PEANUT BUTTER CUPCAKES 2 cups brown sugar 1/2 cup shortening 1 cup chunky peanut butter 2 large eggs 1-1/2 cups milk 1 teaspoon vanilla 2-1/2 cups flour 1 teaspoon baking soda 2 teaspoons cream of tartar Pinch of salt 1 (12-ounce) package milk chocolate morsels 1. Preheat oven to 350 degrees. Line a cupcake pan with paper liners, or grease and flour 24 cups. 2. In a large bowl, mix together brown sugar, shortening and peanut butter until light and fluffy. Beat in eggs one at a time, then stir in vanilla. In another bowl, combine flour, cream of tartar, baking soda and salt; stir into batter alternately with milk. Spoon batter into prepared muffin cups. 3. Bake for 15 to 20 minutes in preheated oven, until top of cupcakes spring back when lightly pressed. Cool in pan for at least 10 minutes before removing to a wire rack to cool completely. Cover top of cupcake with milk chocolate morsels and let melt, then spread to cover. Makes 24 cupcakes. Enjoy!
