in conjunction with Gourmet Traveller WINE magazine,

we introduce you to some of Australia’s most innovative

winemaking families – small producers who are having

great success with exciting new wines.

You will also meet the panel of experts who have

selected the fine local drops you will enjoy during your

journey. Not all the wines we showcase are available on

your flight; instead, your flight attendant will

offer a carefully chosen list that marries well

with the delicious dishes crafted by world-

The vagaries of variety are well known to the Qantas Wine Panel.

The unique traits of each grape type influence many of their

decisions as winemakers, wine show judges and wine selectors for

Qantas’ inflight service. Questions they ponder include: what

varieties respond best to a particular site? What needs to be done to

bring out a variety’s best features? Should it sing solo or would the

wine work better as a blend? When it comes to their Qantas duties,

another question must be posed: what varieties will consumers find

most satisfying? Wine is not immune to fashion and the Panel is

finely tuned to both industry trends and what Qantas customers

expect to experience inflight.

“We aim to have a strong

selection of varieties and

blends that we know custom-

ers enjoy,” says biodynamic

winemaker Vanya Cullen,

“such as shiraz, cabernet sau-

vignon and blends of the two,

as well as sauvignon blanc

and semillon blends.”

That means putting aside

personal preferences. “Ries-

ling and semillon are varieties

I love to drink,” says Stephen

Pannell of the SC Pannell

label. “But when it comes to

putting them on a plane, if either were to go

up against sauvignon blanc I’m pretty sure

most travellers would go for the savvy.”

It also means the Panel are introducing

Qantas customers to exceptional examples

of emerging varieties in Australia.

When the passionate wine selectors are

asked to nominate the variety they’d plant

in their desert-island vineyard, Pannell says,

“It’s not fair to just pick one variety because

it would depend on where I was living. If I lived in McLaren Vale, it

would have to be grenache.” Of course, he’s speaking from his

grenache-loving home in that very Vale. “But if it could be any-

where, it’d be somewhere I could make great nebbiolo. I never tire

of it. It is usually the first wine I reach for when I have been on

holidays drinking beer.”

As purveyor of the country’s best pinot, Tom Carson’s answer is

unsurprising. “If pushed, I’d go for pinot noir,” he says. “Achieving

greatness in a pinot noir is my lifelong challenge.” Cullen’s answer is

also no shock. As custodian of a pioneering Margaret River vine-

yard, she nominates cabernet sauvignon.

Finding small, quality-obsessed producers who explore a vari-

ety’s full potential is a real focus for the Panel and makes the Qantas

Wine Program the world’s most diverse inflight wine selection.

WINE SERVICE

As you sit there enjoying a glass of one of Australia’s best wines,

take a moment to think about how that particular product

came to join you onboard.

After making it through the rigorous scrutiny of Qantas’ regu-

lar tasting panel sessions, a selected wine joins about 350 different

offerings that the airline has available at any one time. A determina-

tion to source limited-allocation wines from the country’s best pro-

ducers means Qantas can offer a diverse and eclectic line-up of wines

that is without peer anywhere in the world.

Qantas strives to ensure that even the most frequent of flyers is

presented with exciting new wines to enjoy each time they fly. The

numbers involved per annum are staggering: 750,000 bottles of

table wine for First and Business; 150,000 bottles of Champagne;

25,000 bottles of stickies and fortifieds.

Another key objective of the Qantas Wine Program is to

provide customers with a spread of choices across varieties to ensure

a satisfying accompaniment to the food menu. In First there is a

choice of three red wines, generally a cabernet sauvignon-based

wine, a shiraz and a varietal option like pinot noir. The selection of

whites may include a classic chardonnay, a zesty sauvignon blanc

and an iconic Australian riesling or semillon. International Business

offers a second option, adding a counterpoint to shiraz and chardon-

nay, which have proved to be the star players in the Business cabin.

If you’re hopping across to New Zealand, you might even notice

that space has been given to notable wines from our trans-Tasman

neighbours. Now some might say that’s taking diversity a bit too far,

but even the healthiest of international rivalries is overpowered

by the determination of everyone involved in the Qantas Wine

Program to deliver the best inflight wine experience possible. v

When it comes to the labels that make your Qantas First and Business wine lists,

it’s survival of the tastiest.

