TRANSCRIPT
In 1882, my great grandfather and great grandmother, Michael and
Malka Chamiletzki, first set foot upon the land of Zichron Ya’akov,
after emigrating from Lithuania. Michael had been commissioned by
Baron Edmund de Rothschild to plant vineyards, and from the very
first day, a profound and harmonious relationship between the Tishbi
family and the vineyards was forged. The family settled in nearby
Shefeya, where they immediately set to work cultivating the land and
planting vines - a region which today is surrounded by an abundance
of sprawling vineyards. In 1925, the family hosted the renowned poet
Chaim Nachman Bialik, and in gratitude for the warm hospitality
that he had received, he suggested a new family name for them –
“TISHBI” – an acronym for “resident of Shefaya in Israel”.
My parents Mina and Israel Tishbi, like their parents before them,
also made their living by cultivating grape vines and olives, and by
producing cheese and dairy products made from their own cows . At
the beginning of the 1980’s, the wine industry experienced a serious
crisis, which caused the price of grapes to soar. As a result, no winery
was willing to purchase large quantities of grapes. At that time, the
market was flooded with Muscat grapes, a large proportion of which
was being grown in our family’s vineyards.
Due to this crisis, I decided to leave the “Carmel Mizrachi” co-
operative and establish my own small winery. At the beginning,
the winery was named “Baron Wine Cellars”, to commemorate
Baron Edmund de Rothschild. The name was later changed to the
family name, “TISHBI ESTATE WINERY”. Today, the whole family is
involved in the running of the winery. My wife, Nili manages the
Visitors’ Center & wine shop and my son, Golan, is the winemaker
and my right-hand man. When we decided to establish a distillery,
Golan traveled to Cognac, France in order to learn the “alembic”
process of distillation. This was soon put to the test in the production
of oak-aged brandy at our winery. We are extremely proud to have
been awarded the respected title of the ‘best brandy in the world’ at
the renowned IWSC competition, which takes place in London every
year.
Our eldest son, Michael, is involved in the cultivation of the
vineyards, while our daughter, Oshra, after extensive traveling, has
helped us open the doors to the global market. She also initiated and
established our café and restaurant in the center of Zichron Ya’akov
and developed her own range of food products – “Fine Food by
Oshra Tishbi”. After all – “family is everything”.

The saying “The past is the best prophecy of the
future” symbolizes the traditional-modern perception
according to which the winery operates today.
Although the winery is most definitely a commercial
and modern enterprise, a meticulous eye is always
still kept on the grapes, which are cultivated and
handpicked in our vineyards. The geographic locations
of
our vineyards have been carefully chosen from the
optimal vine-growing regions in the country - from Sde
Boker in the south, to the Golan Heights in the north.
The variations in the different soils and climates are
reflected in each one of our wines, promoting their
individuality. The barrels used for aging many of our
wines are produced from both French and American
oak. The oak wood forests used in the production of
our barrels are carefully selected, in order to determine
the diversity in flavor and aroma that each region has
to offer. This advantage gives our customers the option
to enjoy wines with varied styles and characters.
GOLAN HEIGHTS: KIDMAT ZVI
The volcanic soil of the Golan Heights is ideal for the cultivation of wine grapes, possessing airy
soil and excellent drainage. In addition, the cool summers and cold winters of the Golan Heights,
together with the natural topography, also result in a slow ripening season. Our vineyards on
Kidmat Zvi, where we grow Cabernet Sauvignon, cover an area of approximately seven acres.
With an elevation of 550 meters, this area is now recognized as one of the best wine growing
regions in Israel.
UPPER GALILEE: KEREM BEN ZIMRA
Kerem Ben Zimra, known for its excellent wine cultivation in Israel, is located in a mountainous
region, at an elevation level of 700 meters. This location, with its cold climate, yields grapes
with a particularly intense character. The soil is especially well-suited for the cultivation of wine
grapes, due to the limestone sub-soil. Since temperatures in the vineyard remain low both day
and night, the grapes contain consistently high acidity levels, with the climate also contributing
to a slow ripening process.
Theses grapes are harvested in mid October, and the unique combination of these qualities
produces a potential alcohol content level of 13%.

