Lay out a large area of wax paper. • Melt chocolate chips. • Take cherries by the stem and dip into melted chocolate. Chocolate Mice • Lay the cherries down and attach the Kiss to it to form a head. (The chocolate will serve as a glue - If it’s not sticky enough, dip the blunt end of the Kiss into the chocolate to make it adhere better.) There were 50 people present. Robert Mitchell was introduced by Jack Fletcher and gave a history of the Union Grove Church. The church began as a Presbyterian church; later the congregation sold the Union Presbyterian Church to the Methodists. In 1949, the old Union church was torn down, and the present church was built. Many of the timbers from the old church were incorporated when building the new church. The first wedding in the new church was Jolene Joyner’s and the first funeral was Jack Fletcher Sr. The present church was dedicated in October 1952 with the addition of the basement- kitchen area and the front porch. In 1989, further remodeling was done in the sanctuary. The present pastor is Rev. Brent Porterfield. Union Grove Methodist Church is recognized as one of the most active rural churches in the Memphis Conference. The women of Union Grove Methodist Church prepared a lovely reception for the Historical Society, church members, and guests. The Historical Society held a brief business session, also. Haywood County Historical Society Meets Since December is such a busy month with family gatherings, shopping, dinners and parties, we want to encourage everyone to slow down, relax and enjoy the holidays. Please take time to remember the true meaning of Christmas; after all, it is Christ’s birthday that we celebrate. He truly is the reason for the season. We have our regular activities scheduled this month, which include: Bible studies each Wednesday at 10:30 am. The first two weeks of December, we will be decorating, making candy and playing Christmas games. We have beautiful fall and Christmas arrangements, wreaths, trees and lots of other crafts for sale at the Center. This is our annual fundraiser. The public is invited to check out these crafts any weekday from 8 a.m. – 4 p.m. We will open later upon request. Just call and let us know when would be convenient for you to come by. Our Christmas luncheon will be at 11:30 a.m. on Dec. 17. David Smith will sing for our Christmas party, beginning at 10 a.m. on Dec. 21. Our bingo party this month will be at 10 a.m. Dec. 10. Our monthly caregivers training and support group will meet at 10 a.m., Dec. 27. Our chair dance/ exercise will be each Monday, Wednesday and Friday at 9:30 a.m. Our birthday party will be at 10 a.m. on Dec. 30 The Center will be closed Dec. 24, 27, and 31 and Jan. 3. For more information on activities and services provided by the Senior Center, call 772-2438. Brownsville Senior Center December Highlights My husband and I love to cook. We are constantly looking for new recipes to try, and we enjoy being inventive with our food to make delicious, relatively healthy meals. I have started this column to share some of my favorite recipes with you, and I hope you will share yours with me. Haywood County cooks deserve to be recognized for their skill, so email your best recipes to me at accounting@ statesgraphic.com or mail them to Brownsville States Graphic c/o Mary Dunbar, P.O. Box 59, Brownsville, TN 38012. I will feature as many as possible here in “Thyme to Cook.” Whenever there is a chill in the air, I start craving warm, hearty meals. Something about cloudy, dark days and cold winds makes me want to curl up in front of the fireplace with a steaming bowl of soup or stew. One of my favorites is this creamy butternut squash bisque. It’s slightly sweet from the winter squash and apple, but it is also savory and full of flavor. I had never cooked butternut squash until I found my first squash soup recipe, but it’s not intimidating at all. Once you peel the squash, all that is left is a matter of cutting it in half to remove the seeds and cubing the flesh. Be sure you have a sharp knife on hand, as squash can be tough to cut through. This recipe takes a little patience, but the result is worth the effect. If you can’t find butternut squash, acorn squash is a perfect substitute. Just add three acorn squash in place of the one larger butternut. Follow recipe as directed. Butternut squash soup Ingredients: 1 2.5-3 pound butternut squash (peeled, seeded, and cubed) 1/4 cup butter 1 medium white onion (optional – chopped) 1 large carrot (chopped) 1-2 apples (cored and chopped) 1 48 ounce box reduced sodium chicken broth 1 bottle apple juice, apple cider, or hard cider 1/2 cup sour cream (low fat is a great choice here) 1/4 cup shredded cheddar cheese (optional) Gorgonzola cheese, to taste (optional) – enough to sprinkle over bowls 2-4 strips of bacon, crumbled (optional) Directions: 1) Peel, seed, and cube butternut squash; chop carrots, onion, and apples. 2) Melt butter in large pot (6 quart Dutch oven works well) over medium-high heat. 3) Add cubed squash and vegetables. Cook, stirring frequently until just tender (approximately 10 minutes). 4) Add apples, broth, and cider. Bring to a boil. Cover and reduce heat, simmering for approximately 25 minutes or until vegetables and apples are tender. 5) Remove from heat and allow to cool slightly. 6) Puree in blender, returning soup to pot when finished. If you have an emersion blender, now is the perfect time to use it, but if you only have a counter top blender or food processor, you may have to puree in batches. 7) Add sour cream and cheddar to soup and heat through. 8) Top with gorgonzola, bacon, and a dollop of sour cream if desired. I prefer grating my own cheddar, rather than buying prepackaged shredded cheese. It tastes fresher, lasts longer, and melts easier. If you’re not a fan of gorgonzola, a flavorful blue cheese, you can use cheddar for a topper, but I suggest you at least try gorgonzola because it seems like the perfect slightly salty contrast to this soup. Although I peel the squash, I don’t usually bother peeling the apples for this recipe. They will be pureed, and I like to leave the skin on for added vitamins and nutrient value.     Chocolate Mice Stir Up Family Fun for the Holidays

