The attack on Pearl Harbor on December 7, 1941 by Japan pulled the United States into World War II and a nearly four-year fight on two different theaters . Germany finally surrendered in May of 1945 on what became V-E, or Victory in Europe Day, but “V-J Day,” or Victory in Japan Day, would come months later and at great cost to both sides .By the time the United States entered World War II, the Japanese military had hopscotched their way across many of the islands and continental shorelines in the western Pacific . In the end, they wrought violence against hundreds of thousands of people for six years until their surrender . In the months leading up to the Potsdam Declaration on July 26th, 1945, calling for Japan’s complete surrender, the Allies had bombarded some 60 Japanese towns and cities with hundreds of thousands of tons of explosives and the threat of invading mainland Japan loomed . The Japanese seemed determined to stay their course until the United States dropped the first hydrogen bomb on Hiroshima, Japan on August 6, 1945 that killed over 70,000 people and destroyed five-square miles of the city . It still took a second hydrogen bomb drop on Nagasaki three days later, killing 40,000 people, for the Japanese to give up or face complete annihilation . The next day, the Japanese capitulated and agreed to the terms of the declaration, which included promises of a peaceful Japanese government that “freely expressed the will of the Japanese people .” On August 15th, Emperor Hirohito urged the Japanese people to accept the surrender and on the same day, which was still August 14th in the United States, President Truman announced the surrender of the Japanese from the White House . The official surrender occurred on September 2, 1945 in the middle of Tokyo Bay on the USS Missouri . The celebration of the Allies’ victory was tempered by the heralding of the nuclear age and the glaring evidence of just how catastrophic the weapons really are and the times have changed as today finds Japan as one of the United States’ closest allies . V-J Day celebrations changed over the years as It became a fine line to walk when attempting to balance these factors with the devastation Japan wrought across the Pacific and the price paid by their victims and the Allied forces that fought and died against them .

Tropical Shrimp Ceviche TacosIngredients:• 1 pound raw medium shrimp peeled, deveined• 1 teaspoon salt• 3 limes juiced• 2 lemons juiced• 2 tangerines juiced• ½ cup chopped red onion• 3 tablespoons chopped pickled jalapenos • ½ cup chopped red bell pepper • 1 (14 .5 ounce) can diced tomatoes drained • 1 avocado diced • 1 mango diced • ¼ cup minced cilantro • 8 corn tortillas

Directions: Defrost shrimp in fridge if frozen, remove and discard tails . Prepare an ice bath in large bowl, set aside . In a large pot, bring water with salt to a strong boil . Add shrimp and cook 1 minute or just until opaque . Drain hot water, then add shrimp to ice bath to chill and stop cooking . Drain and chop shrimp into smaller cubes .Place shrimp in a medium non-reactive bowl . Add lime, lemon, and tangerine juices . Stir in red onion and jalapeno . Shrimp should be submerged in liquid . Cover and refrigerate at least 30 minutes, up to 2 hours . Stir in bell pepper and tomato . Chill additional 30 minutes to an hour .Before serving, stir in avocado, mango and cilantro . Heat or toast corn tortillas . Using a slotted spoon, scoop shrimp ceviche (allowing liquid to drain first) into tortillas and serve .

Summer CocktailIngredients:• 4 cup watermelon• 2 tablespoon lemon juice• 4 lemon wedges• 2 Fluid ounce sugar syrup• 1 cup vodkaDirections: Step 1: In a food processor or blender, puree the watermelon flesh . Carefully pour the pureed watermelon into empty ice cube trays and freeze for at least 4 hours .

Step 2: After the stipulated time, in a blender combine the frozen watermelon cubes, sugar syrup, lemon juice, vodka, and melon liqueur; blend until smooth .

Step 3: Pour into 4 frozen cocktail glasses and garnish each with a lemon wedge .

Serve this simple, colorful salad at your next outdoor gathering.

Meanwhile, slice zucchini using Ultimate Mandoline fitted with v-shaped blade . Chop carrot using Food Chopper . Cut cherry tomatoes in half and slice green onions . Snip parsley using Professional Shears .

Did you know that August 18th is National Honey Bee Awareness Day? This is mighty important as they play a very valuable role in nature and humanity’s everyday lives and they are endangered . Anything that threatens these creatures threatens our food sources and more . Here are some facts about these pollinators .

Honey bees pollinate, which in simple terms means they help grow food . When they “pollinate” a plant, they transfer pollen between the male and female parts of the plant that, in turn, helps the plants grow seeds and bear fruit, which in turn allows the growth of more plants and fruit . The honey they produce is really food stores for the winter but so much is created that the honey humans take from the hives likely doesn’t take much away from the bees . Each bee has around 170 odorant receptors which enable them to communicate within the hive and is how they recognize certain flowers . Bees dance to tell the others where the best food sources are; they perform a “waggle dance” in a figure-eight gesture pointing in the right direction .

Bees live in hives with one queen that produces chemicals that guide her bees’ behavior and lays the eggs that bring the next generation of bees . Queens, which have a lifespan of about five years, are created by the hive . When a queen bee dies, the hive chooses a larvae to feed a special “royal jelly” that will ensure that the bee grows up to be fertile . During the summer, they lay about 2,500 eggs a day . The workers in the hive, all female, live an average of 5-6 weeks and produce about 1/12 a teaspoon of honey . They construct and protect the hive, create air circulation and clean it with the beating of their wings, which beat about 200 times per minute at speeds up to 25 km/h, and leave the hive to return with foraged pollen and nectar for food (these are the ones people see flying about) . Drones, all male, number in the hundreds and have one purpose only; procreation with the queen . They live in the hive in spring and summer until they are kicked out for the winter .

