The theme of our 2016 Year 10 Retreat was ‘Mind, Body and Spirit’. This fantastic day saw our boys and girls split into group sessions to delve deeper and explore and discuss their own role, responsibility and personal image within our ever-changing, contemporary society.

Our Year 10 girls enjoyed a workshop with a talented sketch artist, who delivered instructions on drawing in an empowering self-image session, with some amazing ‘blind drawing’ sketches produced! This was followed by a relaxing yoga and meditation session, which encouraged both a healthy body and mind.

The boy’s session was split into two halves, with the first session looking into what is means to be a man in today’s society, which was combined with some outdoor activities. In the final session, the boys were very fortunate to be hosted by Power Community’s Russell Ebert, SA Hall of Famer and one of the greatest Australian Rules Football players of all time, who presented to the boys an ‘Empowering Youth Program’, focusing on their role in society as young gentlemen.

YEAR 7 READY @ GLEESON COLLEGE

This term provided the exciting news of the offering of Year 7 at Gleeson College in 2018. This term we have held two very well attended information sessions at St Francis Xavier’s and Saint David’s Schools. I take this opportunity to promote a session here at Gleeson College on Tuesday October 25 at 7pm that will outline just what Year 7 will look like in 2018 at our school.

It is fair to say, since the announcement of the transition of Year 7 to Gleeson in 2018 we have experienced an unprecedented spike in enrolment interest. This may serve as a reminder to any families with siblings that are yet to enrol to ensure that this is completed in a timely fashion.

Year 10 RetreatLast Monday, our Year 10 students experienced their annual Retreat held at Sunnybrae Estate Function Centre. There were a range of reflective activities and the students are to be commended on the way that they engaged with the day. A full article and photos are included in this issue of The Globe. A Retreat experience at every year level is a vital aspect of the faith life of each Gleeson College student and I commend all of the staff that put hours of planning and organisation into these experiences.

Every Best Wish to Mr CorboAt the end of next week Mr Joe Corbo will be leaving Gleeson College to take up his 12-month secondment at Thomas More College. We wish Mr Corbo every blessing as he moves into this important role. We will most certainly miss Mr Corbo’s many gifts and presence around our school, and I will personally miss his unwavering support and great wisdom. We look forward to Mr Corbo’s return to Gleeson in 12-months’ time, and we are certain he will bring back great experience and learning that will benefit our school from his secondment. Last week you would have received an email from me announcing Dr Sue Knight’s appointment as Acting Deputy Principal and we look forward to welcoming Dr Knight to our special community in Term 4.

Gleeson DayIt has been like our own finals build up these past few weeks with Gleeson Day to be celebrated next Friday. There are a range of activities planned to provide the opportunity to reflect and celebrate all the great things that make up Gleeson College. The highlight of the day will undoubtedly be the College Mass celebrated by Monsignor John Swann. My deep thanks go to the College Student Leaders, under the direction of Mr Shannon Bertram, who have taken on the task of organising Gleeson Day activities this year.

As this will be my final newsletter article prior to the end of Term 3 I would like to take this opportunity to thank all of the Gleeson College community for contributing to yet another dynamic and highly successful term. I trust that the holiday period brings some long overdue sunshine, and a welcome respite from daily routines. For our Year 12 students the holidays provide a crucial block of study time to prepare for final assessment tasks. I look forward to seeing you all back at the start of Term 4 on Monday 17 October, ready to continue the exciting learning and faith journey we are on here at Gleeson College.

Year 9 Home Economics Students Try to Bake the Perfect Scone!

‘Australian Cooking Shows’ is the new topic of focus for our Year 9 Home Economics Class. We have started exploring the tips and tricks we can

learn from popular cooking shows like ‘MasterChef’ and ‘Ready Steady Cook’, as well as analysing the impact these

shows have on Australian viewers’ cooking skills and food choices.

During a cooking practical, students prepared the MasterChef ‘Date and

Lemon Scone’ recipe (seepg 6 for full recipe!). While this was only their second time in the kitchen, they did an excellent job of creating delicious, slightly crumbly

and lightly golden scones, which were evenly sized and topped delicately

with jam and cream! Well done Year 9 Home Ec!! Keep up the great work in

the kitchen and hopefully some scones made it home for your family to try!

YEAR 10 CHILD STUDIES > Creative Cake Making SkillsYear 10 Child Studies students worked in pairs and followed a brief that required them to use the design process; create, research, produce and evaluate, to produce a child’s birthday cake.

Students researched a variety of cake decorating techniques that could be easily implemented by a home cook. They utilised a variety of YouTube clips to learn the skills they required to complete their own designs. Students discovered how to line a variety of cake tins, about working with colour fondant, piping, making buttercream and how to work with royal icing. Where they could, some students opted for healthier options, replacing lollies with fruit. Prior planning and effective organisation was vital to ensure the success of the cakes in a limited time frame.

All students should be very proud of their efforts; I know I am!