Natural Selection

Experts take flight Keep a close eye on your flight attendant’s

lapels and your vigilance may be rewarded with a greatly enhanced food and wine experience. If you spot a bunch of shiny silver grapes, it means

you’re in the capable hands of a graduate from the Qantas Sommeliers in the Sky

program – an innovative and exhaustive wine education course that ensures Qantas flies with some of the best palates in the sky. Developed in association with Wine Australia’s online education program, Australia: World Class, the Sommeliers in the Sky training ensures the flight attendant’s wine knowledge reaches a level comparable to that of top restaurant sommeliers. Only graduates of the Advanced level of the course wear the coveted silver badge, so if you see one you can be sure that you’ll be getting the best, most knowledgable, wine service anywhere.

Perfect Match

Some chefs can be so singularly focused on the action in the

kitchen that they can’t see much beyond the stove, but Neil Perry

has a more holistic view of what makes a great dining experience.

That’s especially true when it comes to wine. Perry’s restaurants

have always had an enviable reputation for the quality of their

wine service, and his Sydney restaurant Rockpool was recently

recognised as having the best wine list in New South Wales at the

prestigous Fine Wine Partners/Gourmet Traveller WINE Australia’s

Wine List of the Year Awards.

Perry is particularly focused on the synergy between wine and

food – not just in his restaurants but also with the menus he designs

for inflight dining. “Elegant, restrained wines go well with simple

and sophisticated food and robust styles go with gutsy food,” he says.

“The Qantas Wine Panel does a wonderful job in finding a diverse

range of wines that give us great food-and-wine matching options.”

He also understands the importance of a good sommelier to the

fine dining experience. “You need people who have superior product

knowledge and passion to bring a wine list to life. Having a strong

wine list without a sommelier to help navigate it is like getting the

best possible produce and not having a chef to do anything with it.”

That’s why Qantas provides sommelier-level wine training to key

cabin crew – to ensure customers get sound advice and quality infor-

mation about the wines and food being served inflight.

Perry is an advocate of tapping into this knowledge, whether in a

restaurant or at 30,000 feet.

“Give your sommelier an indication of what styles you normally

enjoy – if you’re in a restaurant also add what you’re prepared to

spend – then put yourself in their capable hands. A rewarding food-

and-wine experience is always the result. To me it is a shame to have

to eat without a glass of good wine.” v

Worth the Weight

It’s only a minor change – in fact you probably won’t even notice it

– but the consequences are seriously significant. Each year, Qantas

flies a staggering 5.5 million 187ml wine bottles for service in Econ-

omy. As of earlier this year, each and every one of them is now being

made from recyclable PET plastic instead of glass. This equates to a

weight reduction of 120g per bottle, which may not sound like a lot

but as a result Qantas have reduced the overall weight they carry

each year by 660,000kg. Lighter flights mean a lot less fuel is burned,

and a better outcome for the environment.

Another exciting development has been the explosion of diver-

sity in the wines available in the 187ml format. Qantas has worked

closely with key players in the wine industry to showcase an

Economy wine providing unmatched for quality, versatility and

variety anywhere in the world.

A quick scan of the wines on offer reveals some of Australia’s

most sought-after labels shrunk down to size. McLaren Vale icon

Wirra Wirra supplies its excellent Scrubby Rise wines, a chardonnay

and a rich red blend, while their near neighbours at Coriole have

bottled their Redstone shiraz exclusively for Qantas in the new for-

mat. One of Australia’s most popular whites, the bistro classic La

Biondina from Primo Estate, has found even more fans inflight, and

St Hallett has discovered their Poacher’s Blend white is just as well

received on the plane as it is at parties. The trend towards cooler

climate reds isn’t restricted to fine-dining restaurants, with Qantas

customers enjoying the finesse and elegance of Mount Langi Ghiran

Billi Billi Shiraz and Barwang Vineyard’s outstanding cabernet

merlot from its elevated site in the cherry-farm-dotted highlands

around Young, New South Wales.

Good things clearly can come in small packages. v

ClonakillaTim Kirk must be thankful for his

father’s foresight. In 1972, John

Kirk decided to plant shiraz in rather marginal conditions around

Murrumbateman, near Canberra. Then, in the mid-80s, he planted

viognier – a variety almost unheard of in Australia at the time, and

that had almost died out back in its homeland, the Rhône Valley.