    Spending time with my grandson is always a highlight of my holiday season. We love to dirty up the kitchen and experiment with fun, new recipes. This Chocolate Mice recipe from Jennifer Barley was a huge hit! Adorable and geniusly creative, these little guys provide as much a recipe for family fun as they do a wonderful holiday treat. With four simple ingredients and a few easy steps, kids of all ages will have a ball making these decorative delights. What a fun way to spend a long winter day!

    What You Need

    2 cans maraschino cherries with stems attached (yields about 35 mice)

    1 pkg milk chocolate chips

    1 pkg sliced almonds

    1 pkg Hersheys Kisses

    Directions

    Unwrap Kisses and set aside. Lay out a large area of wax paper.

    Melt chocolate chips.

    Take cherries by the stem and dip into melted chocolate.

    Chocolate Mice

    Lay the cherries down and attach the Kiss to it to form a head. (The chocolate will serve as a glue - If its not sticky enough, dip the blunt end of the Kiss into the chocolate to make it adhere better.) While the chocolate is still warm, attach almond slices between the head and body. These are the ears!

    Add eyes and a mouth with icing if you wish. Enjoy!

    The Haywood County Historical Society met at 3 p.m. on Sunday, Nov. 14, at Union Grove United Methodist Church. There were 50 people present.

    Robert Mitchell was introduced by Jack Fletcher and gave a history of the Union Grove Church. The church began as a Presbyterian church; later

    the congregation sold the Union Presbyterian Church to the Methodists. In 1949, the old Union church was torn down, and the present church was built. Many of the timbers from the old church were incorporated when building the new church.

    The rst wedding in the new church was

    Jolene Joyners and the rst funeral was Jack Fletcher Sr. The present church was dedicated in October 1952 with the addition of the basement-kitchen area and the front porch. In 1989, further remodeling was done in the sanctuary.

    The present pastor is Rev. Brent Porter eld. Union Grove Methodist

    Church is recognized as one of the most active rural churches in the Memphis Conference.

    The women of Union Grove Methodist Church prepared a lovely reception for the Historical Society, church members, and guests.

    The Historical Society held a brief business session, also.

    Haywood County Historical Society Meets

    Since December is such a busy month with family gatherings, shopping, dinners and parties, we want to encourage everyone to slow down, relax and enjoy the holidays. Please take time to remember the true meaning of Christmas; after all, it is Christs birthday that we celebrate. He truly is the reason for the season.