Reasons for their decline are unclear . In the last fifteen years, the world has witnessed a case of “colony collapse disorder” which happens when bees leave their hives and don’t return . In many places, 90% of bees have inexplicably vanished . There are ways that people can help keep the bees going . Gardens with flowers rich in nectar like bluebells and lavender can be planted to help keep the bees’ food sources readily available . People can buy honey from local honey sources to help bee keepers keep up with their bees . It’s a win-win for everyone when honey bees thrive .

August 7th is National Lighthouse Day and the United States has many of them on both coasts that date back before the country was even established . Lighthouses have always been important for marine travelers making their way to shore during night hours or bad weather . But many of them also have other important features or roles in the history of their area or region . Here is a sampling of some notable lighthouses that are still standing today . These would make great additions to the areas you may be visiting or as a catalyst for a road trip .

Cape Flattery Lighthouse

Where: Tatoosh Island near the edge Cape Flattery in Washington State

Built: 1857 by the U.S. Lighthouse Service

A National Treasure, the Cape Flattery Lighthouse plays a role not only in American history, but the history of the Makah people . The lighthouse is located on the tip of the Makah Reservation and was constructed and operated with their approval after a treaty was signed with the American government that assured their culture and autonomy would be preserved . The Makah have lived in the region for thousands of years before European explorers reached this part of the continent and, even today, continue to use the island’s resources as a fishing ground just as their ancestors did . The cape was named so by the explorer Captain James Cook when he mapped the area in 1778, thinking that the cape had “flattering” conditions for maritime navigators to safely travel through the area; it was an unfortunate misconceived idea . The coast is rough and rugged and it was decided a lighthouse was needed to assist in navigating the area . This lighthouse was one of the first built on the west coast and, in the last 150 years, served as a wireless telegraph, a weather station as well as a military defensive position . In 1976, the lighthouse was automated and then its fate was sealed when the light was placed on a pole and positioned nearby . Recently, the island and the site of the lighthouse became a place for intertidal study that includes climate change and ocean acidification . There are plans to rehabilitate the lighthouse and ensure that it continues to enlighten others on its part in American and Makah tribal history .

Pigeon Point LighthouseWhere: Pescadero, California • Built: 1872

A part of the Pigeon Point Lighthouse Station Historic Park, this lighthouse is amongst the tallest in the United States at 115-feet . It was built after a clipper ship, the 175-foot long Carrier Pigeon, ran aground after hitting heavy fog . Twenty years later, the light shined for the first time on the area to help prevent another such occurrence . Now, after the closing of the tower in 2001, the 2,000-pound lens can be seen on display in the fog signal building and also visit the tide pools and cove beaches that dot the area .

Ponce de Leon Inlet Light StationWhere: Ponce Inlet, Florida • Built: 1887

When its kerosene lamp was lit for the first time, this 175-foot tall lighthouse could be seen almost 20 miles away . Until World War II, keepers and their families maintained the lighthouse, until the Coast Guard turned it into barracks and then automated it in 1953 . It was left to its own devices in 1970 until two years later when the Ponce de Leon Lighthouse Preservation Association was established to refurbish and maintain this part of American history .

Bodie Island Light Station Where: Nags Head, North Carolina • Built: 1872

This 156-foot lighthouse is still in operation, allowing visitors the ability to climb its 214 spiral steps . Fully automated in 1932, this lighthouse underwent an almost four-year renovation starting in 2009 and still shines out to maritime travelers as far as 19 miles offshore . It is a part of the Cape Hatteras National Seashore and grants visitors who travel to the top breath-taking views of the Atlantic Ocean and Pamlico Sound .

Cape Henry LighthouseWhere: Chesapeake Bay • Built: 1792

This historic lighthouse stands sentinel at the Chesapeake Bay entrance in close proximity to the “First Landing” site of Captain Newport and the Jamestown settlers in 1607 . A new lighthouse was completed to replace the original in 1881 when masonry cracks were found, but it was never torn down, as was the normal procedure, and an act of Congress, allowed the 1 .77 acres of land and the lighthouse to be acquired by Preservation Virginia in 1930 to restore, preserve and make the historic site available to the public .

Boston LightWhere: Boston Harbor • Built: 1716

Colonial America’s first light house, Boston Light, shined its light upon the night on for the first time on September 14, 1716 and the next lighthouse wasn’t built until 50 years later . It still stands these hundreds of years later as the only U .S . Coast Guard lighthouse with a resident keeper still showing mariners the way home . It was renovated and rejuvenated in time for its 300th birthday in 2016 and during the process, it was discovered that the original foundation was used for the first re-build after the original was destroyed by British soldiers .

Given how young our nation is compared to other countries around the world, it’s always fascinating to learn about America’s history through learning about some of its oldest man-made structures, some of which date back even farther than the Declaration of Independence . Lighthouses are the perfect places to show how we evolved as a people and a country through their construction, the technology used to power them and how they affected the land and the people around them .
