Adelina is a small vineyard and winery in the Springfarm sub-region of Clare, set amongst one of the
most historically relevant winery and vineyards in Australia. With small plantings of well-established
Shiraz, Grenache and Pedro Ximenez, also recently established Shiraz and Mataro, this site is
maintained using biodynamic principles. Adelina work with a very small group of growers in Clare and
the Adelaide Hills whom grow fruit for our non-estate wines. The winery is rustic in a sense of mod-
cons and mechanisation, where the most elaborate piece of equipment would be the coffee machine.

Mac first donned overalls in the South West of France at the tender age of eighteen. That summer was the catalyst for a now 20 year long career which has seen Mac work with some of the most
respected names in the business, both in Australia and overseas. Mac’s early experiences covered the gamut of winemaking, teaching and marketing. From educating European distributors on Australian
wines to consulting to Austrian winemakers, Mac developed a strong understanding of the international wine market and old fashioned winemaking. Returning to Australia in 2004, Mac kicked off his own project determined to marry some of the old world philosophies adapted to his beloved Yarra Valley. Determined, focused and able to multitask at high speed, Mac continues to drive the business forward. Vineyard and winery leases demonstrate his ongoing commitment to the Yarra Valley, and the next ten years look set to provide as much if not more excitement than the last.

Koltz began as a small wine label in 1995 when winemaker Mark Day and Anna Koltunow made their
first wine using grapes from the Bottin Vineyard in McLaren Vale. Since that time Koltz has evolved
and now specialises in Shiraz and Shiraz blends from the McLaren Vale region, renowned for its Shiraz
wines worldwide. Mark Day has worked as a wine maker for Maxwell Wines and Wirra Wirra in
McLaren Vale, and as a consultant in Italy and France over the last 6 European vintages.
Koltz is a very small producer and all their wines are hand crafted using traditional methods in that
they are fermented in open vats and when dry, basket pressed and put to oak. “We try to make wines
that are individual and reflect our philosophy that wines should be complex but a pleasure to drink at
any stage of their evolution.”

richness and freshness in this full bodied fizz. Great autolysis character from a minimum of 18

is full and creamy with great length of apples and Pears.

This small estate on the northern slope of Mount Etna was recently established by Marco de Grazia,
owner of the nearby Tenuta delle Terre Nere. “Establishing Le Vigne di Eli - Marco says - was
effortless. A simple act of love towards my little daughter Elena (Eli). It happened in 2006. I was
offered first one, then another, tiny vineyard, both in exceptional crus: Feudo di Mezzo and
Moganazzi-Volta Sciara. I bought them, and since the parcels were so small and fine, I was somehow
reminded of Elena. Thus, Le Vigne di Eli was born.

Diego Conterno began to make wine in 1982 when he founded the Conterno Fantino, with his cousin
Claudio and Guido Fantino. In 2000 he decided to leave the company and in 2003 he founded his wine
cellar. His first official harvest is 2005.
Today, Diego is supported by his son Stefano, the annual production is about 50,000 bottles. The
company has about 7.5 hectares of vineyards in Monforte d'Alba, including the prestigious Cru
Ginestra.
Diego only cultivates indigenous grapes, Nebbiolo, Barbera, Dolcetto and Nascetta.

Le Ragnaie / Tuscany *SA Only
Le Ragnaie is a breath of fresh air to what has been a relatively stale time frame in Montalcino.
Riccardo and Jennifer Campinoti purchased the property with a mix of old vines and younger
plantings. The estate spreads across 42 acres, 12 acres of which are in the zone where the cellars are
based, Le Ragnaie itself. These vines are the highest of any in Montalcino, some reaching above the
DOCG mandated 1,960 feet above sea level, south facing in the central zone above Soldera di Case
Basse.

‘The Marengo family has been making wine in La Morra for four generations since the estate was
founded in 1899. Mario, father of current owner Marco, was a small wine producer. The generational
handover represented genuine change. What once could have been called a hobby has been
transformed into a full-scale operation. Marco believes in his work and intervenes as little as possible
in the cellar, never follows fashion and never uses clarification, filtration or cultured yeasts, even
when the wine would permit them. He has also acquired rare skills with ageing barrels.’

FRANCE
The Genet family has been making Champagne in the Grand Cru village of Chouilly for more than 100
years. Nowadays, Genet is run by Michel’s sons Vincent and Antoine, who produce Champagne in the
same facility built by Moet et Chandon in the 1960s and later bought by Michel Genet himself in the
late 1970’s! The 17-hectare estate (roughly the size of 26 city blocks) produces five Grand Cru Blanc
de Blancs Champagnes, a Rosé and a Blanc de Noirs.