LOWER GALILEE: KFAR TAVOR
The vineyards on the slopes of the Tavor hillside produce Sauvignon Blanc, French Colombard,
Chardonnay, Cabernet Sauvignon and Merlot. The rich, red light soil on which these grapes are
grown has excellent drainage qualities; its airy character is thanks to the rivers that partly cover
this region. Being located on the southern slopes of the Tavor hillside provides the vines with the
optimum amount of sunshine. The grapes grown in this region are designated primarily for the
“Tishbi” series.
THE CARMEL MOUNTAINS: ZICHRON YA’AKOV
Towards the end of the 19th century, the Zichron Ya’akov region was commissioned by Baron
Edmund de Rothschild as an ideal location for the cultivation of high quality vineyards. The
Tishbi family has over ten decades of experience in the cultivation of wine grapes, their vineyards
covering a total of 62 acres (25 hectares), spreading from the slopes of the Carmel Mountains
to only a few kilometers from the Mediterranean coastline. The cool sea breezes alleviate the
summer heat and generate the morning mists, providing extra protection for the vines. The
diverse soil varies from red and black alluvial to white limestone. Each grape variety is grown
according to the conditions that are best-suited for its cultivation. For example, the grapes used in
the award-winning gold medal Chardonnay from the Jonathan Tishbi Special Reserve series are
grown solely on black soil, producing an especially high quality yield – around 700 kilograms to
0.1 hectares without irrigation. Cabernet Sauvignon was planted on the white limestone-based
soil, characterized by providing a limited yield in order to produce the highest quality grapes.

JUDEAN HILLS
With an elevation of 800-1000 meters, this white limestone soil produces Chardonnay, Viognier,
Gewürztraminer, Pinot Noir, Cabernet Franc, Cabernet Sauvignon and Merlot. These grapes
produce the most elegant wines of the Tishbi Winery. This region is characterized by its dry
climate and cool breezes. Summer evenings are cool, even before sunset with the open elevated
vineyards being located towards the west. In the early hours of the morning and the evening, the
temperature drops significantly, this enhancing the growth of grapes. The wines possess cassis
& cranberry aromas and long-lasting, subtle tannins, showing similarities in character to certain
Bordeaux wines (Saint Julienne, Pouillac). Harvesting takes place mid October, often leading
into mid November.
NEGEV DESERT: SDE BOKER
At an elevation of 500 meters, and in a location with a significant historical ambiance, our Sde
Boker vineyards are cultivated on desert soil and enjoy a unique, airy climate. The cultivation
of grapes in this region constitutes the realization of David Ben Gurion’s vision to develop the
wilderness of the Negev.

Since we do not use any animal products as part
of our wine-making process, our wines are now
officially fit for vegans and vegetarians!
Some winemakers make use of gelatin and / or
albumin during the wine-making process in order to
give the wine a more delicate taste and reduce tannins
(phenols) that give it its bitterness and astringency.
From the harvesting stage, we at the winery heed to
a slow, gentle and gradual process that enables us to
regulate and reduce the bitter flavors.
Due to the gentle extraction processes that prevent
needless squeezing, we are able to avoid unnecessary
use of additives

This series is a collection of young and aromatic
wines produced from grapes that were harvested
primarily in the Estate vineyards in the Zichron
Yaacov area. The wines are fitting for everyday
drinking with meals and will bring joy to any palate.
The white wines in the series, being semi-dry and
particularly light, are recommended as an aperitif,
along with cheese platters or with brunch.

