Peter Spiers, Senior Vice President of the Road Scholar program will be giving a presen-tation in the Pioneer Center for our residents at 4:00 p.m. on Monday, July 23rd. One of the first trips planned for Del Webb residents will be to Costa Rica in November of this year. Immediately following the presentation we will have Margarita Monday and Nacho Bar. Everyone who attends the presentation will get a free Margarita! Don’t like Margari-tas? We will have a cash bar to quench your desired thirst.

Not-for-profit Road Scholar’s mission is to inspire adults to learn, discover and travel. The learning adventures engage expert instructors, provide extraordinary access, and stimulate discourse and friendship among people for whom learning is the journey of a lifetime. Since its inception, more that 5 million people have enrolled in its 6,500 iconic educational adventures offered annually in 50 states and 150 countries around the world.

Del Webb has joined forces with Road Scholar to provide learning and travel experienc-es, which will add further value to the active, enriching lifestyle that is emblematic of Del Webb. Del Webb residents will enjoy special opportunities, cost savings and exclusive access to a selection of national and international educational programs, informational sessions, seminars and lecture programs.

Wow….here we are in July and we are moving full speed ahead with activities galore. If you haven’t signed up for the 4th of July’s events, enroll now so we can plan accordingly. Mama Wranglers will perform at 3:30, and the ever so talented Sun City Sounds will perform right before Bingo at 5:45. Ride the bus at 7:15 to the Eureka for the Nevada Pops performance and watch the annual firework show light up the skies.

We are gearing up for Cooks for the Cure, Del Webb’s annual charity for breast cancer research. Chef Scott from the Eureka and 1880 Grille’s Chef will demonstrate their culinary talents right before your eyes. Not only do you get to taste their creations but you will get a glass of wine with each menu item and champagne with dessert. Then we will wrap things up at the Pioneer Center with the closure of the silent auction, more appetizers, and cash bar. Place a bright pink star on your calendar for Saturday, July 21.

The BB Drifters are back by popular demand on Thursday, August, 23. We will have a resident classic car show and a delicious dinner at our Decades Party. Do you have a classic or oldies car? Call us and let us know. Be ready to dance the night away in a nostalgic setting at just $12pp.

Courtesy reminder: Our governing documents state that members always take precedence over guests when it comes to chartered clubs and activities. As an example, if a game takes four people to play and there are four members and one guest, then the guest would have to sit out, not a member. The member would still be expected to pay the guest fee even if the guest was not participating in the game or activity. It would be in your best interest to make sure you let your guests know they can only play if there is availability.

Also, remember to be 15 minutes early to the slot tournament. This allows adequate time to check in, draw your machine number and to get your buffet ticket as we have 20 people for each time slot.

Monday through Friday offers menu choic-es for lunch plus salads, an open grill, sand-wiches, a variety of bottled and fountain soft

drinks. you can pick up the monthly menu near the entrance.There is also the best, most complete and least expensive salad bar in Mesquite Monday

through Friday as well as complementary coffee and tea, both hot and iced.Senior Circle members also receive a 10% to 15% discount on their meals. The Café la Mesa

is open for breakfast 7 days a week from 8:30 am to 10 am and serves lunch Monday through Friday from noon until 2:00 p.m. On weekends there is no salad bar but you can order grill items. lunch Saturday and Sunday is noon to 1:00 p.m.

Established in 1971, Capitol Reef National Park in south-central utah is 100 miles long but fairly narrow. The park preserves 241,904 acres and is open all year, although May

through September are the most popular months with approximately 700,000 visitors.The park protects about 75 miles of the long up-thrust called the Waterpocket Fold, a warp

in the earth’s crust that is 65 million years old. It is the largest exposed monocline in North America. In this fold, newer and older layers of earth folded over each other in an S-shape. This warp, probably caused by the same colliding continental plates that created the Rocky Mountains, has weathered and eroded over millennia to expose layers of rock and fossils. The park is filled with brilliantly colored sandstone cliffs, gleaming white domes and contrasting layers of stone and earth creating a hiker’s paradise.

