York employs modern viticulture practices and management techniques for growing, pruning and spraying to ensure that the fruit harvested is of the best quality. The combination of modern Australian and South African winemaking practises combined with old-world French influences is an open-minded approach. VITICULTURE + VINIFICATION This Block of Zinfandel vines rests on black volcanic soil with medium clay content and the vines benefit from overhead and Y structure trellissing. Grapes were handpicked once they achieved 20-20.8 Brix, and directly pressed after de- stemming with no skin contact. After clarification with settling enzymes the juice was fermented at cool temperatures of less than 12.5º to allow the yeast to produce esters and fruity characters Post ferment the wine was kept on fine lees in steel tanks. Fining was actioned using Bentonite for protein stability with sterile filtration at bottling. TASTING NOTES A vibrant and refreshing off-dry wine that’s the perfect summer drink. Aromas of intense perfumed characters of cherries and raspberries that continue onto the palate with candy and confectionary flavours and a long crisp finish.
