CARVE DRY AGED BEEF We have built a room solely for the purpose of dry ageing meat, in particular great beef cuts. The products are dry aged for between 7 to 28 days, giving the meat a rich colour and providing a super tender eating experience. Note: We sell these meat cuts on the ‘wet weight’, not the finished weight.
