sanskrit word that means a journey or dwelling abroad. It’s the perfect name for a company that was created to provide easy, one-stop travel for people looking to create space, break habits and have a unique and renewing travel experience. Pravassa has been at the forefront of the wellness travel move-ment since 2009, offering complete life experiences to address whole-body wellbeing.

The company recently ran an Instagram campaign called #ChangedByTravel that asked explorers to con-sider how their adventures abroad had changed them. Here are some of our favourite responses.

P alicepilar The trip that brought me the most personal transformation...without a doubt, #costarica w/ @pravassa. The trip coincided with a tremendous milestone in my life. I arrived feeling broken; I left feeling grounded, light, accomplished, optimistic, and, above all, loved. tracksbylindsEvery trip is a portal to a new world of culture + friends. One of my fav things to do is sit at a cafe, church, square or park + just watch folks carry out their lives. I have colourful memories from these Havana streets of musicians + chess players + school kids walking home; it seems so many places have these memories sealed in my heart: the quiet moments before 7 am when shop keepers prepare for opening or fishermen bring in their daily catch...then again at 4 pm when school kids walk home together. Every culture has its own rhythm, its own routine + yet there’s a similarity weaved in there that’s so special. travelingpilatesinstructor This photo is significant to me because it was my very first time traveling to the other side of the world alone to live for 6 months. I took this photo in 2002 at Piha Beach in New Zealand within hours of arriving into the country. This was right before the rain started pouring like I’d never experienced before and my new friend, Haley, decided would be the most perfect time to paddle out for a surf. I think back to that time and laugh at how jetlag never held me back, excuses didn’t occur to me, everything was all so new and exciting and I was constantly running on pure adrenaline. I also laugh at the fact of how out of my comfort zone I was at that time and how much I’ve changed since. This moment here was pivotal for me because it was the first time I truly jumped out of my comfort zone in not knowing anyone, but also knowing that I wasn’t alone. Myself, my surfboard and my big backpack travelled all around the north island meeting new and interesting people, eating different and delicious foods and learning how to go with the flow despite the differences between the ways I was raised and the ways other people did things. After this trip to New Zealand, I went to Australia for half of a year....then Western Samoa...and the list goes on from there. My eyes were opened to a whole new world of adventure and life...and in my own way living life I believe it is meant to be lived....real and raw...constantly being stretched, constantly growing and learning how to both give and receive. This trip forever changed me. https://instagram.com/p/21tFldJTRU/

travelwithcelery When I left Ottawa to relocate to Australia, I decided to live in Western Canada for a few months first. I knew I wanted to see more of my own country before flying to the other side of the world for an indefinite lengthof time. This was the first time I had spent more than a week or two in one place besides my hometown of Ottawa and the first step of a grand adventure that took me to many different countries.

The intentional space I created for myself when I made the move allowed me to change my life in so many ways. I learned how to take care of my body, mind and soul. My awareness increased on so many levels. I reconnected with my aunts and cousins and made some other great friends. I also soaked up the breathtaking beauty of the very different landscape out west, and for the first time really felt like I was living day-to-day as a part of nature and in the flow of life. It was hard not to feel that way with these mountains always in the distance. https://instagram.com/p/213cRWHvjB/

f you’re a fan of yoga, delicious food, and communing with nature, then a yoga retreat might be the perfect getaway to deepen–or recommit to–your practice, or just take a much-deserved breather from the everyday.

Where should I go?There are as many locations of yoga treats as there are poses. You could “retreat” in your own city, drive a few hours to a more remote weekend spot, or board a flight to an exotic beach island. It all depends on the amount of time you have, your budget, and the depth of practice you’re looking to bend into.

What kind of retreat should I choose?Ask yourself, what are my intentions for this retreat? Are you looking to challenge your practice, reset your body or mind, find healing during a difficult time, or

connect with new friends? Read the retreat themes and descriptions very carefully to find the one that speaks to you. The retreat will bring together like-minded people so you may find it easier to connect, which can only make the retreat that much better.

Salt Spring Centre of Yoga on Salt Spring Island in British Columbia notes, “People often have questions about what they might expect in coming to a yoga retreat for the first time - about the classes, accommodations, food, what they should bring. Coming to a yoga retreat at the Salt Spring Centre of Yoga is a relaxing experience, a time to get away from everyday life and be pampered. The rooms are comfortable, the vegetarian meals delicious, the staff very welcoming and the yoga classes suitable for anyone of any level of experience, including beginners.

There are many offerings, and all are optional. You can wake up in time for morning meditation or you can sleep in if that’s what you need. Morning and afternoon yoga classes are offered at two levels of practice, and there is always an interesting program on Saturday evening. Other possibilities include booking a massage or joining others in the wood-fired sauna (except during the dry season). What do you need to bring? Comfortable clothing, good walking shoes if you plan on walking, slippers for indoors and a bathing suit for the sauna.”

