1Preheat your oven to 300˚F
and pat the pork dry with
paper towels. Mix together the
chili powder, cumin and salt, and
rub it all over the the meat. Set an
ovenproof pot over medium-high
heat and add a generous drizzle of
oil. When the oil is hot, brown the
pork on all sides.
2Cover the pot and transfer it
to the oven for three to four
hours, or until the pork is very
tender. Pull it apart with two forks,
tossing the meat in any juices that
have collected on the bottom of
the pot. Serve the pork on warmed
corn tortillas with onion, cilantro
and pineapple.
