What does food quality mean to you? We ask our patients upon discharge how they would rate the quality of the food, but we don’t completely understand how our patients perceive this question. Quality can mean different things to different people. Was the selection inadequate? Did the patient disagree with that diet that had been ordered? Did the food taste like they expected it to? Did the meal look nice on the plate? Which of these factors are most impactful on a patient’s impression of the food quality? With such limited resources—both staffing and food costs—our Nutrition Care Services team would appreciate having a better understanding of a patient’s perspective and knowing more about where/how to direct our energy and resources in the improvement of our food delivery system. We have been asking the same questions on our surveys for a long time, but have come to the realization that perhaps we do not fully understand what patients are thinking when they rate this score. INTERVENTION We have attempted to gain a better understanding from our patients during their hospital stay. For example, our Patient Representatives ask patients how they are enjoying their food as they deliver patient meals and take orders, but the information is not always delivered or conveyed appropriately. In addition, patients are not always comfortable telling us exactly how they feel when they are in such a compromised state. We believe we hear about very bad experiences or generalizations, but we know we are not capturing the extent of how a patient’s experience with the food affects their overall hospital stay. DISCUSSION QUESTIONS a. How do you judge quality? b. What type of food are you expecting during a hospital stay? c. Will you tell us about your experience with the food during any/all of your hospital experiences? d. Was there anything specific about these food experiences that was confusing, frustrating, or disappointing during your stay? e. If our hospital foodservice system could change one thing in our food delivery process—what do you think would have the biggest impact on patient satisfaction?
