Coconut Sugar and Diabetes: Is It Safe?

Coconut sugar’s average GI rating differs from source to

source. Regular table sugar has an average rating of 58,

while coconut sugar’s GI is reported as low as 35 and as

high as 54.

A food’s GI rating is a measure of how much that food

may raise your body’s glucose, or blood sugar. Coconut

sugar has a slightly lower GI rating on most scales. On

average, anything below 55 is considered low.

Regular table sugar typically falls in the middle range.

The middle range generally covers ratings from 56 to

69. Anything with a rating above 70 is usually

considered to have a high GI.

Sugar with Low-Glycemic Index

Our Sugar is made from the sap of the Arenga tree orCoconut Tree. The sap collected by cutting the tree andstored in the containers. Then, the sap is boiled to reducethe water content and create sugar paste. Then, the pasteis transferred to the mold and allowed it to dry.

Coconut sugar is also called coconut palm sugar.It is a natural sugar made from coconut palm sap, which is the sugary circulating fluid of the coconut plant. It is often confused with palm sugar, which is similar but made from a different type of palm tree.

Sugar Cane Molasses

What Is Molasses?

During the sugar-making process, juice extracted from sugarcane is boiled down until the sugars crystallize and precipitate out.

The syrup left over after crystallization is referred to as molasses. Typically, sugar cane juice undergoes cycles of boiling and crystallization to extract as much sugar as possible. With each successive cycle, the leftover molasses contains less sugar.

Molasses can vary in color, sweetness, and nutritional content depending on the variety or how much sugar has been extracted.