    We have our regular activities scheduled this month, which include:

    Bible studies each Wednesday at 10:30 am.

    The rst two weeks of December, we will be decorating, making candy and playing Christmas games.

    We have beautiful fall and Christmas arrangements, wreaths, trees and lots of other crafts for sale at the Center. This is our annual fundraiser. The public is invited to check out these crafts any weekday from 8 a.m. 4 p.m. We

    will open later upon request. Just call and let us know when would be convenient for you to come by.

    Our Christmas luncheon will be at 11:30 a.m. on Dec. 17.

    David Smith will sing for our Christmas party, beginning at 10 a.m. on Dec. 21.

    Our bingo party this month will be at 10 a.m. Dec. 10.

    Our monthly caregivers training and

    support group will meet at 10 a.m., Dec. 27.

    Our chair dance/exercise will be each Monday, Wednesday and Friday at 9:30 a.m.

    Our birthday party will be at 10 a.m. on Dec. 30

    The Center will be closed Dec. 24, 27, and 31 and Jan. 3.

    Brownsville Senior Center December Highlights

    My husband and I love to cook. We are constantly looking for new recipes to try, and we enjoy being inventive with our food to make delicious, relatively healthy meals. I have started this column to share some of my favorite recipes with you, and I hope you will share yours with me.     Whenever there is a chill in the air, I start craving warm, hearty meals. Something about cloudy, dark days and cold winds makes me want to curl up in front of the replace with a steaming bowl of soup or stew.

    One of my favorites is this creamy butternut squash bisque. Its slightly sweet from the winter squash and apple, but it is also savory and full of avor.

    I had never cooked butternut squash until

    I found my rst squash soup recipe, but its not intimidating at all. Once you peel the squash, all that is left is a matter of cutting it in half to remove the seeds and cubing the esh. Be sure you have a sharp knife on hand, as squash can be tough to cut through.

    This recipe takes a little patience, but the result is worth the effect.

    If you cant nd butternut squash, acorn squash is a perfect substitute. Just add three acorn squash in place of the one larger butternut. Follow recipe as directed.

    Butternut squash soupIngredients:1 2.5-3 pound butternut squash (peeled, seeded, and cubed)1/4 cup butter1 medium white onion (optional chopped)1 large carrot (chopped)1-2 apples (cored and chopped)1 48 ounce box reduced sodium chicken broth1 bottle apple juice, apple cider, or hard cider1/2 cup sour cream (low fat is a great choice here)1/4 cup shredded cheddar cheese (optional)Gorgonzola cheese, to taste (optional) enough

    to sprinkle over bowls2-4 strips of bacon, crumbled (optional)Directions: 1) Peel, seed, and cube butternut squash; chop carrots, onion, and apples.2) Melt butter in large pot (6 quart Dutch oven works well) over medium-high heat. 3) Add cubed squash and vegetables. Cook, stirring frequently until just tender (approximately 10 minutes). 4) Add apples, broth, and cider. Bring to a boil. Cover and reduce heat, simmering for approximately 25 minutes or until vegetables and apples are tender. 5) Remove from heat and allow to cool slightly.6) Puree in blender, returning soup to pot when nished. If you have an emersion blender, now is the perfect time to use it, but if you only have a counter top blender or food processor, you may have to puree in batches.7) Add sour cream and cheddar to soup and heat through. 8) Top with gorgonzola, bacon, and a dollop of

    sour cream if desired.

    I prefer grating my own cheddar, rather than buying prepackaged shredded cheese. It tastes fresher, lasts longer, and melts easier. If youre not a fan of gorgonzola, a avorful blue cheese, you can use cheddar for a topper, but I suggest you at least try gorgonzola because it seems like the perfect slightly salty contrast to this soup.

    Although I peel the squash, I dont usually bother peeling the apples for this recipe. They will be pureed, and I like to leave the skin on for added vitamins and nutrient value.
