Recreation ReportBy Roxanne Vario, Recreation Director During the month of January, the Recreation Committee took on the task of cleaning and organizing the clubhouse. I personally want to thank Elaine Fulgieri, Kathy Banz and Joyce Snadecky for helping me organize the office and kitchen. Elaine, Cathy and Joyce also helped to clean the tables and chairs. A special thanks to Mrs. Elizabeth Cook who was also a great help with our chairs. In order to keep our clubhouse looking good and our tables and chairs staying clean, the Recreation Committee and myself ask for everyone’s help. Please refrain from placing your coffee cups and or drinks on chairs. While cleaning the tables, we noticed that some of the stains are from the bingo ink. Please take note and wipe down your tables after bingo is over. Remember this is our community and teamwork is of an essence. A Valentines Day Arts & Crafts event was held on February 13 with Movie Night scheduled directly afterwards featuring the movie “Minions.” We look forward to our next event, our annual “Breakfast with the Easter Bunny” followed by an egg hunt. Flyers and information soon to come. Any comments or suggestions are always welcome. You can reach me at 828-7511 or by emailing me at [email protected]

Easter Facts and TraditionsBy Bernice Jala Let’s start with the Eas-ter Bunny. The Bible makes no mention of a long-eared, short-tailed creature who delivers decorated eggs to well-behaved children on Easter Sunday; never-theless, the Easter bunny has become a prominent symbol of Christianity’s most important holiday. The exact origins of this mythical mammal are unclear, but rabbits, known to be prolific procreators, are an ancient symbol of fertility and new life. According to some sources, the Easter bunny first arrived in America in the 1700s with German immigrants who settled in Pennsylvania and transported their tradition of an egg-laying hare called “Osterhase” or “Oschter Haws.” Their children made nests in which this creature could lay its colored eggs. Eventu-ally, the custom spread across the U.S. and the fabled rabbit’s Easter morning deliveries expanded to include chocolate and other types of candy and gifts, while decorated baskets replaced nests. Additionally, children often left out carrots for the bunny in case he got hungry from all his hopping. Easter is the second best-selling candy holiday in America, after Halloween. Among the most popular sweet treats associated with this day are chocolate eggs, which date back to early 19th century Europe. Eggs have long been associated with Easter as a

symbol of new life and Jesus’ resurrection. Another egg-shaped candy, the jellybean, became associated with Easter in the 1930s (although the jellybean’s origins reportedly date all the way back to a Biblical-era concoc-tion called a Turkish Delight).

According to the National Confectioners Association, over 16

billion jellybeans are made in the U.S. each year for Easter, enough to fill a giant egg measuring 89 feet high and 60 feet wide. For the past decade, the top-selling non-chocolate Easter candy has been the marsh-mallow Peep, a sugary, pastel-colored confection. Bethlehem, Pennsylvania-based candy manufacturer Just Born (founded by Russian immigrant Sam Born in 1923) began selling Peeps in the 1950s. The original Peeps were handmade, marshmallow-flavored yellow chicks, but other shapes and flavors were later introduced, including chocolate mousse bunnies. The largest Easter egg ever made was over 25 feet high and weighed over 8,000 pounds. It was built out of chocolate and marshmallow and supported by an internal steel frame. In New York City, the Easter Parade tradition dates back to the mid-1800s, when the upper crust of society would attend Easter services at various Fifth Avenue churches then stroll outside afterward, showing off their new spring outfits and hats. Average citizens started showing up along Fifth Avenue to check out the action. The tradition reached its peak by the mid-20th century, and in 1948, the popular film Easter Parade was released, starring Fred Astaire and Judy Garland and featuring the music of Irving Berlin. The title song includes the lyrics: “In your Easter bonnet, with all the frills upon it/You’ll be the grandest lady in the Easter parade.” The Easter Parade tradition lives on in Manhattan, with Fifth Avenue from 49th Street to 57th Street being shut down during the day to traffic. Participants often sport elaborately decorated bonnets and hats. The event has no religious significance, but sources note that Easter processions have been a part of Christianity since its earliest days. Today, other cities across America also have their own parades. Many families consider the Easter Bunny as a sort of springtime Santa Claus. The religious connection between the two holidays is obvious: Christmas celebrates the birth of Christ and Easter celebrates his resurrection. Both figures reward children with candy and treats for good behavior. These charac-ters also share a unique distinction: snacks are left out for them the night before. Santa tends to receive milk and cookies, while the Easter Bunny gets carrots. We even present gifts in the same way for each holiday; Christmas stockings and Easter baskets are usu-ally filled with similar items. (Information obtained from various web sites.)

Some Thoughts about the ShamrockBy Bernice Jala The shamrock is the most identifiable symbol of Ireland. Shamrock comes from the Irish Gaelic word Seamrog, a work that refers to the plant’s three leaves. The shamrock as the symbol of Ireland and St. Patrick’s Day is partly due to the natural abundance of clover plants in the country, but largely due to its strong association with Christianity.