As Jonathan Tishbi proudly notes: “This is my personal favorite variety. When I first established the winery, I could always rely on this Muscat as being a special wine. When the winery was in its youth, we used to produce preserves from these grapes during the harvest season, Muscat also being delicious table grapes”. With the tropical aroma classic to this variety and its wonderful flowery bouquet, this wine is a surprisingly good accompaniment to Far Eastern cuisine or spicy dishes, in general. in the Negev creates the exclusive, unique and interesting wines in this
series. The grapes receive the same care and devotion as the “Special
Reserve” wines. Our meticulous care is reflected in the gentle pressing
of the grapes (free run) and our special treatment of the red wines,
which are aged in oak barrels. The grapes chosen for the “Estate” wines
present a pleasant fruitiness on the palate, complimented by their aging
in barrels, which provides delicate oak accents. These wines are perfect

This wine exhibits elegant aromas of plum, raspberry, cassis and blackberries, together with the subtle flavors of mocha, vanilla and honey, resulting from aging in both American and French oak barrels. The finished texture is velvety, with a hint of sweetness. The wine is bottled unfiltered. It is good for immediate drinking and has a long aging potential.Winemaking: This wine was produced from the superior quality free-run juice of grapes which are hand-harvested, before undergoing a gentle pressing process. The wine was aged for 12 months in oak barrels and was bottled unfiltered.Alcohol by Volume: 13%.Growing region: The Galilee - The climate in the northern Galilee is characterized by its cold weather. The red soil in the Kfar Yuval vineyard interfaced, at one time, with the waters of the Hula Lake. The soil is exceptionally rich and airy and has excellent drainage qualities. Its airy quality results from the small rivers scattered throughout the area – similar to the region of “Haute-Medoc” in Bordeaux or that of “Côte-Rotie” in the Rhone Valley, France. The rich concentration of minerals characterizes the wines produced from grapes grown in the Galilee.The Judean Hills: Situated at an elevation of 800-1,100 meters above sea level, this region is particularly well-suited for the cultivation of this grape variety. Facing west with late afternoon winds, this open region allows for a late harvest between the middle towards the end of October. The grapes from the Judean Hills possess extremely concentrated and intense fruity flavors, providing the wine with its excellent
aging potential.

Vineyards: Sde Boker and Kfar Yuval. Varieties: 88% Merlot, 8.5% Cabernet Sauvignon, 3.5% Ruby Cabernet.Wine Notes: A refined and elegant wine with powerful colors. It shows prominent flavors of plums, liquorices, black tea, cassis, cherry, sweet vanilla and chocolate aromas all coming from its aging process in oak barrels. This wine is good for drinking now and possesses a long aging potential.Winemaking: This dry red wine is produced from the high quality juice from the first pressing of the grapes. During this process the grapes fermented for two weeks with their skins at a carefully controlled temperature in order to preserve the wide range of flavors nature offers. The wines from each vineyard were fermented in separate vats (as a single vineyard) and were aged in separate oak barrels, the blends being created during the aging process. Oak barrels are used for aging these wines for 12 months and the wines are unfiltered.

Tishbis› meticulous and professional supervision, Kibbutz
Sde Boker succeeded in cultivating and developing a
superior unique vineyard growing Merlot grapes. The
vineyard possesses a complex and sophisticated irrigation
system, assuring that the vines receive the exact amount
of water according to their specific needs. The micro-
climate in this region provides strong sunshine, daytime
breezes and cool nights. The loess soil, together with this
climate take their part in the creation of a unique terrain,
thanks to which, the vineyard cultivates small grapes,
with thick skins and intense flavors. This all contributes to
a complex wine, rich in tannins.

Variety: 100% ShirazVineyards: Zichron Ya’akovWine Notes: This rich and velvety wine carries a fine balance between the aromas of delicious strawberries, cherries, ripe plums, toffee, and mocha coffee beans. This wine was aged in French oak barrels for 12 months.Winemaking: Produced from the first free-run superior juice, the grapes are gently pressed, followed by a three-week gradual and supervised fermentation process. During this period, the grapes are left to ferment with their skins, after which the wine undergoes malolactic fermentation. The Shiraz was aged for 12 months in French oak barrels and was bottled unfiltered. Good for immediate drinking; continues to improve if stored throughout the coming years.