The area was named for a line of white domes and cliffs of Navajo Sandstone, each of which looks somewhat like the united States Capitol building. Early settlers referred to parallel, im-passable ridges as “reefs,” from which the park gets the second half of its name. The first paved road was constructed through the area in 1962. Today, State Route 24 cuts through the park traveling east and west between Canyonlands National Park and Bryce Canyon National Park, but few other paved roads invade the rugged landscape.

The town nearest Capitol Reef is Torrey, utah, which lies eight miles west of the visitor’s cen-ter on Highway 24. Torrey is very small, but has several motels and restaurants. The park itself has a large campground, but it often fills by early afternoon during busy summer weekends. Overnight camping within the park requires a permit from the rangers at the visitor’s center.

Activities in the park include hiking, horseback riding, and a driving tour. Mountain biking is prohibited in the park, but many trails just outside the park exist.How to get there: From Mesquite (about 250 miles away), take I-15 north to Exit 16 towards Zion. At the Mt. Carmel Jct. go north on 89. Turn east on 12 to Torrey, uT.

Grilled Halibut with Cilantro Garlic Butter

INGREDIENTS:4 (6 ounce) fillets halibut1 lime, cut into wedgessalt and pepper to taste3 cloves garlic, coarsely chopped1/2 cup chopped fresh cilantro1 tablespoon fresh lime juice2 tablespoons butter1 tablespoon olive oil

Directions1. Preheat a grill for high heat. Squeeze the juice from the lime wedges over fish fillets, then season them with salt and pepper. 2. Grill fish fillets for about 5 minutes on each side, until browned and fish can be flaked with a fork. Remove to a warm serving plate. 3. Heat the oil in a skillet over medium heat. Add the garlic; cook and stir just until fragrant, about 2 minutes. Stir in the butter, remaining lime juice and cilantro. Serve fish with the cilantro butter sauce.

Doug Parsons thinks living in Sun City, Mesquite, “is like having all the fun of college without having to go to class.” The Par-

sons, Dawn and Doug, always wanted to retire to Nevada in an ac-tive adult community. Having lived in Minnesota for 32 years, the Parsons were eager to get away from its brutal winters. They came to visit in August of 2009 and “fell in love with both Mesquite and Sun City. The people here are so warm and friendly.” They moved here full-time in October of 2011.

Doug says: “Now, when we take a walk, Dawn and I are delighted that it often takes twice as long as planned, since we are greeted

and welcomed at every turn.”The relaxed, easy going community appeals to both Parsons, after many years in the corporate and

business world. Doug graduated from the university of Wisconsin, Green Bay and enjoyed a success-ful 28 year career in business sales. He is enjoying softball (plays with the Geezers, and also played in the Senior Games). He also plays basketball at the Community Center.

Dawn graduated from university of Wisconsin Menomonie and the university of Minnesota School of law. She opened her own practice in 1992. Because she practices transportation law, contracts, corporate law and the like, Dawn is able to continue her work from Mesquite with the help of the internet, e-mail, faxes and other information technology.

Dawn and Doug play a little golf and pickleball, and love to travel. Among travel highlights: “We visited Beijing and walked the Great Wall shortly before China hosted the Olympics,” said Dawn. “We will be going to Cabo this October to celebrate our 33rd wedding anniversary.”

The Parsons met at a wedding. Dawn knew the bride and Doug knew the groom. The groom’s mother decided they should meet, and they were married two and a half years later. This fall, elder son Tory is getting married, so they will have a family visit with him, other son Aaron and old friends.

Doug was born and raised in Berlin, Wisconsin. Dawn hails from Madison. This helps explains their loyalty to the Green Bay Packers. It is intense. Doug doesn’t even smile when he tells you that!
