Chamber Corner Joe Ing, Executive Director March turned out to be a great month at the Chamber!! Our most important meeting was our Three Star group that met March 25, and put together this year’s strategic plan. April has started out with a bang! We have had several entries in our Chamber Art Contest which will be on display at our 100th year anniversary! All art work must be turned in to the Chamber by April 30. Please come and be with us April 8th at 4:00 p.m. We will have the ground- breaking for our new Skateboard Park! It will be located behind East Side School where the ball field and soccer fields are located. April 16th-Speaker Jimmy Naifeh will be here at the Chamber, at 8:30 a.m. for a Legislative breakfast, to update us on what’s going on with the House in Nashville. April 23rd-Senator Dolores Gresham will be here at 8:30 a.m. for another Leg- islative breakfast to update us on what the Senate is doing. Mr. Connerley is the son of Rev. and Mrs. Robert Henry Connerley, Jr., of Brownsville. Miss Barclay is the granddaughter of Mrs. Herbert Hunt, of Mem- phis, and the late Mr. Hunt, and the late Mr. and Mrs. J.B. Barclay, of Fulton, KY. She is a 2003 graduate of Briarcrest Christian High School, in Memphis. She graduated magna cum laude with a Bachelor of Science in Ed- ucation from Mississippi State University in 2007, where she was a member of Chi Omega Sorority. Miss Barclay will gradu- ate in May 2010 from the University of Tennessee Health Science Center, in Memphis, with a de- gree of Doctor of Physical Therapy. Mr. Connerley is the grandson of the late Mr. and Mrs. Robert Henry Connerley and the late Mr. and Mrs. Branton Harrelson, all of Grenada, MS. He is a 2002 graduate of Haywood High School. Mr. Connerley graduated in 2007 from the College of Business and Industry with a Bachelors in Busi- ness Administration from Mississippi State Univer- sity, where the couple was active in the Baptist Student Union. The wedding ceremo- ny will take place at half after seven o’clock on the evening of Saturday, May 15, 2010 at Christ United Methodist Church in Memphis. Honestly, even though I prepared it with my own two hands, I was still pleasantly surprised when the southwestern flavor hit my taste buds. The filling ingredients, though basic, provide a full-flavored blend that is sure to satisfy your appetite. Mary Lou added one small can of chiles to her filling, but if you prefer a mild taste, opt for less. Serve this with a salad for dinner, or slice it up and serve it as finger food at your next party. Enjoy and remember, use “just a pinch”... www.justapinch.com/enchiladaring Mary Lou Ivy What You Need 2 c chicken 1/4 c chopped black olives 1 c cheddar cheese 1 sm can chopped chiles, undrained 1/2 c Miracle Whip dressing 1 pkg taco seasoning mix 2 pkg crescent rolls 1 sm seeded & chopped tomato 1 lime (juice) 2/3 c finely crushed tortilla chips salsa and sour cream Chicken Enchilada Ring • Chop chicken and add olives, cheese, chilies, Miracle Whip, taco mix, tomato and 2 tablespoons lime juice. • Reserve 2 tablespoons crushed chips and add remaining chips to mixture. • Unroll crescent dough and separate triangles. Arrange on round baking stone or cookie sheet, making a circle with wide ends overlapping in the center and points toward outside. There should be a 5 inch diameter opening in the center. • Spread chicken mixture evenly onto widest end of each triangle. • Bring points of triangles up and over filling and tuck under wide ends of dough at center of ring. Sprinkle with the 2 tablespoons crushed chips. • Bake at 375° for 20-25 minutes. Garnish with additional tomato and serve with salsa and sour cream.
