Our House wine. A great accompaniment to the Oyster. The 2019 is 40% each Chard and Riesling (native yeasts) and 20% Pinot Blanc (cultured yeast), fermented separately and blended prior to bottling. Expect crisp apple, citrus, and white peach.

Dry, medium body, with yellow peach, apple and a slightly nutty finish. A little more character than some in this category...

Loire. Classic seafood pairing. Think lemon, pear, mineral and a bit saline through the finish. GREAT with the Oyster, and we're so glad to have it back.

Neipoort 'Dialogo Branco' 2019$27.00

Niepoort makes Port, but here's a great dry white. A blend from a bunch of lesser-known grapes, this comes across as almost austere and mineral, with herbaceous and citrussy notes. It could age, but why bother when it begs so pleasantly for the Oyster?

De Martino Gallardia Old Vines White 2018$35.00

Old vine moscatel (dry dry dry) with a hint of corinto (30%) for balance. Dry, light body, lychee and jasmine, lemon and white flowers. Quite lovely. De Martino are all organic, and old-school Chilean winemakers. Good stuff.

Hidden Bench Fume Blanc 2019$32.00

Harald Thiel, proprietor, and Jay Johnson, winemaker, bring you this pre-release Sauv Blanc. Expect elegance, green fruit character, ripe but understated. Just a classy wine, from a classy place.

J. Mertes 'Goldberg' Riesling 2018$31.00

Saar, Germany. Just a hint off-dry, lovely peach, grapefruit and melon, and slatey minerality in the foundation. Not austere or abrasive, just delicious.

Zenato 'San Benedetto' Lugana 2019$30.00

Made with Verdicchio, this brings tree and some tropical fruit notes along with a lovely 'orangey' citrus character. From the north of Italy. This sits nicely on the cafe table as a pretty girl rides off on a Vespa.

Bonnet-Huteau Muscadet 'Les Guatronnieres' 2018$35.00

Loire - A 'serious' muscadet, this one amps up the mineral. 100% biodynamic, this is powerful and racy (we like). "Broken stones, lemon pith, white grapefruit and subtle peach." Fuck. Put it in your mouth with an Oyster and the world transforms.

Tornatore Etna Bianco 2019$40.00

100% Carricante, this is new Sicily. Almonds and pears on the nose, bright acid and a mineral undertone. "Volcanic Wine," eh Mr. Szabo? Bang on.

Cave de Tain 'Exploration' Blanc Crozes-Hermitage 2018$50.00

N Rhone. Zero sulphur 100% marsanne from the coop! Some weight, stone fruit, honey and yellow flowers. Charming, and the lack of sulphur gives a little tertiary character, even now. *Only 1 left*

Grossot Chablis 2018$55.00

Corinne and Jean-Pierre (well, now it's their daughter Eve) always keep that racy acidic element that Chablis promises, even in warmer years. Here we've got ripe stone fruit and green apple, just quivering in anticipation of the brine of the Oyster.

Toro Albala 'Electrico' Fino Sherry 500ml$21.00

Montilla-Moriles, Spain. Fino (dry) sherry from PX grapes - the ones that make really sweet sherry. Lovely olive/nutty character, and lemon, with just a hint of Grandma's christmas cake cooling on the sill in the background.

Henry Pelle Sancerre 'La Croix au Garde' 2019$30.00

Loire - Richer than your average Sancerre bear. Ripe tree fruit and peach, hay and gooseberry suggest a bit more 'punch' than the usual elegant Sancerre Sauv Blanc, but nothing approaching the Kiwi style, and fantastic with the Oyster. Minerality aussi.

Champagne Billecarte-Salmon Brut Rose NV$80.00

40% Chardonnay, 30% P. Noir, 30% Meunier. Strawberries, pie crust, orange peel, elegant mousse, fresh and lively. Fuck Veuve. This is the stuff right here. You can drink it with anything.

Baudry-Dutour Chinon Rose 2019$26.00

100% Cab Franc from Chinon. It plays like a white that someone squished a strawberry in. Terrific concentration of fruit for the price. For fans of the Provencal style fer sure.

Ch. Pesquie 'Terraces' Rose 2019$27.00

Pink from the Southern Rhone. 50% Cinsault, 40% Grenache and 10% Syrah, this is very crushable. Sunshine red fruit and nectarines with a great southern France herbal note playing in (rosemary and thyme). Imagine it's not winter...

The Farm Pinot Noir 2018 Black Label $26.00

Niagara - Plum, spice, black cherry, a bit of cola and nice concentration at the price. 20% new oak is nicely integrated, for a bit of structure. If you get a chance to go to the Neudorf's wine release party, you should go.

Felino Cab Sauv 2018$27.00

Well-regarded Cali winemaker Paul Hobbs got involved with Vina Cobos, makers of this Cab, some 20 years ago. Textbook style - sweet blue and black fruits but the acid keeps it fresh. Walnut and violet. You could do much worse for a house wine.

Ch. de Saint-Cosme CdR 2019$31.00

100% Syrah. Is '19 the best vintage of this wine so far. Some say yes. Ripe plum, cracked pepper and cassis, but this has a freshness that the hot S. Rhone doesn't always find. A wine for the Oyster? No. But great value and delicious? Yes.

Alpha Box & Dice Tarot Grenache 2019$35.00

McLaren Vale, Oz. 40% whole-bunch extraction brings out some Grenache spiciness, and the carbonic maceration pumps up the juiciness factor. Red fruit, cedar and black tea.

Aviron Cote de Brouilly 2015$35.00

Beaujolais is hot. Hot! Stephane farms biodynamically, if you care, and this wine shows juicy dark red fruit, spices, fine tannins and great concentration. Amazing.

Planeta Cerasuolo 2018$37.00

60% Nero D'Avola, 40% Frappato. Sicily. Red fruit, dried herbs, soft tannins. Like in the Godfather, when Michael meets Appolonia. How's that for a tasting note! Obscure as can be.

Medium body, dusty red fruits and a suggestion of beet and root beer. That tertiary mushroomy thing is coming along nicely. *3 left

Agrapart is OG grower Champagne. 100% Chard. "Bread dough, sliced cooked apples, minerals, steel" - Mr. Suckling. And he's not wrong - this is like the perfect Oyster champagne, from someone whose budget goes into the grape, not the marketing.
