Welcome to the Seventh Serving ofthe Wirral Food and Drink Festival.We're delighted to now be in our seventh year of holding the Festival in the picturesquesetting of Claremont Farm, Spital. The Festival has grown year after year with yourcontinued support and this year we are happy to welcome over 30 new exhibitorsensuring the Festival is fresh and interesting each year.We have worked really hard to ensure the event offers something for everyone, not just for Foodies andexpanded the children's entertainment to ensure that this continues to be the perfect bank holiday event for all the family.

This year we've brought something brand new to the Festival, the Good Life Marquee where you'll see a series of demonstrations, hands on workshops and agardeners question time over the two days.

Our committee and band of volunteers work tirelessly throughout the year toensure this is the best Wirral Food experience it can be. We hope you have afantastic time and thank you once again for your continued support.

STEP 1 Smash the cookies until crumbly and place in a non stick pan with 50g of butter, melt the butter into the cookies.

STEP 2 Once cookies have moistened place in a none stick baking tin, place in the fridge to cool.

STEP 3 While the base sets in the fridge, melt all the chocolate in a Bane Marie and whip the soft cheese until smooth, whip the cream until it holds firmly.

STEP 4 Once the chocolate is melted stand aside until cool. Once cool add the soft cheese into the chocolate and mix until combined. Once combined, do the same with the cream.

STEP 5 Then add the shot of Irish cream liquor and mix. Once mixed get the base out the fridge and put mixture in the cake tin. Place in the fridge until set, best over night or minimum of 4 hours.Serve with: single cream or mixed summer fruit Cooley.

Focus on food – Top Tips!• Plunge vegetables in ice water after blanching (boiling

• Don't overcrowd the pan when you're sautéing — it'll make your food steam instead.

• When grinding your own beef for burgers, grind in some bacon.

• Use good oil when cooking. Smell and taste it: If it doesn't taste good

alone, it won't taste good in your food!

• CELERY: To keep celery fresh for a long time, wrap it

in aluminium foil and place in the refrigerator.

• GARLIC: Garlic skin comes off easily if the garlic cloves are slightly

warmed before peeling.

• FRUITS: To ripen fruits, wrap them in newspaper and put in a warm place

Wirral micro-brewery wins top award at Liverpool Camra Beer Festival 2012

Birkenhead-based Peerless Brewing Company’s cask-conditioned lager Storr was named best beer in a challenge for the region’s nine real ale brewers at the Camra (Campaign for Real Ale) Liverpool Beer Festival.With beers judged by 70 laymen, Storr took the title well ahead of the closest runner-ups by several points.Storr is a pale, “hoppy” beer and its name derives from the Old Norse word for great or strong. Storr’s popularity with ale drinkers has grown rapidly since the Pool Street brewery opened in 2009.

FISH FINGER SANDWICHSTEP 1First make your bread crumbs. Cut the chorizo into slices then eachslice in half. Dry fry them in a pan and allow to cool a little. Put your bread in a processor along with the chorizo and whizzthem into crumbs. The chorizo will excrete a lovely orange taintedoil into the pan, stir the crumbs into this till combined.

STEP 2Wash and pat dry the fish in some kitchen roll then cut them intfingers. Dust each one in flour then dip in the egg. Now coat thefish finger in the bread crumbs.

STEP 3Place them on a baking sheet and cook for 20 minutes at 180c

STEP 4Serve the fish fingers between 2 slices of toasted bread withlettuce and tartar sauce, or of course ketchup.

STEP 5A lovely side dish for this are my simple mushy peas. Boil 250g offrozen Peas in hot water. Drain the water and whizz the peas in aprocessor with 1 tbsp of sour cream, 1 tsp of mint sauce and a pinchof salt and pepper. Don't over process them, you want a littletexture and not baby food.

As a child I loved fish finger sandwiches and myenthusiasm has not wained now that I ama grown up, I just want a slightly moresophisticated version.

The Can Cook Studio is a Professional Cookery School based in Liverpool. At Can Cook, we are passionate about food. Our Courses focus on World Cuisines, Baking, Fish Courses and even an 'Entertaining & Dinner Parties' Course. Another exciting part of what we do are our Team Building sessions for companies. These involve chef demonstrations and competitions. Everything we do is led by Professional Chefs.