In 1991, while visiting the Rhône, son Tim had an epiphany on

the road to Côte Rôtie: “There are moments in a winemaker’s life

when you become transfixed by the beauty of what’s in the glass

before you,” he says, as he recalls tasting from barrel the legendary

single vineyard wines of Guigal. “They had extraordinary complex-

ity of perfume, wonderful silkiness and inherent sensuality. They

were quite moving. I thought at the time that if I were ever able to

produce a wine from our humble vineyard which got close to that

level of complexity, refinement and beauty, I would be very happy.”

His dad’s inspired varietal choice meant Kirk had the materials

to give it a good try. The result is Clonakilla Shiraz Viognier, Can-

berra District, the pinnacle of the style in this country and a wine

James Halliday described as “an icon, one of Australia’s best”.

Each vintage, Kirk feels he’s closer to perfecting shiraz-viognier

co-fermentation – a process that enriches the aroma and texture of

shiraz. Winemaking techniques that work well for him include let-

ting ferments run their natural course and leaving them on skins for

a week or two upon completion. Ultimately, he says the key is in the

characteristics shiraz displays in cool-climate conditions.

“Personally, I think the floral, musky dimension that viognier

adds is better suited to the spicier, more savoury aromatic profiles

found in cooler-climate shiraz,” says Kirk. Anyone who has ever

tasted the fruits of his labour would no doubt agree.

WoodlandsWhen David and Heather Watson planted the Woodlands vineyard

at Wilyabrup in 1973, they were amongst the first wine growers to

see the potential in Western Australia’s Margaret River region.

The Watsons were in good company, with the family properties

of Qantas Wine Panel members Stephen Pannell (Moss Wood, now

owned by the Mugfords) and Vanya Cullen (Cullen) close by. These

pioneering viticulturists were inspired by the wines of Bordeaux,

and were excited by studies conducted by agronomist Dr John

Gladstones that indicated Margaret River could potentially do great

things with cabernet sauvignon.

It soon became evident that this was pretty special dirt. In 1981,

David’s Andrew Cabernet Sauvignon took the title of Best Red Wine

at the National Wine Show, becoming the first red from Margaret

River to win a national trophy. But by the early 1990s, the Watsons

shelved winemaking so they could focus on raising their children.

The wine bug is infectious, however; in 2002 their son Stuart

grabbed the winemaking reins and injected new energy and ideas.

“We’re using more sustainable practices in the vineyard,” he says,

“such as hand weeding, no under-vine herbicides, and composting

with our own marc. It is such a beautiful place I would like to think

we can keep it that way for future generations.”

Watson is passionate about his vineyard: “I like people to get to

know the character of our site and the mindset of the people who

made the wine. Woodlands cab sav has a slight minty taste, soft tan-

nins and a bit of the spice cabernet can get in Wilyabrup.”

With Woodlands wines going from strength to strength, it seems

the Watson’s early vision is in very good hands.

Lake BreezeAs Greg Follett steps out the door each morning, he is reminded

that his is no ordinary job – surveying the vineyard, he sees dirt first

worked by his great grandfather and now managed by his brothers.

“We were all born and bred here,” says Follett of the Langhorne

Creek property that is home to his family’s Lake Breeze label. “We

know it and love it, and we understand that it’s here thanks to the

hard work of those who came before us. We hope our kids will one

day want to carry on the tradition.”

The Folletts have been growing grapes in South Australia’s Lang-

horne Creek region since the 1880s, but a full century passed before

they began making wines under their own label. Shortly after Follett

completed his winemaking studies, the family prepared to turn

their quality fruit into something even more special.

Follett is particularly passionate about cabernet sauvignon and

the distinctive way it expresses itself in Langhorne Creek. “Climati-

cally, we’re a little cooler than nearby McLaren Vale, and a touch

warmer on average than Coonawarra,” he says. “That allows us to

get lovely ripe, sweet fruit characters while still retaining varietal

traits and the firm structure that makes cabernet so attractive.”

This is how he describes the unique features of Langhorne Creek

cabernet sauvignon: “There is a minty, eucalypt character and a

little choc-mint note too, that I reckon is pretty typical in cabernet

from around here.”

Follett feels that cabernet’s counterparts in its traditional Bor-

deaux home, such as malbec and petit verdot, have great potential

in the region. More surprisingly, he also feels there’s a place for a

rather maligned white. “It may not be fashionable,” he says, “but we

can produce pretty good chardonnay here in cooler years.”

Convincing the world of that may take a little time, however.

