THE WIMBLEDON BREWERY
The Wimbledon Brewery was started by William Cook in 1832.
It stood in Wimbledon High Street where the old fire station is today. A fire started at the brewery on January 2nd 1889 and although
the interior of the building was badly damaged and all the brewing equipment and machinery destroyed, the main structure of the
building was left intact.
Today’s Wimbledon Brewery logo incorporates the image of the tower, the phoenix, barley and hops, representing our heritage and our focus on using only the best ingredients. We are custodians of the heritage
and traditions of beer brewing, whilst also inspiring the new generation of beer drinkers and brewers.

In 1817, Sicilian Francis Platamone, Count St. Antonio and his Scottish wife Sophia leased Warren House. They held regular
parties and concerts, with guests that included the Prime Minister, the Duke of Wellington, Mrs Fitzherbert and mistress of King George IV. in 1832 the Count left his wife and returned
to Italy when he inherited the title Duke of Cannizzaro. The Duchess remained at Warren House until she died
in 1841. After her death the house became known by her husband’s title.

From its earliest origins in the Middle Ages, the drink has evolved from a herbal medicine to an object of commerce in the spirits industry. Gin was developed based on the older Dutch liquor, jenever, and became popular in London when
William of Orange became King William III of England.
VODKA For many centuries, beverages differed significantly compared to the vodka of today, as the spirit at that time had a different flavour, colour and smell,
and was originally used as medicine. It contained little alcohol, an estimated maximum of about 14%. The still, allowing for distillation increased purity,
and increased alcohol content, was invented in the 8th century.

RUM The first distillation of Caribbean rum took place in 17th century sugarcane plantations.
It was discovered that molasses, a byproduct of the sugar refining process, could be fermented into alcohol. Later, distillation of these alcoholic byproducts
concentrated the alcohol and removed impurities, producing modern rums.
TEQUILA First produced in the 16th century near the location of the city of Tequila, which was
not officially established until 1666. A fermented beverage from the agave plant known as pulque was consumed in pre-Columbian central Mexico before European contact.

The art of distillation spread to Ireland and Scotland no later than the 15th century. The distillation process was still in its infancy; whisky itself was not
allowed to age, and as a result tasted very raw and brutal compared to today’s versions. Renaissance-era whisky was also very potent and not diluted.
Over time whisky evolved into a much smoother drink.

SPIRITS BRANDY
The origins of brandy are tied to the development of distillation. Initially wine was distilled as a preservation method and as a way to make it easier for
merchants to transport. The intent was to add the water removed by distillation back to the brandy shortly before consumption. It was discovered that after
having been stored in wooden casks, the resulting product had improved over the original distilled spirit.