What’s included?A typical multi-day yoga retreat will include meals, accommodation, daily practice(s), and activities such as hiking, surfing, spa treatments, coaching, or workshops. Do make sure the style and level of yoga are right for you, as well as the amount of time spent practicing each day, before deciding.

Wendy and Darin, co-owners of Shanti Retreat on Wolfe Island, Ontario, give this advice: “Come with an open mind and heart. Give yourself the gift of a retreat weekend getaway. Your body, mind and soul will be nurtured and nourished. Lovingly prepared meals, yoga, meditation, spending time in nature, and connecting with kindred spirits are all part of the experience. All scheduled activities are optional; be guided from within, it’s your retreat!”

What should I do to prepare?Yoga retreat fare typically includes juicing and raw

foods, clean eating, and vegetarian options. But jumping straight in isn’t advised – take a few days before your retreat to wind down on dairy, meat, coffee, and alcohol for the smoothest transition, and most benefit, before you get your om on.

Final words of advice?Barb Shaw, from Grail Springs in Bancroft, Ontario, says, “When you’re attending a retreat or any yoga class I want each student to remember that this is their experience. I am there to facilitate the experience for the student with guidance, suggestions, and lots of love and laughter.

With the popularization of yoga has come a new pressure for students. I find more and more that I need to take time to help students relax, shed expectations and to help them feel comfortable with whatever they bring to the mat. It’s about sharing the time and the space and simply being present. A great practice should leave you feeling calm and I hope, joyful. Stress can wait outside the studio!

It is such a great joy to share yoga with guests at Grail Springs. We use it as part of our amazing wellness retreat programming and my heart is big for those who connect with the joy of the daily practice. So very briefly - it’s your class - not mine. Let me know what you need and it will be my honour to be your guide.”

rom lush rice fields to black sand beaches, there is no place on the Earth quite like Bali. It’s a land of ancient temples and unique cultural celebrations; an Island of the Gods; and an oa-sis of serenity, culture, art and tradition set among the islands of Indonesia. From the minute you step off the plane, you’re bathed in the scent of clove, frangipani and incense. Time spent here is transcendental.

If you’re looking to experience the island in its purest form, Pravassa takes small groups of travellers on a unique tour interweaving stories of Hindu Dharma into the daily wellness practice of yoga and meditation, expertly balancing organized and free time.

Bicycle though rice fields. Hike up Mt. Batur at sunrise. Soak in the healing waters of the Tirta Empul Temple. Take in a Temple Blessing and Full Moon Festival Ceremony. Return to nature as you explore Bali Barat National Park, or relax on Balian Beach and dig your feet in the sand.

Bali is a place of beautiful and welcoming release, and Pravassa is your perfect guide to it.

beaches. Southern India is paradise and not at all what you picture when you imagine India.

Here Pravassa will take you to Kasha Moksha, where you can gain understand of Hindu families final living rituals, take in evening invocations, and seek wisdom on a Buddhist Scholar tour of Sarnath.

ThailandRoadside noodle joints and dusty rickshaw rides are at the raw beating heart of Thailand, while the country’s Royal Palaces and opulent temples elevate the soul. Where did you bring us to eat?Toronto’s Rocklobster Queen West—run by good friend Chef Matt Pettit.

What are we eating?I’m addicted to Matt’s fried clams. Simple, crunchy, and his tartar sauce is incredible. The dish reminds me of my family trips to Maine when I was young.

Did you grow up in a foodie family?I guess, but not in the “snobby” way. Our family was always focused on food. From my Mom’s tearoom to holiday dinners—what we were going to eat next was always being planned.

As a Chef and restaurant owner are you raising your daughter to be a foodie?Absolutely. She’s got a great palate and loves all kinds of great food. But, she’s not going to be a cheap date when she gets older.

Rice or Pasta?Rice. My mother-in-laws sticky rice is beyond good.

Chocolate or Vanilla?Neither. Orange all the way. Citrus is what I crave: lemons, limes, grapefruit, oranges. It doesn’t matter, I love them all. In fact, orange and lemon flavours are making their way into more consumer products. I couldn’t be happier.

What celebrity would you like to have lunch with?Cookie Monster.

Really?Absolutely. C’mon he’s full of energy, doesn’t care about crumbs—and loves a good cookie. Who’s better to share a meal with than that? Plus, I’m a Sesame Street nut.

Before you opened CHEESEWERKS, you actually worked with the Sesame Street team, didn’t you?Yes, I was part of the consumer products licensing team in Canada for a little while. Marketing and licensing was my background before I opened the restaurant.

Why the switch from corporate to culinary? My biggest culinary inspiration—my Mom—passed away in 2007 and it shook me up a lot. I decided to focused on local food, quality, family and stories.

So, being Canada’s Big Cheese, what’s your favourite Cheese? Oh, that’s not fair. I like too many. Canada makes incredible cheese.

We’re not letting you leave without picking one.Ok. Perhaps an unexpected choice, but Quality Cheese’s Bella Casara Ricotta. Soft, simple, fresh and perfect. Incredibly delicious alone or best with a drizzle of local honey, cracked black pepper and, of course, orange zest.
