Love is in the air!

On behalf of the entire Rio Grande Valley, I would like to take this opportunity to say a heart-felt THANK YOU for choosing the Valley as your retirement destination. It’s no secret that here in the Valley we love our Winter Texans, and you can see that love

almost everywhere you go. See, here in Texas we like to brag about everything, so of course we like to brag about you, and all that you do for us while you’re here.

In case you didn’t know, our Winter Texans bring an estimated $750 million dollars to our economy each season. That’s just the icing on the cupcake as that doesn’t even begin to account for all the volunteering and community service projects you contribute to. I’ve lived in the Rio Grande Valley (almost) all of my 42 years and I’ve never known the Valley without our Winter Texans. So, in my opinion, Winter Texans have become a part of our culture, a part of who we are. You’ve helped shape our area, not only by stimulating our economy but by supporting our local schools, non profit organizations and, well, by teaching us that life is just too short to not have fun.

When people ask me what it is that I love most about our Winter Texans, the answer for me is the diversity of the group. Sure, while most of you share a few similarities (for instance: retired, originally from somewhere north of Falfurrias, wear shorts in 50 degree weather) - each and every one of you are unique, and that is what makes you so special as a group. It also means that what you like to see and how you do things can be very different than your next door neighbor.

Thankfully, there is no shortage of things to do here in the Rio Grande Valley - so whatever it is that you like to do, we hope you will find it in this month’s Welcome Home Report. I’ve listened to your comments, suggestions and put them into play, so I hope you will enjoy this month’s labor of love. Serving the Winter & Converted Texan community is truly my passion, and I am honored to be of service.

1st Family of Quinta Mazatlan

Construction of the home began in 1935 by Jason Matthews and his wife Marcia. The Cottage, Hootch and Main House are constructed of 12 inch adobe block. The first living quarters built were the Cottage and Hootch. The Hootch was Mr. Matthew’s hide-away and when in need of solitude, he would shimmy up a rope ladder to escape, pulling the ladder up behind him! The Main House, was the next building constructed. An unusual feature of the house was the aluminum sulfate paint on the adobe walls, inside and out, to prevent radar waves from penetrating the building.

2nd Family of Quinta Mazatlan

In 1968, Frank Schultz and his wife Marilyn, purchased the estate and began their seemingly endless restoration. Frank Schultz in the agriculture industry purchased the 8 acre estate for $24,000. During the next 30 years, the Schultz family enhanced Quinta Mazatlan as a showcase of McAllen elite hosting lavish parties and entertaining international dignitaries.

3rd Family of Quinta Mazatlan

In the spring of 1998, the City of McAllen purchased the estate for $1.4 million. In March of 2006, the

Just minutes from the McAllen-Miller International Airport is Quinta Mazatlan, an historic adobe hacienda in the middle of a 20-acre urban sanctuary. The mansion is surrounded by lush tropical landscaping and native woodland that attracts numerous bird species.

So many ‘extras’… a special drawer for vertical storage of dinner plates, a coffee/toaster bar in the amazing pantry (with electrical plugs) even a dishwasher, just to name a few of those options. The Professor and I are certainly in LOVE with our new home. Now on the RV kitchen…… First, let me tell you about this great product that is small but very effective in its purpose. It is called the Deni 56-Blade Meat Tenderizer. I own this product and can say that it is a must have if you are a meat eater who enjoys those steaks to be ‘melt-in-your-mouth’ tender. With a

p ro tec t i ve cap and a lock feature to insure s a f e t y , this little guy will fit neatly into a drawer or kitchen cabinet perfectly. Using it is a snap and it cuts down on marinating time. I purchased mine from QVC.com but it can also be found at other sites on the web.

Pineapple Sour Cream Pie

Ingredients:1 small package vanilla instant pudding1 container (16 oz.) sour cream1 T. sugar (optional)1 can (8 oz.) crushed pineapple, undrained1 graham cracker pie shell

Instructions:Mix first 4 ingredients. Pour into pie shell and chill. Garnish, if desired, with whipped cream and fresh fruit (strawberries and kiwi, etc.)

For him, it is to teach RV maintenance to folks (professionally and for the RV enthusiast). For me, teaching others how to live easier in their RV kitchens. As full-timers, we are very passionate about people learning how it ALL works…..and even though this information is not ‘rocket science’…if we don’t know what’s going on... not just in our kitchens but in all the parts of our RVs…we won’t be happy campers for very long.
