The Perfect Serve by the glass When fruit is exposed to oxygen, it oxidises (or goes off).

When bottles of wine are left open (ie wines by the glass) the fruit

oxides, and then goes off.

Vinegar is wine that has been deliberately oxidised (to the maximum level).

Customers deserve every wine by the glass served to be in perfect condition, and

not with varying degrees of oxidisation. Don’t they?

This simple, low cost, Fuller’s four step process tackles this head on.

The price is right...• Avoid price ascending – we don't do it with food menus, so why do it with wine?• List your wines by style – starting with your lighter, more delicate options.

Go with the flow!• Your list should flow in the order that customers would generally consume:

A good Balance varieties, regions and wine styles.

Avoid plastic! – plastic sleeves or laminates are a thing of the past.

Accuracy – a professional looking list has no typos or errors.

Keep it simple Avoid wine speak words like: tannins or acidity.

Avoid pairs of the same brand (where possible) as it implies lazy buying.

Easy to read and navigate• Think about font style and size.

• Differentiate region & country – highlight wine in bold and the COUNTRY IN CAPITALS.

Modern English sparkling wine is really coming of age. Widely accepted in quality terms, with wine styles that mirror Champagne, even down to use of the same grapes and winemaking methods as used in the Champagne region, as well as styles that display their own, regional personality. 12 ETHICAL WINE

Ethical Wine Many would argue that wine is the original ‘craft’ drink. Crafted by artisans worldwide, who care about provenance, flavour and quality. Certainly we do! But we thought it was about time we dug a bit deeper into what we have ended up calling ‘ethical wine’. We certainly enjoyed selecting these wines and hope you enjoy them too.

OrganicAlthough regulations vary slightly around the world, there is a generally agreed set of main criteria for a wine to be ‘certified’ as Organic. Namely, avoiding the use of synthetic herbicides, fungicides or fertilisers. Some producers practice organic for their wine, but either haven’t gone through the full certification period or simply chose not to. It carries greater risk for the grower, than non-organic wine.

The X factor for Biodynamic wines is following a more philosophical approach to vineyard management and winemaking (taking account of lunar cycles) than organic wine, as well as the infamous planting of manure-filled cow horns under the vines - for slow burn, natural fertiliser.

NaturalUnlike Organic or Biodynamic wines, there are no universally agreed criteria for ‘natural’ wines. And they are not without controversy. The key here though is (a) minimal intervention winemaking – namely, as little messing about with the wine in the winery as possible and (b) reduced use of sulphur. In either solid (powder) or gas form, sulphur is a widely-used preservative for food and wine.

Vegan WinesThis at least is easy to describe, namely wines that are made without any fish or animal extracts. While filters are used widely in winemaking, to remove physical particles, such as yeast cells, naturally occurring proteins can only be removed by fining (a chemical process). And this is where an extract from fish (Isinglass – a form of collagen) is often used.

Winemakers Comment :: The Riesling is made with the gentlest of handling preserving the delicate fruit flavours. Harvested in the cool of the night, the fruit is gently destemmed, crushed and pressed in an air bag press. The juice is cold settled and using only the clear juice is fermented slowly at cool temperatures until dry. The wine is then carefully stabilised and filtered before bottling, ensuring that all the fruit flavours are captured.

Serving suggestion :: This crisp Riesling will go well with fresh natural oysters andgrilled white fish.

Awards :: Not entered into any wine shows to date.