YEAR 11 FOOD & HOSPITALITY > Making Mayo from Scratch!This week our Year 11 Food & Hospitality students went back in time and experienced what it was like to make mayonnaise from scratch, without the use of modern day technology (the food processor). They quickly realised how advancements in technology have really helped the speed and ease of cooking in the commercial and home kitchen!

Students worked in small teams to hand whisk and emulsify egg yolks and olive oil - two ingredients that don’t usually like each other. Some groups demonstrated the speed and power needed when whisking, however others struggled and were left to rely on the speed and power of the food processor to be successful; the in-class competition was fun though!!

Although this lesson demonstrated the benefits of technology, it is part of the unit on Safe Food Handling as freshly made sauces are among one of the main causes of food poisoning. After making a successful batch of mayo, students then made three derivatives from it - a cocktail dressing, thousand island sauce and aioli. Students were surprised to taste the difference of freshly made mayo compared to the store-bought varieties which can be filled with sugar and harmful additives.

> Make Your Own MayoMakes 500mls (2 cups)

Ingredients:4 egg yolks1 teaspoon of salt1 ½ teaspoons of mustard powder320mls of extra light olive oil160 mls of olive oil1 Tablespoon of white vinegar

Method:1. Using a kitchen mixer, combine egg

yolks, salt & mustard in mixer’s bowl. 2. Gradually add oils, in a thin and steady

motion. Mixture will thicken.3. Stir vinegar into Mayonnaise.

OPEN GIRLS KO SOCCER TEAM NAMED 2016 SSSSA RUNNERS UP

On Monday, the Open Girls Knockout Soccer Team set off for the State Finals in what was to be a compelling day of soccer at Burton Park.

Game #1 Semi Final> Gleeson v Marryatville High SchoolFirst up Gleeson drew Marryatville who were coached by Lady Red MJ (Marijana Racic). The game saw us take the lead early with the first goal from Mia Fitzharris who started off the assault for Gleeson. The momentum continued with Shaye McQueen and Kirsten Pett scoring the next two, taking our lead to 3-0. But Gleeson scoring was not complete as Mia Fitzharris scored a fourth goal with a nice cross from Zoe DeJonge. The final goal for Gleeson was set up by Taylor Fiorita who crossed a high ball in to find Mia Fitzharris who scored an amazing hat-trick for the day taking the game to 5-0 at half time. The girls showed that they can hold their structure and played smart football in the first half, by making sure the ball did all the work. Gleeson went into the second half a little complacent and this meant that everything we had worked hard at achieving in the first half was under pressure as Marryatville came out hard at the start of the second half and scored two early goals. Gleeson’s defense worked hard all game to ensure that any shot Marryatville took was under pressure and the likes of Shivonne Jolly, Erin Hossen and Katie McGrath played very well. Goalkeeper Matilda Comley pulled off some amazing saves to keep the game alive and when the girls tired,

the timely substitutions of Kiara Arabilla and Caitlyn Monga came on and made an impact quickly with their fresh legs. Year 12 footballer Grace Abbey added some fantastic tips for the girls during the games, which helped us greatly! Gleeson ended up securing a hard fought 5-3 win against Marryatville to book a berth in the Grand Final against Nazareth. Special mention to Tahlia Curnow who tagged Marryatville’s best player and did well to shut down many attacks, and also to Despina Antonas who never gave up and provided Gleeson with many opportunities.

Game #2 Grand Final> Gleeson v NazarethThe game started off slowly with the Gleeson girls unable to take control as Nazareth displayed their fast forwards and solid defense were going to be a challenge. Nazareth earned an early penalty but GK Matilda Comley executed a fantastic save to keep scores 0-0 at half time. Going into the second half Gleeson finally began taking shots and pressuring the opposition keeper, which gave the girls needed confidence that a goal would come within the last 10 minutes of the game. A good ball from Rebecca Pratt through to Erin Hossen, who slotted a ball to Kirsten Pett, who found the back of the net, earned our first goal. This was unfortunately canceled out in the last minute when Nazareth scored the equaliser. With the score 1-1 at full time,

our Final was to go into extra time, where no one scored, so penalties were the final option. Unfortunately, the girls were forced to the penalty spot for the second year in a row. With tired legs and the extra pressure, the girls were unable to take the win and after a tough final, Nazareth sealed the deal to claim the State Championships with Gleeson being Runners Up.

Year 8 students Emily Carden and Jade Halfpenny stepped up and fought for their positions in the Open team and proved their worth with many opportunities throughout the day. Special mention to Matilda Comley, being her last soccer match for Gleeson College, who performed outstanding in both matches and kept the girls in the game on multiple occasions. A big thank you to Jess Mills who didn’t get to come on as the reserve Keeper, but supported the team throughout the day. Thank you for your hard work and commitment. Also a big thank you to GC Old Scholar Maggie Fitzharris for coaching the girls, and to Grace Abbey for her assistance, and to Ms Feleppa for all her work with us. A special mention to Ms Mitchell for supervising us on the day.