It was wasn’t until 1974 that José Dhondt, a long-time grower, produced his first cuvée. José makes
three wines, a NV Rosé, a NV Blanc de Blancs and another he calls “Mes Vieille Vignes,” which, while
always made from grapes of a single year, is only vintage dated when José decides it’s been an
especially good year in the vineyard. Whether the “Mes Vieille Vignes” cuvée is vintage dated or not,
it is astoundingly good Champagne, with a richness and persistence that is truly unparalleled.
The Dhondt family’s 6 hectares are split over several parcels, equally divided between the Côte des
Blancs and the Sézannes regions. The vines average 25 years of age, though grapes for his “Vieilles
Vignes” cuvée come from 56 year old vines on a tiny parcel on a slope of Oger that was planted by
José’s grandfather. Dhondt avoids chemicals as much as possible, practicing what the French call
“culture raisonnée.” He keeps yields low with a severe debudding and sorts grapes mercilessly before
they go into the press. Pressing is done in a traditional vertical wood press and only one “retrousse”
is allowed. Vinification is in small temperature controlled stainless steel vats with individual lots kept
separate.

A very proud and independent Récoltant Manipulant producer, which is your guarantee that the
grapes come from their own vineyards and the Champagnes are produced and aged in their own
cellars.
Their vineyards are about 6 kilometres outside Epernay in a marvellous, but little-known area of
Champagne called Les Coteaux Sud d’Epernay ( which means The Southern Slopes of Epernay) and
which is tucked away between it’s more famous cousins, the Vallée de la Marne and La Côte des
Blancs. They grow all three Champagne grape varieties in their vineyards: 20% are planted with
Chardonnay, 10% with Pinot Noir and 70% with Pinot Meunier, their specialty. The vines in the
individual plots range between 3 and 54 years of age. Annual production is around 60,000 bottles.

Peggy & Jean-Pascal moved to La Combe de Rotalier in 1999 because they wanted to escape city life.
They wanted to live in a bucolic setting where they could grow their own vegetables, raise chickens,
rabbits, pigs. At first their dream was to have a mixed farm but viticulture gradually drew them in and
they soon realized what they really wanted was to grow, raise and make for themselves what they
wanted to eat and drink. They gradually acquired a number of small parcels of vineyards. They studied
on their own and through trial and error, and with some guidance from Monsieur Ganevat, (their next
door neighbour), they found their way.

“After working closely with my father Daniel and brother Vincent at Domaine Daniel Dampt, I created
Domaine Sébastien Dampt in 2007.
The family has been making wine in Chablis for over 150 years. The Domaine is situated in the village
of Milly to the west of Chablis and fifty percent of the holdings are in 1ers Crus.
The Chablis and the Premiers Crus are fermented in stainless steel to help retain their freshness and
purity. The new winery, which was built in 1990, is completely surrounded by vines and is all state of
the art technology, with a wonderful tasting room overlooking the beautiful vineyards of Vaillons and
Les Lys.
In 2013, I bought a concrete egg, to vinify a new 1er Cru in my range, this system is used to obtain
more fatness on the wines and to make a micro oxygenation as a barrel (without oaky aromas)” –

Former Burgundy winemaker Bruno Lafon moved to the Languedoc in 1998 to start his own winery,

Established for several generations on the peak of Sancerre, the Fouassier family is one of the oldest

The domain covers a total of 30 ha. A parcel is situated in Châteauneuf du Pape but the main part of
the fields are situated in the Mondragon area in Côtes du Rhône Village Massif Uchaux or Côtes du
Rhône.
From 2007 the domain was certified Biodynamic controlled by ECOCERT.

Brézé is a unique site due to its relatively high elevation and eminently nuanced geological profile. The
high composition of tuffeau, a porous, chalky limestone also used in the construction of much of the
Loire’s Renaissance architecture, results in finely mineral Chenin Blanc and Cabernet Franc. Clay and

Chateau de Coulaine is a family-owned estate rich in viticultural tradition which has been operating
continuously since 1300! Since 1988, Etienne de Bonnaventure has assumed all viticulture and
winemaking responsibilities and has grown the estate to its current 12 hectares, all situated on
Chinon's plateaux. Planted to 100% Cabernet Franc, vineyards are organically farmed, all grapes are
hand-harvested and vinification follows a non-interventionist path. Coulaine's low yields (around 35
hl/ha) result in a deeply concentrated, savoury and succulent expression of Cabernet Franc with ripe
and polished tannins - a harmonious balance between the traditional and modern worlds.
