Over the years, the people of the Pyrenees have

lived in harmony with their immediate

surroundings of earth, water and livestock; in

short, with nature. This bond gave rise to ways

of life that remained virtually unaltered until the

mid-twentieth century. Although the mountain

regions thereafter changed a great deal, new

generations of Pyrenean people have

nonetheless inherited that ancestral popular

culture which, luckily,

is reluctant to disappear.

Cuisine is an inseparable part of the history of

mountain society and L’Alt Urgell is a magnificent

example. A substantial part of the cuisine

prepared in the county’s restaurants is firmly

rooted in the traditional cooking of the family

homes of the rural Pyrenees. The methods

previously used by the women who cooked in

the villages of L’Alt Urgell is still alive, albeit

indirectly, in the dishes served in the county’s

establishments today. The qualities of those

women (wisdom, devotion, patience, etc.) have

been passed down, year after year and century

after century, to the present day. Today’s

modern, innovative cuisine in L’Alt Urgell is

therefore deeply rooted in the region’s history.

A good meal in L’Alt Urgell involves more than

just savouring accomplished dishes. It represents

a bond with an age-old culinary culture, of which

the chefs of L’Alt Urgell are worthy heirs.

The cheeses of the Pyrenees

The animals in L´Alt Urgell have fresh pastures formuch of the year, which enriches the milk with thetastes and aromas of the fresh grass and aromaticplants. Another important factor is the contributionof people. In the Pyrenees there are large-volumecheesemakers and small producers, all with a highlevel of quality, waiting to be discovered each year.Cheesemaking techniques vary according to the zoneand the tradition inherited, to the environment andto the use of technology. Although processes arevery diverse, difficult to describe and classify, theyall pursue the same objective: good quality cheese.

The county has a broad range of cheeses: traditionalor new cow’s, sheep’s and goat’s cheese, all of whichdeserve mention.

Two products from Cooperativa Cadí have beenawarded DOP (Protected Designation of Origin):Urgèlia” cheese and “Cadí” butter.

The diversity of landscapes, climates, pasturesand plants, and the variety of animals,techniques and traditions make the Pyreneesa unique place for cheesemaking.

Ingredients:1/2 kg of pumpkin. 200 g of potatoes. 250 g of leeks. 1 cup ofCadí single cream. 1 piece of celery. 100 g of Cadí butter (DOP)250 g of Baridà goat’s cheese. 1 l of broth. salt, nutmeg. 2sheets of thin pasta (brik, similar to lasagna).

Preparation:To make the cream: chop the celery, leeks, potatoes and thepumpkin, and fry it in a casserole; once browned, add the salt,the nutmeg and the broth, and cook about 20 minutes.Chop the cheese; add the cheese and the single cream andleave to simmer 2 or 3 minutes. Stirring it occasionally.Cut the pasta into squares, put a piece of cheese in the middleand make a parcel.Brown it under the grill about 10 minutes.To finish, put the cheese parcels in the middle of the dish andpour the soup around.

Ingredients for 4 people:3 or 4 (depending on size) trim knuckles of Pyrenean Brunabeef (IGP). Red wine required to cover the meat. A dash ofbrandy. 150 g of onion, 2 medium-sized apples. One clove ofgarlic four soupspoons of tomato sauce. One dash of olive oil.

Preparation:Leave the knuckle to macerate for 24 hours in the red wineand a dash of brandy. Cut the onion and the leek. Cook theonion in the olive oil in a casserole pan and when golden addthe leek. Cook over a low heat. Add a clove of garlic and tomatosauce to give colour. Add the knuckles and leave to simmer ata low heat. Pour in the macerating wine and allow to simmerat a very low heat for two hours, covered in the casserole pan.To serve, separate the knuckle from the sauce and cut it intoslices. Sieve the sauce and pour it onto the knuckle. The dishmay be accompanied by apple, pear, or vegetables such asspinach, peas, carrots, or green beans.

Ingredients for 4 people:200 g pork ribs. 150 g rabbit. 200 g wild mushrooms (kingboletes or winecork brittlegills, fairy rings, Saint George’smushroom). 350 g rice. 1 onion. 1/2 pepper. 1 garlic. 3 ripetomatoes. 1 l of stock or water. olive oil, salt, laurel.To make the chopped sauce: almond, hazelnut, parsley, garlicand saffron.

Preparation:First fry the onion and the pepper in a little oil in a clay casseroledish. Then add the chopped garlic and the grated tomato. Next,cut the ribs and the rabbit into pieces and fry in a pan. Addthe meat to the casserole dish and prepare the mushrooms(heat them up and add them). Heat the stock separately andwhen hot, add it to the mixture after first having fried the ricefor about 2 to 3 minutes and adding that to the rest. Leave tocook over a low heat for 15 to 18 minutes and add theingredients crushed in the mortar (dry, crushed king boletesmay also be used).

Ingredients for 4 people:300 g of Cadí cottage cheese. 400 g of Cadí single cream. 5sheets of gelatine. 75 g of honey. Sauce: 100 cl of mellowwine. 100 g of walnuts. 200 g of Cadí single cream. 25 g ofsugar.Preparation:Chop the cottage cheese and add the honey hot (in which thesheets of gelatine, previously soaked in cold water, have beenmelted). Leave to cool for a while and mix with the singlecream. Place in individual moulds and leave to set in the fridge.Once cool, remove from the moulds and place on a plate.To make the sauce, reduce the mellow wine together with thewalnuts and the sugar. When 3/4 has been reduced, add thecream. Bring to the boil and pass first through the blenderand then the sieve. Allow to cool.Place the sauce around the base of the dish with the mousseof cottage cheese on top and decorate with forest fruit.

The Sant Ermengol Fair takesplace in the urban centre and oldquarter of La Seu and is theframework for four specificevents: the Fair of FarmhouseCheeses of the Pyrenees, theCrafts of the Pyrenees Fair, theBoulevard of Trade (an exhibitionof the commercial and serviceestablishments of La Seu) andAutofair, plus an area providedfor the city’s institutions,associations and clubs.
