ABOUT US In 1994, a young couple opened the doors to a tiny boutique coffee roasting business on Sydney’s

North Shore with a passion for great coffee and a desire to share their freshly-roasted premium single-origin coffees with like minded coffee lovers.

To ensure this, all new café owners and their baristas are strongly encouraged to attend the Witham’s comprehensive barista training course. One initial course for up to 6 people is offered free of charge.

BECOMING A WHOLESALE CUSTOMER Step 1: You have already taken the first step if you are reading this catalogue! We would then like to

obtain some general information about your business, the location and your requirements so that we can suggest suitable options/packages for you. For example: we do offer exclusivity within close proximity to an existing customers; if you own your own equipment that may affect our pricing structure etc.

Step 2: Arrange a meeting. We love new clients visiting our Roastery if convenient. We will give you

a tour of the roasting facility which is a good introduction to our company, our team and our range of products and services. Alternatively a representative will meet with you where convenient. Of course, if you are located too far away the meeting can be carried out over the phone and our Product Catalogue and samples sent to you.

Step 3: At the meeting we will discuss your detailed requirements, inform you of our product range

and all the services we can offer you, suggest equipment options if necessary, perhaps taste some coffees to determine a preferred blend or single-origin, discuss start-up packages and pricing.

Step 4: If all is well and we move to the next step of becoming your supplier, we will arrange any

equipment installation if required, set you up in our accounts system, add you to our weekly call list, and arrange for your staff barista training session.

• We endeavor to deliver your order the same day if the order is received before 10 am. Our delivery drivers leave the Roastery at 10.30 am each day, so orders received after 10 am will not make the delivery run for that day.

with no surcharge added. Most customers choose to have their details on file with us and we charge on invoicing.

We realize that for some organizations this is not manageable and we will offer a Strictly 7 Day

trading term if necessary. Please ask us for a Credit Application if you would like to arrange this.

HACCP ACCREDITED Our roasting facility is fully HACCP accredited. This is a comprehensive system of risk management

applied to the roasting and packing of coffee, and distribution of coffee and related items to the food service sector.

It covers all aspects of the business which impact on the safety and wholesomeness of the products

manufactured including purchasing raw materials, storage and the manufacturing process itself. The purpose of the program is to identify food safety risks and subsequently control these hazards through an integrated management system of monitoring, recording and taking corrective steps as required.

TEA Witham’s has partnered with Origin Tea, a family-owned Australian tea company who source quality

teas straight from their own plantations in Sri Lanka. Origin Tea is able to directly deliver some of the world’s finest, freshest and purest teas without

dealing with multiple middle-men. They believe it is important for people to know exactly what it is they are drinking and where it comes from and have developed Plantation2U, an initiative that means their tea leaves come directly from the plantation to their customer, every time. Origin Tea is also the only tea company in Australia that can offer full traceability in every cup.

Origin Tea tries to rise above the everyday standards of tea production and have developed a

program called T4Change, which is like an in-house version of Fairtrade. It is a program that ensures that those working on the plantations are well and truly looked after. 2. FINANCE MACHINE

We can advise on the best machine to suit your business and arrange finance for you through

Silverchef who are a dedicated hospitality equipment finance company. Through Silverchef you can RENT-TRY-BUY for as little as $40/week with the option to

3. FREE-ON-LOAN MACHINE

COFFEE MACHINE SERVICING & TECHNICAL SUPPORT It is important to maintain your espresso machine and grinder on a daily basis to ensure its

optimum working condition. In the event of a technical problem with your espresso machine or grinder, phone our office on

9482 1122. For after-hours please call the office number and the answering machine message will include an

after-hours mobile number to contact. It may be possible to assist you over the phone to resolve the issue, however if it proves to be a

technical problem we will arrange a technician to come to your premises as soon as possible. *All servicing costs and machine parts are for the customer’s account. Witham’s Coffee’s service fee is: $60 call-out + $60 per hour (or part thereof). Not all technical

problems can be fixed by our staff and we may need to engage our third-party technical support company. (Weekend and Public Holidays will incur extra fee)

BARISTA TRAINING

All new cafe clients are eligible for one FREE comprehensive barista training course

for their staff in our professional training room.

We encourage all of our wholesale customers to invest in staff barista training.

Having well-trained baristas is absolutely essential to the success of your cafe and with our VIP COFFEE CREDIT PROGRAM you will be subsidised for 80% of your

training costs.

Becoming a wholesale partner with Witham’s Coffee means you are already passionate about quality

coffee. We are dedicated to ensuring your baristas are knowledgeable and skilled in their craft so that customers can be assured of great coffee when they see the Witham’s Coffee brand.

The characteristics of a good barista include the following:

• Takes pride to ensure that the taste and look of each coffee is exceptional. • Product knowledge and an appreciation of quality coffee. • Consistent quality control. • Ability to work at speed and under pressure. • An attitude of constant learning. • Friendly, team player with attention to customer service.

We have been professionally training baristas for two decades and we continue to work closely with our cafe clients to ensure they are producing consistently great coffee.

TRAINING OPTIONS

1. WITHAM’S IN-HOUSE BARISTA TRAINING One FREE barista course offered to all new cafe customers. Facilitated within our dedicated barista training room at our Roastery in Hornsby. Two comprehensive hands-on courses are available: Barista Fundamentals & Barista

Professional. Maximum of four students at a time to ensure a one-on-one learning opportunity. Unique opportunity to tour our Roastery and for your staff to get a sound appreciation of

where their coffee is coming from. You will find that the more your barista knows about where your coffee comes from, how it is

roasted and despatched the greater the passion they will have for the product. This always results in greater coffee sales as they feel a connection with the coffee and tend to talk about it with enthusiasm to your customers.

Cost per student: $190 (GST incl). Cost is subsidised via our VIP COFFEE CREDIT PROGRAM.

2. ON-SITE TRAINING If you would prefer an on-site training session within your own establishment this can be

arranged. We offer all new customers one FREE on-site session with our professional trainer, for you

and your staff. Ongoing training sessions are charged at $275 for approx 3 hour session. Travel time will be charged for interstate and regional NSW areas at $65/hour. Training on Sundays or Public Holidays will be available by special request and the price

negotiated. Tailored packages may be arranged for ongoing staff training within your own establishment. Of course we are always available to offer simple tips and advice at no charge!

VIP COFFEE CREDIT PROGRAM To ease the financial expense of staff training we have developed a Coffee Credit Program where

80% of your training costs will be subsidised when the course is undertaken in-house at our Training Room.

HOW IT WORKS Cost per student to undertake training course, paid upfront: $190 We will credit your account 80% of this cost to be applied against coffee orders only: $152 Therefore your out-of-pocket expenses are only: $38
