History in the making

The story of the AGA cooker beganin 1922, when Dr Gustaf Dalén –a world-renowned physicist andNobel Prize winner – lost his sightfollowing an explosion during anexperiment. Confined to home, helearned how hiswife and maid werechained to an old-fashioned stove,constantly having to watch over thefood as it cooked.

Although he couldn’t see, he wasdetermined to develop a cookercapable of every culinary technique,but which was also easy to use. Hedid exactly that and the AGA cookerwasborn.

TheAGAcooker is now made only inBritain at the company’s Shropshirefoundry in Coalbrookdale, a UNESCOWorld Heritage siteand the birthplaceof the Industrial Revolution.

Today’s AGA is made in exactly thesame way as it always has been.Molten iron is poured into mouldsand it’s this technique that gives thecastings their characteristic surface– each one is unique – and sets theAGA apart from ubiquitous mass-produceduniformity.

While most cookers are spraypainted in minutes, the AGAcooker’smultiple protective coatsof vitreousenamel take three daysto complete.

Of course, the modern AGA alsocontains state-of-the art technologyand is subject to rigorous qualitycontrols and adherenceto the latestenvironmental standards. This isBritish manufacturing as it should be.

WARMING OVENThe warming oven is designed towarm plates and serving dishes, torest meat before carving and to keepfood warm. Food should not be leftin there indefinitely and certainly notfor any longer than two hours.

How the hotplate worksThe hotplate operates using powerfulheating elements and can be set toeither boiling or simmering. Aroundthe outside of the actual hotplateis a further useable area. When setto boiling the hotplate reachestemperature in around 11minutes fromcold, while the simmering settingreaches temperature in around8 minutes.

Always ready to cookThe ovens and hotplates ontraditional AGA cookersmodels areon all the time meaning that theyoffer that indefinable AGA warmthinto your kitchen and are alwaysready to cook when you are.

At just under a metre wide, the2-oven and 3-oven AGAmodels aremore compact than you’d imagine.

The top right-hand oven roasts andgrills and can accommodate a 13kg(28lb) turkey. Bottom right is thesimmering oven, where pulled pork,curries, casserolesand porridge canbe left to improve, even overnight.The 3-oven model has the addedversatility of a baking oven idealfor moderate heat cooking such ascakesor lasagne.

In addition to the roasting, simmeringand baking ovens found on the3-oven AGA cooker, the 4-ovenmodel has an additional warmingoven. This is great for warmingplates and resting food or dryingout meringues.

Why I love my AGATotal Control

Prolific cookery writer and assistantto Mary Berry, Lucy Young’s life is awhirlwind of activity. Her home, onthe other hand, is an oasis of calmand her kitchen is adream –all sleekmodern white with a Duck Egg BlueAGA taking centre stage.

‘I’ve alwaysloved the Duck EggBlueAGA,’ Lucy says. ‘I cooked on onewhen I was19.It was the first AGA I’devercookedon. Iwasdoing aprivatedinner party in someone’s house. Itwas the original one and then, whenthe colour was re-launched for the300th anniversary, I knew thenthat I wanted it. I had a cream oneat the time, but promised myselfwhen I moved that is exactly what Iwould have.

‘I chose anAGA Total Controlbecause of the flexibility it offersandhaven’t noticed anydifference incooking, which is fantastic. We haveours on slumber mode overnightand only switch it off when we goaway at the weekend. We onlyput the hotplates on when weneed them.

‘I could neverhaveakitchen withoutan AGA. It would come beforeeverything else. It’s top of the listof my kitchen must-haves. It’sthe heart of the home. Everyonegathers round it. Look at it – it’s soiconic and beautiful. It’s also veryeasy, it’s intuitive and it makesyou abetter cook.

‘We had the AGAbefore the kitchenwas built. It was fitted four daysbefore Christmas. We had no floor,plastered walls, no running waterand no front door, but the AGAwasthere so on Christmas Eve I cookedfillet steak, garlic spinach anddauphinoisepotatoes.

‘We’ve done a lot of work to thehouse and it’s very insulated, butbecause we have an AGA TotalControl we have it on all year round.We can choose when we put thehotplates on as they only takeminutes to heat up. Even when it’sreally hot outside the AGA isn’t toomuch. You can have just one ovenon or two ovens, depending whatyou’re cooking.

‘I love Total Control. I think it’s areally clever way of cooking whilestill retaining the AGA way ofcooking. My favourite thing to cookis puddings or baking. I like thewhole decoration thing; it’s a realtreat. Actually there isn’t anythingnicer than giving cake to otherpeople.You feel likeyou’renurturingand looking after them just by givingthem a cupcake.’