Vineyards: Gush Etzion Variety: 100% Pinot NoirWine Notes: Pinot Noir is a gentle and elegant variety that combines aromatic flavors with refinement. This wine carries substantial aromas of ripe berries, cherries, plums and mocha coffee beans, which have been aged in French oak barrels. A velvety texture provides a perfect balance between nose and palate. You can enjoy this wine by itself or as an accompaniment to an elegant meal.Winemaking: The hand-picked grapes were harvested in the early hours of the morning, towards the end of the harvest season. The initial fermentation took place in stainless steel vats, at a temperature of 22-28°C (78-82°F) for 15 days, continuing its second fermentation in 300-liter oak barrels for an additional four months.Alcohol by Volume: 13%Growing Region: These Pinot Noir grapes are grown in two vineyards in the Gush Etzion region, situated at an elevation of 1,000 meters above sea level. This region was found to be especially suited to the cultivation of this unique variety, due to its extremely cold and snowy winters.Its western-faced, open land with late afternoon winds, allows for a late harvest season, spanning from the middle until the end of October. One can find many wild herbs growing in the surrounding black soil, exuding the pleasant fragrances of mint and hyssop.

This wine is a perfect accompaniment to cheeses and any dairy cuisine, fish and sushi.Recommended serving temperature: chilled at 8-10°C (46-50°F).Winemaking: This wine is produced from the gently pressed, superior first free-run juice of the grapes. After undergoing a gradual and supervised fermentation, the wine was fermented for three weeks at a low temperature in stainless steel vats, followed by its stabilizing process and malolactic fermentation.Alcohol by Volume: 12%Growing Region: The Chardonnay grapes come from vines grown near Zichron Ya’akov. The vineyard location was chosen by the experts of Baron Rothschild over a century ago, which is exactly where the Tishbi vineyards are planted. The vineyards are located at the foot of the Caramel ridge, which allows for a constant breeze coming off the Mediterranean Sea to the west. The soil is a combination of red and black alluvial soil and limestone. The vineyard is located 50 meters above sea level.

Vineyards: Kfar Tavor Variety: 96% Sauvignon Blanc, 4% Viognier Wine Notes: The more mature vines are chosen which yield smaller quantities of grapes reflecting a concentrated fruit aroma. With herbaceous and freshly-cut grass aromas, this wine displays fruity and green pepper flavors. We suggest serving this wine with grilled fish dishes and Mediterranean seafood. It is recommended to serve this wine chilled at 8-10°C (46-50°F).Winemaking: This wine is produced from the gently pressed, superior first free-run juice of the grapes. After undergoing a gradual and supervised fermentation, the wine was fermented for three weeks at a low temperature in stainless steel vats followed by its stabilizing process and malolactic fermentation. Alcohol by Volume: 13%Growing Region: The Sauvignon Blanc grapes come from vines grown in Kfar Tavor Vineyard which are located at 400 meters above sea level, at the foot of the mountain overlooking Kibbutz Gazit. Three of the noblest varieties of wine grapes are used to produce
Cabernet Sauvignon, Merlot and Chardonnay. Only vineyards
yielding the highest quality of grapes are used for the production of
the Reserve series. The wines are produced from the high quality
juice derived from their first pressing, the superior grapes coming
mostly from single vineyards. The exceptionally high quality of the
raw material, together with the meticulous attention bestowed on
these wines, is what produces wines of such superiority.
The wines possess an intense, unique and impressive character,

Jonathan Tishbi Special Reserve 2007Dry red blend wine
Vineyards: Sde Boker and Judean Hills Varieties: 48.8% Merlot, 35.9% Cabernet Sauvignon, 6.8% Petit Verdot, 5.1% Cabernet Franc and 3.8% Shiraz.Wine Notes: The flagship wine of the Tishbi family made as a special blend for celebrating 25th years of wine making. Rich, complex and unique. Improve over many years in good conditions. We suggest serving this wine with beef, casseroles, fine cheese, and good bread.Winemaking: Grapes were harvested in early hours of the morning at the special areas of Sde Boker and Judean Hills. The Fermentation of the wine continued for 3 weeks and it was aged and blended for 24 months in oak barrels. The wine will age for 10 years in good storage condition.This special wine was made from the finest grapes of harvest 2007. The harvest, the long fermentation, the aging all was specially created to make an outstanding wine.Alcohol by Volume: 15%