Perhaps that’s a job for his kids.

PizziniThe Pizzini family learned firsthand that trailblazing isn’t without

its challenges. Twenty years ago they decided to try planting classic

Italian varieties nebbiolo and sangiovese, which were at that stage

virtually non-existent in Australia.

From a miniscule 12 buds of nebbiolo, the Pizzinis undertook a

painstaking grafting program that eventually produced 6000 vines

over a five-year period and led to their first planting of five acres.

“After planting the vineyard, the next challenge was how to

manage these varieties in order to produce quality wine,” says Joel

Pizzini, who shares winemaking duties with his father Fred. “For the

first five years our nebbiolo vineyard seemed to be suffering from

adolescence – excessive growth patterns and bi-annual cropping

meant we got a huge crop one year and almost nothing the next.”

Much experimentation was needed to perfect both the nebbiolo

and the hyper-vigorous sangiovese. Finally, results began to match

expectations and the Pizzinis were ready to take their groundbreaking

wines to market – even if the market wasn’t quite ready for them.

“Our first commercial releases were the 1997 sangiovese and the

1994 nebbiolo,” recalls Pizzini. “Both moved very slowly as little was

known about these varieties in Australia at the time.”

But the Pizzinis knew they were onto something special and their

persistence has paid off – their wines, now including such varieties

as pinot grigio and arneis, are very highly regarded in Australia.

“We were confident. If you set out to showcase the varieties’ finest

qualities you can’t go wrong.”

Pizzini has strong opinions on how those qualities should best

be experienced. “With our Italian heritage it is unthinkable that

you would ever have a beautiful meal without a glass of wine.

2006 Cullen Chardonnay – Margaret River, WACullen produces some of australia’s most serious wines. aromas of peach, fig and pink grapefruit leap from the glass, with a hint of roast almond, lime marmalade and wild ferment funk. a medium-weight wine with a flavour that flows gracefully to an impressive finish.

2006 Crawford River Riesling – Henty, Vican absolute masterpiece. The bouquet is a complex amalgam of mineral, almost earthy, characters with lots of floral aromatics, subtle lemon zest and pink grapefruit. The mouth fills with the same flavours, restrained by a fine filament of mineral acidity.

2006 Coldstream Hills Reserve Chardonnay – Yarra Valley, Vicaromas of ripe nectarine, melon and guava meld with nougat, grilled nuts and crème caramel characters. The palate is rich and refined, its intense peaches-and-cream complexity tamed by a touch of toasty oak and a thread of zesty acidity on the finish.

2007 Brokenwood Semillon – Hunter Valley, NSWBrokenwood is among australia’s most highly regarded wineries, and its semillon shines. sourced from ancient vines, after a year in the bottle this has opened out with aromas of straw, thyme and lemon pith. a taut, citrus palate leads to a satisfying conclusion.

2006 Brokenwood Indigo Vineyard Chardonnay – Beechworth, NSWan intensely flavoured chardonnay with ripe peach, fig, toffee, nut and marzipan creating a multi-layered bouquet. The palate is equally vigorous and fulsome, topped off with a burst of lemon-fresh acidity.

2007 Ferngove Cossack Riesling – Frankland River, WAFrankland river is home to some wondrous rieslings; Ferngrove’s Cossack is one. It boasts fresh lime and lemon aromas, with a lift of passionfruit and pink-lady apple. The palate is tight and lean with intense citrus flavours, and the finish is acid-bright and vigorous.

2006 Cullen Cullen Vineyard Sauvignon Blanc Semillon – Margaret River, WAThis multi-layered gem is sourced from the original Cullen Vineyard, now run biodynamically, with the sauvignon component undergoing partial barrel fermentation to subdue its more herbal notes and add depth, length and complexity.

2006 Curly Flat Chardonnay – Macedon Ranges, VicGenerous flavours of pink grapefruit, white nectarine and custard apple are overlaid with nougat, toast and preserved lemon. The palate is rich and complex but in no way overblown – any excess is held back by a tight, lemon acidity and a fine layer of spicy oak.

2007 Edwards Wines Semillon Sauvignon Blanc – Margaret River, WAsemillon provides fresh aromas of just-squeezed lime and lemon zest with hints of gooseberry and hay. On the palate it gives the wine depth, length and a mineral acidity, while sauvignon fills the frame with lovely passionfruit and nectarine.
