BABY ARTICHOKES WITH LEMON MAYONNAISE

Makes 24 portions or 12 servingsIf you can't find small artichokes, trim six large

artichokes, remove the fuzzy chokes and then cuteach heart into quarters.3 lemons24 small artichokes, about 3 inches tall

Lemon Mayonnaise1 large egg yolk or 1 large egg

Salt1/4 cup extra-virgin olive oil1/2 cup neutral vegetable oil, such as safflower

Cut two of the lemons in half and squeeze theirjuice into a bowl filled with cold water, then dropin the squeezed halves. Set the bowl of lemonwater next to your work area. Working with oneartichoke at a time, tear off the dark green leavesuntil you reach the tender yellow leaves. With a

paring knife, trim the bottoms flat (or if there is astem, pare off the tough green fibers and leavestem on) and pare away any tough green patchesof leaf. Then trim off the green tips about 1/2 inchfrom the top. Drop each trimmed artichoke intothe bowl of lemon water as it is prepared toprevent discoloring.

Drain the artichokes, place them on a steamerrack in a pan above simmering water, and steam,covered, until a knife slides easily through thebase (heart) of the artichoke, about eightminutes. Transfer artichokes to a plate and letthem cool to room temperature.

To make the mayonnaise: Juice theremaining lemon. In a blender, puree the egg yolkwith the lemon juice and a hefty pinch of salt. (Ifusing a food processor, use a whole egg). Withthe machine running, gradually pour in the oliveoil in a very thin, steady stream. Then slowlypour in the vegetable oil in a thin stream. Whenall of the oil is incorporated, transfer themayonnaise to a small bowl and season it to tastewith more lemon juice and salt. Serve italongside the artichokes. (If made ahead, coverand refrigerate the mayonnaise and artichokesseparately for up to one day). Garnish with lemonwedges, if desired.