BrutSparkling dry white wine
Varietal: 100% French Colombard Growing Region: Zichron Ya’akov Wine Notes: This sparkling wine is both gentle and elegant. The aromas and flavors are of peach and sunflowers.
Winemaking: This Brut was produced according to the
traditional methods used in the Champagne region of
France. After fermentation and bottling, a second
alcoholic fermentation occurs in the bottle. This second
fermentation process is induced by adding several grams
of yeast and sugar. One day after the beginning of the
fermentation process, we seal the bottles with a crown
cap. After 5 months of lying in a cooled environment, the
wine produces natural carbonation, due to this special
fermentation process.
After ageing, the bottle is manipulated, either manually or
mechanically, in a process called remuage, so that the lees
settle in the neck of the bottle. After chilling the bottles, the
neck is frozen, and the cap is removed. The pressure in the
bottle forces out the ice containing the lees, and the bottle
is then quickly corked to maintain the carbon dioxide.Alcohol by Volume: 12%

Barbera Zinfandel 2006Red dessert wine
A special edition of red dessert wine fortified with brandy
produced from Red Muscat, produced to celebrate 66
successful harvests of Jonathan Tishbi.
Vineyard: Kfar Yuval Varieties: 50% Barbera, 50% ZinfandelWine Notes: A red sweet wine fortified with brandy, a perfect accompaniment to any aperitif, digestif, or in the preparation of any gourmet dishes. The wine displays aromas of cassis, blackcurrant, liquorices, caramel and dark chocolate. One can sense flavors of dried plums, quince, forest berries, ripe cherries and roasted nuts. Whilst possessing strong fragrances and color, this wine is also soft, delicate and herbaceous.
Winemaking: Fortified with brandy made from Red
Muscat, this wine was distilled using our alembic distiller
from Cognac, France before undergoing its aging process
in sun-aged oak barrels for a period of 18 months. This
aging process imparts the wine with its distinct character
and unique flavors.Alcohol by Volume: 18%Growing Region: Kfar Yuval. The climate in the northern
Galilee is characterized by its cold weather. The red soil
in the Kfar Yuval vineyard, at one time, interfaced with the
waters of the Hula Lake. The soil is exceptionally rich and
airy, and has excellent drainage qualities. Its airy quality
results from the small rivers scattered throughout the area
– similar to the region of “Haute-Medoc” in Bordeaux
or that of “Côte-Rotie” in the Rhone Valley, France. The
abundant intensity of minerals characterizes the wines
produced from grapes grown in Kfar Yuval.

Red Muscat 2007Red dessert wine – 500 ml.
Vineyards: Zichron Ya’akovVariety: Muscat Hamburg with added grape alcohol.
Wine Notes: A red wine, carefully chosen to produce this
fortified dessert wine. Sweet, but delicate, this wine is
dense in consistency, although very light. With a velvety
texture, it possesses a rich flavor and displays fruity
fragrances.
We highly recommend this wine as an accompaniment
to goose liver pâté or with a wide selection of desserts.
Recommended serving temperature is 8-10°C (46-50°F).Alcohol by Volume: 17%
Growing region: The vineyards in Zichron Ya’akov were
specially chosen by Baron de Rothschild’s experts 100 years
ago as the location for the Tishbi family’s vineyard estate.
The vineyards are situated on the slopes of the Carmel
hills, a region enjoying the westerly breezes coming off the
Mediterranean Sea. The soil is a combination of red and
black alluvium, together with white limestone. Vineyard
elevation reaches 50 meters above sea level.
