100% PURE VERMONT MAPLE SYRUP At WhistlePig, we strive to produce the finest rye whiskies anywhere; however, for us it is about more than whiskey - it is about supporting and encouraging value-added agricultural industries in our home-state of Vermont. Consequently, we have sought to integrate all aspects of our production into our 1,200 acre farm. For the past four years we have grown and harvested rye for use in our whiskey; last spring we began harvesting oak om our own forests to produce barrels; and in October, we opened our distillery in our 100+ year old hay barn, finally realizing our dream of producing a single-estate rye whiskey. On top of it all, we produce a Grade A ‘Robust Amber’ maple syrup om 1500 maple trees that line the hillsides around the farm. Aged in our rye barrels for 6 months, the syrup is equal in quality to our whiskies and an excellent compliment in any cocktail. SYRUP PRODUCTION Vermont is the largest maple syrup producer in the USA. Sugar Maples produce a watery sap high in sucrose during late winter and spring thaws. When tapped, one tree will produce 10-15 gallons of sap over the 6-8 week “sugaring” season. The sap is then boiled down at a “sugar house” to concentrate the sugar and maple flavor. It can take up to 50 gallons of sap to produce 1 gallon of syrup. MAPLE COCKTAILS Maple syrup is a potent sweetener with complex vanilla and spice flavors and a rich mouth feel that

greatly enhances and compliments whiskey cocktails. Suggested recipes include:

CHAMPLAIN SOUR

2 oz WhistlePig 10 Year Straight Rye0.5 oz maple syrup1 oz lemon juice0.5 oz red wine

Shake WhistlePig, maple syrup, and lemon juice with ice. Strain into cocktail glass and float red wine.

1 syrup bottle = 23 cocktails

MAPLE OLD FASHIONED

1.5 oz WhistlePig 10 Year Straight Rye0.25 oz Maple Syrup2-3 dashes aromatic and or-ange bitters

Stir until syrup dissolves. Add 1 large ice cube and stir until chilled. Garnish with orange peel.
