Prince Edward Island Lobster Lobster is the crown jewel of the Prince Edward Island seafood industry. Wild-caught in the pristine North Atlantic Ocean, Prince Edward Island lobster is known for hard shells and tender juicy meat.
Sustainability and quality are the key pillars of the Prince Edward Island lobster industry. Harvesters take great measures to ensure that the resource is managed responsibly and take great care to ensure the best possible product for consumers around the world.
The Prince Edward Island lobster catch is divided into two categories, canners or markets, depending upon size. The smaller sized lobsters known as canners are preferred by true connoisseurs for their tender and flavourful characteristics. Approximately 60% of Prince Edward Island lobsters fall into this category.
Prince Edward Island has two lobster seasons, spring and fall. The spring season runs from May to the end of June and the fall season runs from mid-August to mid-October. Prince Edward Island accounts for almost 20% of Canadian lobster production.

How to Eat a Lobster
Step 1Twist off the claws from the lobster body. Twist open the sections behind the claw at the joints and use a seafood fork or lobster pick to remove this sweet meat.
Step 2Crack each claw with a nut cracker or knife. If you bend off the moveable part of the claw, the meat can be removed more easily.
Step 3Twist tail piece to remove from body.
Step 4Squeeze the sides of lobster tail together until the shell cracks lengthwise or use a knife to crack the underside section of the shell.

Step 5Turn over the lobster tail and break open the shell to remove meat.
Step 6Bend back and break the flippers off the tail piece; there are bits of meat inside each flipper.
Step 7Separate the back from the body. In this area is the tomalley (green substance), and female lobsters may contain roe which is like a red caviar. Both are edible. Break open the bottom section of body where there is good meat.
Step 8Twist the legs from the body and enjoy the sweet meat inside. The meat can be sucked out like sipping through a straw.

Butter Poached LobsterIngredients
Instructions1. In a stainless steel saucepan over medium heat, add onion and white wine. Reduce wine until only 3 tablespoons (50ml) remain.2. Turn heat to low, add heavy cream and begin whisking in the butter a couple of cubes at a time until all the butter is incorporated.3. Add the lemon juice and lobster tails. 4. Stir continuously until the lobster is � rm and cooked, approximately 5-7 minutes.5. Season with cracked black pepper and serve immediately.

3 tbsp onion, � nely diced¾ cup white wine½ lb cold butter, cut into ½ inch cubes2 tbsp heavy cream
Ingredients½ cup lobster meat, diced6 potatoes, baked1 tbsp butter½ cup sour cream¼ cup onion, grated¼ tsp pepper¼ mushrooms, diced½ cheddar cheese, grated
Instructions1. Preheat oven to 375 F (190 C)2. Cut baked potatoes in half lengthwise and carefully scoop out insides, reserving the skins.3. In a bowl mash the potato, then add butter, sour cream, onion and pepper. Beat until smooth.4. Fold in lobster meat and mushrooms, and place mixture back in to the 12 potato skin halves.5. Sprinkle with grated cheese and place on a baking sheet. Bake 15-20 minutes, or until potatoes are heated through.

Steak and Lobster Tails
Ingredients
Defrost lobster tails overnight in the refrigerator. When defrosted, cut the upper shell down the centre of the back with scissors, leaving tail fan intact. Do not remove undershell. Lift uncooked tail through the slit to rest on the top of the shell (this is called piggyback lobster tail).
NOTE: At this stage, the lobster tails may be refrigerated until ready to bake. Cover with plastic wrap to prevent drying out.
Instructions1. Preheat oven to 350 F (175 C).2. Place lobster tails on a baking sheet, brush each with butter and bake approximately 15 minutes.3. Remove from oven.4. Serve immediately with melted butter and lemon slices.

Lobster, Strawberry and Mango Salad
Ingredients
InstructionsSalad1. Arrange lettuce, lobster, strawberries, mango and cucumber evenly between 4 plates.2. Drizzle salads with vinaigrette and sprinkle with chive sticks.
Vinaigrette1. Place strawberries, Dijon mustard, honey and balsamic vinegar in blender. Blend until smooth.2. With blender running, add vegetable oil in a slow and steady stream until well mixed.3. Season with salt and fresh cracked pepper.

Lobster ChowderPreparation Time: 10 mins The perfect lobster chowder should age at least � ve hours, so prepare it well ahead of time.
Ingredients
Instructions1. Combine rice or potatoes, salt, pepper, paprika, onion, milk and cream in a saucepan.2. Cook over medium heat, stirring frequently for 10 to 12 minutes or until the rice softens.3. Stir in the lobster and butter.4. Remove from heat, cool and store in the refrigerator. Just before serving, reheat the chowder over medium heat, stirring frequently.