Legend says St. Pat-rick used the shamrock to visual illustrate the concept of the Trinity (the Father, the Son, and the Holy Spirit) when trying to convert polytheistic pagans to Christianity. In Christianity, God is three persons, but it’s not the same as three gods. The simple analogy is thought to have helped non-Christians under-stand a fundamental element of the Christian religion. Whether or not this story is true, the sham-rock is regarded as the national plant of Ireland and always worn on St. Patrick’s Day. (Information obtained from hellokids.com)

Our Little Park in the Wild (Acres)By Barbara Bonney Some dogs have jobs. They guide the blind, herd the sheep and even do police work. But most pets spend their days sleeping – not by choice but from boredom. Like their owners, they enjoy getting off the couch, playing and socializing. But you’re busy. You’d like to give him more of your time... but what is the answer? Last summer WALPOA gave us an answer when our latest recreational area opened – our dog park! Located at the intersection of Mountain

Drive and Hilltop Drive, our park has two separate fenced in areas where dogs of all siz-es and all ages can run and play. Here they form friendships as do their owners. The park has its own Facebook page: WALPOA Dog Park. Here you can share infor-mation with other pet owners, ask questions or post your pet photos Although you and your dog can visit the park by yourselves, you’ll find it more enjoyable when other dogs,

and people, are present. Many members go to the FB page and post times when they will be heading to the park so others will join them. Balls are thrown, races are run and there is even the occasional tug of war as seen in the photos above! Believe me, seeing your pet running free and happily playing with other dogs, an important step in canine socialization, will give you great pleasure. Dog Park activities give your pet a constructive way of releasing pent up en-ergy allowing him/her to become a calmer, less destructive family pet. At the park you will find chairs and benches, balls, and trash facilities. The park is open from

Can SafetyBy Bernice Jala I know that there are a lot of us that are concerned when we arrive home from grocery shop-ping and find a dented can in our bag. So I thought I would do some research on just how safe is it to use what’s in the can. True or False: Some cans with dents cause food to be unsafe to eat. This is true; how-ever, there are simple evaluation techniques that can be used to determine if the food will be safe or unsafe. How does canned food become unsafe? When a can is dented near a seam or a junc-tion, it makes it possible for air to enter the can. A sharp dent can cause a pinhole in the can, which could also allow air to enter. This air, combined with the moisture in the can, allows the growth of microorganisms. These microorganisms cannot be killed by cooking. Consumption of this food could potentially result in botulism. Cans that are bulging or have rust that will not wipe off are also deemed unsafe.

(Information obtained from food-finders.org)

How can I tell if a dented can is safe?Feel the can and visually inspect it.

SAFE cans have: • Smooth dents • Dents that are not on the seam • Dents that do not compromise can junctures

DISCARD cans with: • Dent on seam • Dent where side and end meet • Sharp dent • Swelling or bulging • Rust that does not wipe offWHEN IN DOUBT THROW IT OUT!

March/April 2016 Wild Acres World 11

Well it’s March, and March always brings St. Patrick’s Day. Here are some traditional recipes that help make this day special.

Irish Soda BreadContributor: Alina Hands

Ingredients: 3½ cups flour ½ cup sugar 2 teaspoons baking soda 2 teaspoons baking powder 1 teaspoon salt 2 cups sour cream 2 eggs ¾ cup raisins ¼ rye seeds (optional)Directions:

• Sift together dry ingredients; make a well and add sour cream and eggs. Mix vigorously. Batter will be sticky. Add raisins.

• Put batter in a greased 9-inch cake pan. Make a cross in top of batter. Bake at 350 for 45-50 minutes.

Irish Pub Salad RecipeIngredients: ½ cup mayonnaise 2 tablespoons rice vinegar 1 teaspoon dried tarragon 1 tablespoon Dijon mustard 2 to 3 teaspoons water 8 cups torn Boston or Bibb lettuce 6 cups selected pickled beets, pickled green beans, sliced cucumber, diced tomatoes, shredded cabbage and sliced onions--your choice! 4 hard-boiled eggs, peeled, sliced 4 ounces cheddar cheeseDirections:

• Mix together the mayonnaise, rice vinegar, tarragon, mustard, and water in a small bowl.

• In a large bowl, add the lettuce with other toppings, or make 4 individual salads.• Drizzle salad dressing over the salad; serve!

Corned BeefContributor: Bob Dufour

Choose cuts that are not too fat.The best cuts are from the ribs and brisket.

• Tie securely in shape. Wash under running water. Cover with cold water and bring slowly to boiling point. Boil 5 minutes, remove scum, reduce heat, add a bottle of good beer, and simmer until tender (3 or 4 hours).

• Cool slightly in water in which it was cooked. Remove from kettle.

• To the cooking broth add pared potatoes, carrots, and turnips. If they are small, leave whole. Otherwise, slice. Cook 15 minutes. Add cabbage, quartered and cored.

• Cook until all vegetables are tender (10 to 20 minutes longer). • Put meat on platter. Arrange vegetables neatly around it. • For added color and flavor, serve hot buttered beets or pickled beets or your

favorite muster sauce.

Old Fashioned Irish TrifleContributor: Jocelyn Sandor

Ingredients: One 2 lb. Sponge loaf/cake ¼ lb. block Raspberry Jell-O 1 lb. tin Fruit Cocktail (drain, but keep juice) 4 tablespoons Sherry (optional) 1 lb. Ready to serve Custard 170 ml carton Cream (whipped)Directions:

• Dissolve jelly in 1¼ cups boiling water, stirring well. Add juice from drained fruit, and sherry.

• Break up the sponge and arrange in the base of a large glass bowl.• Pour the jelly mixture over the sponge. Press down well with the back of a spoon

and smooth the top. Allow to set.• Place the fruit cocktail on top, then pour the custard and spread evenly. Next,

pour the whipped cream on top.• Decorate with green sprinkles and grated chocolate.

This is a lovely and light cocktail that tastes as good as it looks.

Irish RoseIngredients: 1 ounce lime juice 1 ounce pomegranate syrup 6 ounce ginger ale 1 ounce Irish WhiskyDirections:

• Mix all of the ingredients together and pour the drink over ice.
