GOOD MOOD FOODS: RAW CACAO GOOD NEWS, AS
WELL AS THE TASTE OF IT MAKING US FEEL GOOD, CHOCOLATE CAN
ACTUALLY BE GOOD FOR OUR BRAINS TOO. SADLY WE DON’T MEAN DAIRY
MILK HERE, INSTEAD REAL CHOCOLATE USING AT LEAST 70% CACAO, OR
RAW CACAO POWDER. CACAO IS NATURALLY RICH IN MAGNESIUM, A
NUTRIENT THAT IS ESSENTIAL FOR GOOD MENTAL HEALTH AND
ESPECIALLY IMPORTANT FOR THOSE SUFFERING WITH STRESS AND
ANXIETY. MAGNESIUM CAN HELP TO IMPROVE OUR RESILIENCE TO STRESS
BY SUPPORTING THE ADRENAL GLANDS, WHICH CAN BE RELIED UPON HEAVILY FOR THE
AVERAGE PERSON LIVING A FAST PACED LIFE. EAT A PORTION OF DARK CHOCOLATE OR IN SOME
RAW CACAO POWDER AND ADD IT TO SMOOTHIES, DESERTS, BREAKFAST AND SNACKS. HTTPS://

RAW CACAO ENERGY BALLS Kate Kasbee wellvegan.com
Put the almonds, walnuts,
oats, cacao, and salt in the
bowl of a food processor.
Pulse until the nuts break
down and combine with the
other ingredients. The meal
should be fine, but retain some texture — you don’t
want to make nut butter! Add the dates and a tablespoon of water and run the food
processor until the mixture becomes thick and sticky. You should be able to squeeze a bit
of the mixture between your fingers. If it’s too loose and crumbly, add another tablespoon
of water and process until everything comes together. Line a baking sheet with a piece of
parchment paper. Scoop pieces of the mixture and roll it into balls between your palms,
slightly smaller than the size of a golf ball. Line them up on the baking sheet and place it
in the refrigerator to chill for at least an hour, overnight if possible. Store the raw cacao
energy balls in an airtight container. Yields 12 energy balls.
1/2 CUP RAW ALMONDS
1/2 CUP RAW WALNUTS
1 CUP OLD FASHIONED OATS
2 TBSP. RAW CACAO POWDER
1/4 TO 1/2 TSP. SALT
3/4 CUP DATES, CHOPPED
1 TO 2 TBSP. WATER
MOVE & GROOVE: Groove to cycles of movement and listen to the beat of the
music. Connect with the groove by moving arms and legs in
and out /backwards and forwards /up and down to the
rhythm. Bi pedal walking, one foot in front of the other and
count the steps, left and right 1,2,3,4. Add a clap to a dance
step or shout a word. A sequence of repetitive movements
combined with words or counting is great brain fitness. Moving to music to a
“groove beat” is not only fun but stimulates the brain. Studies have shown that
dancing is one of the best exercises for your brain. Move & Groove & have FUN!

STAFF SPOTLIGHT Eileen Ruiz Adult Day Care Center of
Henderson Activity Coordinator. Eileen came to our Henderson center as a
volunteer intern while working on her degree in Sociology & Gerontology at UNLV.
This was a second career for Eileen. After 26 fun-filled years in radio marketing
and advertising, (lots of free concert tickets for her! ) she decided to go back to
school and shift to her other passion– working with older adults. She is very close
to elders in her family and is convinced she was born in the wrong era. Eileen is
married and has 2 sons and 3 grandsons (So many boys…) and two adorable dogs (she has pictures to
prove it), Archer & Billie Jean. A California native, Eileen loves the outdoors and often hikes with her
family & pups to catch a lovely Nevada sunset. She loves reading crime fiction and flower arranging
and is busy putting her talents and knowledge to work at our center. Welcome Eileen!
Yummy Yummy Yummy!!!

NURSING UPDATES:
Dolores Maceda is our Lead Nurse. She works at both Centers.
Happy Autumn! This third season of the year is known as the “season of change.” The
weather is growing cooler, the days shorter and the air crisper. As we adjust to the
changes of autumn, it’s an ideal time to take action to ensure the safety and wellness.
• Get your flu shot • Sweep away slick leaves
• Colder weather - wear warmer, cozy clothes.
